The study examined dietary intake, satiety rate, and eating rate using rice bowls with an elevated bottom (diet rice bowl) and rice bowls with an elevated bottom and monitoring line (monitoring rice bowl). The monitoring rice bowl was used to help subjects monitor amounts they had eaten as they ate. Eighteen normal weight college female students participated in this study once a week for 2 weeks. Three hundred grams of fried rice in a diet rice bowl (1st week), and 300 g of fried rice in a monitoring rice bowl were served to the participants over 2 consecutive weeks. After each lunch, dietary intake, satiety rate, and eating rate were measured. The consumption amount of fried rice was 261.6 g in the diet rice bowl group, and 264.8 g in the monitoring rice bowl group. There was no significant difference in fried rice intake between the two groups. The satiety rate of fried rice in the monitoring rice bowl group was significantly higher than that of the diet rice bowl group after 1 hour and 2 hours (P<0.05). The eating rate of the diet rice bowl group (21.3 g/min) was significantly faster than that of the monitoring rice bowl group (18.7 g/min) (P<0.05). This result shows that food consumption monitoring can affect not only eating rate but also the subjective feelings of satiety after meal eating. Although more study is needed, these data suggest consumption monitoring in a rice bowl may help to control obesity and weight.
This study was conducted to investigate the effects of food consumption monitoring based on a digital photography method using a mobile phone on food consumption and weight reduction. Eighteen female college students (>30% body fat) participated in the weight control program using a mobile-phone for 4 wks. The energy intake was reduced significantly after 3 wks compared to baseline (P<0.05, baseline: 1,453.0 kcal, 3rd wk: 1,171.1 kcal, 4th wk: 1,130.8 kcal). The subjects lost 2.8 kg of body weight, 1.4% of % body fat, and 1.1 $kg/m^2$ of body mass index (BMI) after 4 wks. There were also significant differences in blood pressure (P<0.001) and serum cholesterol (total cholesterol: P<0.05, LDL-cholesterol: P<0.01) before and after the self-regulated diet program. In this study, the digital photography method using a mobile-phone influenced weight control through trained consumption monitoring, which helps individuals reduce discrepancies between perceived and actual consumption levels. Therefore, effective monitoring by taking food pictures using a mobile-phone can lead individuals to rely more heavily on easy-to-monitor visual cues.

This study investigated the effect of food consumption monitoring and real-time communication-based weight control program using a smartphone on weight reduction and maintenance in obese women. This study consisted of two phases: an 8-week weight control program with food consumption monitoring and real-time communication using a smartphone and an 8-week follow-up. Sixteen obese female college students (>30% body fat) participated in this program, and we measured changes in body composition and dietary intake volume. Follow-up analysis focused on weight maintenance after 8 weeks of no contact. Total energy intake (P<0.01), body weight (P<0.001), percent body fat (P<0.001), body fat (P<0.05), and body mass index (P <0.001) decreased significantly after the 8-week weight control program. However, we could not observe total energy intake or body composition regain after the follow-up period. These results suggest that food consumption monitoring and real-time communication using a smartphone can be effective for weight control and maintenance.
It was examined whether altering vision would influence food intake through consumption monitoring and whether this would be reflected in consumption estimate and satiety. The experiment was designed in two visibility levels: 1) an accurate visual cue (bowl covered with wrap) vs 2) a biased visual cue (bowl covered with foil). Thirty three female college students participated in this study. The subjects ate Kimbab in the lab once a week for 2 weeks. They were served 24 pieces of Kimbab in a bowl covered either with wrap or foil. The results showed that the actual Kimbab intake from the bowl covered with foil was significantly lower than the test using wrap ($13.4{\pm}3.3$ pieces vs $15.0{\pm}3.8$ pieces, p < 0.05). And there were no significant differences from the cognitive Kimbab intake between the tests with foil and wrap. However, the satiety rate of Kimbab in a bowl covered with foil was significantly higher than that with wrap at 1 hour and 2 hour after the Kimbab eaten (p < 0.05). Less consumed cases were recognized by subjects due to the inaccuracy during the consumption monitoring process. This result revealed that vision influences not only eating behavior but also subjective feelings of satiety after meal. In conclusion, the consumption monitoring by visual cues can play an important role in food intake and satiety rate.

This study was conducted to investigate the effects of food consumption monitoring using a camera-phone in a weight control program. Twenty-six female college students (>30% body fat) were randomly assigned to the camera-phone and diary (CD) group or diary (D) only group. During the 8-week weight control program, the CD group controlled their food consumption using a camera-phone, in which they took a food picture and uploaded it to the homepage. However, the D group used only a diary to record their food intake. The mean energy intake of the CD group during the program was 1451.9 kcal while that of the D group was 1524.3 kcal. The total energy intakes of both groups significantly decreased during the program. The CD group lost 5.2 kg of body weight and 3.1% body fat while the D group lost 2.2 kg of body weight and 1.1% body fat. The body weight and fat levels significantly decreased in the CD group compared to the D group. The triglyceride, total-cholesterol and LDL-cholesterol levels of the CD group as well as the total-cholesterol level of the D group significantly decreased during the program. The total-cholesterol and LDL-cholesterol levels both significantly decreased in the CD group compared to the D group. In this study, it was concluded that digital photography method using a camera-phone might influence weight control through trained consumption monitoring, which helps individuals reduce discrepancies between perceived and actual consumption levels.

This study was conducted to investigate the effects of real time communication digital photography method using Kakao Talk application in smart-phone for the fortification of food consumption monitoring and weight reduction. Thirty-four female college students were randomly assigned to the camera-phone (CP) group or smart-phone (SP) group. Each group participated in the weight control program for 8 weeks. The mean energy intake of CP group during program was 1353.5 kcal and the SP group consumed 1289.2 kcal. The total energy intake of both groups was significantly decreased during the program. The CP group lost 1.9 kg of body weight and 1.9% of body fat and the SP group lost 4.3 kg of body weight and 3.0% of body fat. The body weight was significantly decreased in the SP group compared to the CP group. The triglyceride and total cholesterol, and LDL-cholesterol level of SP group were significantly decreased during the program. However, there were no significant changes in CP group during the program. Also there were no significant changes in lipid profile between two groups. In this study, it is considered that real time communication digital photography method using Kakao Talk application in smart-phone might influence weight control through a trained consumption monitoring. Therefore, smart-phone can lead individuals to rely more heavily on easy-to-monitor visual cues.
The nutritional status is America has been monitored by National Monitoring System since 1960's, mainly conducted by United States Department of Agriculture. The data from these programs were computerized and distributed to researchers. Researchers have manipulated and recalculated the data to produce meaningful results. Korean nutritional status has been investigated by National Nutrition Survey ever year, including food consumption, biochemical measurements and demographic variables. The Korean Nutritional Survey has not been organized and integrated as much as the nutritional survey in the United States and its results have been presented no more than as a report. Its raw data should be distributed to researchers and researchers could use the data to get more information. The purpose of this study is to compare the measurement of food consumption in Korean and America using Korean Nutrition Survey and Continuing Survey of Food Intake by Individuals(CSFII), respectively, and to compare the consumption of fat and foods with a high fat content. The fat consumption in the Unite States has been decreased from more than 40% of total energy intake to 35%, while Koreas have consumed more fat according to the economic growth. However, the fat consumption in Korea was still much lower than that in the United States. Korean should pay attention to saturated fat consumption(animal fat), especially rich middle aged men, since they ate meat as much as much as men in the United States according to a recent study. In America availability of food with a low fat content(e.g. low-fat milk) and new recipes along with nutritional education has decreased fat consumption, especially animal fat, any more. Also, each consumption of polyunsaturated fat and saturated fat should be measured since the ratio of them are more important for preventing heart disease and some cancers.
This study was intended to help children to cultivate and develop a sound attitude toward food consumption and eating habits through the analysis of food and nutritional information in news articles and advertisements in three major daily children's newspapers in Korea: The Chosen Children's Daily Newspaper, The Hankook Children's Daily Newspaper, and The Donga Children's Daily Newspaper. The monitoring period was for twelve months, January to December 2003. Two hundred seventy-nine articles and three hundred thirty-five advertisements were analyzed. The results were as follows. 'Cooking and health' were the most frequent subject in food and nutrition articles. The articles' contents are evaluated positively in morality and explanation; but negatively in fairness, specialization, and objectiveness. The articles were insufficient in the explanation of professional terms, scientific bases, and practical measures for real life. It therefore seems that they were difficult for children to understand well. The most frequent themes in the advertisements were 'processed fats and sugars' such as chocolate, candies, and cookies. Frequently, they were exaggerated and accompanied by phrases promoting consumption. They did not provide sufficient well-grounded information, and focused too much on events or gifts to instigate consumer sentiment. In conclusion, the most serious problem was that most food and nutrition information in these children's newspapers was lacking in specialization. More specialized and objective information should be provided in order to enhance the educational value of children's newspapers and their utilization in school education programs. Continuous monitoring should be carried out to discover those news articles and advertisements that contain correct food and nutrition information.

Globally, rising energy costs and increased energy demand are important issues for the food processing and manufacturing industries, which consume significant amounts of energy throughout the supply chain. Accordingly, there is a need for the development of a real-time energy monitoring and analysis system that can optimize energy use. In this study, a food factory energy monitoring system was proposed based on IoT installed in a food factory, including monitoring of each facility, energy supply and usage monitoring for the heat treatment process, and search functions. The system is based on the IoT sensor of the food processing plant and consists of PLC, database server, OPC-UA server, UI server, API server, and CIMON's HMI. The proposed system builds big data for food factories and provides facility-specific monitoring through collection functions, as well as energy supply and usage monitoring and search service functions for the heat treatment process. This data collection-based energy monitoring system will serve as a guide for the development of a small and medium-sized factory energy monitoring and management system for energy savings. In the future, this system can be used to identify and analyze energy usage to create quantitative energy saving measures that optimize process work.

The purpose of this study is the establishment of scientific processes for making food safety policies. Thus, we investigated pesticide residue level of the agricultural commodities from market, and performed risk assessment. Fifteen agricultural items are chosen based on the frequency of Korean consumption. The samples were collected from 9 cities where populations are more than one million. Total 283 active ingredients were monitoring ( total sample number =232). Single-analysis of target pesticides was for three kinds of possible growth regulators and the multicomponent analysis was for 280 kinds of pesticides, a total of 283 species were selected to perform the pesticide residues. Before monitoring the analytes, the improvements of the analytical methods were done by method validations under the CODEX analytical method development guidelines and can produce metrics that represent the international standards applied in accordance with the guidelines. In addition to residual pesticides detected during monitoring we compare the ADI to EDI values using detected result and dietary consumption data which is extracted from annual market basket survey. The 163 samples were non-detected in the total 232 samples so it means that every agricultural commodity will residual pesticides-free in 70.3%. The detected residual pesticides showed for a total of 69 cases (29.7%). Two of samples violate Korean MRL (0.9%). The ratio of EDI compared to ADI resulted in only from 0.00087 to 0.902%. In result, we can assume that all detected residual pesticides are very safe level and current policies of Korean pesticides control may be working.
