Developments and Trends in Fisheries Processing: Value-Added Product Development and Total Resource Utilization

  • Changing concepts in fishery science increasingly are recognizing depletion of traditional stocks, utilization of alternate(non-traditional) species, demand for high quality products, and a total resource utilization approach. Innovative practices are occurring in fisheries processing wherein solid and liquid discharges are no longer treated as 'waste,' but rather as valuable feedstocks for recovery of a variety of value-added ('value enhanced') by-products. Among these are protein hydrolysates, soluble proteins and amino acids, proteolytic enzymes, flavor and flavor extracts, pigments, and biopolymers such as chitosan. Properties and applications of this deacetylated derivative of chitin are noted. Crustacean processing by-products are discussed in terms of their serving as materials for generation of natural flavors and flavor extracts, and products such as fish sauces using contemporary enzymatic techniques. Various food and feed applications of fisheries processing by-products are illustrated with increased usage seen in formulated diets for an expanding aquaculture market. Examples are given of aquaculture becoming increasingly significant in global fisheries resource projections. Critical issues in the international seafood industry Include those of seafood quality, processing quality assurance (HACCP), and recognition of the nutritional and health-related properties of fisheries products. A variety of current seafood processing research is discussed, including that of alternate fish species for surimi manufacture and formulation of value-added seafood products from crawfish and blue crab processing operations. Increasing emphasis is being placed on international aspects of global fisheries and the role of aquaculture in such considerations. Coupled with the need for the aquatic food industry to develop innovative seafood products for the 21st century is that of total resource utilization. Contemporary approaches in seafood processing recognize the need to discard the traditional concept of processing 'waste' and adapt a more realistic, and economically sound, approach of usable by-products for food and feed application. For example, in a period of declining natural fishery resources it is no longer feasible to discard fish frames following fillet removal when a significant amount of residual valuable flesh is present that can be readily recovered and properly utilized in a variety of mince-based formulated seafood products.

Extraction Methods for Recovering Malachite Green and Leucomalachite Green (추출방법들에 의한 Malachite Green과 Leucomalachite Green 회수율)

  • Malachite green (MG), a triphenylmethane dye, is carcinogenic, mutagenic, teratogenic, a respiratory toxin, and causes chromosomal fractures. It is not permitted for use as an aquaculture veterinary drug in a number of countries. Sensitive extraction methods for MG and leucomalachite green (LMG), which have long residence times in fish tissues, were developed. For LMG, the average recovery of liquid extraction (LE) ranged from 41.71 (yellowtail) to 71.60% (snakehead); the recovery of liquid-liquid extraction (LLE) was between 67.68 (yellowtail) and 83.68% (snakehead); and the average recovery of solid-phase extraction (SPE) ranged from 84.16 (yellowtail) to 92.92% (shrimp). The recovery of MG was less than 30% with SPE. However, the dye is found primarily as the colorless reduced leuco form in fish tissues.

Current Status and Future Directions of Fish Vaccines in Korea (국내 수산용 백신 개발 현황 및 발전 방향)

  • In Korea, fish is a major food source, and sustainable production of fish is critical for the aquaculture industry. Recently, infectious diseases have become an unavoidable problem in aquaculture and have caused serious economic losses. Therefore, there is an urgent need to overcome this challenge to increase productivity in aquaculture. Vaccination is the most effective and long-term measure for improving the management of a fish farm. Sales of fish vaccines in Korea have been steadily increasing, with a confirmed increase from 600 million won in 2007 to 3.4 billion won in 2018. As of 2021, 30 licensed fish vaccines, including both single and combination vaccines containing more than two inactivated pathogens, have been approved in Korea for 10 fish pathogens. Twenty-eight of these are used in olive flounder Paralichthys olivaceus; however, only two vaccines are used in starry flounder Platichthys stellatus, red seabream Ragrus major and rock bream Oplegnathus fasciatus. Therefore, vaccine development is required not only for the olive flounder but also for other cultured fish species. The development of effective vaccines and vaccination programs for fish is a continuous requirement for a sustainable aquaculture industry.

Analysis of estimating fisheries resource catch amount in recreation fishing vessel (낚시어선 어획량 추정에 관한 연구)

  • Since South Korea did not adopt the recreation fishing using right (coupon) system, there were no recreation fishing statistics. This study selected 480 fishing vessels (10.4%) of a total of 4,611 fishing vessels (as of December 2019) as a survey sample using stratified sampling. Unlike other research institutes that conducted surveys related to the amount of tide on a one-time, this survey was conducted for five months (from May to October 2020, except the month of August). The captain investigated about types of fish, size, weight, etc. to anglers. A difference from previous studies was that about 7.0 million angler population (fishing more than three times a week) had 19.4 kg of catch per person for a year while other studies showed about 25.5-52.0 kg, respectively. The total fisheries resource catch amount was analyzed to be about 95,000 tons in this study and 116,000-166,000 tons in other studies. So there was a difference of about 1.2 to 1.8 times. This study aims to lay the foundation for the development of the fishing industry by preparing accurate statistical data and securing reliable basic statistics related to the fishing industry. Also, it could be usefully used as basic policy data such as introduction of a fishing using right (coupon) system.

Efficient eliminating methods of noises imbedded acoustic signals (음향 신호에 내재된 잡음의 효율적인 소거 방법)

  • The hydro-acoustic technology has been widely used in not only South Korea but also many foreign countries for various scientific purposes. Unfortunately acoustic data especially collected from field surveys may contain noises caused by a variety of sources. Therefore, it is exceedingly important to eliminate noises when acoustic data are analyzed to derive quantitative results. This study introduced two methods for eliminating noises easily and effectively using post-processing software. Used acoustic data were collected on the Jinhae bay and Tongyeong coast of the South Sea in April 2015. The first method, that is the Wang's method, placed emphasis on 'erosion filter' to eliminate only data samples contaminated by noises. The second method (Yamandu's method) focused on the 'resample by number of pings' to remove pings contained noises. To substantiate the effectiveness of two methods, the mean Sv (Volume backscattering strength), mean height and depth of the fish schools detected were compared between before and after using the noise elimination methods. In the Wang's method the mean Sv was decreased from -52.4 dB to -52.9 dB, and in the Yamandu's method from -52.6 dB to -53.3 dB, indicating that noises were successfully eliminated. The mean height (1.5 m) and depth (19.0 m) were same between before and after using two methods showing that the shapes of fish schools were not changed.

A Study on Prediction and Development of Prospective Fisheries-Related Jobs in Korea (우리나라 수산업의 유망직종 예측과 개발에 관한 연구)

  • The purpose of this study was to explore new fisheries-related jobs in the future. The study is based on a thorough literature review and in-depth interviews with experts in the fisheries industry. The major findings of the study were as follows: First, new fisheries-related jobs that surpass the fitness rating of 90% and earn more than 3 on the prospect scale are expected to be found mostly in professional fishery sectors. In the production and processing sectors, fishery quality control manager, marine product cooks, and raw fish cooks looked most promising. In the fishery marketing and distribution section, on the other hand, marine tour consultants, marine product distribution consultants, underwater guides, online marine product traders, marine sports consultants, and marine safety specialists ranked high on the list.

  • History of the fisheries education in the secondary schools in Japan has began in 1901, and it greatly contributed to the development of fishing industry in Japan. Also this education system affected to her some neighboring countries. e.g. Korea, Taiwan, etc. According to the fundamental change of the education system after cease of the 2nd World War, fisheries middle schools were rearranged to fisheries high schools. and the activity of the graduates widely contributed to push up the total catch of fish in Japan to the first world rank since the 1970s. Nevertheless, the education in fisheries high schools is confronted to much problems, because of the rapid decrease of the man power who desires to work in the field of fisheries especially onboard fishing vessels in accordance with the rapid progress of industrialization and service economization. Such problems are taking place not only in Japan but also right now in Korea. To find out some countermeasure against the problems. the auther studied on the present status and the problems confronting in the education of fisheries high schools in Japan through some references. with heartful desires this study to be able to contribute to the sucessive development of the education on fisheries high schools and also the productivity of fisheries in Korea.

Structural Change and Development Direction of The Fisheries Port Market (수산물 산지시장의 구조변화와 발전방향)

  • The study analyzed the current status of fisheries port market and presented the direction of developments. The fisheries port market has become increasingly widespread due to the aging of the facilities and the scale of the fish product trade, and the number of distribution workers has also increased. The problems of fisheries port market are as follows. First, the transaction structure was changed as the proportion of aquaculture products increased. Second, the trading structure has changed, but it has failed to keep pace with the changes in the production structure. Third, the volume and amount of fish traded in aquaculture products and fish stocks increased. As a result, the growth rate of the fisheries port market is decreasing and profitability is deteriorating. The development direction of the fisheries port market is as follows. First, it is necessary to standardize the fisheries port market facilities, according to the type of fish products. Second, it needs to diversify its trade targets such as processed fish products and imported fish products. Third, it is necessary to diversify the business of the fisheries port market in order to increase profitability.

Diet of Juvenile Gold-eye Rockfish Sebastes thompsoni in the Yellow Sea Bottom Cold Water (황해 저층 냉수대에 출현하는 불볼락(Sebastes thompsoni) 치어의 위내용물 조성)

  • The diet composition of juvenile gold-eye rockfish, Sebastes thompsoni (40-50 mm SL), was examined based on 121 individuals collected in the Yellow Sea Bottom Cold Water in August 2016. The Yellow Sea Bottom Cold Water is characterized a by water mass of <$10.0^{\circ}C$ and 33 psu. The juvenile gold-eye rockfish fed on Amphipods [57.3% index of relative importance (IRI)] and Euphausiacea (32.9%). Most of the point in the prey-specific abundance plot indicated a high between-phenotype component (BPC).

The Study on the Reorganization of the Large Purse Seine Fisheries in Korea (대형선망어업의 생산력 재편과 경영 개선 과제)

  • The aims of this study are to examine urgent problems for reorganization into future-proof large purse seine fisheries in order to positively cope with rapidly changing domestic and foreign fisheries circumstances. First, this paper provides current situations of the large purse seine fisheries. The current situations of it are composed of fisheries influence such as vessel number, vessel power, and fisher number, use of resource and fishing places, and changes in products and sales of species caught by the large purse seine. Secondly, this paper reviews current problems of the large purse seine fisheries including cost reduction and increase of value added. Thirdly, this paper suggests basic development direction and countermeasures for strengthening competitiveness of the large purse seine fisheries. In conclusion, urgent problems of the larger purse seine fisheries can be summarized as inefficiency of distribution structures and retarded landing system and facilities as well as the worse of profitability according to shrink of fishing places, reduction of products, lack of workers, and increase in oil price. To solve the urgent problems, the large purse seine fisheries should be changed into an industry with low cost and high efficiency, and also need to introduce of new production system, strengthen autonomous management of natural resource, and increase in value added to products.
