복어요리에 관련한 수도권과 부산권의 인식조사 (The Survey on the Recognition of Puffer Fish Food Consumers in Seoul and Busan areas)

  • The aim of this study is to research on the recognitions and preferences of Puffer fish consumers with the recently increasing well-being trend. To carry out this research, the main analysis was focused on two specific points: how much consumers perceive swellfish and which kinds of Puffer fish foods are preferred by consumers. Although the consumption of Puffer fish is gradually expending, at the same time, there are also numerous obstructive elements in consuming swellfish. In this regard, this test on Puffer fish food will be able to contribute to show an outlook for the Puffer fish food market in the future and to promote consumption of Puffer fish as well. Methodologically, a statistical research was adopted to find out how people understand Puffer fish and the patterns of their choices and intensive examinations were conducted throughout the collected questionnaire. For a more effective outcome, it was necessary to divide into two groups, the Nation's capital area with Seoul as a center, the most densely populated area and Busan, the biggest marine products consumption area, examining the inclination to consume with regions. In the concrete, the detailed research survey on the Puffer fish were performed with the opinions of the five hundred people from capital area and the five hundred people from Busan area. The difference and common features of consumer's recognition about Puffer fish food were founded through cross analysis according to age, gender, regions, and income. In conclusion, this research showed the difference tastes and recognition standards toward Puffer fish among consumers from Seoul and Busan areas. If it is possible to apply this result to the efforts of improving supplier's understanding about Puffer fish consumers' features and cultivating new Puffer fish items, it could contribute to the further consumption of Puffer fish food in the long term point of view.

관상어 시장규모 및 인식도 분석을 통한 관상어산업의 개선과제 (Improvement of Ornamental Fish Industry through analysis of recognition and market scale of the Ornamental Fish)

  • This study estimated the size of ornamental fish market as the basis survey for the development of the ornamental fish industry in Korea. It presents improvement projects agendas for the development of the Korean ornamental fish industry by investigating the challenges of the ornamental fish industry and consumer awareness. First, looking at the size of the ornamental fish market, calculated on the basis of survey results, the size of ornamental fish market is analysed as 231.8 billion won. The actual ornamental fish market is presumed to be much larger than this considering unclear gross sales from e-commerce and group sales, goods excluded from the ornamental fish export, expensive ornamental fish transaction from smuggling are missing. Ornamental fish industry and consumer awareness survey results can be described as follows: First, revenue structure of the ornamental fish market depends on a handful of expensive purchasing group rather than on low-cost consumption group. Second, many members of the ornamental fish producers, wholesalers, road shops are small-scale. Third, the sale of aquarium fish and aquarium fish related supplies in road shop have different market structures. Fourth, ornamental fish consumption is in the ongoing recession. Fifth, ornamental fish industry hopes for expansion of distribution and Research & Development. Sixth, satisfaction of ornamental fish consumers is generally low. As described above, ornamental fish industry in Korea are vulnerable in the market structure and industry is small and the consumer's satisfaction degree is staying in the 'normal' level. If current state will continue, future consumption can be reduced. It is necessary to increase the competitiveness by using various method including reorganization of the structure of the ornamental fish industry even though it is hard to reach conclusion only with the results of the survey.

참메기, Silurus asotus의 수온과 광주기 변화에 따른 산소 소비량 (Oxygen Consumption of Far Eastern Catfish, Silurus asotus, on the Different Water Temperatures and Photoperiods)

  • 참메기, Silurus asotus를 대상으로 수온 ($15^{\circ}C,\;20^{\circ}C,\;25^{\circ}C$$30^{\circ}C$)과 광주기 (24L:0D, 12L:12D 및 0L:24D)에 따른 산소 소비량의 변화를 연속적인 컴퓨터 모니터링 시스템을 이용하여 조사하였다. 평균 무게 280g의 참메기의 산소 소비량은 수온의 증가에 따라 증가하였고, $15^{\circ}C$에서 $35.2\~96.4mg\;O_2/kg$ fish/hr, $20^{\circ}C$에서$78.6\~127.9mg\;O_2/kg$ fish/hr, $25^{\circ}C$에서$120.1\~231.7mg\;O_2/kg$ fish/hr, $30^{\circ}C$에서 $197.5\~352.3mg\;O_2/kg$ fish/hr으로 나타났다(p<0.05). 광주기에 따른 산소 소비량은 암기 조건에서 보다 명기 조건에서 산소소비량이 더 높게 나타났다. 또한, 24L:0D와 12L:12D와 비교하여 0L:24D에서 평균 산소 소비량이 낮게 나타났다(p<0.05). 산소 소비량의 최대값과 최소값의 차이는 수온이 상승함에 따라 증가하였고, 12L:12D에서 가장 큰 것으로 나타났고, 새벽녁과 저녁 무렵에 산소 소비량의 급격한 변화를 나타내었다. 특히, 12L:12D의 조건에 두었을 때 명기와 암기에 대한 뚜렷한 반응을 보였다.

Postprandial Ammonia Excretion and Oxygen Consumption Rates in Olive Flounder Paralichthys olivaceus Fed Two Different Feed Types According to Water Temperature Change

  • Postprandial ammonia excretion and oxygen consumption in olive flounder Paralichthys olivaceus fed two different feed types, moist pellet (MP) and expanded pellet (EP) diets, to satiation were determined at $12^{\circ}C$, $15^{\circ}C$, $20^{\circ}C$, and $25^{\circ}C$ for 48 h. The ammonia excretion and oxygen consumption rates increased with increasing water temperature. However, the postprandial times for the maximum rates of ammonia excretion and oxygen consumption were shortened from 12 h to 6 h after feeding with increasing water temperature. The ammonia excretion and oxygen consumption rates of the fish fed EP were significantly higher (P < 0.05) than those fed MP at 12 h post-feeding both for $12^{\circ}C$ and $15^{\circ}C$. The highest (P < 0.05) weight-specific ammonia excretion rates at $12^{\circ}C$ were observed in the fish fed EP and MP at $12.1mg\;NH_3-N\;kg^{-1}h^{-1}$ and $8.7mg\;NH_3-N\;kg^{-1}h^{-1}$, respectively, for 12 h and 9 h after feeding. The highest (P < 0.05) weight-specific oxygen consumption rates at $12^{\circ}C$ were observed in fish fed EP and MP at $116.4mg\;kg^{-1}h^{-1}$ and $101.0mg\;kg^{-1}h^{-1}$, respectively, for 12 h after feeding. The highest ammonia excretion rates at $25^{\circ}C$ in the fish fed EP and MP increased to $16.9mg\;NH_3-N\;kg^{-1}h^{-1}$ and $18.3mg\;NH_3-N\;kg^{-1}h^{-1}$, respectively, for 6 h after feeding. The highest (P < 0.05) weight-specific oxygen consumption rates at $25^{\circ}C$ were observed in fish fed EP and MP at $184.3mg\;O_2kg^{-1}h^{-1}$ and $197.3mg\;O_2kg^{-1}h^{-1}$, respectively. These data are valuable for the design of biofilters and development of effluent treatment technologies for the land-based flounder farms.

통영지역 임산부의 생선섭취가 제대혈의 수은 농도에 미치는 영향 (The Influence of Fish Consumption on Umbilical Cord Blood Mercury Level in Pregnant Women in the City of Tongyeong, Korea)

  • 어류는 두뇌발달에 중요한 영양소이기도 하지만 신경독인 메틸수은을 함유하고 있는 것으로 알려져 있다. 메틸수은은 임산부가 임신 중에 태아의 두뇌에 치명적인 손상을 유발하는 것으로 알려져 있다. 따라서 연구자들은 생선소비와 임산부 제대혈 중의 메틸수은 함량을 확인하기 위하여 통영지역 임산부 159명을 대상으로 2010년 10월부터 2011년 3월 사이에 임산부의 생선소비와 제대혈의 수은농도의 관계를 조사하였다. 어류소비 관련자료는 설문조사를 통하여 수집하였고 통계처리는 one way ANOVA 를 이용하였다. 조사에 참여한 임산부의 평균나이는 30.1세이었고 임산부 제대혈의 수은 함량은 0.01-14.80 ppb 범위에 평균 $2.69{\pm}2.50ppb$이었다. 제대혈의 평균 수은함량은 WHO 기준인 5.0 ppb를 초과하지는 않았지만 159명 중 17명(10.7%)이 WHO 기준을 초과하였다. 연령별로는 30세 이상이 0.01-14.8 ppb 범위, 평균 $3.18{\pm}2.74ppb$로 29세 이하에서 0-8.00 ppb 범위, 평균 $2.04{\pm}2.00ppb$ 보다 1.6배 높았으며 유의적 차이가 있었다. 이 연구에서 생선섭취가 제대혈의 수은농도에 영향을 미치는 것으로 나타났다. 1주일에 3회 이상 섭취군이 평균 $4.15{\pm}4.02ppb$로 주 1-2회 섭취군의 $2.63{\pm}2.22ppb$, 먹지 않는 군의 $1.60{\pm}1.44ppb$ 보다 2.6배와 1.6배 각각 높게 나타났으며 적게 먹는 군과 먹지 않는 군과의 사이에는 유의적 차이가 없었고, 많이 섭취하는 군과는 유의적 차이 (p < 0.05)가 있었다. 이상의 결과에서 제대혈의 수은 농도는 생선섭취량과 관련이 있는 것으로 판단되며 가임기 여성이나 임산부에게 생선섭취를 제한하는 것이 제대혈의 수은 농도를 낮출 수 있고 향후 있을지도 모를 신생아의 신경발달 장애나 뇌 신경학적 손상을 줄일 수 있는 방법이라고 생각되었다.

Dietary inclusion effect of various levels of jack mackerel meal on the growth performance, feed efficiency and whole body composition of rockfish (Sebastes schlegeli)

  • Inclusion effect of various levels of jack mackerel meal (JMM) acting as feed attractants and/or stimulants in diets on the growth, feed consumption, feed utilization and whole body composition of rockfish was investigated. Three hundred juvenile rockfish were randomly allocated into 15 flow-through tanks. Five experimental diets supplemented with JMM at 0%, 1%, 3%, 5%, and 10% at the expense of anchovy meal were prepared and referred to as the JMM0, JMM1, JMM3, JMM5, and JMM10 diets, respectively. Weight gain, specific growth rate (SGR) and feed consumption of fish tended to improve with dietary levels of JMM. The greatest weight gain, SGR and feed consumption were observed in fish fed the JMM10 diet, followed by the JMM5, JMM3, JMM1, and JMM0 diets, in that order. Condition factor (CF) of fish tended to improve with dietary inclusion levels of JMM. Growth performance, feed consumption and CF of fish tended to improve with dietary inclusion levels of JMM ranging from 0% to 10%.

인구통계적 특징에 따른 수산물 소비패턴 변화 분석 (An Analysis on the Changes of Seafood Consumption Patterns by Demographic Characteristics)

  • The objective of this study is to investigate consumer preferences, perception and consumption patterns for fish products. To investigate the difference in consumer responses according to the characteristics of the population parameters, data were collected from the survey of 404 Koreans and analyzed. The results are as follows: First, the differences of age; for the question of the reason why do you eat fish products, the younger generation (20~30s)'s most answer was 'The Taste' while the older age groups(40~50s and over 60s)' most respond was 'For Health'. Second, the differences of sex; women relatively considered 'The Quality' of fish products more important than men when selecting the products. Whereas, men thought 'The Taste' of fish products more important than women when they choose fish products. In addition, when the bad news or hygiene accidents about fish products are reported on media, women reacted more negatively for fish products purchase than men. Third, the differences of family members; the respondents who lived with 3 or more family members showed higher preference rates about purchasing trimmed fresh fish at the store than respondents who lived with 2 or less family members. On the other hand, single households relatively bought processed fish products and RTE(Ready To Eat) fish products more than other family member groups. In addition, single households preference rates about eating fish products as a main dish were very high compared to other groups.

순환여과식 사육 시설에서 사료 공급 횟수에 따른 나일틸라피아, Oreochromis niloticus의 산소 소비량 (Effects of Feeding Frequency on Oxygen Consumption of Nile Tilapia, Oreochromis niloticus, in a Recirculating Aquaculture System)

  • 상업적 규모의 순환여과식 탱크에서 사료 공급 횟수에 따른 산소 소비량의 변화를 조사하였다. 실험에 이용된 사육 장치는 순환여과식 시설내의 원형 콘크리트 탱크 (직경 270cm, 높이 80cm)를 이용하여 평균 체중 400g의 나일틸라피아 (Oreochromis niloticus)를 390kg 방양하여 실험에 이용하였다. 우선 3일간 사육 어류를 절식시킨 후 기초대사율을 측정하였고, 사료 공급 횟수를 1회, 2회, 5회 그리고 9회로 나누어 공급한 후 산소 소비량의 일간 변화를 측정하였다. 절식 상태에서 산소 소비량 (기초대사율)은 평균 $39.31{\pm}4.4mg\;O_2/kg$ fish/hr이였고 사료 공급횟수에 따른 1일 평균 산소 소비량은 1회, 2회, 5회 및 9회 공급시 각각 $79.9{\pm}21.5,\;81.3{\pm}14.8,\;84.2{\pm}9.9$$98.9{\pm}11.0mg\;O_2/kg$ fish/hr을 소비하는 것으로 나타나 사료 공급 횟수가 증가함에 따라 평균 산소 소비량은 증가하였으나, 유의적인 차이는 나타나지 않았다. 사료 공급후 최대 산소 소비량에 도달하는 시간은 사료 공급후 30$\~$50분으로 나타나 사료공급 횟수와는 유의적인 상관 관계가 없는 것으로 나타났다. 사료공급 횟수에 따른 산소 소비량의 최대치는 1회, 2회, 5회 및 9회 공급시에 각각 161.2, 123.4, 111.1 및 111.1 mg $O_2/kg$ fish/hr을 소비하는 것으로 나타나 하루에 1회 공급하였을 때 최대 산소 소비량이 가장 높은 것으로 나타났다.

염분 변화에 따른 넙치(Paralichthys olivaceus)의 산소 소비율과 혈액 성상 (Oxygen Consumption and Blood Physiology of Olive Flounder Paralichthys olivaceus Subjected to Salinity Changes)

  • Oxygen consumption and blood physiology of olive flounder Paralichthys olivaceus (mean body weight 106.6±6.8 g, mean±SD) was investigated at salinities of 34.0 (control), 33.7, 33.3, 32.6, 31.3, 28.6, 23.1, 12.2 and 0.0 psu at 20.0℃, respectively. Stepwise salinity changes (34.0→33.7→33.3→32.6→31.3→28.6→23.1→12.2→0.0 psu) with an interval of 24 h for each salinity induced a significant (P<0.05) increase of oxygen consumption rate (OCR) in fish exposed from 31.3 to 0.0 psu compared to that of control fish. The maximum OCR was found in fish exposed to 23.1 psu, which was accompanied by 36.2% higher energy consumption than the control fish. Fish exposed to each salinity for 24 h induced a significant decrease of blood plasma Na+ in 0.0 psu and Cl- in 12.2 and 0.0 psu (P<0.05), and increase of plasma glutamic oxaloacetic transaminase (GOT) in 0.0 psu compared to the control fish (P<0.05). The results of this experiment show that P. olivaceus exposed to concentrations below 31.3 psu requires more energy costs to adapt to salinity changes than 34.0 psu under our experimental conditions.

Effect of Water Temperature and Photoperiod on the Oxygen Consumption of Four Different Strains of Red Seabream, Pagrus major

  • We determined the effects of different water temperatures (15, 20, and 25℃) and photoperiod cycles (24L:0D, 12L:12D, and 0L:24D) on the oxygen consumption of the offspring of a cultured Japanese strain (JJ), a selected Korean strain (KK), and intraspecific hybrid strains (JK and KJ) of red seabream, Pagrus major, under starvation conditions. The different fish strains, water temperatures, and photoperiod cycles had effects on the mean oxygen consumption of fish. Oxygen consumption increased with increasing water temperatures for all photoperiod treatments (p<0.001). Fish held in continuous darkness (0L:24D) used consistently less oxygen than fish exposed to continuous light (p<0.05). The oxygen consumption of fish exposed to the light phase in a 12L:12D photoperiod was higher than that of fish in the dark phase of the 12L:12D cycle, and differences were significant in three of the strains: JJ (15℃), KK (15 and 20℃), and KJ (25℃). The oxygen consumption of the inbred (JJ and KK) and intraspecific hybrid (JK and KJ) strains varied with differing water temperatures and photoperiod cycles. The JK strain displayed significantly higher oxygen consumption than the other strains under all experimental conditions except 15℃ with a 0L:24D photoperiod. The JK and KJ strains usually showed the highest and lowest oxygen consumption values, respectively, whereas the inbred strains exhibited intermediate values. Oxygen consumption in the JJ and JK strains was usually higher than that of the KK and KJ strains. We propose that differences in the thermal sensitivity and photosensitization properties of the strains contribute to differences in their ability to adapt to changes in water temperature and photoperiod, thus resulting in differences in the amplitude of their metabolic rates.
