  • The associations between dietary, body composition and sexual maturation were investigated among Korean girls of pubertal age in this study. Dietary intakes were collected by 3 day food records, body compositions were measured by bio-impedence analyzer and sexual maturation stages were determined with a self-administrated questionnaire using Tanner stages in 1,114 girls 9-13 years of age. Girls were divided into early maturation (EM) and late maturation (LM), based on the comparative maturation stages of breast and pubic hair among the same age groups by months. Subjects were excluded if their stage of maturation could not be divided into early and late groups. EM and LM groups consisted of 42.8% and 38.9% of subjects by breast stage and 67.4% and 22.8% by pubic hair stage. Girls in LM group had significantly lower in height, weight and bone mineral contents (p < 0.05). When nutrient densities of average daily intake of the two groups were compared, folate density was significantly higher among the LM group of breast stages (p < 0.01), and Ca, P, K, Vit. $B_1$, Vit. $B_2$ and folate densities were significantly higher among the LM group of pubic hair stages (p < 0.05). These results show that intakes of some micronutrients differ between children with faster and slower sexual maturation velocities at early pubertal stages. More longitudinal studies are needed to confirm whether such differences are consistent throughout the pubertal period.

  • The achievement of maximal peak bone mineral density (BMD) in early life is one of the most important strategies for the prevention of osteoporosis, which is affected by nutritional status. However, it has been reported that young Korean women do not consume the optimal levels of nutrients because of the frequent practice of body weight reduction. Therefore, this study was conducted to investigate the relationship between nutrient intakes and BMD in young Korean women. Bone mineral density was measured at the lumbar spine by dual-energy X-ray absorptiometry. Information on health status, lifestyle and physical activity was obtained by questionnaire. Dietary intake was ascertained from a 3-day dietary record. The study sample included 112 Korean women aged 20$\sim$39 yr. In accordance with the energy intake of subjects, individuals who had an energy intake that was greater than 80% of the Korean Dietary Reference Intake (KDRI) were assigned to the control group (Control), while those who had an energy intake lower than 80% of the KDRI were assigned to the low intake group (LI). The intake of all nutrients in the LI group was significantly lower than that of the Control. Control subjects also showed nutrient intakes higher than the KDRI, except for Ca and folate. However, LI subjects showed intakes of energy, fiber, Ca, Fe, K, Zn, vitamin A, vitamin B1, vitamin B2 and folate that were lower than the KDRI. The BMD of the lumbar spine in LI subjects was significantly lower than that of the Control subjects. These results suggested that lower nutrient intake has a negative impact on BMD in young women.

  • The purpose of this study was to evaluate the effect of a weight control program on anthropometric values, serum lipid profiles and nutrient intakes. The subjects of this study were 38 obese children (boy : 17, girl : 21) with obesity index over 120%. The weight control program for obese children included nutritional education (50 min) and exercise (50 min) for 10 weeks. The nutrition intakes of the children were surveyed before and after the weight control program by 24hr recall test. The BMI, R$\ddot{o}$hrer Index, Obesity Index, WHR (Waist - Hip ratio) and body fat(%) were significantly decreased after completion of the weight control program. The total cholesterol and HDL-cholesterol of subjects were significantly increased after the weight control program. Distribution of serum lipid profiles was slightly changed. The energy intakes were significantly decreased (p < 0.001). from 1760.8 kcal to 1435.2 kcal. In addition, the intakes of P, Zn, retinol, vitamin $B_1$, vitamin $B_2$, vitamin E and niacin were significantly decreased. while intakes of vitamin C and folate were increased. Calcium and folic acid were upper 25% of subjects, under EAR(Estimated Average Requirements) intake before the weight control program. The distribution of energy intakes was significantly changed into positive status; fat percentage was decreased 26.3% to 22.1% (p < 0.01). Carbohydrate was increased 58.6% to 61.2% (p < 0.05). Meal distribution of energy intakes was changed; calorie percentage from lunch significantly increased from 32.2% to 38.3%. Calorie percentage from snack significantly decreased from 17.7% to 13.5%. In conclusion, weight control program for 10 weeks is effective in obesity index and nutrient intakes although serum lipid values were a little changed.

  • The purpose of this study was to develop a computer software program for nutritional assessment using a Semi-Quantitative Food Frequency Questionnaire (SQFFQs) and the 24-hour Recall Method. The software for the SQFFQ was divided into input, output, and database. For dietary analyses, recipe and food databases were used. The recipe database included 25 items and the food database was divided into 18 food groups. The food database was composed of 19 general nutrient items, 33 fatty acids, and 18 amino acids. The software developed in this study can be summarized as follows: 1) input items related to the individual s ages information, lifestyle, biological values, and dietary habits; 2) individualized data in percent of the Korean RDA, the energy ratios of carbohydrates, proteins and fats, the ratio of animal to plant source intakes, and the distribution of food group intakes; 3) Statistical data on the individual's information, lifestyle, biological values, and dietary intakes including the frequency of intake of cooked foods, the amounts of food, and the number of food groups, and nutrients. In the 24-hour Recall Method, the input and output consisted of the individual s information and cooked dish intakes. The individual s report included the amounts of nutrient intake according to number of meal and days, in comparison to the Korean RDA, the energy ratio for carbohydrates, proteins and fats, the ratio of animal to plant source intakes, and the distribution of food group intakes. The statistical report presented the number of food groups and foods, and the nutrient intakes. To evaluate the validity of the SQFFQ, the Spearman Rank Order Correlation and kappa values were used. As a result, correlation coefficients comparing the 24-hour Recall Method appeared to be more than 0.5, except for vitamin $B_1, B_2$, niacin, and vitamin E. The kappa values for energy and carbohydrate intakes were both 0.7, and protein, fat, vitamin C, folate, Ca, and iron intakes ranged from 0.3 to 0.7.

  • This study was carried out to see dietary intakes of patients with coronary heart disease since we don't understand their dietary patterns even though the mortality and prevalence rate of coronary hear disease are increasing in this country. We studied 75 coronary heart disease patients and 150 randomly selected controls, matched for age, sex, height and weight, in a population based study. All subjects completed a questionnaire that included disease history, diagnosis time, current treatment, etc., a 24 hour dietary recall, and measurement of height and weight. Compared to controls, patients had less likely to drink alcohol and smoke cigarette (p<0.05). The energy intake of patients was significantly lower than that of controls, but the intakes of fiber, $\beta$-carotene, sodium, folate, vitamin C, potassium in male patients and those of vitamin C and sodium in female patients were significantly higher than those of controls (p<0.05). Mean adequacy ratio and dietary variety score of patients were also higher than those of controls (p<0.05). Patient group's consumed less cereals than controls, but more vegetables, milk products, and nuts in male patients and fruits, beans and seasonings in female patients compared to controls'. There were not significant differences of lipid compositions between two groups, except linolenic acid. These data suggest that patients with coronary heart disease in Korea had better dietary nutrient intakes compared to healthy controls, which might be helpful to prevent recurrence of coronary heart disease.

  • Sa-Sang, one of the Korean traditional medicines, classifies people's constitution into 4 types, which are referred to as Tae-Yang-In, Tae-Eum-In, So-Yang-In and So-Eum-In. The purpose of this study was to examine demographic and dietary factors and to test any significant differences between Sa-Sang constitution and related factors. The participants were 483 college students and the data of 428 students were finally analyzed. Constitution was determined identically through both the questionnaire on Sa-Sang constitution and an inquiry by a Korean traditional medical doctor. Tae-Eum-In showed statistically significant higher BMI and higher smoking frequency. Tae-Eum-In also had significantly higher intakes in iron, potassium, sodium, vitamin B$_1$, niacin, $\beta$-carotene and vitamin E. So-Eum-In had significantly lower intakes in protein, phosphorous, and folate. From this study, we could expect to get some scientific, objective and accurate diet information on the types of constitution. Considering the fact that most chronic degenerative diseases could be developed by any lifestyle factors, it is necessary to conduct educational programs about lifestyles including the dietary habit for maintaining good health. Therefore, it will be better to continue a long-term follow-up study on any chronic degenerative disease based on the types of Sa-Sang constitution in the future. • In order to investigate dietary risk factors for hypertension in th elderly, dietary intakes and dietary habits of 405 elderly subjects, aged 60-94, were assessed by the questionnaire, anthropometric measurement and a 24-hour dietary recall. The prevalence of definite (>95mmHg for diastolic or>160mmHg for systeolic blood pressue) and borderline(90-95mmHg for diastolic or 140-160mmHg for systolic blood pressure) hypertensive subjects 33.3% and 19.3%, respectively. The distribution of the subjects for Body Mass Index(BMI), waist-hip ratio, and alcohol consumption were significantly different among definite, borderline, and normal groups(p<0.05). The distribution of the subjects for smoking, exercise, and preference of salty food were not significantly different among definite, borderline, and normal groups(p>0.05). From the generalized logistic regression analysis of the risk factors for the hypertension, the subjects with over 27 of BMI had significantly higher risk of hypertension. Alcohol consumption and preference of salty food were significant risk factors of hypertension in the elderly. Dietary risk factors for the hypertension that had significant relationship to the hypertension were intakes of potassium, calcium, phosphate, sodium, vitamin B1, niacin, and folate. There was no significant difference of consumption frequencies of food and dish among definite, borderline, and normal groups(p>0.05). The amount of intakes for cereals and grain product, bean and their products, eggs were significantly different among definite, borderline, and normal groups(p<0.05). In summary, the amount of dietary intakes to hypertension in elderly population. Longitudinal studies for dietary risk factors on incidence of hypertension are needed in general population, especially in the elderly.

  • The objective of this study is to investigate the effects of dietary nutrient intakes for markers of blood glucose and inflammation which is important to the progress of type 2 diabetes and the development of its complications. For this study, 76 adults with diabetes (42 males, 34 females) were recruited from a group of patients who had visited the department of endocrine medicine. Data on anthropometric characteristics, clinical indices such as hemoglobin A1c (HbA1c) and C-reactive protein (CRP), and dietary nutrient intakes were collected. Our results have shown that 66% of subjects were either overweight or obese. Serum analysis indicates that levels of C-peptide, glucose, HbA1c, CRP, triglyceride, LDL-cholesterol were higher than normal range. Results from the dietary nutrient intake survey displayed that intakes of cholesterol and sodium were higher than Dietary Reference Intakes for Koreans. On the contrary, folate intake was lower than the guideline. Within the females, energy contribution from carbohydrate was higher than Korean Diabetes Association guideline. Statistical analysis has revealed a negative correlation between serum HbA1c level and dietary intakes of polyunsaturated fatty acid (PUFA), n-3 PUFA, ${\beta}$-carotene and vitamin E after adjustments for age, BMI, smoking habits, alcohol consumption, exercise and ingestion of diabetes mellitus medication (p<0.05). Serum CRP level was inversely associated with dietary intakes of carbohydrate, protein, vitamin C and fiber (p<0.05). Our results suggest that dietary nutrient intakes may influence the levels of HbA1c and CRP, and subsequently, it may help in the management/treatment of type 2 diabetes.

  • The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin $B_6$, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.
