Distribution and Physiological Characteristics of Yeasts in Traditional and Commercial Kochujang (재래식 및 개량식 고추장 효모의 분포 및 생리특성)

  • To investigate the yeast florae in the traditional and commercial Kochujang, computer identification systems, Vitek, API kit and conventional identification methods were used. Yeast florae of each process were compared and their typical physiological characteristics were also tested. Various process intervals yielded 330 colonies, which resulted in 11 species 184 strains classified. They were identified into Candida glabrata C. guilliermondii. C. humicola. C. rugosa, C. zeylanoides, Cryptococcus uniguttulatus, Pichia farinosa, Rhodotorula glutinis, Saccharomyces cerevisiae and Zygosaccharomyces rouxii. The strains of Candida, Pichia, Saccharomyces and Zygosaccharomyces were existing in both processes. In case of commercial process, the maximum distribution of Z. rouxii and S. cerevisiae were 33% at 15 day fermentation and 13% at 21 day, respectively. The distribution of Candida spp. was gradually decreased throughtout the fermentation period from 40% to 10%. In the traditional process, the maximum distribution of Z. rouxii and S. cerevisiae were 53% after 3 months and 26% after 7 months, respectively, S. cerevisiae and Z. rouxii showed distintive growth pattern at the high concentration of glucose and sodium chloride and played important roles in both processes of fermentation. Physiological tests revealed that only two major yeasts. S. cerevisiae and Z. rouxii, showed vigorous carbon dioxide formation under the tested conditions.

Microbial Inhibition Test of Sustained-Release Chlorine Dioxide Gas Freshness Retaining Agent

  • Currently, most of the chlorine dioxide gas is processed at the beginning of storage or distribution. It has the disadvantage of not being able to continuously process gas since there is no system that can continuously process it during the distribution process. Therefore, in order to minimize changes in freshness and quality during the distribution process of agrifood, there is a need for a sustained-release chlorine dioxide gas treatment technology that can be continuously released. Therefore, in this study, the film to be used was examined so that the chlorine dioxide gas can be continuously released for a certain period of time, the concentration of the reactant and the viscosity at the time of the reaction were determined, and a chlorine dioxide gas gel pack was manufactured using this optimal condition. In addition, the gel pack was used to measure the amount of chlorine dioxide gas released and the sterilization effect of food poisoning bacteria.

Analysis of Characteristic and Proportion treated by Distribution Channels for Environment-friendly Agricultural Products (친환경농산물 유통경로별 취급 비중과 특성 분석)

  • Since organized living cooperative associations sold their environment-friendly agricultural products directly to independent consumers in the past, the general distribution channels such as wholesalers had difficulty in handling these products. However, the ratio of distribution via wholesale channel has been gradually increased as consumption of environment-friendly agricultural products has expanded. This study is to address vitalization of wholesale distribution for environment-friendly agricultural products by gathering previous statistical data and analysis. In addition, statistical analysis are conducted by utilizing surveys on forwarders, consumers for environment-friendly agricultural products. As a result, the products producers ship are distributed through dealers at producers sites, producers cooperatives, or food process companies, food companies, internet shopping malls, large-scale distribution companies, consumer groups such as living cooperative associations, direct outlets at consumers sites, or exports. Among the channels, the large-scale distribution companies and franchised special shops account for 47%, the general supermarkets 15.7%, and living cooperative associations 14.6% respectively. By utilizing the research results on producers and consumers, and the distribution weight by channels for environment-friendly agricultural products, the distribution channels for living cooperative associations, wholesale markets, and large scale distribution companies are compared and evaluated. As a result, the level of producers' and consumers' satisfaction for them is the lowest since the low selling price for producers and high distribution margins.

Simulation for Improvement of Temperature Distribution Inside Refrigerator (냉장고 고내 온도산포 개선에 관한 전산모사)

  • With the increasing need for environmental protection, it is particularly important to improve the energy saving and reliability of refrigerators. Generally, the cold air flowing into the freezer compartment transits to the bottom of the refrigerating compartment, which can lead to uneven temperature distribution. This paper proposes two design solutions for improving the temperature distribution problem. Of these, the optimal refrigeration design was selected and tested using Computational Fluid Dynamics (CFD) modeling and simulation. The results showed improved uniformity of the temperature distribution inside the refrigerator, thus benefitting food storage while reducing energy consumption.

  • In this study, IT based traceability system which is able to measure weight and moisture content of grain in the post-harvest process of intake, drying, storage and milling was developed in RPC(Rice processing complex). Measured information of weight, moisture content, yield, loss and quality was saved in the DB sever. Simultaneously, lot No. was generated and connecting to quality and traceability information. Also, automatic control system with MMI(Man Machine Interface) and yield and inventory control system(YICS) for grain was developed for the traceability system by applying the TCP/IP communication. In addition, simulation of system was performed for evaluation in RPC.

Disinfection efficacy of slightly acidic electrolyzed water (SlAEW) against some fresh vegetables (미산성 차아염소산수의 신선 채소류에 대한 살균 유효성)

  • In the present study, disinfection efficacy of slightly acidic electrolyzed water [SlAEW, 30 ppm of effective chlorine at $20{\pm}1^{\circ}C$, oxidation-reduction potential (ORP) $562{\pm}23mV$, pH 6.4] on 4 kinds of vegetables (lettuce leaf, endive leaf, perilla leaf and kale leaf) was evaluated to obtain a microbial reduction characteristics which are necessary to design a process control for non-thermal sterilization of fresh vegetables. Active chlorine, residual chlorine, microbial counts and residual microbial counts, which are the key factors in the non-thermal sterilization process were measured by dipping them in SlAEW three times for 30 minutes in order to analyze the relationship between factors. Total microbial count was decreased mostly during the first 10 minutes of washing, and the limit value that can be reduced by immersion treatment was 3 log CFU/g for the total microbial count surviving in 4 kinds of vegetables. The total number of microorganism that can be reduced by washing in SIAEW for 10 min was found to be about 2 log CFU/g on average. In addition, the active chlorine decreased in the initial 10 minutes in 2.2 ppm, 2.0 ppm, 1.7 ppm and 2.5 ppm in lettuce, perilla leaf, endive leaf and kale leaf, respectively, and about 50-80% of the chlorine was reduced in the initial 10 min appear.

Consumer Loyalty toward Organic Food Retail Stores: Perceived Value and Value Co-creation Behavior

  • Purpose: Consumers have become more interested in eating organic food in recent decades because of the effect of merchants' advertising. Eating organic food is also shown to strengthen immunity, especially during the recent COVID-19 pandemic. However, consumers may find it more difficult to choose organic food retailers than to purchase conventional goods. This is because of the uncertainty characterizing the process of selecting organic food retailers, despite the growing rivalry across supermarket chains that sell organic goods. This study explores how consumers' perceived image (social responsibility and ability image) of organic food stores affects consumer loyalty. Research design, data and methodology: The data for the analysis were collected using Macromill Embrain, an online research service agency. The data were analyzed using SPSS 26 and Smart PLS 4.0. Results: Based on structural equation modeling, the findings of the study demonstrate that store image positively impactsstore loyalty, and that the mediator (perceived value) affects the relationship between the two variables. Conclusions: Organic food stores must understand consumers to improve store loyalty. Efforts such as providing a user community that enables joint behavior by sharing experiences among customers or launching campaigns to improve consumers' perceived brand identity can increase store loyalty.

The Measurement of Oil Globule Size Distribution in the Soymilk Suspended with the Soybean Particle (대두입자가 분산된 두유에서 기름입자의 입도분포 측정)

  • Although the measurement of oil globule size distribution is necessary to detect the process of demulsification, the reasonable methodology for its measurement has not been suggested because the solution of soymilk contains insoluble soybean particle and the protein to interfere with the detection of oil globule or oil content. The oil globule size distribution was measured by the homogeneous suspension and cumulative method under gravitational force or centrifugal force, which were modified with Stokes' low. The geometric mean diameter of oil globules in this soymilk was $033{\mu}m\;and\;031{\mu}m$ under gravitational method and centrifugal method, respectively. The differences of oil globule size distribution in the solutions emulsified by different pressures were detected by this method. The mean diameter of the solutions treated at higher pressure was shifted to smaller size and the distribution pattern of the solutions at higher pressure became more compact around the mean diameter.

Implementation of Artificial Intelligence Systems for Agri-food Supply Chains: A Bibliometric Approach

  • Purpose: The present study is developed with the aim of mapping the trends in scientific production related to the implementation of artificial intelligence systems for agro-food supply chains. Research design, data and methodology: The methodological approach of the research shows a descriptive documentary process based on bibliometric techniques for mapping the main indicators of the area of knowledge through the establishment of a search equation in Scopus. Results: The research results show a total of 633 documents published between 2019 and 2023, with a great annual growth rate of 61.68%; In addition to a notable participation of countries such as India, China, the United Kingdom and the United States in the generation of new knowledge related to artificial intelligence applied to food distribution systems. Conclusions: It is concluded that the rise of new artificial intelligence technologies has shown extremely important results in the development of industries worldwide, with increasingly accelerated steps; which certainly translates into the creation of spaces and incentives in the production of research aimed at understanding these dynamics and in turn to propose new alternatives and proposals for the reduction of the large technological gaps that are present within the agro-food sector.
