Diet-Related Health Risk Appraisal for Cardiometabolic Diseases of the College Students in Gyunggi-do (경기지역 일부 대학생들의 식생활 관련 심혈관대사질환 건강위험도 평가)

  • This study was conducted to assess diet-related health appraisal for cardiometabolic diseases of the college students in Gyeonggi-do. The survey data obtained by 21 questionnaire(6 general characteristics and 15 food behaviors) given to 90 students, 41 males and 49 females. The average age of the subjects was 22.2 years old for the male students and 20.9 years old for the female students(p<0.001). Among the subjects, 35 males and 47 females' height, weight and percentage of body fat were measured using bioelectrical impedance(Inbody 720). The average height, weight, Body Mass Index and percent body fat of the subjects were 175.7cm, 69.5kg, 22.4 and 16.9% for males and 162.0cm, 53.5kg, 20.4 and 27.7% for females, respectively (p<0.001). Male students had a higher prevalence of smoking compared with female students(p<0.001). Females had higher intake frequency of fruits than males(p<0.05). Males had higher intake frequency of fishes than females(p<0.05). Male students had higher number of side dishes at mealtime compared with female students. There were no difference between the sexes in intake frequency of dairy, ramyeon, rice with whole grain, 3-layered pork belly, processed meat, soft drinks, soy products and fast food. Also, there were no difference between sexes in number of vegetables per day, frequency of eating out, prevalence of eating kimchi at every meal. Cardiometabolic risks were calculated by 'Diet-related health risk appraisal'. Male students had higher cardiometabolic risks(hypertension, hyperlipidemia, diabetes, obesity, abdominal obesity) than female students(p<0.001). Appropriate nutritional education for college male students may help to prevent cardiometabolic diseases in the future.

  • The Near Infrared region of the energy spectrum was first discovered by Hershel in the year 1800. The principles of NIR is based on light absorption of specific organic chemical bonds. The absorption at each wavelength is measured and a spectre is obtained. The spectre is then treated mathematically and with the absorption data is converted to absolute units via a calibration. In the last two decades it has developed dramatically. With the invention of computers and the ability to treat a large amount of data in a very short time the use of NIR for many different purposes has developed very fast. During the last decade with the aid of very powerful PC's the application of NIR technology has become even more widespread. Now or days development of very robust calibrations can be done in a relatively short time with a minimum of resources. The use of Near Infrared Spectroscopy (NIR) in the Meat industry is relatively new. The first installations were taken into operation in the 80ties. The Meat Industry in often referred to as rather conservative and slow to embrace new technologies, they stay with the old and proven methods. The first NIR instruments used by the Meat Industry, and most other industries, were multipurpose build, which means that the sample presentation was not well suited to this particular application, or many other applications for that sake. As the Meat Industry grows and develops to meet the demands of the modern markets, they realise the need for better control of processes and final products. From the early 90 ties and onward the demand for 'rear time' rapid results starts growing, and some suppliers of NIR instruments (and instruments based on other technologies, like X-ray) start to develop and manufacture instrumentation dedicated to the particular needs of the Meat Industry. Today it is estimated that there are approximately 2000 rapid instruments placed in the Meat industry world-wide. By far most of these are used as at-line or laboratory installations, but the trend and need is moving towards real on-line or in-line solutions. NIR is the most cost effective and reproducible analytical procedure available for the twenty first century.

Monitoring of Tar Color Content in Children's snack and Its Exposure Assessment (어린이 기호식품 중 타르색소 모니터링 및 노출량 분석)

  • This survey was conducted to develop an appropriate management for safety of children snacks. In this study, monitorings of food additives such as nine kinds of tar colors (tartrazine, sunset yellow FCF, brilliant blue FCF, indigo carmine, new coccine, amaranth, erythrosine, allura red and fast green FCF) which are sold at stationary store around the school, were performed. Eighty two samples (3 snacks, 71 candies, 4 chocolates and 4 beverages) were analyzed for tar colors. Results of risk assessment for tar colors were expressed as EDI (Estimated Daily Intake) comparing with ADI (Acceptable Daily Intake). The ratio of high risk group for tar color intake (95th) were 0-3.56%. The consumptions of tar colors from domestic and imported products for nine kinds of tar colors in candies were not significantly different. The results of this study indicated that each ED! of nine kinds of tar colors sold at stationary store around the school is much lower than each ADI in general. Consequently, the children snacks are thought to be safe for consumption.

Effect of Essential Oil from San-Jo-In (Zizyphus jujuba Mill. seeds) on Human Electroencephalographic Activity (산조인(Zizyphus jujuba Mill.) 에센셜오일 흡입이 인간의 뇌파에 미치는 영향)

  • Essential oils have been used to treat psychophysiological disorders, but their effects on human electroencephalographic (EEG) activity have not been thoroughly investigated. We evaluated the effects of essential oil of Zizyphus jujuba seeds, a Korean folk medicine known as San-Jo-In, on human EEG activity. For this purpose, essential oil was extracted from San-Jo-In by the supercritical carbon dioxide extraction method. The effect of its inhalation on EEG activity was evaluated by measuring the EEG power spectrum (25 indices) in 20 healthy participants. The results of the EEG power spectrum indicated that the values of the theta wave decreased significantly (p<0.05) in the left (from 17.277 to $13.854{\mu}V$) and right parietal (from 15.324 to $13.020{\mu}V$) regions compared to the other regions. During the inhalation of San-Jo-In oil, the EEG spectrum values of fast alpha, relative gamma, and spectral edge frequency increased 50% compared to those before inhalation. The values of the fast alpha wave increased significantly (p<0.05) in the left prefrontal (from 0.063 to $0.085{\mu}V$), right prefrontal (from 0.064 to $0.085{\mu}V$), and left frontal (from 0.073 to $0.100{\mu}V$) regions following inhalation of the San-Jo-In essential oil. The changes in the EEG activities following inhalation of San-Jo-In suggest that the oil can improve psychological well-being by increasing attention and relaxation.

DNA Sequence analysis and rfbM gene amplification using PCR for detect salmonella C1 serogroup (살모넬라 C1 serogroup 특이 rfbM 유전자 증폭과 염기서열 분석)

  • The Salmonella rfb gene encoding for the biosynthesis of the oligosaccharide-repeating units of the O-antigenic determinants was cloned and sequenced. A set of nucleotide primers(a forward and reverse) was selected to target a defined region of the guanosine diphospho-mannose(GDP-Man) pyrophosphorylase synthase gene : rfbM of Salmonella C serogroup. The primer set was used to develop a PCR-based rapid and specific detection system for Salmonella C1 serogroup. Amplification bands of predicted size(1,422bp) were generated from 11 different Salmonella C1 isolates. The bands were verified to be specific for the C1 serogroup by Southern blot analysis using reference homologous DNA specificity was further confirmed by the lack of reactivity with heterologous DNA derived from non-salmonella members of the family enterobacteriaeceae. A specificity of 100% was deduced along with a very high sensitivity shown by a detection limit of 1fg of a purified DNA template. The isolated DNA sequence was found to be 99.8% homologous to S montevideo but the related primers amplified with the predicted band sizes with all the Salmonella C1 serogroups tested. It is concluded that the PCR protocol based on the rfbM gene from S cholerasuis is optimal fast and specific for the detection of Salmonella C1 serogroup and also the corresponding probe is suitable for rapid detection of all Salmonella C1 serogroup DNA tested. This technology should facilitate the identification of contaminated pig products and for any other products contaminated with the Salmonalla C1 serogroup. The immediate impact of this developed method will be in the area of food safety of pig products with the potential prospect for adaptation to other food inspection technologies.

Glycoalkaloid content in potato tubers by various cooking methods and potato products (감자의 가공제품 종류와 조리방법에 따른 Glycoalkaloid의 함량)

  • The potato tubers of Solanum tuberosum L. contain potato glycoalkaloids (PGA), a class of naturally occurring toxicants. The primary constituents of this class of compounds in potatoes are $\alpha$-chaconine and $\alpha$-solanine. The purpose of this study was to examine the effects of various cooking methods on the PGA contents in the common Korean potato Irish Cobbler variety and those in commercially produced potato products consumed in Korea. After cooking, most potatoes showed big decreases in their PGA contents compared to the uncooked samples, with the exception of baked potatoes, which maintained 90.86% of their PGA contents. The PGA levels in boiled and blanched potatoes were reduced by 91.68 and 84.17%, respectively. However, the levels in samples boiled in 1% salted water were only reduced by 52.10%. Potatoes fried and sauteed in oil had their PGA contents reduced to 49.42 and 49.51% of their original levels. The reductions in the relative PGA contents by cooking method were in the order boiling〉blanching〉boiling with 1% NaCl〉steaming〉sauteing〉frying〉microwaving〉baking. The highest remaining PGA content of the potato products in Korea was in potato chips, at 69.57mg/100g, but made with imported potatoes.

Determination of Hydrolysis Rate Constants on Phosphamidon and Profenofos (Phosphamidon과 Profenofos의 가수분해속도 상수의 측정)

  • The present study was peformed to determine the hydrolysis rate constants and degradation products of phosphamidon and proffnofos by the OECD method. Hydrolysis rate constants of phosphamidon in pH 4, pH 7, and pH 9 buffer solutions at 25 and 40$^{\circ}$C were 0.0020, 0.0022, 0.0049 and 0.0040, 0.0050, 0.0150, respectively. Hydrolysis rate of phosphamidon was accelerated by temprerature change under same pH conditions, and half-life of phosphamidon in pH 9 at 40。C was 3 times faster than that at 25。C. Hydrolysis rate of phosphamidon in alkaline solution(pH 9) was 2~4 times faster than that in acidic solution(pH 4) and neutral solution(pH 7) under same temperature. Hydrolysis rate constants of profenofos in pH 4, pH 7, and pH 9 buffer solutions at 25 and 40。C were 0.0022, 0.0047, 0.0860 and 0.0035, 0.0086, 0.1245, respectively. Hydrolysis rate of profenofos was accelerated by temprerature change under same pH conditions. Hydrolysis rate of profenofos in alkaline solution(pH 9) was 15~40 times faster than in acidic solution(pH 4) and neutral solution(pH 7) under same temperature condition, and half-life of profenofos was very fast within 8 hours. The hydrolysis rate of profenofos was faster than that of phosphamidon. In order to identify hydrolysis products, the extracts of degradation products were analyzed by GC/MS. The mass spectra of hydrolysis products of phosphamidon were at m/z 153 and 149, those of the profenofos were at m/z 208 and 240, respectively. The hydrolysis products of phosphamidon were O, O-dimethyl phosphate(DMP) and N, N-diethylchloroacetamide, and those of profenofos were 4-bromo-2-chlorophenol and O-ethyl-S-propyl phosphate.

Prediction of Freezing Time for Peeled Chestnut using Finite Difference Method (유한차분법을 이용한 깐밤의 동결시간 예측)

  • In this study, the thermal properties of peeled chestnuts were measured, and the mathematical prediction model of freezing time was also developed for various interior positions from center to rind (surface). The measured thermal properties were showed that heat conductivity is $0.43W/m^{\circ}C$, specific heat is $2.7206J/m^3^{\circ}C$, latent heat is $216.9{\times}10^6J/m^3$ and freezing point is $-2.8^{\circ}C$. The entire process about reaching to the freezing time of peeled chestnuts was analyzed with its each regular depth position using the finite difference method (FDM) based on computer simulation. In case of regular freezing temperature, it was showed an that surface (rind) position is more rapidly reached into the freezing point rather than the center position, and also reaching time to the freezing point is more fast at the lower freezing temperature. Comparison results between simulation and experiments showed linear relationship. In regularly varying condition for freezing temperature, this method would give an information to predict a freezing time of the interior points for peeled chestnuts and more similar agricultural products.

Dietary patterns associated with hypertension among Korean males

  • The objectives of this study were to identify the dietary patterns associated with hypertension among Korean males. Data from the 2001 Korean National Health and Nutrition Survey of 1,869 men aged 20-65 years were used for the analysis. As an initial analysis, a factor analysis was applied to identify major dietary patterns among the subjects. Then logistic regression analysis was conducted to identify the pattern related with hypertension. As a result of the initial analysis, three major dietary patterns were identified. Dietary pattern 1 (traditional) was heavily loaded with vegetables, fish and cereal. Dietary pattern 2 (Western) was loaded with fast foods, bread, meats and dairy products. Dietary pattern 3 (Drinker) was loaded with mostly pork, beer and soju (Korean liquor). From the second stage of the analysis, there was a tendency of positive association between traditional patterns and hypertension risks. However, the tendency did not meet statistical significance level (p<0.05). In summary, unlikely findings from European and American studies, vegetables rich traditional dietary patterns did not show any protective effect on hypertension in Korean males. The Korean dietary practice, which is consuming salted vegetables instead of fresh vegetables, might have played a role in these findings. However, the full explanation of the findings remained to be answered with further investigation since none of the dietary patterns identified showed any statistical significance.

Analysis of Physical Properties and Water Repellency Property in Functional Packaging Paper (기능성 포장원지의 물성변화 및 내수성 분석)

  • Functional packaging paper containing botanical antimicrobial agent (BAAG) and inorganic zeolite was developed for antimicrobial activity and adsorption of ethylene gas of the paper. The physical properties of the packaging paper showed different characteristics with addition of BAAG and functional fillers: both tensile strength and burst strength were decreased, but both stiffness and tear strength were slightly increased. Zeolite also contributed to fast removal of ethylene gas known as aging hormone of fruits and vegetables. Alkyl ketene dimer (AKD) was greatly effective to endow the packaging paper with water repellency property.
