To Predict Body Composition of Children and Adolescents by BIA in China

  • Objective : The paper aims to provide predictive coefficients via BIA for the assessment of body composition in children and adolescents to serve clinical as well as research purposes. Methods : Body composition via dual-energy x­ray absorptiometry (DXA) and bioelectric impedance as well as other anthropometric index were derived from meaurements on 1026 children and adolescents aged from 6 to 18 years from Beijing City. The best subset regression and principle component analysis were adopted to build the predictive coefficients with the logarithm of body composition via DXA as response variable. Results : Condition index ${\varphi}$ of fat-free mass multiple linear regression achieves 113.49 and 91.18 for males and females respectively, demonstrating severe multicollinearity among anthropometric indexes in children and adolescents. BIA predictive coefficients base on the best subset regression and principle component analysis boast a content predictive value for lean mass ($r^2$ = 0.9697 and 0.9664 for boys and girls respectively, p < 0.0001) and for Fat$\%$ ($r^2$ = 0.7705 and 0.6959 for boys and girls respectively, p < 0.0001). Conclusions : BIA method is applicable for the prediction of body composition for children and adolescents.

국(麴)의 종류가 고추장의 성분에 미치는 영향 (Effect of Kojis on the Component of Kochujang)

  • 고추장의 품질향상과 양조법을 개선할 목적으로 Aspergillus oryzae, Aspergillus kawachii, Aspergillus shirousamii의 균주를 사용하여 만든 koji로 각각 고추장을 담금하고 양조과정 중의 성분을 비교하였다. 그 결과는 Aspergillus oryzae구와 Aspergillus kawachii구의 고추장 사이에는 성분이나 품질면에서 큰 차이가 없었으나 Aspergillus shirousamii 12 균주는 Aspergillus oryzae균주에 비하여 고추장의 아미노태질소 함량이 높아 숙성도가 빠르고 고추장의 향기와 색상이 현재 개량식 고추장에 널리 이용하는 Aspergillus oryzae에 비하여 우수하였고, 기타 일반 성분면에서도 손색이 없었다. 다만 pH저하가 심한 것이 결점으로 나타났다. 따라서 Aspergillus shirousamii의 pH저하를 방지하여 고추장 양조에 사용하면 고추장의 품질 향상이 가능하다고 본다.

보리등겨로 제조한 메주의 향기성분 (Flavor Components of Barley Meju manufactured with barley bran)

  • 시금장 대량생산을 위한 기초자료로써 보리메주의 발효기간에 따른 향기성분을 조사하였다. pH는 발효기간에 따라서 pH $5.2{\sim}5.6$로 별차이가 없었다. L값과 b값은 발효기간이 지남에 따라서 점차 감소하였으며, a값은 발효 5일째까지는 점차 증가 하였으며 15일차이후에는 점차 감소하였다. 보리메주에서 분리 동정된 향기성분은 총 75종이었다. 관능기별로는 aldehyde와 ketone류가 각각 10종이 동정되어 다수를 차지하였고, acid와 phenol류가 각각 9종, alcohol류와 hydrocarbon류가 7종, ester류는 6종, pyrazine류는 3종, 질소함유화합물과 furan류가 각각 2종, 그리고 기타 11종이 동정되었다. 함량별로는 ethyl acetate가 $67.8{\sim}89.1%$로 가장 많은 함량을 차지하였으며, hexadecanoic acid($1.21{\sim}12.00%)$, tetramethylpyrazine($0.06{\sim}12.30%$) 등의 순으로 많았다.

전자코를 사용한 가열처리 야자유의 판별 (Discrimination of the Heated Coconut Oil using the Electronic Nose)

  • 본 연구는 야자유를 190, $220^{\circ}C$에서 24시간 가열한 후 6개의 MOS로 구성된 전자코로 산패정도를 판별하였다. 주성분분석 결과 제1주성분 값이 열처리 시간에 따라 +0.952에서 0.325로 감소하였다. 가열 온도를 높임에 따라 야자유의 산패정도도 증가하였다. 또 다른 방법에 하나로 GC를 바탕으로 한 SAW센서가 부착된 전자코를 사용한 결과 후각이미지가 뚜렷하게 차이가 나는 것을 보여주었다. 160, $220^{\circ}C$에서 가열한 야자유로부터 휘발 성분에 대한 GC peak의 수와 넓이가 가열온도와 가열 처리 시간에 따라 증가함을 보여주었다. 이러한 방법은 신속하면서도 곧바로 알기 쉽게 데이터를 이미지화함으로써 가열 처리된 야자유의 휘발성분을 전자코로 신속하고 간편하게 분석하여 가열 처리 정도가 예측 가능하였다.

명아주의 일반성분, 항산화활성 분석 및 흰쥐의 혈중 생화학적 분석에 관한 연구 (Studies on the general analysis and antioxidant component analysis of Chenopodium album var. centrorubrum and biochemical analysis of blood of mice administered C. album)

  • The purpose of this study was to develop new food materials by analyzing nutritional components and antioxidant activities of Chenopodium album var. centrorubrum. The highest amount of mineral obtained in C. album was found to be $1.01{\pm}0.07mg$ per 100 g of iron. The total phenolic content in C. album was found to be 3.77~9.57 GAE (gallic acid equivalent) mg/g. The reducing activities of leaves and roots of C. album determined using FRAP (ferric-reducing antioxidant power) were higher in ethanol extracts than water extracts. The ABTS radical scavenging activities of leaves and roots of C. album were $204.29{\pm}4.98{\mu}mol/g$ and $106.96{\pm}2.81{\mu}mol/g$, respectively. The DPPH radical scavenging activity was high upon extraction using ethanol (roots $20.71{\pm}0.04{\mu}mol/g$, leaves $71.08{\pm}0.33{\mu}mol/g$). HDL-cholesterol was significantly higher in the high fat diet groups supplemented with C. album than the control groups (p<0.05). These results suggest that C. album can be used as a natural antioxidant and a functional dietary supplement.

마카 품종별 조다당 획분의 대식세포 활성 (Macrophage Stimulating Activity of Crude Polysaccharide on Maca (Lepidium meyenii) Varieties)

  • Maca roots (Lepidium meyenii) are an important medicinal herb that have long been used by the Andes-indigenous peoples and South Americans. In Korea, recently, it has attracted attention as a health food material because of nutritional values and physiological activities. The purpose of this study was to investigate the industrial applicability of maca (red and golden varieties; R&G) as immunostimulating materials. In the macrophage stimulating assay using RAW 264.7 cells at 125~500 ㎍/mL of non-cytotoxicity doses, G-HW showed the most potent production of TNF-α, IL-6 and nitric oxide compared to red maca or the other extracts. The general component analysis results showed that all extracts comprised more than 90% neutral sugars with small amounts of uronic acid and protein. Meanwhile, component sugar analysis showed the difference in the content of uronic acids of cold- and hot-water extract. Additionally, the further fractionation of G-HW into crude polysaccharide (G-CP) greatly enhanced the macrophage stimulating activity, and G-CP contained macromolecules over 144 kDa, comprised mainly of glucose and galacturonic acid (51.0 and 34.9%). In conclusion, crude polysaccharide from maca showed industrial applicability as immunostimulating material, and especially golden maca showed higher macrophage stimulating activity than red maca.

A comparative study of the physical and cooking characteristics of common types of rice collected from the market by quantitative statistical analysis

  • Fifteen types of rice collected from Kurdistan region-Iraq were investigated by principal component analysis (PCA) in terms of physical properties and cooking characteristics. The dimensions of evaluated grains correspond to 5.05-8.75 mm for length, 1.54-2.47 mm for width, and 1.37-1.95 for thickness. The equivalent diameter was in the range of 5.23-10.03 mm, and the area took 13.30-28.25 mm2. The sphericity analysis values varied from 0.32 to 0.56, the aspect ratio from 0.17 to 0.39, and the volume of the grain was measured in the range from 4.48 to 17.74 mm3, hectoliter weight values were 730-820 kg/m3, and true density from 0.6 to 0.96 g/cm3. The broken grain ratio was 1.5-18.3%, thousand kernel weight corresponded to 15.88 to 22.42 g. The water uptake ratios for 30 min of soaking were increased at 60℃ compared to 30 and 45℃. The PCA was used to study the correlation of the most effective factors. Results of PCA showed that the first (PC1) and second (PC2) components retained 63.4% and 34.8% of the total variance, which PC1 was mostly related to hectoliter, broken ratio, and moisture content characteristics while PC2 was mostly concerned with hardness and true density. For cooking properties, the PC1 and PC2 retained 88.5% and 9.3% of the total variance, respectively. PC1 was mostly related to viscosity, spring value, and hardness after cooking, while PC2 was mostly concerned with spring value, hardness before cooking, and hardness after cooking.

국내 가공식품의 포장 재질, 형태 및 다양한 특징 분석 연구 (Analytical Survey on the Package Source, Components, and Various Characteristics of Processed Foods in Korea)

  • 본 연구에서는 한국의 가공식품 포장 특징(재질, 형태 등)을 분석하기 위해 다소비 식품에서 가공식품만을 대상으로 하여 품목별 소매점 매출액 순위에 따라 구성하였고, 이를 품목별 포장 형태, 품목별 포장 재질, 포장 형태별 포장 재질로 나누어 분석하였다. 또한, 품목별, 포장 형태별, 포장 재질별 접촉 비율과 두께를 측정하고 분석하였다. 국내 유통 중인 가공식품의 포장 재질별 사용 실태 조사 결과, 폴리에틸렌(PE, 43.61%), 폴리프로필렌(PP, 17.75%), 폴리에틸렌 테레프탈레이트(PET, 12.05%), 알루미늄(9.08%) 순으로 사용 빈도가 높아, 합성수지제를 가장 많이 사용하나 전반적으로 다양한 포장 재질을 사용하고 있는 것으로 조사되었다. 가공식품의 포장 형태별 사용 실태를 조사한 결과, EU 기준에 따른 포장 형태 총 21가지로 분류되었고, 가장 많이 쓰이는 포장 형태는 유연 포장재/봉투/파우치(38.96%)로 조사되었다. 본 연구는 가공식품 포장 재질, 포장 형태, 포장재 두께, 포장재와 식품의 접촉 비율 등의 구체적이고 방대한 양의 정보를 정리하여 국내의 가공식품 포장 현황을 반영한 조사로써, 향후 국내 식품포장 현황 분석 연구에 있어 기초 자료를 제공하는 데에 도움이 될 것으로 기대된다.

21세기 동북아 식량안보문제와 지역간 협력방안 (Food Security Problems in North-East Asia and Cooperative Measures in the 21st Century)

  • The issue of food security will become one of the most widely concerned area of public policy in North East Asia coming 21st century. Although those countries such as China, Japan, South and North Koreas and Mongolia places emphasis on the need to have stable and reliable capacity for food production, it will be highly possible for these regions to experience the shortage of food supply due to growing population, expanding urbanization and rapid industrialization within next decade. Since world food markets are characterized as unstable structure and dominated by large multinational firms, their reliances on importing staple food may create the aggravation of food shortage problem in emergency situations. One possible proposal for solving food security in north-east region might be movements toward multilateral food supply assurance agreements as a component of trade negotiations among these countries. As measures for cooperation for securing food supply in these regions, following principles would be suggested; 1) encouraging agricultural cooperation based on private business, 2) exchange of technical and human resources rather than material support, 3) developing mutual concern and benefits, 4) managing joint buffer stock for staple food.

  • Putative genes for a two-component signal transduction system (akbS and akbT) were detected near the alkylbenzene-degrading operon of Rhodococcus sp. DK17. Sequence analysis indicates that AkbS possesses potential ATP-binding and histidine autophosphorylation sites in the N- and C-terminal regions, respectively, and that AkbT has a typical response regulator domain. Mutant analysis combined with RT-PCR experiments further shows that AkbS is required to induce the expression of o-xylene dioxygenase in DK17.
