Use and Awareness of Nutrition Labeling of Snacks based on One Serving Size among University Students in Chungbuk (충북지역 일부 대학생의 영양표시 활용 실태 및 과자류 1회 제공량 기준 영양표시 인지도)

  • The study was carried out to investigate the efficacy of current nutrition labeling of processed foods and examine awareness among university students of nutrition information given current nutrition labels, and also awareness of the one-serving size of snacks that come in differently sized packages. A total of 100 students in Chungbuk, Korea participated in this study. About 60% of the subjects knew about nutrition labeling; however, a very small percentage (11%) of the subjects reported an experience of being educated about nutrition labeling. Also, just 32% of the students checked nutrition labels when they purchased processed foods. When understanding of nutrition information on labels of snacks in differently sized packaging was tested, over 80% of the subjects understood nutrition information accurately. Five different package sizes were studied. Of these 5, packages containing about 200% of one standard serving showed the highest rate of misunderstanding of total energy contents per container. Interestingly, the students most strongly preferred containers that contained 300% of one standard serving. From these results, we conclude that students consider the current recommendation for a serving size to be small, which may be related to misreading of nutrition labels of snacks that come in packages containing less than 300% of one standard serving size. To improve accurate understanding of nutrition labels of snacks, total package labels or dual column labels on packages containing less than 300% of one standard serving size should be considered.

  • The objectives of the present study were to assess the early nutrition-related knowledge, eating behaviors of preschool children, the types of messages that their mothers give to them about nutrition and to analysis the interrelationships among these variables. The children of this study showed the uncooperative eating behaviors most frequently when they had breakfast and vegetables. In these cases the most frequent mother's messages given to the children was encourage eating some of each food. Children's eating problems as perceived by mothers were mainly low dietary intake and an unbalanced diet. The most frequent messages given to the children in the presentation of new foods were telling the child taste them and general nutrition about the new food. General topics in nutrition the mothers had discussed with their children were about nutrients, food groups, food transformations and food origins. Children whom mothers provided more information about these topics scored significantly higher on the concepts of food transformation, food origins and the total nutrition knowledge score. It is clear from this study that preschool children begin to learn about nutrition through these parental messages. Both parents and caretakers of young children should recognize the potential importance of these early interaction patterns.

Effect of Motivations and Attitudes toward Nutrition Information on College Students' Use Intentions of Menu Labeling at University Dining Services (대학급식 영양정보 표시에 대한 태도 및 이용동기가 이용의도에 미치는 영향)

  • A menu labeling initiative is a lawful regulation with an aim to promote public health by providing customers the right to make informed menu choices. As college years are a critical period in which students form dietary habits, which are sustained throughout their lives, provision of nutritional information at the university dining services is important to students' health and life. Due to the lack of research on menu labeling at university dining services, the purpose of this study was to examine college students' attitudes and motivations toward menu labeling at university dining services, as well as their use intentions toward nutrition information at university dining services. Data were collected from a self-administered survey distributed to 484 college students who had experienced university dining services. Motivations of university students toward menu labeling were categorized into 'knowledge pursuit' and 'health pursuit'. Students' attitudes toward menu labeling had a positive effect on their intention to use menu labeling at university dining services. The findings of the study indicated that female students, or those who frequently used nutrition information, tended to have higher attitudes, motivations, and use intentions toward nutrition information. The study results suggest that facilitation of healthy eating environments at university dining services by offering nutrition information, and nutrition and health education is necessary.

Development of Web Pages for Consumer Education on Health Claims on Health/Functional Food

  • This study developed learning content and web pages providing information on Health/Functional Food (HFF) for consumers who come across information indiscriminately from a variety of advertising media such as the Internet and TV. After coming to an understanding of the current situation through literature review and fact-finding, we collected information and commercials on HFF that are exposed to consumers. Focusing on advanced countries such as the U.S. and Japan, we examined the current status of consumer education programs, especially in terms of HFF industry. Further, we referred to the guidelines for consumer education provided by the U.S. Food and Drug Administration and monitored the information from a web site that sells dietary supplementary products in the U.S. In addition, we surveyed consumer information on foods for special health use provided by the Japanese National Institute of Health & Nutrition, and investigated a DB of raw materials of function food (functionality/safety documents). Upon a literature review, the 13 functions of HFF were classified. As a result of conducting interviews with consumers, we developed content that was fit for consumers' perspectives. Through this research, we established a web page to enable people to search for information by function and then by raw material. After searching for information by raw materials, searching products by raw materials can be done in cooperation with E-marketplace. Subsequently developed content and education programs were offered on an HFF web page, which has been in operation since 2005. Therefore, it is expected that appropriate information on HFF will be available.

The Effect of the Use of Nutrition Labeling on Dietary Attitudes, Dietary Habits, Nutrition Knowledge and Application of Nutrition Information to Daily Life among Housewives in Gyeonggi-provincial Area (경기지역 주부들의 영양표시 확인 여부에 따른 식태도, 식습관, 영양지식 및 영양정보의 실생활 반영정도 비교)

  • This study surveyed 266 housewives residing in a Gyeonggi-provincial area for their dietary attitudes, dietary habits, nutrition knowledge, and application of nutrition information to daily life according to whether they use nutrition labeling. The survey on the dietary attitudes of the subjects showed that the points of "think that nutrition affects health", "quite interested in nutrition and health information", "like developing and trying new diverse recipes", and "persistently try new foods" were higher among those who check out nutrition labeling (Check group, n=112) than those who do not check out nutrition labeling (No check group, n=154). Reason for snacking, the Check group reported higher in the reasons of "for taking nutrients" but lower in the reasons of "do not eat enough meal" and "impulsively" than the No check group (p<0.01). Asked about why they check the nutrition labeling, the Check group answered "to compare products with each other" and "to purchase healthy food" whereas the No check group said "to decide whether the food is safe or not" and "to reduce body weight" (p<0.01). The Check group showed more recognition on the significance of the nutrition labeling and application to their actual daily lives than the No check group. Therefore, our results suggest that proper use of nutrition labeling is expected to improve dietary attitudes and dietary habits as well as enhance the application of nutrition information to actual daily life and promote health not only for the housewives but also for their family members as well.

Development and Evaluation of Nutrition Education Program through Internet (인터넷을 이용한 영양교육 프로그램 개발 및 평가)

  • This study was undertaken to develop and evaluate a nutrition education program with internet for students. A survey was conducted to find out needs for nutrition education program with 430 college or high school student in October, 1997. Eighty four point eight percent of female and 36.0% of male students had a plan to reduce their weight in a near future. Forty four point four percent of subjects obtained information about weight control from mass media, 28.6% of subjects obtained from their neighbor's recommendation. The information wanted to know were high-calorie foods, answered by 42.1% of females, and calorie expenditure of exercise, answered by 31.9% of males. The obese group showed higher preferrence to sweet foods, salty foods, hot foods, convenience foods, processed foods, animal foods, fried and oily foods, and eating-out than normal group(p<0.05). The obese group also showed a tendency of bad food habits, low intake of seaweeds, high intakes of animal fat, cholesterol-rich foods and salty foods. Amount of food intakes was inappropriate in obese group. An internet program for nutrition education was developed using the results of the survey and juvenile nutrition programs. The program consisted of 6 steps ; step 1 was to check one's physical status, step 2 was explanation about good food habits, step 3 was about food management, step 4 was methods of exercise for health, step 5 included how to maintain ideal weight, and step 6 was related-internet site. Pre-education test and post-education test was conducted to evaluate the nutrition education through internet. The score of nutrition knowledge increased from $74.2{\pm}7.4$ to $77.2{\pm}9.6.$ The score of food attitude did not change. The subjects wanted more information about nutrition from internet. Therefore, internet program of nutrition education with specific and interesting topics should be developed more.

Perception and Usage of Food & Nutrition labels in Junior High School Students (청소년의 식품영양표시에 대한 인식 및 활용실태)

  • Even though snacks or meals purchased by teenagers have dramatically increased in Korea, it has not been investigated whether teenagers know and take notice of the nutrition label. Therefore, in this study, we investigated the usefulness and utilization of food and nutrition labels amongst teenagers. Questionnaires were distributed 814 of junior-high school students and were completed by self-administrated questionnaires. Questionnaires included questions regarding general characteristics, perception and utilization of food and nutrition labels and degree of necessity and satisfaction on food products and nutrition labels. Data was analyzed with regards to sex and school year by using a SAS package program. Significant differences of each variable were tested by using the $x^2$-test, t-test and ANOVA. Only 4.4% of participants were well informed about food and nutrition labels, while 26.0% of them did not know about it. Most of participants(78%) perceived that food and nutrition labeling system is necessary but are not satisfied with it. More of them did not check the food and nutrition label when they purchased food. Students usually checked the food and nutrition label to know about the nutritional value, and additives. The survey showed that more than three quarters of participants take notice of the food and nutrition label on products whereas only 57.7% of them knew what the food and nutrition actually meant. This study showed that most teenagers did not know the food and nutrition label, didn't have right information and didn't use it. Therefore, it is necessary to include an educational program about the food and nutrition label in the school curriculum and that will help students use the nutrition label and help them choose healthy food.

  • This study examined the understanding and use of information on nutrition labels based on one serving size among female consumers above the age of 20 in Seoul area. According to the survey, 69.9% of respondents were aware of the current system of nutrition labeling based on one serving size, and 51.8% of the respondents expressed their dissatisfaction with the system because the nutrition labels were difficult to understand or appeared unreliable. The nutrition label literacy of the consumers varied with respect to different packaging units. The respondents were likely to be less accurate in calculating the expected caloric intake when only portions of a multi-serving package were used. Initially 69.0% of respondents reported that they had read the nutrition label before purchasing a product but 91.9% of respondents said that they would check the label after learning how to read the label properly. It is very important to make consumers aware that the labels are very reliable sources of nutrition information. A public education campaign on the use of nutrition labels should focus on developing the consumers' ability and skills in using the label information when choosing foods.

A Study on Vitamin C Content of Nutrition Emphasized Products (영양강조표시제품 중 비타민 C 함량 조사)

  • Objectives: Vitamin C has various functions such as antioxidative effect and supporting absorption of iron (Fe). Aim of this present study was to provide vitamin C nutrition information and to briefly evaluate absorption interaction of vitamin C and Fe content of vitamin C emphasized products. Methods: Vitamin C emphasized foods including beverages, cereal, snacks, chocolate products, other cocoa products, and sugary products were examined by HPLC. Fe contents in samples after dry-ashing were examined by ICP. Results: Vitamin C content ranges in various products tested were the following: beverages (n=11) $20.15{\pm}0.08{\sim}845.41{\pm}6.07mg$, cereal (n=11) $52.50{\pm}0.23{\sim}262.50{\pm}0.07mg$, snacks (n=1) $50.00{\pm}0.25mg$, chocolate products (n=1) $311.73{\pm}2.44mg$, other cocoa products (n=1) $311.73{\pm}2.44mg$, other sugary products (n=2) $52.50{\pm}0.23{\sim}262.50{\pm}0.07mg$. Vitamin C (n=27) analysis values ranged from 82 to 450% of the labeled value. Vitamin C content in vitamin C emphasized food (n=6) was estimated 7.7 times~56.6 times more than Fe content. Conclusions: Analyzed samples ranged more than 80% of the labeled value in vitamin C emphasized products, which complied with food labeling regulation. But, beverages (n=3), cereal (n=4), chocolate products (n=1) were 2 times more than the labeled value. To provide accurate nutrition information, food manufactures should supervise nutrition labeling and understand the interactions between nutrients. Also, consumer should decide about the adequate amount of nutrient intake by thoroughly checking nutrition labeling.
