수유부의 식품 및 영양소 섭취와 유즙 생성량 및 조성 (Composition and Yield of Korean Breast Milk and Maternal Intakes of Foods and Nutrients)

  • This study was conducted to investigate the relationship between lactational capacity and intakes of energy and energy-yielding nutrients. Food consumption, intakes of carbohydrate, protein, fat and energy and quantity and proximate composition of milk of 11 lactating Korean mothers were determined at 1, 2 and 3 months postpartum longitudinally. Food consumption was estimated using a 24-hour recall method ; intakes of energy and energy-yielding nutrients were calculated according to the Food Composition Table. Daily milk production was estimated using a 72-hour test-weighing method ; protein, fat, lactose and energy concentrations were analyzed. Average intakes of energy and protein were 1974$\pm$386㎉/day and 67.0$\pm$12.3㎉/day, these were 73% and 74% of the Korean Recommended Allowances, respectively. Average milk yield was 720.1$\pm$123.3ml/day containing energy 59.6$\pm$9.5㎉/dl, protein 1.1$\pm$0.1g/dl, fat 2.7$\pm$0.8g/dl, and lactose 6.3$\pm$0.3g/dl. No relationship existed between the intakes of carbohydrate, protein, fat and energy and the quantity and proximate composition of the milk. However, the intakes of energy, carbohydrate and vegetable protein were inversely related to the concentrations of energy and lactose in the milk. This result indicates that lactational capacity may be affected by the other factors excluding intakes of energy and energy-yielding nutrients and a high intake of energy may not guarantee optimal lactational capacity.

유지에너지 이상의 사료공급이 거세 한우의 영양소 소화율 및 에너지가에 미치는 영향 (Effects of Feeding Levels Above Maintenance Energy on Nutrients Digestibility and Energy Value in Hanwoo Steers)

  • Supplying an appropriate amount of feed is an economical and environmentally friendly by increasing the nutrient digestibility of livestock and reducing nutrients released from overfeeding. Therefore, this study was conducted to determine the nutrient digestibility according to dietary feeding levels of Hanwoo steers. Three treatments in feeding trial were used feeding amount based on the maintenance energy level of the Korean feeding standard for Hanwoo (2022): 100% (control, CON), 140% (treatment 1, TRT1), and 190% (treatment 2, TRT2). The experiment was designed in replicate 3×3 balanced Latin square designs using six Hanwoo steers. In this study, energy value was predicted according to treatment groups. In addition, nutrient digestibility and energy value were measured through a feeding trial to Hanwoo steers. All energy values, including total digestible nutrients and digestible energy, were predicted to decrease linearly with increasing feeding levels. TRT2 showed lower digestibility than CON for dry matter, crude protein, non-fiber carbohydrates, and total digestible nutrients in the feeding trial (p<0.05). However, there was no significant difference between CON and TRT1. Total digestible nutrients (TDN) and digestibility of feed are set based on the maintenance energy. However nutrient digestibility and TDN decreased when feeding level increased by more than 190% compared to maintenance energy in this study. Therefore, it is necessary to correct the TDN by considering the feeding level when mixing the feed.

경북 성주지역 장수노인의 영양상태(I) -영양섭취상태- (Nutritional Status of the Long-lived Elderly People in Kyungpook Sung-Ju Area(I) -Estimation of Nutrients Intakes-)

  • The purposes of this study were to estimate nutritional intakes of the long-lived elderly and to obtain the data for establishing dietary guidelines that may be recommended for the general population for the sake of longevity. The subjects of the study were 300 elederly people of age over 85 years living in Kyungpook Sung-Ju area who had no problem in daily living. Four times of food consumption survey were carried out seasonally by the repeated 24-hr recall method for one year. Mean daily energy intakes and RDA percentage of energy intakes of the male and female subjects were estimated as 1222 kcal(67.9%) and 1047 kcal(65.4%) respectively. Mean daily intakes of nutrients were estimated as 38.3g for protein, 287mg for calcium, 5.8mg for iron, 314R.E. for vitamin A, 0.6mg for vitamin B1 and 0.43mg for vitamin B2 The mean RDA percentages of nutrients intake were 64.4% and 59.8% for protein in male and female, 39.8% for Ca, 48.3% for Fe, 44.9% for vitamin A, 60% for vitamin B1, and 35.8% for B2. The average PFC ratio of energy-yielding nutrients throughout the year in male and female were 15.1 : 15.2 : 69.7 and 13.8 : 13.2 : 73.0 respectively. The mean daily intakes of energy and most of nutreints were significantly high in winter season. The contribution of plant food sources to nutrient intakes were over 60% for protein and fat, 50% for calcium, and 70% for iron. Long-lived elderly people an Sung-Ju, Kyungpook showed considerably smaller physiques compared to the avergae Korean elderly, however their average BMI fell in normal range. The subjects were consuming much less energy and nutrients compared to the present Korean RDA for the elderly over age 75. The subject showed relatively good health state in spite of low intakes of energy and nutrients. Therefore it seems to be necessary to establish a set of new RDA for the elderly over age 8.5.

중학교 교과서 식생활 내용분석 -가정, 체육, 과학을 중심으로- (Content Analysis of Food & Nutrition Section in Middle School Textbooks -Home Economics, Physical Education and Science-)

  • The purpose of this study was quantitative and qualitative contents analysis of food and nutrition section in middle school textbooks of home economics, physical education and science. As a quantitative approach numbers of sentence lines tables, figures, photos, activities, and exercises were counted. As a qualitative approach, types of explanations were categorized by 7 criteria, and commons and differences of the contents of those subjects were compared. The conclusions of this study were summarized as follows: 1) Contents of food and nutrition section were divided into nutrients. water. energy, food groups, and nutritional problems. When average sentence lines of each were compared, those of nutrients were the longest in all 3 subjects. 2) When compared the numbers of tables, figures, and photos in 3 subjects of textbooks, there were more figures in home economics and science, and more tables in physical education. 3) There were more activities and exercises in home economics an science than in physical education. 4) The D(sentences with table) or E type(sentences with figure) was adapted for the explanation of nutrients functions, recommended dietary allowance, food sources, food groups, eating habits, and weight control in home economics: nutritions functions and energy metabolism in physical education : and digestion, body constituents, energy metabolism, and detection of nutrients in science. 5) Contents about classification and functions of nutrients. food sources deficiency water, energy contents of nutrients and obesity were shown in all 3 subjects. Food groups and eating habits were explained in detail in home economics whereas digestion of nutrients in the digestive tracts were explained in detail in science. Recommended dietary allowance for Koreans and basic food groups revised in 1995 were presented in home economics, whereas those revised in 1989 were presented in physical education. To avoid confusion, recommended dietary allowance for Koreans and food groups presented in physical education tex should be updated.

Development of nutrient-based nutritional standards for foodservice at shelters during disasters in the Republic of Korea

  • BACKGROUND/OBJECTIVES: In times of disaster, simplified and minimized nutritional standards are necessary for a quick response to provide nutritious relief food. This study aimed to develop nutrient-based nutritional standards for foodservice at shelters during disasters in the Republic of Korea (South Korea). SUBJECTS/METHODS: The standards were developed in 2 phases. First, nutrients to be included in the standards were selected. Initial candidates were selected considering 3 aspects: preceding standards, insufficient intake during disasters, and inadequate intake among South Koreans. Final selection was made by excluding nutrients for 3 reasons: nutrients for which there is no deficiency concern in South Korea, nutrients whose intake data were not available, or nutrients whose values presented by Dietary Reference Intakes for Koreans are difficult to achieve based on the current diet among South Koreans. Second, the reference values of energy and the selected nutrients were calculated. The reference values for the entire population who were 1-year-old and over were calculated by multiplying the estimated energy requirements or the recommended nutrient intake and the proportion of each age and sex group. Respective reference values were also calculated for 4 different age groups (1-5, 6-11, 12-64, and ≥ 65-year-old). RESULTS: The standards for the entire population were 2,000 kcal for energy, 55 g for protein, 650 ㎍ retinol activity equivalents for vitamin A, 95 mg for vitamin C, 1.1 mg for thiamin, 1.3 mg for riboflavin, 14 mg niacin equivalents for niacin, 350 ㎍ dietary folate equivalents for folic acid, 750 mg for calcium, and 11 mg for iron. Four additional standards corresponding to each age group were developed. CONCLUSIONS: The nutritional standards during disasters were developed for South Korea, including energy and 9 nutrients with reference values for the entire population and 4 different age groups. The standards will contribute to maintaining the health of disaster evacuees in South Korea.

ADDITIVE NATURE OF DIGESTIBLE ENERGY AND RELATIVE ENERGY VALUES OF DIFFERENT ENERGY-YIELDING NUTRIENTS IN PRACTICAL TROUT DIETS

  • A study is reported which investigated the additive nature of digestible energy (DE) from dietary nutrients and to estimate the relative energy values of different energy-yielding nutrients in practical trout diets. A growth study was conducted over 12 weeks with 6 diets. Rainbow trout (Oncorhynchus mykiss) were fed diets once a day ad libitum. Digestible energy values determined and calculated had direct relationship indicating additive nature of such values for feed ingredients. Overall growth performance was best in a diet containing 33% digestible protein (DP) with a DP/DE ratio of 18.6. A reduction in digestible protein level with the same DP/DE rat io led to a significant decrease in growth and feed efficiency. The increase of 7% of lipid with concomitant decrease in protein resulted in the relative gain of 130% in growth and nutrient retention, suggesting that 1 g of lipid is equal to about 1.3 g of proteins in terms of net energetic value. Replacement of 10% of dietary lipid by carbohydrates led to a slight decrease in energy retention efficiency but to a great increase in lipid retention efficiency (130%) showing that dietary carbohydrates led to increased lipogenesis.

난용계의 선택채식과 영양소 공급체계 (Dietary Self-selection and Nutrient Feeding Systems for Egg-type Growing Pullets and Layers)

  • From the observations of dietary self-selection by growing pullets, step-up protein or reverse protein and single-stage low protein pullet feeding systems were developed. They offered another pullet feeding concept that appears to control the body weight effectively and to reduce the consumption of feed and nutrients without impairment of subsequent laying performance. It is obvious from the feed and nutrient consumption pattern of layers fed diets for self-selection of energy, protein and calcium that they have a daily cyclic requirement rather than a constant requirement for nutrients. It seems that a practical self-selective feeding system is needed to meet the daily cyclic requirement for nutrients without consuming an excess of energy and protein at certain times of the day as compared to the complete or single diet where layers have to consume extra energy and protein in the afternoon when they have a specific appetite mainly for calcium.

미강(米糠)과 야채첨가식이(野菜添加食餌)가 흰쥐의 체내대사(體內代謝)에 미치는 영향(影響)( II ) -열량소의 소화흡수율에 미치는 영향을 중심으로- (The Metabolic Effects of Rice Bran and Vegetable Cellulose Supplemented Diets on Albino Rats -Especially on Apparent Digestibility of Intake Nutrients-)

  • The effects of dietary cellulose to utilize the intake nutrients in the albino rats were investigated by the two consecutive experiments in this study. The author wanted to observe the effects of the age of animals and different level of dietary cellulose, high and low in the first experiment and the effects of dietary cellulose from three different sources, rice bran, vegetable and pure-cellulose at high level in the second experiment. The results were summarized as follows. (1) The obvious effect of dietary cellulose caused to increase feces weight. Consequently apparent digestibilities of intake nutrients in the diet decreased. It was noteworthy that fecal glucose excretion was significantly affected by cellulose intake. Since three nutrients, protein, fat and carbohydrate serve as energy sources in the body, this result can be interpreted to be lowered in the efficiency of energy utilization out of intake from the diet. (2) The nutrients loss due to dietary cellulose resulted in reduction of skeletal muscle and bone weights which lead eventually to affect in reduction of body weight. (3) The effects of dietary cellulose showed differently according to the amount of cellulose ingested, dietary nutrients composition, the kinds of dietary cellulose supplemented and the age of experimental animals. When the intake diet was proportionately imbalanced in three different energy sources, carbohydrate, fat and protein, the cellulose intake was adversely affected in the utilization of the nutrients in the body. Cellulose from rice bran decreased body weight gain, cellulose from vegetable maintained medium level in body weight and pure-cellulose increased body weight. Growing rats showed more sensitive effects of cellulose tolerance in the body than grown rats in every concerns of this experiment.

미취학 아동의 영양섭취실태 및 환경적 영향요인의 조사 연구 (A survey of nutritional status and the effect of environmental factor of preschool children.)

  • This survey was undertaken to evaluate the correlationship between the nutrients intakes and the environmental factors that was assumed to influence to them in the preschool children in Masan city. Their average energy intake was met with the korean recommended dietary Allowance(RDA), and the other nutrients intakes exceeded to. The percentage of carbohydrate, fat and protein among daily total energy intakes was showed 67 : 18 : 15 in order and it is similar to the proposal-value of RDA. The higher socioeconomic level of family, and educational degree of their parent were, the more amounts of nutrients intakes inc4eased. Especially educational level of mother can affect the amounts of nutrients intakes greatly. It is considered that the development of nutritional program for the more concrete and various education for their patron should be done.

국민영양조사를 이용한 영양소별 주요 공급식품에 관한 연구 -I. 에너지, 단백질, 지방, 탄수화물 및 조섬유 - (Study for Major Nutrients Sources of Foods by Korean Nutrition Survey -I. Energy, Protein, Fat, Carboydrate and Crude Fiber-)

  • This study was nudertaken to investigate the major food sources of energy, frotin, fat, carbohydrate and crude fiber based on the data from the National Nutrition Survey in 1993. Results were summarized as followed : the most important source of energy was rice providing 52.9% of total energy intake. Instant noodle, pork, bread and beef were major sources of energy in order. Protein sources were rice, beef, pork, egg and pollack in order. And the primary sources of fat was pork and the rank next to pork were soybean oil in large city, instant noodle in small city and rice in rural. Rice contributed the most to total carbohydrate followed in order by instant noodle, bread, apple and kimchi. Crude fiber was impartially provided from various foods such as kimchi, red pepper powder, apple, red pepper and radish. Number of foods providing 90% of nutrient intake were 41 for energy, 43 for protein, 32 for fat, 19 for carbohydrate and 29 for crude fiber. Among region, mean amount of nutrients intake didn't show any significant differences(p>0.05). In conclusion, rice was found to be the most important sources of various nutrients.
