Fermentation and Quality Characteristics of Yakju According to Different Rice Varieties (쌀 품종에 따른 약주의 발효 및 품질 특성)

  • This study was performed to improve quality of traditional Yakju and compares quality of Yakju according to different rice cultivars. The pHs of Ilmi Yakju and Hanarum Yakju showed 4.14 and 4.07, respectively and the other Yakju's pHs were ranged from 3.92 to 3.98. The content of total acid of Yakju using Indica rice imported from Thailand was the highest among the samples. The major components of free sugar was glucose and the highest content of total free sugars was found in Indica Yakju. The content of reducing sugars in Yakju using Indica rice was the higher than other samples. The ethanol content of Hanarum Yakju showed higher than those Yakju's and the lowest ethanol content found for the indica Yakju. The volatile compounds from the rice Yakju were identified by GC-MS. Twenty-one volatile compounds were found in rice Yakju. And the major volatile compounds were ethanol, acetic acid, 1-methyl-1-propanol, 2-methyl-butane, 3-methyl-1-butanol, iso-amylalcohol and 1-hexanol from Yakju. As the result of sensory test, higher scores for smell and color were found for the Yakju used Hanarum Yakju. The highest score sweat and acid were found for the Anda rice Yakju in sensory test. The result of sensory evaluation indicated that Hanarum Yakju and Anda Yakju were better than the other samples, and the value of bitterness was no significant in this test.

Production of Pellet Fertilizer from the Sludge of Thermophilic Aerobic Oxidation System End Its Effects on the Growth of Chinese cabbage and Soil Properties (고온 호기성 산화 시스템의 슬러지로부터 펠렛 비료의 생산과 Chinese cabbage의 생육 및 토양 특성에 대한 영향)

  • A solid of Thermophilic Aerobic Oxidation(TAO) System was mixed with sawdust or a rice husks. After fermentation was finished, molding machine and a dryer were used, and pellet fertilizer was produced. The fertilizing experiment was carried out as five pieces by Bed soil, TAO solid(TAO-S), TAO pellet fertilizer(TAO-PF), Chemical fertilizer(NPK) and Control(no fertilizer). Growth rate of the Chinese cabbage by each treatment was examined. Analysis of microbe and soil characteristic before and after crop experiment were carried out. When the moisture contents of TAO-PF were $18\%$ and $25\%$, the occurrence rate of microbes for the storage time was increased to $80\%$ and $100\%$ respectively. However, in the $12\%$ of water content treatment was not increased microbes. The concentration of soil bacteria in TAO-PF and TAO-S for 15 day after treatment was $1.5\times10^7\~8.0\times10^7$ CFU/ml, and the concentration of bacteria for 50 day was increased to $6.3\times10^7$ and $8.3\times10^7$ CFU/ml. However, Fungus decreased. The concentration of Actinomycetes was increased in TAO solid, Bed soil and TAO-PF treatment. The TAO-S and TAO-PF treatment were normal to compare to the NPK treatment. In this experiment the height and width of the Chinese cabbage were 22.3 cm, 16.8 cm in Bed soil and 28.8 cm, 21.3 cm in TAO solid. The leaf number of TAO-S, TAO-PF and NPK treatment were similar to 39.8, 38.3, 40.3 sheet. As the result, the TAO-PF knew that use was possible with fertilizer.

  • The goal of this study was to investigate the chemical and microbiological characteristics of kimchi products distributed in Japan (5 brands, J-products) and Korea (2 brands, K-products). When their average analyses were compared, J-products showed higher values in pH, total sugar and acetic acid contents, while K-products showed higher values in number of lactic acid bacteria, sugar alcohol and lactic acid contents including textural hardness or chewiness. In addition, the analysis showed great variation in composition levels regarding pH, total sugar and acetic acid contents of J-products, and this fact revealed that different manufacturing processes are being attempted in Japan. Interestingly, some J-products had high concentrations of acetic acid with little mannitol, as this result implies that some manufacturers in Japan produce kimchi by adding acetic acid or lactic acid to control the rate of lactic acid fermentation. The result of this study elucidates the Japanese consumer's taste preference as well as the manufacturing processes in Japanese companies.

Characterization cf salted Chinese cabbage in relation to salt content, temperature and time (배추절임시 염수농도와 침지온도 및 시간에 따른 특성 변화)

  • When Kimchi is cooked, it is very import to find an appropriate level for the salt content of the cabbage to makes the best tasting Kimchi. Therefore, in this article, attempts were made to find the best salted cabbage condition using difference salt solution concentration, temperatures and fermentation periods. In the experiments with the difference of the salt solutions, 10 and 15%, the salted cabbages were packed in polyethylene bags, and incubated at 10, 15, 20 and 25$^{\circ}C$ for 0, 2, 4, 6, 8, 10, 12, 14, 16 and 20 hrs. As a result, the best tasting Kimchi, in terms of texture characteristic, were found with storage times of 10 and 6-8 hrs, with salt solution concentrations of 10 and 15%, respectively, both of these at 25$^{\circ}C$. The best conditions, in terms of the kimchi taste characteristics, where 6-10 hrs, with the salt solution concentrations of 10 & 15%. With storage conditions of 10 hrs and a salt solution concentraction of 10%, and 6-8 hrs and a salt solution concentration of 15%, both at 25$^{\circ}C$, the texture characteristics were fresh. clear and coot. Also, the points of the appropriate salt content differ with temperature. Therefore, the appropriate conditions for the salting time, storage temperature and salt solution concentrations will make the best tasting, most nutritious Kimchi, in the least time and most economically.

Effects of Freeze-dried Mulberry on Antioxidant Activities and Fermented Characteristics of Yogurt during Refrigerated Storage

  • This study investigated the effect of added freeze-dried mulberry fruit juice (FDMJ) (1, 3 and 5%) on the antioxidant activity and fermented characteristic of yogurt during refrigerated storage. A decrease in pH of yogurt and increase in acidity was observed during fermentation. The yogurts with FDMJ exhibited faster rate of pH reduction than control. Initial lactic acid bacteria count of yogurt was 6.49-6.94 Log CFU/g and increased above 9 Log CFU/g in control and 1% in FDMJ yogurt for 24 h. The total polyphenol and anthocyanin content of FDMJ yogurt was higher than that of control due to the presence of phytochemical contents in mulberry. Moreover, antioxidant activity such as DPPH and reducing power was highest 5% FDMJ yogurt. During cold storage, pH decreased or remained constant in all yogurts with values ranging from 4.08 to 4.78 units. In sensory evaluation, the score of 1% FDMJ yogurt was ranked higher when compared with other yogurts. It is proposed that mulberry fruit juice powder can be used to improve sensory evaluation and enhance functionality of yogurt.

  • Suspended wood waste was being inflow into the dam and the problem of waste disposal has been occurred. In this study, ethanol production using woody floater wastes was performed to estimate value in use for raw material of renewable energy. To achieve the goal, experiments of acid hydrolysis and ethanol fermentation using dam woody floater as raw materials for bioethanol was carried out. In the results of field survey in the chungju dam, kind of woody floater was mainly Japanese larch (Larix leptolepis) and hybrid poplar (Populus tomentiglandulosa). The results of sugar extraction showed that sugar content was higher in Larix leptolepis than Populus tomentiglandulosa. Extracted sugar from wood waste was effective consumed by yeast(P. Stipitis and S cerevisiae). In the experiment consumption of sugar including glucose, galactose and xylose, the consumption rate of S. cerevisiae is faster than that of P. stipitis. and efficiency for ethanol production is higer in S. cerevisiae than P. stipitis. Also it can be confirmed that resource as ethanol production using wood waste was available.

Construction of Killer Yeasts by Spheroplast Fusion (포도주용 Killer Yeast의 개발)

  • This study was performed to construct killer wine yeasts which might suppress the growth of wild yeasts, reduce the consumption of starter and condense the fermentation period. Saccharomyces cerevisiae M524, a commercial wine yeast, was treated with N-methyl-N'-nitro-N-nitrosoguanidine to induce auxotrophic mutants, i.e., CHM $2(thr^-)$, CHM 3 $(asp^-)$ and CHM 6 $(tyr^-)$. These auxotrophs were fused successfully with a killer yeast, S. cerevisiae $1368R({\alpha}\;his\;4\;kar\;1-1(kil-k)\;(k_0)$, respiratory deficient) using sphoroplast techniques and the fusants were designated as CHF 21$(th^-\;kil^+)$, CHF 22$(thr^-\;kil^+)$, CHF 31$(asp^-\;kil^+)$ and GHF 61$(tyr^-\;kil^+)$. Combined cultivation of CHF 31 with 1368R or S. cerevisiae $5{\times}47$ (killer sensitive) proved out that CHF 31 had the characteristic of killing and produced the same amount of ethanol as the prototroph, M524.

Effects of Sorghum Hybrid and Grain Supplementation of Silage-Based Diets on Nutrient Digestibilities and Passage Rates and Ruminal Metabolism in Growing Steers

  • Six medium-framed steers, fitted with ruminal cannulas, were utilized in a $6{\times}6$ Latin square design with a $3{\times}2$ arrangement of treatments to determine the effects of sorghum hybrid and grain supplementation on nutrient digestibilities and passage rates and ruminal metabolism of silage-based diets fed to growing steers. The diets consisted of three wholes-plant silages (a high grain-containing, grain sorghum and middle-season, moderate grain-containing, and late-season, low grain-containing forage sorghums), each fed with or without 25% rolled grain sorghum. No significant interactions occurred between sorghum hybrid and grain supplementation for the digestion or passage rate criteria measured. Ruminal butyrate concentration was the only fermentation characteristic affected by a hybrid ${\times}$ grain supplementation interaction. The grain sorghum silage diets had the highest DM, OM, and ADF digestibilities; the late-season silage diets, the lowest. Digestibility of NDF tended to be highest (p < 0.10) for the grain sorghum silage, whereas starch digestibility was not affected by sorghum hybrid. Ruminal ammonia, acetate, propionate, butyrate, and total VFA concentrations were highest for the grain sorghum silage diets. Grain supplementation increased DM and OM digestibilities, but had no effect on digestibilities of NDF, ADF, and starch. Ruminal pH was decreased, but total VFA concentration and acetate : propionate ratio were not affected by grain supplementation.

Identification of non-pigmented Serratia marcescens (비색소성(非色素性) Serratia marcescens의 분리(分離) 동정(同定))

  • Among clincal isolates, most strains of Serratia marcescens were belonged to nonpigmented form, and several attempts were undertaken for the rapid and simple identification of these strains. Prodigiosin production of non-pigmented strains was uniformly negative in many kinds of solid media as well as in nutrient agar added with various amino acids and thiamine. On blood agar, colonies of S. marcescens turned gradually to grey or dark color by the lapse of incubation period and this characteristic seems to be able to utilize as an indicator for a primary isolation, and also generally paralleled with the results of dehydration of Tween 80 and lipase activity in soy bean oil medium although these reactions were by no means specific to S. marcescens. In order to rule out these non-specific reactions, other tests such as oxidase and sucrose fermentation are required for the final confirmation of this species.

Effects of Attrition Milling in Wheat Flour on Starch Damaged of Dough and Bread Baking Properties (소맥분 제분시 발생되는 손상전분이 제빵 적성에 미치는 영향)

  • The purpose of this research is the establishment of optimal processing and the quality improvement of confectionary analysis of the damaged starch content of flour. I studied the rheological and bread making properties of the dough containing different damaged starch content. I examined rheological and physico- chemical characteristic farinograph, extensograph and amylograph with DNS, CWRS and SW containing 6.5%, 8.2%, 9.0%, 9.0% and 10.5% of damaged starch. And I measured the hardness and specific volume and performed the functional survey by rheometer for quality control. In the amylogram, at the damaged starch content 9.5% at such the maximum viscosity was 900 B.U. the volume of bread fermention tolerance were increased. In addition, the extensegram after 135 min showed that maximum resistance of the dough were 570 B.U at the damaged starch contents of 9.5% and the bread had homogeneous air cells and internal structures at the damaged starch contents of 9.5% at which the area(A), resistance(R) and R/E value of the dough were highest.
