The effects of replacing tallow with plant oils on the chemical composition, physical properties, fatty acid composition, and sensory properties of beef patties were investigated. Beef patties were produced with seven different formulations: control (tallow, 100%), rice-bran oil replaced (TR) and olive oil replaced (TO) (each at 20%, 40%, and 60% substitution). Fat content of beef patties increased, whereas moisture content decreased with increased TR and TO. Beef patties had increased lightness and yellowness but decreased pH and redness compared to those in the control (p<0.05). The thiobarbituric acid reactive substances (TBARS) values of all beef patties increased during cold storage. The TBARS values in the replaced TR or TO were similar to or lower than those in the control after 3 d. Saturated fatty acid content of beef patties decreased as the level of TR and TO increased, whereas unsaturated fatty acid content increased. Monounsaturated fatty acids were higher in TO and polyunsaturated fatty acids were higher in TR. The overall acceptability scores showed no significant differences between the control and replaced TR or TO over 7 d of storage.

This study was conducted to evaluate the feeding value of jambo grass (Sorghum $bicolour{\times}Sorghum$ sudanefe) silage and mott grass (Pennisetum purpureum) silage as a replacement of conventional fodder (jambo grass) in the diet of lactating Nili buffaloes (Bubalus bubalis). Thirty early-lactating ($45{\pm}4$ days), multi-parous Nili buffaloes, ten in each group, were allotted to three experimental diets. Jambo grass and mott grass were ensiled with molasses (at 2% of fodder DM) in two trench silos for 30 days. The control diet (JG) contained 75% jambo grass while the other two diets contained 75% jambo grass silage (JGS) and 75% mott grass silage (MGS). The remaining 25% DM in each diet was supplied by concentrates. Diets were mixed daily and fed twice a day ad libitum for 120 days. Dry matter intake (DMI) was higher with the JG diet compared with JGS and MGS diets. However, DMI as % body weight did not differ significantly in buffaloes fed either fodder or silage based diets. Crude protein (CP), digestible CP and NDF intakes were significantly higher on JG compared with silage-based diets. Apparent total tract digestibilities of DM, CP and NDF were similar in buffaloes fed JG, JGS and MGS diets. Milk yield (4% FCM) was similar in buffaloes fed JG and silage based diets. Fat, total solids, solid not fat, CP, true protein and non-protein nitrogen content of milk were similar in buffaloes fed fodder or silage based diets. The present results indicated that jambo grass and mott grass ensiled with 2% molasses for 30 days could safely replace the conventional fresh grass fodder (75% DM) in the diet of lactating Nili buffaloes without affecting their milk yield.
Emulsion-type sausages were manufactured to investigate the effects of CLA-vegetable oils and CLA-lard on quality of emulsion-type sausage. Each treatments replaced pork back fat with CLA-sesame oil (CLA-SO), CLA-lard (CLA-LD) and CLA-safflower seed oil (CLA-SSO) were stored during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. The changes in physico-chemical properties, thiobarbituric acid reactive substances(TBARS) and fatty acid composition of each treatments were measured during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. The pH values of all treatments significantly(p<0.05) decreased as storage time increased. Sausage products containing CLA-vegetable oils showed higher pH value than that of CLA-lard among the treatments. Color a*-value of CLA-SSO was higher than that of other treatments. During storage, TBARS values of treatments were significantly (p<0.05) increased, sausage products containing CLA-vegetable oils showed lower (p<0.05) TBARS value than CLA-lard, and TBARS of sausage products containing CLA-SSO was the lowest. This result indicated that CLA concentration in emulsion-type sausage did affect the lipid oxidation stability. Fatty acids composition was changed by addition of CLA-vegetable oils and CLA-lard. All kinds of fatty acids content decreased whereas CLA content extremely increased by replacement of CLA-vegetable oils and CLA-lard. The level of CLA content in CLA-vegetable oils was higher than CLA-lard. It may be concluded that emulsion-type sausage could be manufactured using CLA-vegetable oils as a pork fat substitutor without any negative effects on general components or physico-chemical properties.
펙틴의 비만억제 효과 및 지질저하 효과를 3T3-Ll adipocyte cell culture system과 20% 고지방식이를 섭취시킨 흰쥐에서 살펴보았다 펙틴을 첨가한 3T3-Ll adipocyte cell의 글리세롤 농도는 대조군에 비해 유의적인 차이가 없었으나, leptin의 농도는 83% 유의 적으로 감소하여 (p<0.01) adipose 세포에 지방 축적을 억제하는 효과가 있음이 확인되었다. 흰쥐를 이용한 동물실험에서 실험군간의 식이섭취량에는 차이가 없었으나 20% 지방을 섭취시킨 쥐는 정상식이군에 비해 체중이 50% 증가하였고, 고지방식이에 펙틴을 10%와 20% 첨가시킨 군에서 는 체중이 각각 12% 및 16% 감소하였다. 상대적인 내장지방의 함량(g/100 g body weight)은 ND 4.3 g, ITFD 5.6 g, HFP10은 3.1 g, HFP20은 2.3 g로 펙틴 첨가군의 상대적인 내장 지방 함량이 정상대조군보다 낮아 펙틴의 비만억제 효과가 현저하였다 고지방식이에 의해 상승된 혈장 중성 지질, 총 콜레스테롤 및 LDL-콜레스테롤 농도는 펙틴 첨가에 의해 감소되었고, HDL-콜레스테롤은 증가하여 펙틴의 첨가에 의한 지질 개선 효과가 관찰되었다. 간 및 심장의 지질 농도 역시 고지방식이에 의해 증가하였으나 펙틴의 첨가에 의해 감소되었다. 특히 분변으로의 지질 배설 현상은 펙틴 첨가군에서 현저하게 나타났는데 이러한 펙틴의 효과는 첨가 농도 의존적으로 관찰되었다. 펙틴의 비만 억제 효과내장지방의 축적을 억제하고, 소장에서 지질의 흡수를 방해하여 분변으로의 지질 배설을 촉진시키는 이외에도 다른 생리 활성이 있을 것으로 생각된다. 이상의 결과를 살펴보면 펙틴은 고지방식이를 섭취 하는 경우 복부지방 축적을 억제하는 효과가 체중감소 효과보다 크며 혈장 중성지질, 콜레스테롤 LDL 콜레스테롤을 떨어뜨리고 HDL 콜레스테롤은 상승시키는 효과가 현저한 것으로 나타났다.구 결과, cook-chill생산 시 녹차 추출물의 첨가가 미생물적 품질유지에 효과가 있다고 사료되는 바 본 연구결과를 기초로 급식소에서 음식 생산 시 녹차 추출물 및 천연 항균성 물질 첨가에 따른 미생물적 품질 및 관능적 품질검사를 통한 레시피 개발에 관한 지속적인 연구가 수행되어야 하겠다.다.다리다보니 점심시간을 활용할 수 없게 되는 문제점에 대한 재검토가 필요하다. 따라서 차후 학교급식의 안전성 확보를 위한 급식환경 개선의 일환으로 식당공간 확보 시 신속한 시간 내에 급식이 가능하도록 넓은 공간과 쾌적한 환경의 식당 조성에 대해 관심을 기울여야 할 것으로 사료된다. 이상 여부를 반영하는 임상증상의 빈도가 높은 청소년기 남녀 중학생의 경우 아침과 저녁의 결식빈도 및 외식과 간식의 빈도가 높았고, 아침식사의 질과 체형만족도가 낮은 것으로 나타나 청소년의 건강과 식습관 및 체형만족도가 상호 관련성이 높은 것으로 나타났다. 따라서 본 연구 결과는 성장기 청소년의 건강 유지를 위하여 바람직한 식습관의 중요성을 재인식할 수 있었으며, 올바른 식습관 확립을 위한 영양교육의 중요성이 재확인되었다.경제적일 것으로 판단된다.er 90 % of good relative dynamic modulus of elasticity due to fineness of formation caused by the increase of the unit powder content and the improvement of flowability, without regard to the replacement of crushed stone fines. 본 연구는 반려견 사료 내 주요 탄수화물원인 밀가루(원물기준 약 51%)를 현미로 15%, 30% 대체 급여하였을 때, 사료의 소화율 및 배설 분의 특성 변화를 조사하기 위하여 슈나우져(Miniature Schnauzer) 강아지(8~9개월령, 시험개시 평균체중 $5.0{\pm}0.3$ kg) 6마리를 이용 반복 $3{\times}3$ 라틴방각법에 따라 실험을 수행하였다. 현미 대체에 의해 조단백질을 제외한 건물, 유기물, 산분해 지방, 에너지 소화율이 linear (P<0.01)하게 증가하였다. 사료의 가소화에너지 및 대사에너지 농도(kcal/kg DM)도 현미 대체 비율이 증가하면서 linear 하게 증가(각각 P=0.001, P=0.006)하였다. 생분 배설량과 건조 분량도 모두 linear (P<0.001, P=0.004)하게 감소하였고, 특히 현미 30% 처리구는 대조구보다 생분 배설량이 약 21% 감소하였다. 분 score 또한 linear (P<0.05) 또는 quadratic (P<0.01) 개선 효과가 있었지만, 분 암모니아 농도는 현미구에서 높은 경향(P=0.07)을 보였다. 분 암모니아 증가는 linear하게 감소(P=0.001)한 short-chain fatty acid 농도와도 관계가 있을 것으로 판단된다. 본 실험의 결과, 현미 급여가 반려견의 영양소 소화율과 배설 분의 특성을 개선해 주는 것으로 나타났다.
This study was conducted to determine the effects of using mechanically deboned chicken meat (MDCM) and collagen on quality characteristics of semi-dried chicken jerky. In experiment I, semi-dried chicken jerky was prepared with the replacement of chicken breast with MDCM (0, 10, 20, and 30%). The pH value of the jerky formulated with only chicken breast was 5.94, while the replacement of chicken breast with MDCM significantly increased the pH (p<0.05). The protein content and shear force of the jerkies decreased with increasing amounts of MDCM, whereas the fat, ash content and processing yield showed the opposite tendency (p<0.05). Replacement with up to 10% MDCM had no adverse effects on the sensory characteristics of the semi-dried chicken jerky. In experiment II, four levels of pork collagen (0, 1, 2, and 3%) were added to the semi-dried chicken jerky formulated with 90% chicken breast and 10% MDCM. The addition of collagen increased the moisture content, but decreased the ash content of the jerkies produced (p<0.05). The processing yield of the jerkies increased with increasing added amounts of collagen (p<0.05). It was found that the jerkies formulated with 0-2% collagen had significantly higher overall acceptance score than those prepared with 3% collagen (p<0.05). In conclusion, MDCM and collagen could be useful ingredients to reduce the production cost and improve the processing yield of semidried chicken jerky. The optimal levels of MDCM and collagen which could be added without adverse effects on the sensory characteristics were up to 10% and 2%, respectively.
본 연구는 브로일러의 성장능력, 도체특성, 혈액지질, 면역능력 및 맹장미생물 변화에 관한 국산 적송수피추출물의 항생제 대체효과를 조사하기 위하여 수행하였다. 실험처리구는 대조구, 항생제 첨가구, 적송수피추출물 65ppm 및 80 ppm 첨가구 등 4개로 구분하여 완전임의배치였다. 브로일러의 성장능력, 도체특성, 도체중, 도체율, 가슴살과 다리살 무게는 적송수피추출물 80 ppm의 첨가구가 대조구, 항생제 첨가구와 비교할 때 유의하게 높았다. 복강지방은 브로일러 사료 내 2개의 서로 다른 수준의 적송수피추출물 첨가구가 대조구 및 항생제 첨가구에 비해서 유의하게 감소하였으나, 흉선, 비장 및 F낭 등 면역기관 무게는 적송수피추출물 80 ppm 첨가구에서 유의하게 증가하였다. 브로일러의 혈액 중성지방과 총콜레스테롤은 브로일러 사료 내 2개의 서로 다른 수준의 적송수피추출물 첨가구가 대조구 및 항생제 첨가구와 비교할 때 유의하게 낮았다. 혈액 IgG는 브로일러 사료 내 적송수피추출물 80 ppm 첨가구가 대조구 및 항생제 첨가구에 비해서 유의하게 증가하였다. 브로일러 맹장 내 Bifidobacterium, Lactobacillus 균수는 적송수피추출물 80 ppm 첨가구가 대조구 및 항생제 첨가구에 비해서 높았으나 Escherichia coli, Salmonella 균수는 감소하였으며 처리구 간 통계적인 유의차가 인정되었다. 본 연구결과는 브로일러 사료 내 항생제 대체제로서 국산 적송수피추출물 80 ppm을 첨가, 급여해주면 브로일러의 성장능력, 도체특성, 면역능력 향상 및 유익한 맹장미생물의 활성을 높여줄 수 있음을 시사해준다.
This study estimated the effect of drone pupa meal (DPM) added as replacement of sodium nitrite (SN) and vitamin C (VC) on physico-chemical quality characteristics of emulsion-type sausages. Samples were prepared either with 150 ppm SN+200 ppm VC (control); 75 ppm SN+100 ppm VC+6.015% DPM (T1); or 12.03% DPM (T2) and then stored at $4^{\circ}C$ for 30 days. The pH value decreased (p<0.05) with increase in the levels of DPM. Moisture and protein content decreased (p<0.05) but fat and ash content increased (p<0.05) with higher levels of DPM. T1 and T2 had higher (p<0.05) saturated fatty acids content and lower (p<0.05) unsaturated and polyunsaturated fatty acids content compared to the control. Lower (p<0.05) $L^*$ and $a^*$ values and higher (p<0.05) $b^*$ and $h^{\circ}$ values were exhibited in the T1 and T2 than in the control; and $C^*$ value was the lowest (p<0.05) in T2. The TBARS content was the highest (p<0.05) in T2, especially, 2 times higher (p<0.05) than in the control. T1 and T2 had harder (p<0.05) texture compared to the control. These findings suggest that the DPM has no replacement effects against SN and VC in emulsion-type sausage, but it has negative effects on color, lipid oxidation stability, and texture.
This study determined the level of fermented soybean meal (FSM) that could be substituted for fish meal in the diet for parrot fish Oplegnathus fasciatus. Fish meal (FM) was used the sole protein source in the control diet. FSM was substituted for 20, 40, 60, 80, and 100% of the fish meal in the experimental diets. The FSM resulted in increased crude protein, crude fat, and crude ash, but decreased crude fiber. The methionine and tryptophan contents in the FSM increased, while lysine and threonine decreased. The 18:2n-6 fatty acid content decreased from 55.30% to 28.67%. Fermentation increased 20:5n-3 (EPA) and 22:6n-3 (DHA) by 2.03% and 15.54%, respectively, although the differences were not significant. Based on growth performance, we concluded that FSM could replace up to 60% of FM for the maximum growth of juvenile parrot fish.
The present study investigated the effect of inclusion of chromium propionate (Cr-P) and lysophopholipid (LPL) in diet on blood parameters and meat quality of Hanwoo steer. Feeding trial was performed from late fattening period to slaughter and blood parameters (insulin, blood glucose and non-esterified fatty acid (NEFA) concentration) and meat quality were examined. Total 4 experimental groups including control (no addition), T1 (Cr-P 0.2%), T2 (LPL 0.2%) and T3 (Cr-P 0.1% + LPL 0.1%) were employed. For blood parameters, insulin concentration in T1 and T3 showed an elevating patterns from $3.13{\mu}U/mL$ to $3.35{\mu}U/mL$ (T1) and from $4.38{\mu}U/mL$ to $5.23{\mu}U/mL$ (T3). The changes of NEFA in all groups were detected as a decreasing patterns according to days of feeding. However, significant difference was not found. In growth performance, T2 showed greater daily gain and T1 showed greater carcass yield compared to others. However, there were no significance in difference. In meat quality, T1 showed greater yield and intra-muscular fat levels and lower sharing force compared to others. However, significant differences were not detected.

제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
