Evaluation for Concentration of Residual PCDD/Fs in Pig Feed (돼지사료 중의 다이옥신 잔류 평가)

  • Dioxins are chemical substances that are not properly decomposed degradation under natural photochemical, biological and chemical conditions in the environment, and bio-accumulate through the food chain, so pose a risk of causing adverse effects to human health and the environment. Ninety seven percent of human exposure to dioxins comes through meat, fish, dairy consumption and so on. Pork is the largest proportion meat aspect of daily intake in the Korean food. Pigs are three times more than Cattle in terms of breeding population and production amount in the world, and the amount is increasing every year. Therefore, it is necessary to monitor the exposure level of dioxins in pig's body. Also, it is required to evaluate the presence of these chemical substances in the pig's feed grain such as corn, soybeans, and tallow. The purpose of this study was to evaluate PCDD/Fs in pig's feed to search the origin of PCDD/Fs. Feed samples obtained were wheat from East Europe, corn from South America and America, soybean meal from Korea, America, South America and India and tallow from Korea. The preparation of samples was based on the EPA method 1613. Instrumental analysis was based on the use of high resolution gas chromatography coupled to high resolution mass spectrometry (HRGC/HRMS). The concentrations of 2,3,7,8-tetrachlorodibenzo-p-dioxin (TCDD) and 1,2,3,7,8-pentachlorodibenzo-p-dioxin (PCDD), which are the most toxic potent dioxins, were not observed in any of the samples. However OCDD was detected in most of the samples. The TEQs in the feed samples were ranged from 0 pg TEQ/g to 0.09841 pg TEQ/g. Especially, the high level of TEQs was observed in the samples of wheat from East Europe and soybean meal from Korea.

Determination of Optimal Amount of Phosphorus to be Supplemented to Carp Feed which Contains a Large Amount of Soybean Meal (대두박 단백질 이용 잉어 사료에의 최적 인산염 첨가량의 결정을 위한 실험 연구)

  • An experiment was conducted to determine for the optimal phosphorus supplemention to carp feed which contains $50\%$ soybean meal, with $32\%$ protein content to obtain maximum growth of the Israeli strain of common carp (Cyprinus carpio). The experimental fish were between 100 g and 1000 g in body weight. The results, obtained were as follows: the optimum amount of phosphorus added to the experimental feed was $1.6\%$ as $NaH_2PO_4{\cdot}2H_2O$ which brings up the total amount of available phosophorus to $0.504\%$ of the feed. This amount is slightly less than the amount, $0.6-0.7\%$ which was previously reported for the Japanese native strain of carp which weighted around 4.5g. Thus there seems to be some difference for the requirement of phosphorus between the sizes of carp.

Effects of Biocom as a Replacement of Glutamine on Performance and Blood Biochemical Indexes of Early Weaned Piglets

  • The objective of this study was to evaluate Biocom (a protein source containing a high level of glutamine and alanyl-glutamine) as a replacement for glutamine (Gln) in nursery pig diets. Forty-two pigs (fourteen pigs per treatment) weaned at 28 d of age were used in a 28-d performance trial using three dietary treatments: control (no Gln), control supplemented with Gln or Biocom. The control diet was composed of corn, soybean meal, whey and fish meal. Individual body weight, pen feed disappearance and diarrhea were monitored. On d 0, 2, 7 and 14 postweaning, respectively, five pigs per treatment were selected and bled from the anterior vena cava to obtain five replicate samples of blood on each dietary treatment for determination of blood biochemical index. Dietary supplementation of Gln and Biocom did not influence performance, plasma Gln and total serum protein concentration (p>0.05). However, the addition of Gln and Biocom could prevent serum urea nitrogen and serum cortisol from increasing on d 2 postweaning (p<0.05). There were no significant differences (p>0.05) in any of the examined parameters between Gln- and Biocom-supplemented diets. In conclusion, dietary Gln did not influence the performance of early-weaned piglets owing to the complex diet containing whey, but could prevent the increase of serum urea and cortisol. Biocom could be used as a replacement for free pure Gln without any negative effect on early-weaned piglets.

Development of Educational Material on Nutrition for Farmers (농업인 대상의 식생활 교육자료 개발)

  • The farmers' nutritional condition can not be compared with other citizens according to the Korean National Health & Nutrition Examination Survey, and based on other literature reviews. These farmers have either less access to educational materials or have no idea and do not understand the importance of nutritional education. The purpose of this study is to develop an appropriate reading material on nutrition to educate the farmers. To do this, the first step was to gather sufficient available materials for the review of related literature. Second, a survey was conducted to assess the needs of farmers and extension workers for educational materials on nutrition. The results showed that the farmers preferred the following topics: Menu Planning or Menu for Health' (62.1%), Dietary Assessment (49.7%), Dietary Guideline for Farmers (35.7%), and Cooking Method and Recipe (32.6%). They also preferred the booklet type (62.7%). These materials basically contained literature review, lesson plan, and needs assessment. The booklets contained in detail: 1) Dietary assessment - nutritional assessment, and assessment of meal 2) Dietary guidelines for farmers - reduce salt intakes, eat calcium-rich foods, ideal body weight, reduce alcohol-drinking and smoking, tips on eating soybean, eat meat and fish, tips on eating fruits, eat shellfish and seaweeds, and tips on eating dietary fibers, and 3) Plan a meal - menu planning and sample menu by farming patterns. Finally, the text of the final material was improved by the graphic designer using Quark Express 3.3, Photoshop 6.0, Illustrator 10.0, and Painter 8.0. The booklet has 46 pages and divided into three chapters. This contains simple and affordable recipes and provides some helpful tips for dietary and changing lifestyles. This booklet is made available for farmers and other groups interested in nutrition education.

A Study on Nutrient Intake and Dietary Behavior of House Wife and Female College Student in Yanbian (연변 조선족 주부와 여대생의 식생활 실태 조사)

  • The purposes of this study were to assess dietary intake obtained by easy method and to compare dietary behavior of house wife and female college students in Yanbian. The subjects consisted of 276 house wives and 228 female college students. Mean daily energy intake of house wives was 1926.0kcal and that of female college students was 1949.0kcal. Calcium intake as NAR(Nutrient adequacy ratio) was lowest in house wife and female college student. Iron intake was also low in subjects and lower in female college student than in house wife. Meal frequency per day was regular in subjects. Skipping meal time in subjects was breakfast and snaking time was late evening generally. Frequency of eating out was rare in most subjects and 60.6% of subjects preferred chinese food in eating out, while house wives preferred Korean food than female college student in eating out. The vegetables were preferred than meat or fish and used by fried in sauces. Hot and sour tastes were more like than greasy taste in subjects. Nutrient intake levels and dietary behaviors of house wife were to be like as those of female college students in general. BMI(Body mass index) was lower in female collage students than house wives, similarly in Korean. According to these results, house wives and female college students in Yanbian had similar dietary patterns. Calcium intake was tend to be low and dietary pattern was regular, dietary qualifies of subjects were adequate. Nutrient intake and dietary pattern in Yanbian were to be like as in Korean, and the Korean-Chinese in Yanbian maintained traditional dietary pattern.

The Dietary Behaviors, Taste Preferences, and Nutrient Intakes of Obese Children Consuming Unbalanced Diets (편식하는 비만 아동의 식행동, 맛 선호도 및 영양 섭취 상태)

  • This study was designed to evaluate the nutritional status and dietary problems of obese elementary students consuming unbalanced diets. Blood parameters, body-image perceptions, taste preferences, and nutrient intakes of 40 obese elementary students with unbalanced diets were compared to those of 40 additional obese elementary students as a control. The averages for age, height, weight, and obesity index were 11.5 years, 142.0 cm, 51.0 kg, and 35.4% in the study group and 11.8 years, 144.0 cm, 53.5 kg, and 36.3% in the control group, respectively. The major disliked foods by the students in the study group were vegetables (65%) particularly Kimchi (15%), as well as fish(15%), and pulses (10%). Mean serum cholesterol, blood glucose, GOT/GPT, and hemoglobin levels were 175.1 mg/dL, 89.2 mg/dL, 24.1/18.9 IU/L, and 14.3 g/dL in the study group and 182.8 mg/dL, 91.3 mg/dL, 28.3/33.9 IU/L, and 14.7 g/dL, in the control group, respectively. Approximately 60${\sim}$80% of the subjects responded that they eat a meal everyday, and the remainder skipped at least one meal. The preference for salty tasting foods was significantly lower in the study group, but the preference for hot tasting food was higher as compared to the obese control group(p<0.05, p<0.05). The daily energy intakes of the study and control groups were 1,768.3 kcal and 1,572.7 kcal, respectively, but there was no significant differences between them. Daily intakes of animal protein, fat, animal fat, and vitamin $B_2$ were significantly higher in the study group than in the control group. In conclusion, this study found that obese children consuming unbalanced diets strongly disliked vegetables, particularly Kimchi, as well as hot tasting foods; however, they preferred salty foods. Daily intakes of animal protein and fat were higher in the study group as compared to obese children not consuming unbalanced diets.

  • The effects of film processing conditions on the water vapor permeability (WVP), the solubility of film's protein (SFP) and the soluble film's meterials amount (SFMA) were investigated to establish the conditions for preparing biodegradable and edible Alaska Pollack meal protein isolate (APMPI) film. ms of film were decreased with increasing plasticizer concentration but those were decreased with decrement of APMPI's pH values. SEPs were decreased with increasing APMPI's pH and plasticizer concentration. SFMAS were also strongly affected by plasticizer concentration and APMPI's pH. In the case of adding different plasticizers, WVP was increased in order as follows: glycerol, polyethylene glycol and sorbitol but SFMA showed inverse order.

A Study on the Dietary Habits and Nutritional Knowledge of High-grade Students in Elementary School (초등학교 고학년의 식습관 및 영양 지식에 관한 연구)

  • This study was performed to investigate the dietary habits and nutritional knowledge of elementary school students (boy : 250, girl : 250) by gender. Frequency of skipping breakfast was high in both boys and girls. Duration of mealtime was significantly higher for boys compared with girls (p<0.001). Regularity of meals was not significantly different between boys and girls. Reason for irregular meals was 'no appetite' for both boys (39.6%) and girls (40.0%). Unbalanced diet was high in both boys (60.8%) and girls (59.6%), and problems related to dietary habits were in order of 'unbalance diet', 'irregular mealtime', 'overeating', 'skip a meal frequently', and 'eat out frequently'. Frequency of snack intake was significantly higher for girls compared to boys(p<0.05). The criterion for selecting snacks was higher for 'nutrition' compared to 'good taste' for both boys and girls. Frequency of eating out was statistically insignificant, and eating out preferences were in the order of 'Korean food', 'western food', and 'Chinese food'. Eating behavior 'eat meat, fish, egg, tofu every meal' was significantly higher for boys compared to girls (p<0.01). 'Healthful' response rates were 57.6% for boys and 58.8% for girls. Practice level of nutritional knowledge was significantly higher in girls compared to boys (p<0.001). To establish good eating behaviors, we should develop systematic and continuous education programs.

Dietary Habits, Dietary Behaviors, Depression and Stress according to Self-Rated Health of University Students in Kyungnam Province (경남 일부 대학생들의 주관적인 건강인식이 식습관, 식행동, 우울 및 스트레스에 미치는 영향)

  • The purpose of this study was to investigate health-related habits, dietary habits, depression, stress, satisfaction of body weight, mini-dietary assessment (MDA) and dietary behaviors according to self-rated health among 255 university students in Kyungnam province. Statistical analyses were performed using the SPSS software package (version 19.0). The average ages of the subjects were 21.1 years. Participants were asked their self-rated health and 109, 105 and 41 students answered themselves as "healthy", "normal" and "unhealthy", respectively. The pocket money (P<0.05) was related with self-rated health, and meal frequency (P<0.01) of healthy group was higher than that of the unhealthy group. The self-reported depression level (P<0.01) and the score of depression (P<0.05) of the healthy group were lower than those of the unhealthy group. The self-reported stress level of the healthy group (P<0.05) was higher than that of the unhealthy group. The scores of nutritional behavior (P<0.05) and MDA (P<0.01) of the healthy group were higher than those of the unhealthy group. The scores for intakes of meat, fish, egg or beans, cereals and vegetables except kimchi, fruits, balanced diet and various foods were higher in the healthy group than in the unhealthy group. Our results suggest that pocket money, high meal frequency, low depression, satisfaction of present body weight, and good dietary behavior might influence good perception of self-rated health.

  • In the following studies, a detailed research of commercialization of native foods around Boseong area had taken place. The objective for the studies is to increase the value of traditional cooking by creating a unique course-meal. Statistical methods of demographic characteristics, frequency analysis on farmhouse restaurants, dish frequency analysis were used. The studies were carried out with total of 27 experts, and carried out between June and Angust 2009. Surveys were used, and all 27 survey results were used in the final analysis. With the results, the team has come up with unique Boseong course meal for every season.
