김치 독자성의 근거와 형성 과정에 대한 고찰 (A Study on the Basis and Formation Process of Kimchi's Uniqueness)

  • The Chinese Sigyeong records the foods of the Primitive Pickling Period, pickling being a universal vegetable storage method, but does not indicate the origin of the pickled vegetables or the location of the source of transmission. Kimchi mainly used salt and sauce-based soaking materials at the beginning of the Fermented Pickling Period (beginning in the 1st to 3rd centuries A.D.), and it differed from the Chinese method, which used alcohol and vinegar. In the Umami-Flavored Pickling Period (beginning in the 14th and 15th centuries A.D.), jeotgal, fermented seafoods, were added, and pickles with a completely new identity were created, one different from any other pickles in the world. Lastly, entering the Complex Fermentation and Pickling Period (beginning in the 17th and 18th centuries), the technical process evolved using a separate special seasoning containing red pepper as the secondary immersion source after pickling in brine, the primary immersion source. As a result of this, kimchi was transformed into a food with a unique form and taste not found anywhere else. The unique characteristic of kimchi is that the composition of original materials, a combination of salted marine life and vegetable ingredients, is its core identity, and there is a methodological difference in that it is completed through a second process called saesaengchae (生菜)-chimchae (沈菜).

화장품 소재로서 아로니아 발효추출물의 생리활성 연구 (A Study of Physiological Activities for Cosmeceutical Ingredient from Fermented Aroniamelanocarpa Extract)

  • 아로니아는 특유의 신맛과 떫은 맛 때문에 생과보다는 가공용으로 개발할 필요성이 대두되고 있다. 유산균을 이용한 아로니아분말 발효추출물에 대한 항산화 활성 및 세포독성을 검정한 결과 총 폴리페놀 함량의 경우 발효전 32.15 ㎍/mg, 발효 후 43.08 ㎍/mg으로 증가하였고, 플라보노이드 함량은 발효전 0.47 ㎍/mg, 0.44 ㎍/mg 으로 조금 높거나 유사하게 나타내었다. DPPH radical 억제 활성은 발효전 77.5% 에서 89.1%로 발효전보다 조금더 높은 활성을 나타냈으며, Nitric oxide (NO) 측정은 농도 의존적인 억제효능이 나타났다. 이상의 결과로부터 아로니아분말을 발효할 경우 일부 항산화 활성을 기반으로한 활용가능성과 향후 식물성 천연 추출물과 발효 화장품 소재로서의 이용가능성을 확인할 수 있었다.

김치 젖산균과 효모의 혼합배양 방법에 의한 과채류즙 발효과정중의 주요 성분변화 (Chemical Changes of Fruit-Vegetable Juice during Mixed Culture Fermentation of Lactic Acid Bacteria Isolated from Kimchi and Yeast)

  • Lactic acid bacteria KL 1, KD 6, KL 4 strains isolated from kimchi, or obtained Lactobacillus acidophilus, Lactobacillus plantarum, Leuconostoc mesenteroides with and without yeast(Saccharomyces cerevisiae) were inoculated in fruit vegetable juice for mixed culture fermentation 3 days at 3$0^{\circ}C$, and then their chemical changes were studied during fermentation. The amount of organic acid produced by the mixed culture fermentation of KL 1 and yeast was 0.82%(3 days) or 0.58%(1 day) and with the final pH of 3.3(3 days) or 4.2(1 day). These mixed culture systems of isolated strains or other bacterial strains had almost similar results of growth rate and acid production. The contents of vitamin C and carotene were retained and stabilized as 70~80% level of their initial values after 24 hrs fermentation. And also ethanol was produced as of the range in 9.6mg%(W/V) by the mixed culture fermentation of KL 1 and yeast, however, the content of ethanol in single culture fermentation by KL 1 strain was much lower than that of mixed culture. The major components of organic acids in fermented juice by mixed culture were considered as malic(26.0%), lactic(49.9%), succinic and citric acid, whereas these of unfermented juice were malic(53.2%), citric and other acids. On other hand, reducing sugar was decreased from 18.3mg/ml in fresh juice to about 12mg/ml in juice by mixed culture fermentation. Concentrations of fructose, glucose and sucrose were also greatly reduced in fermented juice.

Fermentation Quality of Ensiled Water Hyacinth (Eichhornia crassipes) as Affected by Additives

  • A lab-scale ensiling study was carried out to investigate the fermentation quality of water hyacinth (WH) supplemented with molasses, rice bran, as an absorbent, and an inoculant in the form of fermented vegetable juice and their combinations. After wilting the water hyacinths for 7 h to a dry matter (DM) content of 240 to 250 g/kg, the following treatments were applied: i) Control (C), WH only; ii) WH with sugarcane molasses at 40 g/kg WH (CM); iii) WH inoculated with fermented vegetable juice at 10 ml/kg WH (CI); iv) CM and CI (CMI) combined; v) WH with 150 g rice bran/kg WH (CA); vi) CA and CI combined (CAI); vii) CA and CM combined (CAM); and viii) CA, CM and CI combined (CAMI). After application of additives, the differently treated forages were mixed and ensiled in triplicates in 1,500-ml polyethylene jars. After ensiling for 3 d, pH values in all treatments, except C and CI, had decreased to approximately 4.0 and remained low till 14 d. After 56 d, pH had increased between 0.4 to 0.9 pH-units compared to those at 14 d. The ammonia nitrogen ($NH_3$-N) concentration ranged from an acceptable level in treatment CM (8 g/kg N) to a high $NH_3$-N value in treatment CMI (16 g/kg N). Lactic acid formation was higher in CI than in all other treatments. Butyric acid contents, which indicate badly fermented silages, were low in all silages (<2 g/kg DM). There were two-way interactions (p-values from <0.001 to 0.045) for almost all fermentation end-products and pH, except for the molasses${\times}$inoculant interaction on $NH_3$-N (p = 0.26). Significant 3-way interactions were found on all observed variables except for weight losses of silages. It is concluded that conserving wilted WH as silage for ruminants may be improved by the addition of molasses or rice bran.

변비 환자를 위한 고섬유질 음식 개발에 관한 연구 (The Development of High fiber Food for Constipation)

  • In recent yearn, eating habit that is not right causes disease the dietary fiber (DF) intakes of Korean decreases. Occurrence of chronic disease such as constipation increased gradually. This study was performed to investigate of high fiber standard recipes for one day including major source of DF such as vegetables, cereals and grain products, seaweeds, fruits, fungi and mushrooms, and legumes and products for improving constipation through dietary treatment. Nutrient analysis per person marked energy, protein, fat and DF content. The food of high I : S ratio (Insoluble fibers: Soluble fibers) are soybean sprout salad, rice gruel with vegetables, pan fried mushroom with vegetables. The food of low I:S ratio are fermented soybean paste stew, fried rice with kimchi, fruits salad with yogurt dressing and seasoned noodle with vegetables. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yogurt dressing and seasoned noodle with vegetables. The menu developed in this study, contains fiber of at least 8.97 times of RDA and in point view of 1 day intake, that is similar to the scope of RDA, 20-25 g per day. This findings should be appliable to nutritional education and medical food for constipation. And also, the aim of study is constipation patients easily applicate that developed the food of high fiber using Korean common food. And the result of the study will be the basic data about clinical test of food developed in this study and the danger of high fiber diet. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yoghurt dressing and seasoned noodle with vegetables. This findings should be applicable to nutritional education and medical food for constipation.

대두껍질 함량에 따른 탈지대두분말 식물조직단백의 품질 특성 (Quality properties of texturized vegetable protein made from defatted soybean flour with different soybean seed coat contents)

  • 본 연구에서는 탈지대두분말 식물조직단백(TVP) 제조 시 사용하는 탈지대두분말 원료의 전처리 공정에서 대두의 껍질 제거 정도가 식물조직단백(TVP)의 조직화 특성에 어떤 영향을 미치는지 살펴보았다. 식물조직단백 원료의 배합은 탈지대두분말 50%, 글루텐 30%, 옥수수전분 20%를 기본 배합으로 하였다. 대두껍질은 탈지대두분말 중량 대비 0, 3, 6 및 9% 비율로 첨가하였다. 압출성형은 냉각 다이(die)가 장착된 압출성형기를 이용하여 배럴온도 190℃, 스크루회전속도 250 rpm, 수분은 정량펌프 9 rpm 속도로 주입하였다. 압출성형 탈지대두분말 식물조직단백의 조직감은 껍질 함량이 증가함에 따라 외관으로는 섬유화 구조층이 감소하고, 물성은 경도는 증가하였으나 탄력성과 응집성은 큰 차이가 없었다. pH는 껍질 함량이 증가함에 따라 낮아졌다. 수분함량은 껍질 함량이 증가함에 따라 감소하였으며 수분흡수력, 고형분용출량 및 탁도는 껍질 함량이 증가함에 따라 값이 증가하는 경향을 보였다. 이와 같은 결과는 껍질함량의 증가로 단백질의 비중이 감소하고 껍질의 섬유소가 조직화를 저해하기 때문으로 판단된다. 이상의 결과에서 압출성형에 위한 탈지대두분말 식물조직단백 제조 시 원료 대두의 껍질 함량은 대두 종실의 중량 대비 50% 이상이 되지 않도록 하는 것이 적합하다고 사료된다.

하우스 동간멀칭이 참외의 생육 및 품질에 미치는 영향 (Effect on Growth and Quality of Oriental Melon (Cucumis melo L. var. makuwa Makino) by Interspace Mulching between Polyethylene Film House)

  • 하우스와 하우스 사이에 비닐 멀칭이 참외의 생육 및 품질에 미치는 영향을 검토한 결과는 다음과 같다. 토양수분은 무처리구의 26.0%에 비하여 흑색부직포 및 흑색필름 처리구에서 각각 1.2%, 2.9%정도 적었으나, 지온은 무처리구 $2.4^{\circ}C$에 비하여 흑색부직포 및 흑색필름 처리구에서 각각 $0.8^{\circ}C,\;1.8^{\circ}C$ 더 높았다. 무처리구에 비하여 흑색필름 처리구에서 초장, 엽수, 엽록소 함량, 엽면적 및 일비액량 등 초기생육이 우수하였으며, 개화도 빠르고 성숙 소요일수도 단축되었다. 과중, 당도 등 과실의 품질도 흑색필름 처리구에서 우수하였고 발효과율 및 기형과율이 감소하여 상품과율이 증가하여 10a당 상품과수량은 무처리구의 1,864kg에 비하여 흑색필름 처리구에서 28%증가하였다. 이와 같이 흑색필름 처리구에서 참외의 과중이 무겁고, 당도가 높고 발효과 발생이 감소하고 상품수량이 증가한 것은 하우스 동간 멀칭으로 수분 유입이 차단되어 지온이 상승하여 뿌리의 활착이 빨라 생육이 촉진됨에 따라 과실의 품질이 향상된 것으로 생각된다.

Production of Functional High-protein Beverage Fermented with Lactic Acid Bacteria Isolated from Korean Traditional Fermented Food

  • The aim of this study was to manufacture functional high protein fermented beverage, using whey protein concentrate (WPC) and Lactobacillus plantarum DK211 isolated from kimchi, and to evaluate the physicochemical, functional, and sensory properties of the resulting product. The fermented whey beverage (FWB) was formulated with whey protein concentrate 80 (WPC 80), skim milk powder, and sucrose; and fermented with Lactobacillus plantarum DK211 as single, or mixed with Lactococcus lactis R704, a commercial starter culture. The pH, titratable acidity, and viable cell counts during fermentation and storage were evaluated. It was found that the mixed culture showed faster acid development than the single culture. The resulting FWB had high protein (9%) and low fat content (0.2%). Increased viscosity, and antioxidant and antimicrobial activity were observed after fermentation. A viable cell count of 109 CFU/mL in FWB was achieved within 10 h fermentation, and it remained throughout storage at 15℃ for 28 d. Sensory analysis was also conducted, and compared to that of a commercial protein drink. The sensory scores of FWB were similar to those of the commercial protein drink in most attributes, except sourness. The sourness was highly related with the high lactic acid content produced during fermentation. The results showed that WPC and vegetable origin lactic acid bacteria isolated from kimchi might be used for the development of a high protein fermented beverage, with improved functionality and organoleptic properties.

Use of Vegetable Waste as a Culture Medium Ingredient Improves the Antimicrobial and Immunomodulatory Activities of Lactiplantibacillus plantarum WiKim0125 Isolated from Kimchi

  • Lactic acid bacteria (LAB) isolated from kimchi (a traditional Korean dish typically made of fermented cabbage) can provide various health benefits, including anti-obesity, antioxidant, antiinflammatory, anticancer, and antimicrobial effects. In this study, we examined the antimicrobial and immunomodulatory effects of Lactiplantibacillus plantarum WiKim0125 cultured in de Man, Rogosa, and Sharpe (MRS) medium containing vegetable waste. Live bacterial cells were eliminated via supernatant filtration or heat treatment. The cell-free supernatant (CFS) obtained from culture broth containing kimchi cabbage waste (KCW), cabbage waste (CW), or onion waste (OW) showed significantly higher antimicrobial activity against skin pathogens (Propionibacterium acnes and Staphylococcus aureus) and foodborne pathogens (Escherichia coli and Salmonella typhimurium), with inhibition zones ranging between 4.4 and 8.5 mm, compared to that in conventional MRS medium (4.0-7.3 mm). In lipopolysaccharide-stimulated RAW264.7 cells, both supernatant and heat-inactivated Lb. plantarum WiKim0125 from culture media containing KCW and CW suppressed the production of inflammatory cytokines (72.8% and 49.6%, respectively) and nitric oxide (62.2% and 66.7%, respectively) without affecting cell viability. These results indicate that vegetable waste can potentially increase the antimicrobial and immunoregulatory potency of LAB while presenting a molecular basis for applying postbiotics to health products.

안동(安東)지역의 향토음식에 관한 고찰 (Study on Native Local Foods in Andong Region)

  • Northern Kyungbuk around Andong is a mountainous and more or less dry region geomorphogically. Since this area located in the valley was less invaded by foreign countries, the folk traditions have been maintained for a long time. Also as the center of Confucian culture, this region respects ceremonies and so, the simple and noble ceremonial-foods such as Ddok, Hankwas, and Buchiki have been firmly preserved in many distinguished families. And besides Andong-Soju, many traditional liquors produced in different methods can be found in this region. As Gogi-Sikhae(a fermented beverage utilizing rice and fish) is still preserved in eastern coastal area, Sosikhae(Sikhae without fish) is maintained in this region and furthermore the unique Andong Sikhae developed by modifying Sosikhae is being consumed currently. Since it is difficult to get fish here geographically, the soybean foods were developed for protein intake, for example, various fermented soybean pastes, Andong-Songuksu(a hand-made noodle using raw soybean flour), and Siragiguk(a vegetable soup).
