백김치 숙성중 식이섬유 및 펙틴질의 함량변화 (Changes in the Contents of Dietary Fibers and Pectic Substances during Fermentation of Baik-kimchi)

  • To observe the food quality of Baik-kimchi which is known as a watery Chinese cabbage pickles without fish sauce and red pepper paste, the changes of dietary fibers and pectic substances during fermentation at 5$^{\circ}C$ and $25^{\circ}C$ were studied. Baik-kimchi fermented at $25^{\circ}C$ showed a greater changes in pH and acidity than those of 5$^{\circ}C$ during storage. Ripened Baik-kimchi products fermented at 5$^{\circ}C$ could be prepared on 9~12 days of fermentation, and those had a pH range from 4.25 to 4.40 and acidity of 0.34~0.53. But in the case of $25^{\circ}C$ fermentation, Baik-kimchi ripened for 3 days showed a pH of 4.02 and acidity of 0.54. The pH and acidity of the Baik-kimchi juice changed more rapidly than those of the Baik-kimchi solid regardless of fermentation temperatures. The content of soluble dietary fiber(SDF) was ranged from 3.06 to 4.87% at 5$^{\circ}C$ and a wide variation in SDF was observed in the sample fermented at $25^{\circ}C$(4.15~11.22%). Insoluble dietary fiber(IDF) were increased from 21.66% to 28.42% in solid of Baik-kimchi during fermentation at 5$^{\circ}C$ and ranged from 21.37% to 24.65% for sample fermented at $25^{\circ}C$. A notable amount of pectin had been dissolved in juice of Baik-kimchi till the best ripening time and showed the level of 223.2mg/100ml at 5$^{\circ}C$ on the day of 9 and 207.3mg/100ml at $25^{\circ}C$ on the day of 2. In contrast, the contents of pectin in solid Baik-kimchi decreased, whereas contents of sodium hexametaphosphate soluble pectin(HXSP) and HCl soluble pectin(HClSP) increased with fermentation period.

남부지역 원예산물의 가공품개발 연구 (1) 소금농도가 오이지의 품질에 미치는 영향 (Studies on the Development of Processed Foods of Greenhouse Horticultural Commodities in the South Area (1) Effect of Brine Concentration on the Quality of Cucumber Pickle)

  • The cucumber pickles(pieces types), soaked at 10, 15, and 20% brine concentrations, were fermented for 7 days at 25oC. The pH of sample in 10% brine was lowered faster than that of others. To reach pH 3.7, it took 4 days(10%) , 6 days(15%) and 7 days(20%), respectively. The salt permeated into cucumber rapidly, and it took only 1 day to reach maximum content, thereafter salt contents were maintained constant. The titratable acidity and turbidity of cucumber pickle liquids were increased with fermentation time. Sensory evaluation showed that taste and smell of fresh cucumber, color and texture were decreased, while yeast moldy smell and acidic taste were increased as fermentation proceeded. Higher scores were obtained in acidic taste and smell, yeast moldy taste and smell in case of fermented sample in 10% brine for 4 days. It was concluded that the quality of cucumber pickle was influenced by the salt concentrations of brine.

오이지의 발효에 미치는 염혼합물 첨가 및 열수담금의 병용효과 (Combined Effect of Salts Mixture Addition and Brining in Hot Solution on the Korean Pickle Fermentation)

  • 오이지의 과숙을 억제시키는 방법을 찾고저 $90^{\circ}C$의 소금물에 담금(방법 A), $90^{\circ}C$ 소금물에 KCl과 $CaCl_2$ 첨가하여 담금(방법 B), 방법 B로 담그어 발효중간에 인산염과 nitrite염, citrate염의 혼합물을 첨가하는 방법 (방법 C) 그리고 방법 C 중 염혼합물을 인산염과 KCl만으로 한 방법(방법 D)의 4가지 방법을 상온에서 소금물에 담금만을 한 대조구와 비교하였다. 그 결과 방법 C와 D는 $25^{\circ}C$에서 13일되어도 pH 4.0에 도달하지 않아 4일 이내에 pH 4.0에 도달하였던 대조구와 비교할 때 현저한 과숙 억제 효과가 밝혀졌다. 방법 B도 pH4.0에 도달하는 시간이 약 2배 소요되어 발효억제 효과가 뚜렸하였다. 그러나 유기산을 측정한 총산도는 이들 첨가구가 더 많이 생성되어 pH와는 다른 양상을 보여주었다. 물리적 성질인 오이조직의 견고성 변화에서는 뚜렷한 차이를 보여주지는 않았으나 관능적 특성에서는 방법 C와 D에 의하여 제조한 오이지가 대조구에 비하여 군덕내와 신 냄새가 훨씬 적었고 생오이 냄새와 맛이 강하여 신선한 오이지의 특성을 오랫 동안 유지해줌이 밝혀졌다.

한국전통 김치의 다양화 및 세계화를 위한 스페인인의 기호도 조사연구 (A Survey of the Preference for Korean Kimchi by Spanish Natives)

  • This study was conducted to develop methods of promoting traditional Korean Kimchi globally. To accomplish this, 99 Spanish natives were surveyed for their sensory evaluation and awareness of Kimchi. The results revealed that a relatively high number (46.9%) of the respondents had eaten Korean Kimchi. After eating the Kimchi, women tended to provide a slightly higher overall acceptability than men. Furthermore, when the overall sensory evaluation was conducted, the characteristics of Kimchi that were most recognized were its red color, spicy smell and hot taste. In addition, 93.9% of the respondents said that Korean Kimchi was a suitable food based on its spicy flavor>chewing force>appearance>red color>fermented smell. However, 6.1 percent of the subjects responded that they did not find Kimchi appetizing due to its hot taste>fermented smell>chewing force. Interestingly, the hot taste was a common selection for the reason that individuals liked or disliked Kimchi. When ranked among traditional Spanish foods, Kimchi was reportedly similar to cooked cabbage, cooked bell peppers, cooked red peppers and Moheu ppikan, pickles, Spanish lettuce, chiseutora and oil pickled cheese, or to various vegetables pickled in vinegar. Taken together, the results of this study should facilitate the globalization of Kimchi. In addition, the findings of this study provide fundamental data that should assist in the development of a local style of Kimchi for Spain.

저염 오이지의 최적 발효기간에 대한 연구 (Optimization of the Fermentation Period of Lightly Salted Oiji (Traditional Korean Cucumber Pickles))

  • To optimize the fermentation period of lightly salted Oiji, 3% salt was added to cucumbers that were fermented at $27{\pm}1^{\circ}C$ for 3, 4, 5, 6, or 7 days, after which their physical properties (moisture content, salinity, pH, acidity, hardness) and sensory characteristics (acceptance test, difference test) were evaluated. The moisture content was highest at day 6. Hardness slowly increased as fermentation time increased, but not significantly. The pH was highest after 3 days of fermentation, and tended to decrease as fermentation time increased, with the largest drop occurring between 4 and 5 days, and the lowest pH occurring between 6 and 7 days. Acidity was lowest after day 3 of fermentation and highest after day 7. Acidity tended to increase as fermentation period lengthened. The L-value tended to decrease as salt concentration increased. The a-value declined from day 3 to day 5, then increased significantly by day 7. The b-value was highest after 7 days, with a tendency to increase as the fermentation progressed. Acceptance test results were highest for taste and overall acceptance after 5 days of fermentation. The difference test showed that the optimal lightly salted Oiji fermentation period was approximately 5 days. These results indicate that lightly salted Oiji fermented for 5 days produced the highest acceptance.

여대생의 김치에 대한 의식과 섭취실태 조사 (A Survey on the Notion and Intake of Kimchi among College Women)

  • A survey of the notion and intake on Kimchi among college women in Pusan was conducted to get some basic information on kimchi. Two hundred sixty seven students in Pusan participated in this survey. Seventy five percent of students answered that they like kimchi. They preferred well-fermented kimchi with anchovy extracts, refreshing taste and crispy texture the saltly and sweet. Chinese cabbage kimchi (87.6%) was found to be the most favored kimchi and Kakdugi(seasoned pickles of cubed radish), Nabak kimchi and Chonggak kimchi (ponytail kimchi) were followed in the order. The most favorite food made from kimchi was stir fried kimchi with rice. They disliked traditional special kimchi, such as Puchu kimchi (leek kimchi), Pa kimchi (green onion kimchi), Kkennip kimchi (perilla leaf kimchi), Godulbaegi kimch (Korea wild lettuce kimchi) and Gat kimchi (Leaf mustard kimchi). About 93 grams of kimchi was consumed daily and this amount was a little. Seventy percent of students did not have any experiences preparing kimchi. Experiences of kimchi preparation were given by mother through kimchii-making event for the winter(71.7%), cooking practice in middle or high school (14.1%) and college(10.9%) and general cooking education (33%). They preferred to buy kimchi at the Agricultural Cooperative Association (48.5%) or a large kimch factory (32.75). College students believe that kimchi is a healthy food and are willing to learn how to make kimchi.

어린이의 김치의식에 관한 실태조사 (I) - 김치 선호도에 관한 조사 - (A Survey on the Children한s Notion in Kimchi(I) - Children한s Preferences for Kimchi -)

  • 어린이들이 좋아하는 기호성 김치를 개발하기 위한 기초작업으로 부산시내 공, 사립 국민학교 2, 4, 6학년에 재학중인 1,100명을 대상으로 김치 선호도에 대한 설문조사를 실시하였다. 조사대상 국민학생의 68%가 김치를 좋아한다고 응답하였으나 국민학생들이 좋아하는 반찬들(계란말이, 단무지, 김구이, 햄.소시지.미니돈까스, 콩나물무침, 호박나물, 장조림 등) 중에서의 김치의 선호도(17.6%)는 햄.소시지.미니돈가스(54.7%)에 이어 2위를 차지하였으나 그 선호 정도는 상당히 낮아 실제적인 선호도와는 차이가 있는 것으로 나타났다. 김치의 매운맛은 국민학생들이 김치를 가장 싫어하는 이유인 동시에 김치를 가장 좋아하는 이유로 나타나 김치의 특성을 대표하는 맛으로 생각되었다. 국민학생들이 선호하는 김치의 종류는 배추김치, 깍두기, 물김치, 총각김치, 오이김치 순이었다. 김치 담금 재료 중에서는 배추를 가장 좋아하고 생강, 마늘, 파, 젓갈 등 강한 냄새를 내는 것을 싫어하는 것으로 나타났다.

생고추와 고추 가공시의 Capsaicin 함량 변화 (The Changes of Capsaicin Contents in Fresh and Processed Red Peppers)

  • 고추의 성숙시, 또 고추장과 김치의 숙성시 capsaicin 함량과 색의 변화 그리고 capsaicin을 가열했을때의 함량변화와 화학구조의 변화를 측정하였다. 고추의 성숙에 따른 capsaicin 함량은 대체로 적변 초기에서부터 중간정도 적변한 시기인 $6{\sim}7$주경이 가장 높았는데 품종별로 보면 신홍은 개화후 48일경 때 가장 함량이 높아 201.07 mg% 였고 아람은 54일경으로 37.34 mg%였으며 새로나는 적변초에는 48.68 mg%로 나타났으나 점차 감소하여 완전적변시에는 17.96 mg%로 가장 적었다. 고추의 Hunter 표색치 a값은 35일까지 -로서 성숙함에 따라 감소하다가 42일부터 +로 나타나면서 크게 증가하였다. 완전적변시 신홍의 a값은 37.35로 가장 높았고 아람과 새로 나는 37.2로 비슷하였으며 capsanthin 함량은 신홍이 126.4 mg%였고 아람은 83.57 mg% 그리고 새로나는 80.00 mg%였다. 고추장은 숙성함에 따라 매운성분이 감소되어 capsaicin은 100일 숙성후 초기에 비해 약 20% 정도 감소되었다. 고추장의 색은 숙성에 따라 L, a, b값이 모두 감소하였고 capsanthin 함량은 초기에 27.51 mg%였으나 이후 감소되다가 100일에는 조금 증가하여 28.85mg%를 나타내었다. 김치는 숙성함에 따라 매운맛이 감소하였는데 capsaicin 함량은 13일 경과시 약 17%정도 감소하였다. Capsaicin은 가열함에 따라 함량이 감소되었는데, $100^{\circ}C$보다 $120^{\circ}C$에서 더 많이 감소되었고 가열시 capsaicin의 분해는 일어나지 않았다.

Lactobacillus brevis KB290 Enhances IL-8 Secretion by Vibrio parahaemolyticus-Infected Caco-2 Cells

  • Vibrio parahaemolyticus in uncooked seafood causes acute gastroenteritis. The microorganism has two sets of type III secretion systems and two hemolysins. When it injects its effector proteins into a host cell via type III secretion system 1, one of the type III secretion systems induces secretion of interleukin (IL)-8, a proinflammatory chemokine, through the phosphorylation of ERK 1/2 and p38 MAPK. Although probiotics have beneficial effects on hosts and can help control some infectious diseases, there is little research on the efficacy of probiotics in V. parahaemolyticus infection. Here we pretreated V. parahaemolyticus-infected human intestinal epithelial cells with heat-killed Lactobacillus brevis KB290, a probiotic isolated from fermented vegetables (traditional Japanese pickles) and utilized as an ingredient of beverages and supplementary foods, and demonstrated its efficacy in enhancing IL-8 secretion from V. parahaemolyticus-infected cells. Among the three heat-killed lactic acid bacterial strains we tested, L. brevis KB290 induced the highest level of IL-8 secretions in the infected cells. Relative to control cells (Caco-2 cells pretreated with PBS), V. parahaemolyticus-infected Caco-2 cells pretreated with heat-killed L. brevis KB290 secreted IL-8 earlier, although concentrations were similar 450min after infection. Heat-killed L. brevis KB290 pretreatment also induced earlier ERK 1/2 phosphorylation, greater p38 MAPK phosphorylation, and enhanced IL-8 mRNA expression. Heat-killed L. brevis KB290 accelerated IL-8 secretion, a host cell immune response, in V. parahaemolyticus-infected cells. We consider this to be beneficial because IL-8 plays an important defensive role against infection, and would contribute to the repair of injured epithelial cells.

김치의 공업적(工業的) 생산(生産)을 위한 공업표준화(工業標準化)에 관(關)한 연구(硏究) 제(第)1보(報) 공업적생산(工業的生産)을 위한 조사(調査) (Studies on Kimchi for its Standardization for the Industrial Production Part 1. Survey of Status Industrial Production)

  • 1) In Seoul, it was known that the season for preparing Kimchies (fermented vegetables) for the winter was from the middle of November to early in December, in which the preparing rates of Kimchies in the middle of November, the end of November and early in December were 32.7%, 41.3% and 12.5%, respectively. The time that the largest quantity of them was prepared was about the end of November. 2) The average cost of Kimchies prepared for the winter for a family of four, five, six and seven was $10,000{\sim}15,000$ Won, $15,100{\sim}20,000$ Won, $10,100{\sim}20,000$ Won and $10,100{\sim}20,000$ Won, respectively, and the cost did not increase in proportion to members of a family. In case of the family of $6{\sim}7$, the cost for Kimchies showed a wide range compared with those for the family of $4{\sim}5$ 3) The main raw materials of kimchi for one person for the winter required $12{\sim}20$ heads of Chinese cabbages, $14{\sim}20$ roots of radishes, $4{\sim}7$ cloves of garlics and $300{\sim}500g$ of powdered red pepper. 4) The residents living in Seoul had prepared the several kinds of the pickles for the winter as follows; (1) Chinese cabbage Kimchi (98.9%), (2) Whole Chinese cabbage Kimchi (74.7%), (3) Kkakdugi (68.6%), (4) Dongchimi (66.4%) and (5) Chong-kak Kimchi (63.3%). It has, therefore. been considered that the five kinds of Kimchies mentioned above may be industrialized. 5) Uniqueness of the raw materials used for the most popular Chinese cabbage Kimchi was to use leeks, garlics, red peppers and gingers as spices, and it was also known that proper amounts of salted shrimp pickles and oysters was mixed to the Kimchies. Therefore, it had been considered that the characteristics of Chinese cabbage Kimchies for the winter had the hot taste with freshness. 6) For keeping the Kimchies during the winter about the half of the pickle jars was buried in the ground, and another half of them were wrapped in the straw bags or styropol and they were placed on the ground or kept in the basement, 7) In most case (80.9%), the salt concentration of pickling was adjusted by one's experiences, and only 19% of them was measured with the instruments. 8) Most of remaining kimchies were usually used for other cooks, but some of them were thrown away. 9) The ratio of the people who had ever bought the market Kimchies for their own edibility was 17.8% and most of them got it only in the spring and summer season. 10) About 18% of the residents living in the general houses in Seoul had ever bought the market Kimchies. It was also known that about 48% of the residents living in the general houses and about 79% of the residents living in the apartments wanted to purchase the market Kimchies if the production of the delicious Kimchies were industrialized. The season that the people wanted to get the market Kimchies was a little different each other among the residents. About 13.4% of the residents living in the general houses wanted to purchase the Kimchies during the summer, and 11.9% of them wanted to get it throughout the year. On the other hand, in case of the apartments, 25.2% of the residents wanted to get it during the summer and 24.4% of them wanted it throughout the year (4 seasons) and 19.9% of them wanted it during two seasons. The data mentioned above have shown that many residents hope strongly an industrial production of the Kimchies. It is also true that many residents living in both the general houses and apartments want to get the market kimchies throughout the year, and particulary during the summer season that most foods are very apt to be spoiled.
