This study investigated the shelf life of emulsion-type sausages containing garlic powder and/or ${\alpha}$-tocopherol during storage at $4^{\circ}C$ for 0, 10, 20, and 30 d. Six groups of emulsion-type sausages were included: control (no additives), GP1 (1% garlic powder), GP3 (3% garlic powder), AT100 (100 IU of ${\alpha}$-tocopherol/kg of sausage), AT200 (200 IU of ${\alpha}$-tocopherol/kg of sausage), and GP1+AT100 (1% garlic powder+100 IU of ${\alpha}$-tocopherol/kg of sausage). During storage, the pH, thiobarbituric acid reactive substances, and residual nitrite content were reduced by the addition of garlic powder and/or ${\alpha}$-tocopherol relative to the control (p<0.05). In addition, emulsion-type sausages supplemented with garlic powder and/or ${\alpha}$-tocopherol improved color stability (p<0.05). The results suggest that a higher amount of garlic powder and their different combinations could improve the shelf life of emulsion-type sausages and protect against lipid oxidation.
Emulsion-type sausages were manufactured to investigate the effects of CLA-vegetable oils and CLA-lard on quality of emulsion-type sausage. Each treatments replaced pork back fat with CLA-sesame oil (CLA-SO), CLA-lard (CLA-LD) and CLA-safflower seed oil (CLA-SSO) were stored during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. The changes in physico-chemical properties, thiobarbituric acid reactive substances(TBARS) and fatty acid composition of each treatments were measured during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. The pH values of all treatments significantly(p<0.05) decreased as storage time increased. Sausage products containing CLA-vegetable oils showed higher pH value than that of CLA-lard among the treatments. Color a*-value of CLA-SSO was higher than that of other treatments. During storage, TBARS values of treatments were significantly (p<0.05) increased, sausage products containing CLA-vegetable oils showed lower (p<0.05) TBARS value than CLA-lard, and TBARS of sausage products containing CLA-SSO was the lowest. This result indicated that CLA concentration in emulsion-type sausage did affect the lipid oxidation stability. Fatty acids composition was changed by addition of CLA-vegetable oils and CLA-lard. All kinds of fatty acids content decreased whereas CLA content extremely increased by replacement of CLA-vegetable oils and CLA-lard. The level of CLA content in CLA-vegetable oils was higher than CLA-lard. It may be concluded that emulsion-type sausage could be manufactured using CLA-vegetable oils as a pork fat substitutor without any negative effects on general components or physico-chemical properties.
The objective of this study was to determine the antioxidant activity of gamma-irradiated Asparagus cochinchinensis (Asparagi radix) (Lour.) Merr. Extract (ARE) and its inhibition effect on food lipid oxidation using emulsion-type pork sausage as a model. ARE was prepared from dried Asparagi radix root and ARE solution (1.0 g/mL) was gamma-irradiated with designated doses at 5, 10, and 20 kGy. Antioxidant activity of ARE solution was determined by measuring 1,1-diphenyl-e-picrylhydrazyl (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline-9-sulphonic acid) (ABTS) radicals. Activities of DPPH and ABTS radicals were decreased, whereas total phenolic contents increased after gamma irradiation with a dose dependence. Addition of gamma-irradiated ARE dose-dependently retarded lipid oxidation of emulsion-type pork sausage during storage at $4^{\circ}C$. These results indicated that gamma-irradiated ARE might have antioxidant activity more than non-irradiated ARE due to increase of the content of polyphenolic compounds by ionizing radiation.
본 연구는 유화형 소시지 제조 시 첨가되는 NaCl을 sodium citrate, potassium lactate 및 calcium ascorbate로 부분(40%) 대체하여 소시지를 제조한 다음 소시지의 품질특성에 미치는 영향을 비교하고자 실시하였다. 소시지의 pH는 sodium citrate 대체 소시지가 대조구와 다른 대체 소시지에 비해 높았다(P<0.05). 소시지의 명도(L*) 값은 sodium citrate 대체 소시지가 대조구와 다른 대체 소시지에 비해 높았다(P<0.05). 적색도(a*) 값은 potassium lactate 대체 소시지가 대조구와 다른 대체 소시지에 비해 높았지만, 황색도(b*) 값은 낮았다(P<0.05). 조직특성에서 단단함 정도를 나타내는 경도와 점착성은 sodium citrate 대체 소시지가 대조구와 다른 대체 소시지에 비해 높았다. NaCl 대체 소시지의 나트륨 함량은 대조구에 비해 낮았고, calcium ascorbate 대체 소시지가 가장 낮은 함량을 나타내었다(P<0.05). 소시지의 칼륨과 철 함량은 potassium lactate 대체 소시지가 대조구와 다른 대체 소시지에 비해 높았다(P<0.05). NaCl 대체 소시지의 칼슘 함량은 대조구에 비해 높았고, calcium ascorbate 대체 소시지가 가장 높은 함량을 나타내었다(P<0.05). 관능평가에서 짠맛은 sodium citrate 대체 소시지가 대조구와 다른 대체 소시지에 비해 높았다(P<0.05). 풍미는 calcium ascorbate 대체 소시지가 대조구에 비해 높았다(P<0.05). 이상의 결과에서, NaCl 대체 소시지는 pH, 색도 및 관능평가에서 대조구와 차이를 보였으며, 나트륨 함량을 낮추고 칼슘 함량이 증가한 건강지향적인 소시지를 생산할 수 있을 것으로 사료된다.
This study was carried out to investigate the effects of addition of citron peel powder(OJ 0/0, 0.60/0, 0.9 %) on proximate composition, minerals, vitamin A, C content and fatty acid composition of emulsion-type sausages. The moisture content of sausage containing 0.3% citron peel powder were significantly(P< 0.05) higher compared to those for control. The crude fat content of sausage containing citron peel powder were significantly( P< 0.05) lower compared to those for control. The crude ash content of sausage containing 0.9% citron peel powder were significantly(P< 0.05) higher compared to those for control. The minerals, vitamin A and C content of sausage containing citron peel powder were significantly(P < 0.05) higher compared to those for control. The palmitic acid(CI6: 0) and linoleic acid(CI8: 2) content of sausage containing citron peel powder were higher compared to those for control, but the palmitoleic acid(CI6: I) content of sausage containing 0.9% citron peel powder were lower. The total saturated fatty acid content of sausage containing 0.3% citron peel powder were significantly(P < 0.05) lower compared to those for control.
The aim of the study was to determine the effect of whole milk powder (WMP) as heterologous proteins on chicken breast emulsion-type sausages. The quality properties of WMP on such chicken breast emulsion-type sausages were investigated by measuring the proximate composition, pH, color, cooking yield, protein solubility, and by applying other methods, such as texture profile analysis (TPA), microphotograph, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE), and electronic nose. The crude fat, protein, and ash contents of 15% WMP samples were significantly higher than the control samples (p < 0.05). The redness of the cooked samples significantly increased with an increase in the WMP contents (p < 0.05). The cooking yield of WMP treated samples was significantly higher than the control sample (p < 0.05). Additionally, the hardness, gumminess, and chewiness of WMP treated samples were significantly higher than the control sample (p < 0.05). The sarcoplasmic and myofibrillar proteins of samples containing 15% WMP were significantly higher than the control samples (p < 0.05). The result of SDS-PAGE showed that the C protein, sarcoplasmic protein, actin, and tropomyosin increased with an increase in the WMP contents. The principal component analysis plot of WMP-treated samples was clearly different from that of the control samples. Based on these results, it was predicted that WMP could be useful as heterologous protein on emulsion-type sausage.
Various amounts of buckwheat powder (0%, 1%, 2%, and 3%) were added to emulsion-type pork sausages. The effects of buckwheat powder on the physicochemical characteristics of the emulsion type sausages, including proximate composition, cooking yield, viscosity, pH, instrumental color, texture profile analysis (TPA), and sensory evaluation, were determined. Increased levels of added buckwheat powder led to higher moisture (p<0.05), ash content (p<0.05 or >0.05), and cooking yield (p<0.05). However, the protein and fat contents of the sausage samples were lower (p<0.05) with higher levels of added buckwheat powder. The instrumental color and pH values were affected by the addition of buckwheat powder, which has a pH of 6.1 and associated color coordinates of $L^*=75.0$, $a^*=1.3$, and $b^*=8.7$. Meat batter with 3% buckwheat powder was shown the highest (p<0.05) viscosity indicating great formation of emulsion. There were no significant differences in the TPA among the treated samples. The viscosity value increased with increasing cooking yield in the batter ($r^2=0.7283$) i.e. the correlation coefficient between the two measurements was very high and positive. For sensory traits except for tenderness, the highest scores (p<0.05) was detected on sausages with 3% added buckwheat powder by a panel. These results suggest that the addition of 3% buckwheat powder to emulsion-type sausages produces a more beneficial meat product, with a lower fat content, greater formation of emulsion and no adverse effects on sensory properties.
본 연구는 홍국 분말 첨가수준에 따른 유화형 소시지의 이화학적 특성에 대하여 조사하였다. 수분함량은 홍국분말 첨가량이 증가할수록 유의적으로 높아지는 추세를 보였으며, 단백질함량과 지방함량은 감소하는 경향을 보였다. 색도는 홍국 분말 첨가량에 따라 명도와 황색도는 감소하는 반면 적색도는 크게 증가하였다. 가열감량, 수분리, 유분리와 점도는 홍국 분말 첨가량이 증가함에 따라 감소하는 경향을 보였다. 관능평가에서 색도와 다즙성은 홍국 분말 3% 첨가 처리구가 유의적으로 가장 높은 값을 나타내었고, 풍미는 홍국분말 2~3% 첨가 처리구가 유의적으로 가장 높은 값을 나타내었다. 연도는 홍국 분말 첨가 처리구가 대조구보다 높은 값을 보였으며, 전체적인 기호도에서는 홍국 분말 2% 첨가 처리구가 가장 높은 값을 나타내었다. 연구결과를 종합하면 돈육 유화물에 홍국분말을 첨가하여 제조하였을 때 홍국 첨가에 따른 적색도가 증진되어 육색을 개선시키는 효과가 있으며 이화학적 품질특성을 향상시키는 것으로 생각된다.
소시지의 원료육으로 사용되는 돼지고기를 말고기로 0, 50, 100% 대체하여 소시지 품질을 비교한 결과, 말고기 특성이 소시지 품질에 많은 영향을 미쳤다. 특히, 말고기 함량이 높을수록 지방 함량은 작았으며, 수분 함량과 단백질함량은 높은 경향을 보였다. 또한 말고기 소시지는 pH가 높고, 돈육 소시지 보다 제품색이 붉고, 어두운 특성을 보였다. 하지만 소시지의 조직적 특성과 관능적 특성에서는 돼지고기 소시지와 차이를 보이지 않았으며, 오히려 말고기 소시지가 경도와 탄력성에서는 돼지고기 소시지 보다 높은 편이었다. 미량 광물질 중 K, Fe, Zn, Cu는 말고기 소시지가 돼지고기 소시지 보다 더 함량이 많았으며, P, Na 함량은 돼지고기 소시지에서 높게 나타났다. 지방산 조성에서는 말고기 소시지가 포화지방산 비율이 높고, 불포화지방산 비율이 떨어지는 것으로 나타났다. 이상의 결과를 종합하면 소시지 제조 시 돼지고기를 말고기로 대체하여 만들어진 말고기 소시지는 돼지고기만을 원료로 제조한 소시지에 비하여 품질저하를 보이지 않았으며 오히려, 최근 소비자의 건강지향성 등을 고려할 때 저지방, 미량광물질 강화 등 기능성 소시지 제조가 가능할 것으로 판단되었다.
CLA-식물성유와 CLA-동물성유가 대체가 유화형 sausage의 품질특성에 미치는 영향을 조사하기 위해 3개의 시험구를 배치하였다. CLA- CO는 돼지 등지방 함량 중 30%를 CLA-corn oil로 대체시켰으며, CLA-SSO는 30% CLA- safflower seed oil, CLA-LD는 30% CLA-lard을 각각 대체하여 유화형 sausage를 제조한 후 1, 7, 14, 21 그리고 28일 동안 4$^{\circ}C$의 냉장고에 저장하면서 이화학적 특성, 조직감, 지방산패도, 지방산 조성 및 CLA 함량의 변화를 조사하였다. CLA-식물성유와 CLA-동물성유를 첨가한 sausage의 pH는 전 저장기간동안 대조구에 비하여 유의적으로 낮게 나타났으며(p<0.05), 모든 처리구가 저장 14일째에 유의적으로 가장 낮은 pH를 보였다(P<0.05). Sausage의 L*과 a* 값은 모든 처리구간에 큰 차이는 없었으나, b* 값의 경우 CLA-처리구가 대조구에 비해 전 저장기간 동안 유의적으로 높은 경향을 나타내었다(p<0.05). CLA 처리구가 대조구에 비하여 모든 지방산 조성이 감소하는 결과를 보인 반면에, linolenic acid 함량은 대조구에 비하여 CLA 처리구인 CLA-CO와 CLA-SSO 처리구가 유의적으로 높은 함량을 보였다(P<0.05). 모든 처리구가 저장기간 경과에 따른 지방산 조성의 변화는 없었다. 조직감에서는 CLA-LD 처리구가 대조구나 다른 처리구에 비하여 응집성, 탄력성, 고무성 및 파쇄성 등이 유의적으로 높았다(P<0.05). 유화형 sausage의 지방산패도는 저장기간이 경과함에 따라 처리구 모두 유의적으로 높게 나타났고(p<0.05), CLA-CO 처리구가 대조구 보다 유의적으로 낮은 경향을 보였다(p<0.05). 이상의 결과 유화형 sausage 제조시 CLA 첨가는 이화학적 특성과 조직감에 영향을 미치지 않으며, 제품의 저장기간을 연장 및 CLA를 축적시키는 것이 가능하여 고급 sausage 생산이 가능하다고 사료된다.
