Fermentation for Liquid-type Yogurt with Lactobacillus casei 911LC

  • This study was carried out to find the attributes for liquid-type yogurt with Lactobacillus casei 911LC during 72 h fermentation at $37^{\circ}C$. The pH decreased up to 32 h and plauteaued thereafter, and the titratable acidity increased up to 40 h. The growth of lactic acid bacteria sharply increased with $3.5{\times}10^7$ cfu/ml up to 40 h of fermentation and slowly decreased thereafter. The free amino acids produced during fermentation reached the maximum value at 44 h and gradually decreased thereafter. Bitterness sensory scores were the highest at 44 h of fermentation. In the result of electrophoresis, the band mostly disappeared at 72 h fermentation. The present data showed that the range of optimum fermentation time for liquid-type yogurt using Lactobacillus casei 911LC was from 40 to 44 h.

Stabile Fermentation of Citric Acid Using Immobilized Saccharomycopsis lipolytica

  • The effects of media composition on citric acid fermentation using surface immobilized Saccharomycopsis lipolytica were studied. The use of the standard medium for these organisms resulted in rapid decrease of citric acid production and a transformation of immobilized cell morphologies from a yeast-type to a mycelium-type. When the standard medium was enriched with vitamins, trace minerals, a growth factor and ammonium to form a Vigorous Stationary Phase (VSP) fermentation type medium, relatively stable citric acid production (10 mg/lㆍh) was obtained. Using the VSP type medium, the surface immobilized cells also retained their yeast-type form.

홍삼 첨가에 따른 고추장의 이화학적 특성 변화 (Changes in Physiochemical Properties of Kochujang by Red Ginseng Addition)

  • Changes in physiochemical properties of Sunchang sikhe kochujang, the most famous traditional kochujang, by red ginseng addition(1, 2 and 5% red ginseng on the total weight basis) were investigated. Measurements of physiochemical parameters such as reducing sugar content, alcohol content, amino type nitrogen content and color difference value were conducted during fermentation at 25oC for 120 days. Alcohol content was increased from the begining of fermentation, reaching at the highest level after 90 days of fermentation and then slowly reduced. Alcohol content of red ginseng kochujang was generally higher than that of control kochujang after 90 days of fermentation. Crude protein content of control kochujang and red ginseng kochujang were reduced during fermentation whereas amino type nitrogen content were gradually increased during fermentation. Amino type nitrogen content of red ginseng kochujang appeared to be slightly lower than that of the control kochujang. The reduction in amino type nitrogen content of red ginseng kochujang was negatively related to the level of red ginseng addition. Among color difference values, L and b value of both control kochujang and red ginseng kochujang were reduced by 30 days from the begining of fermentation and then started to be increased.

숙성온도가 된장의 품질에 미치는 영향 (Effect of Fermentation Temperature on Quality of Doenjang)

  • 메주를 만들 때 저온숙성의 경우 상온숙성보다 발효 특성과 관련이 있는 pH, 아미노산성 질소 등의 양이 낮았으며 동일한 아미노태 질소 함량에 도달하기까지 숙성기간이 약 2~3배정도 필요한 것으로 나타났고, 된장의 색상이 약 2배정도 밝은 것으로 나타났다. 그리고 숙성초기 낮은 온도로 인해 산성생균의 활동성이 낮아지고 이로 인한 유기산 생성량이 낮아져 상온숙성 된장에 비해 pH가 높고, acidity I이 낮으며, 저온숙성된장은 가수분해 효소에 의한 분해속도의 저하로 낮은 아미노산성 질소 함량을 보였다.

Fermentation properties of rice-added yogurt using two types of blended lactic acid bacteria as a starter

  • These days, different types of yogurt are being manufactured by adding various starters and functional ingredients for health. The purpose of this study was to prepare yogurt added with rice followed by fermentation with two types of starters and to examine its attributes. Ten percent of skim milk powder and 0, 2.5, 5.0, 7.5, or 10% rice were mixed in water (w/v) and then inoculated with two types of starter: 1) Type A, Streptococcus thermophiles and Lactobacillus delbrueckii ssp. bulgaricus as starter; and 2) Type B, Streptococcus thermophiles, Lactobacillus acidophilus, and Bifidobacteium animalis ssp. lactis as starter. The pH of B type yogurt was lower (p < 0.05) than that of A type yogurt from 6 hours to 14 hours after fermentation. The number of microorganisms in all fermented milk showed maximum increases at 2 and 6 hours of fermentation (p < 0.05). The number of microorganisms in fermented milk peaked at 6 hours after fermentation and maintained this level thereafter. There was no effect of rice addition on microbial growth or acidity of the fermented milk. Sensory attributes of yogurt samples with and without added rice were not significantly different. This experiment showed that the production efficiency of yogurt with added rice was not different when two different types of starters were used to manufacture yogurt.

시판 과일식초의 발효방법에 따른 이화학적 특성 비교 (Physicochemical Properties of Commercial Fruit Vinegars with Different Fermentation Methods)

  • 시판 과일식초를 발효 방법에 따라 초산발효만 진행된 A 타입과 알코올 및 초산발효가 진행된 B 타입으로 나누어 이화학적 특성을 비교하였다. A 타입 식초는 B 타입 식초에 비해 pH는 낮게, 총 산도는 다소 높게 확인되어 발효방법에 따른 차이를 보여주었다. 당도 및 환원당 함량은 B 타입 식초에서 비교적 높게 확인되었고, 이는 제품에 첨가된 각 과즙 함량의 차이로 사료되었다. 갈색도 및 색도의 비교에서는 B 타입에서 갈색도, 적색도, 황색도가 더 높게 측정되어 식초의 색이 더 진해지는 현상을 확인할 수 있었다. 시판 과일식초의 유리당은 fructose, glucose, sucrose, maltose의 순으로 검출되었고, 총 함량은 B 타입에서 다소 높음을 확인할 수 있었다. 시판 과일식초의 유기산은 acetic acid 외 tartaric acid, malic acid, succinic acid 등으로 구성되어 있었고 전체 함량은 A 타입 식초에서 다소 높게 확인되었다. 또한 존재하는 유기산의 함량을 통해 원료에 함유된 원료과즙의 함량을 간접적으로 추정할 수 있었다. 총 페놀 및 총 플라보노이드 함량은 B 타입 식초에서 더 높게 측정되었고, DPPH 라디칼 소거활성을 통한 항산화 활성도 유사한 경향을 나타내었다.

Evaluation of Fermentation Quality of a Tropical and Temperate Forage Crops Ensiled with Additives of Fermented Juice of Epiphytic Lactic Acid Bacteria (FJLB)

  • This study aimed to examine the fermentation quality of a tropical Elephant grass (Pennisetum purpuereum) and temperate Italian ryegrass (Lolium multiflorum) forages ensiled additive of fermented juice of epiphytic lactic acid bacteria (LAB) and to determine what factor affects the fermentation characteristics of the crops. In both species cell walls neutral detergent fiber (NDF) and acid detergent fiber (ADF) contents in silages were consistently decreased (p<0.05) with the addition of FJLB at ensiling more then Control treatment. The FJLB additive increased number of LAB (cfu) and lactate concentration in the silages in both species. The Control treatment without additive underwent a clostridial type of fermentation with traces of propionic, iso-butyric, n-butyric acids contents with higher (p<0.01) levels of volatile basic nitrogen (VBN %TN) and had appreciable decreased of nutrient in silages. FJLB treatment improved silage nutritive value with little contents of VBN %TN, ethanol and very small amount of dry matter (DM) and hemicellulose losses (p<0.05) between 2 to 5% and 7 to 3% respectively, in Elephant grass and Italian ryegrass species. The results in this study indicates that while among the factors affecting silage fermentation butyric type of fermentation was more pronounced in tropical elephant grass compared to the temperate Italian ryegrass, FJLB additive revealed a better silage fermentation products in both species.

  • A numerical simulation was conducted to investigate the effect of height position of Rushton type Impeller in the fermentation. The computational method was based on the CFX code. The simulation was performed for 3 height differences(25, 30, 35mm) between Rushton type impeller and bottom of fermentation. The instantaneous flow fields showed that the bulk flow consisted of large scale vortices. However the main flow results showed that the formation of ring vortices above and below the impeller depended on the height of the impeller.

Bacillus Subtilis NRLSI IV로 제조한 청국장의 접종포자농도와 발효시간에 따른 품질 특성 (The Quality Characteristics of Chunggujang Prepared by Bacillus Subtilis NRLSI IV on the Different Inoculum Levels and Fermentation Times)

  • To compare the quality characteristics, chunggugjang was prepared with Bacillus subtilis NRLSI IV on the different inoculum levels$(10^2,\;10^4,\;10^6,\;and\;10^8 CFU/ml)$ and fermentation times(0, 12, 24, 36, and 48 hours). Although significant change in total nitrogen content was not found, the content of amino type, soluble and ammonia type nitrogen was generally increased according to the increase in fermentation time. Decomposition rate of nitrogen was also increased by fermentation time and nitrogen solubility was the highest value(62-75.9%) at 48 hour fermentation. In results of color changes, it was found that L and a value were decreased but there was no significant changes in b value as fermentation time was increased. In chunggugjang made with long fermentation time, hardness was decreased and relative viscosity of viscous substance was gradually decreased after little increase at initial fermentation time. The effect of inoculum level on hardness and relative viscosity were similar to that of fermentation time, i.e. the decrease of these at high inoculum level. In activity of V-GTP, 36 hour incubation could produce the highest value whereas no effect of inoculum level was found during fermentation except at 48 hour. In chunggugjang made with $10^2CFU/mL$ of Bacillus subtilis NRLSI IV, the content of glucose, sucrose, raffinose and stachyose was dramatically decreased at initial fermentation time and that of phytic acid, oxalic acid, citric acid, tartaric acid and malic acid was also decreased during fermentation, although the increase in acetic acid was found.
