The Nitrite Scavenging and Electron Donating Ability of Phenolic Compounds (페놀성 화합물의 아질산염 소거 및 전자공여 작용)

  • Phenolic compounds are known to inhibit the nitrosation or oxidation reaction. In the present work, the effects of phenolic compounds including phenolic acids and flavonoids on the nitrite-scavenging and electron donating ability were tested as scavenger of nitrite which is believed to participate in the formation of N-nitroso compounds and investigated as electron donator. The nitrite scavenging ability appeared in all the phenolic acids and showed the highest value at PH 1.2. Among the Phenolic compounds, phenolic acids showed higher nitrite-scavenging action than some flavonoids. Futhermore, the nitrite scavenging action of phenolic compounds was pH dependent highest at pH 1.2 and lowest at pH 6.0. The electron donating ability (EDA) by reduction of ${\alpha},{\alpha}$-diphenyl-${\beta}$-picrylhydrazyl (DPPH) among hydroxybenzoic acids was in the decreasing order of gallic acid, gentisic acid, syringic acid, protocatechuic acid, salicylic acid, vanillic acid, benzoic acid and p-hydroxybenzoic acid. EDA of hydroxycinnamic acids was in the decreasing order of hydrocaffeic acid, caffeic acid, ferulic acid, p-coumaric acid and trans-cinnamic acid. EDA of flavonoids was in the decreasing order of (+)catechin, rutin, quercetin, naringin and hesperidin. Other phenolic compounds were significantly high in electron donating abilities.

Screening of electron donating ability, antibacterial activity and nitrite scavenging effect of some herbal extracts (Herb추출물의 전자공여능, 항균활성 및 아질산염 소거능 검색)

  • Six kinds of herbs(applemint, geranium, lemonbalm, rosemary, sage and thyme) were extracted with water and 95% methanol, and the electron donating ability, antibacterial activity and nitrite scavenging effect were examined. The electron donating ability of herbs ranged from 60.7 to 92.2% and the highest value was observed in geranium, followed by sage and lemonbalm. Antibacterial activity of methanol extracts was much stronger than that of water extracts and gram positive bacteria were more sensitive than gram negative bacteria. Rosemary and geranium exhibited excellent antimicrobial activities against a wide range of bacteria. Nitrite scavenging activity, which was measured at various pH conditions(1.2, 3.0, 3.6, 4.2), was the highest in all herbs at pH 1.2 and the lowest at pH 4.2, suggesting that it is pH dependent. Methanol fraction also provided higher nitrite scavenging effect than the water fraction.

Functional Activities of Microwave-Assisted Extracts from Flammulina velutipes (마이크로웨이브 추출공정에 의한 팽이버섯 추출물의 기능적 특성)

  • Functional activities of Flammulina velutipes extract including electron donating ability, nitrite-scavenging effect, and tyrosinase inhibition activity was examined. Extraction were carried out by microwave-assisted extraction (MAE) under different conditions including solvent and microwave power. Tyrosinase inhibition activity and nitrite-scavenging effect increased as microwave power increased during extraction. Total phenol content and electron-donating ability reached maximum at the microwave power of 90 W. Total polyphenol content and electron-donating ability increased as extraction time extended up to 15 min, with the highest tyrosinase inhibition obtained after 5 min extraction. Significantly higher tyrosinase inhibition activity was found in 99% ethanol extract, whereas greater nitrite-scavenging effect was observed in the water extract. The maximum nitrite-scavenging effect was found at pH 1.2 and decreased as pH increased.

Effect of Gamma Irradiation on Microbial Growth, Electron Donating Ability, and Lipid Oxidation of Marinated Beef Rib (Galbi) with Different Packaging Methods (포장방법에 따른 양념갈비의 저장 중 총균수, 전자공여능 및 지방산화의 감마선 조사효과)

  • The effect of irradiation and packaging methods (vacuum vs aerobic) on microbial growth, electron donating ability, and lipid oxidation in marinated beef rib (Galbi) was investigated. The total aerobic bacteria in Gazlbi reduced significantly with the increase of irradiation dose, and the effect was more significant in the Galbi with vacuum packaging, The pH showed a decreasing trend during storage and this change was more significant in the Galbi with aerobic packaging. Electron donating ability of Galbi was reduced by irradiation in aerobic packaging but no difference was found in vacuum packaging except 7 days. The 2-thiobarbituric acid reactive substances (TBARS) value of Galbi increased by irradiation in aerobic packaging during storage time, but that of vacuum packaging was maintained an initial value. Results indicated that irradiation coupled with vacuum packaging may enhance the microbial safety of Korean traditional meat products, Galbi, with minimum quality changes during storage.

  • The synthesized macrocycle L was found to be a smart fluorescent receptor which distinguishable efficiently from various neutral molecules with the functional groups such as the electron donating (X =$CH_3$, N($CH_3$)$_2$ and O$CH_3$) and electron withdrawing groups (X =F and Cl), respectively. In the case of guest molecules containing electron donating groups, the fluorescence of macrocycle L was enhanced in the presence of the guest molecules. On the contrary, in the case of guest molecules containing electron withdrawing groups, it was almost quenched in the presence of those.

A Study of Effects of Coffee Waste Extracts obtained from Solvents (커피 폐기물 추출물의 효능에 관한 연구)

  • In this study, coffee waste was extracted with different solvents such as ethyl acetate, methylene chloride and methanol to investigate the total polyphenol contents, electron donating ability and the inhibitory effect on glutathione S-transferase. The total polyphenol contents were $3,060.61{\pm}357.12{\mu}g\;GAE/mL$ in ethyl acetate, $909.09{\pm}35.71{\mu}g\;GAE/mL$ in methylene chloride, and $1,602.27{\pm}30.36{\mu}g\;GAE/mL$ in methanol. The total polyphenol contents showed a significant difference (p<0.05) between the solvents. The electron donating ability was $80.20{\pm}1.45%$ for ethyl acetate, $81.94{\pm}0.45%$ for methylene chloride, and $85.14{\pm}1.53%$ for methanol. The electron donating abilities were significantly different (p<0.05) between the solvents. The inhibitory effect of the various extracts on glutathione S-transferase (% inhibition) was $92.12{\pm}0.56%$, $88.48{\pm}0245%$ with methylene chloride extract, and $90.85{\pm}0.14%$ with methanol extract. These too were significant different (p<0.05) between the solvents. The two portions of coffee waste extracts obtained from ethyl acetate and methanol showed meaningful results on the total polyphenol contents, and the inhibition effects on glutathione S-transferase. Therefore, they can be utilized to develop health care foods and can be applied as antioxidants for cosmeceuticals.

Electron Donating Abilities, Nitrite Scavenging Effects and Antimicrobial Activities of Smilax china Leaf (청미래 덩굴잎(Smilax china) 추출물의 전자공여능, 아질산염 소거능 및 항균효과)

  • Electron donating abilities, nitrite scavenging effects and antimicrobial activities of various fractions obtained from ethanol extract of Smilax china were examined. Among the fractions investigated, the highest electron donating ability was determined with ethyl acetate fraction showing about 81.0% when reacted for 10 min. However, the lowest ability was found from chloroform fraction. Ethyl acetate and butanol fractions also showed very high nitrite scavenging activity at all concentrations tested. All the fractions revealed antimicrobial activity against Listeria monocytogenes and Staphylococcus aureus, Gram (+) bacteria, at both 2.5% and 5.0% concentrations. However, no antimicrobial activity was observed on Escherichia coli O157:H7 and Salmonella Typhimurium, Gram (-) bacteria, at 2.5%, but very low activity was detected by 5.0% concentration of ethanol extract, ethyl acetate and water fractions.

Optimization of Roasted Perilla Leaf Tea Using Response Surface Methodology (반응표면분석을 이용한 들깨잎차 볶음처리의 최적화)

  • Response surface methodology (RSM) was applied in roasting processes of perilla leaves to develop a high quality perilla leaf tea. The Hunter color parameters and electron donating ability were monitored to optimize organoleptic properties of perilla leaf tea. The roasting processes were based on the central composite design with primary variables-roasting temperature $(140{\sim}220^{\circ}C)$, time $(5{\sim}25)$, and reaction variables-sensory test, electron donating ability. From the variables, the roasting condition was optimized using statistical analysis system (SAS) program as developing the functional tea using perilla leaf. Hunter color L and b values of the powdered samples increased with the roasting processes, but Hunter color a value decreased. Electron donating ability was influenced by roasting temperature (p<0.01) and time (p<0.01), and optimum condition selected was at $220^{\circ}C$ for 15 min with coefficient of determinations $(R^2)$ above 0.98. After preference test of perilla leaf tea using parameter of taste, color, and flavor, we can estimate that the optimal roasting condition of preilla leaf for function tea manufacturing are $210{\sim}220^{\circ}C$ for $10{\sim}20$ min by response surface methodology (RSM). Tyrosinase, xanthine oxidase and electron donating ability were 10.14, 14.37 and 59.19% of perilla leaf tea.

Optimization for Electron Donating Ability and Organoleptic Properties of Ethanol Extracts from Chrysanthemum Petals (전자공여작용과 관능적 특성을 고려한 산국(山菊) 에탄올 추출물의 제조조건 최적화)

  • Response surface methodology (RSM) was used to monitor extraction characteristics of electron donating ability and organoleptic properties for ethanol extracts from Chrysanthemum petals, thereby determining optimum extraction conditions. A central composite design was applied to investigate effects of solvent per sample $(X_1)$, ethanol concentration $(X_2)$ and extraction time $(X_3)\;at\;60^{\circ}C$ on dependent variables such as electron donating ability $(Y_1)$, organoleptic color $(Y_2)$ and organoleptic aroma $(Y_3)$ of the extracts. Second-order models were employed to generate 4-dimensional response surfaces for qualitative and quantitative aspects of ethanol extracts. Coefficients of determination $(R_2)$ of the models for dependent variables were ranged from 0.8180 to 0.9696. Optimum extraction conditions for each variable were 50 mL/g, 61% and 16 hrs in electron donating ability, 88 mL/g, 21% and 16 hrs in organoleptic color, 55 mL/g, 73% and 19 hrs in organoleptic aroma, respectively. The optimum condition ranges for maximized characteristics of ethanol extracts were $65{\sim}78\;mL/g,\;90{\sim}100%\;and\;15{\sim}25\;hrs$. Predicted values at the optimum conditions were in good agreement with experimental values.

Lewis Acid Degradation Characteristics of Perfluoropolyethers Derivatives (퍼프로로폴리에테르 유도체의 루이스 산 분해특성)

  • The degradation characteristics of perfluoropolyether (PFPE) derivatives currently being used as computer hard disk lubricants have been investigated. Especially, we considered the effects of end group on degradation behavior of PFPE derivatives. It was found that the degradation of PFPE derivatives in the presence of $Al_2O_3$ involves two degradation mechanisms such as thermal degradation and Lewis acid disproportionation by $AlF_3$ which was mainly formed by oxide-to-halide reaction between $Al_2O_3$ and the degraded PFPE. The end groups were strongly related to Lewis acid disproportionation of PFPE derivatives, and it is due to the difference of electron donating ability in the each end groups. Even if PFPE derivatives have same repeating unit in the main chain, Lewis acid disproportionation was prohibited by higher electron donating ability by the end group which caused the high electron density at the acetal group in the repeating unit.
