In this study, we examined the effects of egg yolk powder added to flour dough on the lipid oxidation of fried products during storage. The flour dough containing the egg yolk powder (0, 5, and 10%) was fried in sunflower oil at $180^{\circ}C$ for 90 sec. The fried products were then stored at $60^{\circ}C$ for 9 days in the dark. The lipid oxidation of the fried products was evaluated by fatty acid composition, peroxide values (POV), conjugated dienoic acid (CDA) contents, and thiobarbituric acid (TBA) values. The color and phospholipids (PL) contents of the fried products were also determined by colorimetry and high performance liquid chromatography, respectively. The addition of egg yolk powder to the dough decreased the POV, CDA contents, and TBA values of the fried products during storage. Although POV, CDA contents, and TBA values significantly increased in the products without egg yolk powder during storage, little change was observed in the products with egg yolk powder. The PL contents remained relatively constant in the flied products added with egg yolk powder during storage. The lightness and greenness of the fried products decreased, and the yellowness increased, as the storage time increased. The results clearly indicate that the addition of egg yolk powder to the dough improved the lipid oxidative stability of the fried products during storage in the dark, and the PL in the egg yolk might have contributed to the improvements in lipid oxidative stability.
The study was conducted to investigate the effect of particle size on the physicochemical properties of egg yolk-rice porridge. The pH of egg yolk-rice porridge was decreased when compared to that of the control, while the lightness and yellowness was increased as the rice particle size increased. The viscosity of whole particle egg yolk porridge was highest among the three porridges at $40^{\circ}C$. The protein content of the egg yolk-rice porridge was increased three-fold, when compared to that of the rice porridges. The total amino acid content of egg yolk-rice porridge was 1,500.6 mg/100 g, while that of rice was 1,147.5 mg/100 g. The Lys and Thr content of the amino acid content of egg yolk-rice porridge were also increased. Sensory evaluation results revealed that the half particle size rice egg yolk-rice porridge had the highest scores in color, taste and over-all preference. Based on these results, the half particle size egg yolk-porridge had good quality with respect to both the physicochemical and nutritional properties.
Premix frying powders were prepared by supplementation with 0%, 3%, 6%, 9%, or 12% egg white powder. The following quality characteristics of the fried batter were assessed: proximate composition and amino acid content of premix frying powder; viscosity and pick-up ratio of frying batter; moisture content, lipid content, color, texture and DPPH radical scavenging activity; and sensory evaluation items. Addition of egg white powder in place of wheat flour resulted in lower moisture content (p<0.01) and lower carbohydrate content (p<0.001), higher crude protein content (p<0.001), higher ash protein content (p<0.001), and higher amino acid content (p<0.01) in the premix frying powder. Lower viscosity and higher pick-up ratio (p<0.001) of the frying batter were observed. The resultant fritters had the higher moisture content and higher lipid content (p<0.001). They also showed the lighter color, and had lesser redness and yellowness (p<0.001). Considering texture, the fritters were harder, had higher fracturability and higher adhesiveness (p<0.001), lower springiness (p<0.001), were less chewy (p<0.01), and had lower cohesiveness (p<0.001). Examination of DPPH radical scavenging activity showed higher antioxidant activity (p<0.001) upon addition of egg white powder. Sensory evaluation of the fried batters showed the best outcomes for the group containing 6% white egg powder, in terms of appearance (p<0.05), flavor (p<0.001), taste (p<0.01), texture (p<0.01), and overall quality (p<0.001). Based on the results of this research, we postulate that the addition of 6% egg white powder to premix frying powder will not only improve customer preference and product quality but also enhance the nutrition and functionality of the product.

In this study, we investigated the effects of feeding diets with different levels of energy and nutrient density on the egg quality of laying hens during the pre-peak and peak periods. A total of 192 (Hy-line brown) laying hens were used in a 15-week trial. The hens were randomly allotted to one of four treatments, each with four replicates (12 hens per replication). We assessed the effects of four level of dietary energy (2,710, 2,850, 2,870 and 2,890 kcal/kg) and three levels of nutrient density (Methionine + Cysteine: 0.56%, 0.85%, 0.80% and Crude Protein: 14.5%, 19%, 18%). Differences in the energy and nutrient density contents of diets showed no significant effect (P>0.05) on the average daily gain, average daily feed intake, feed conversion ratio, egg weight, or egg production of hens during the pre-peak and peak periods. However, hens subjected to 2,890 kcal/kg during the pre-peak period were found to lay eggs with significantly thicker shells, and yolk color was found to be significant enhanced in hens fed this diet during the pre-and peak periods. In contrast, we detected no significant effects of dietary energy or nutrient density on the Haugh unit or eggshell strength. In summary, increasing the energy level of diets from 2,710 to 2,890 kcal/kg was found to have positive effects on the shell thickness and yolk color of eggs produced by laying hens.
The possibility of lycopene affecting egg yolk pigmentation was studied with lycopene diets containing 0, 4, 8, and $12{\mu}g/g$ meal, respectively. The addition of lycopene above $4{\mu}g/g$ meal significantly improved yolk color after four days of supplementation. The transfer of lycopene into egg yolk was confirmed by thin layer chromatography, and high-performance liquid chromatography-mass spectrometry (HPLC-MS). The deposition rate of lycopene into egg yolk was approximately 2%, which was quantitatively determined using a HPLC with a UV detector. The result indicates that lycopene is a good candidate for egg yolk pigmentation and for making functional eggs.

The Effects of Dietary Supplemental Charcoal Extract (CE) were examined on performance of 19-week-old ISA Brown hens for 12weeks. Four hundred and fifty were randolmy assigned to 0, 0.025, 0.05, 0.075, 0.1% dietary CE, respectively with five replicates of 18 hens per pen. Basal diets contained 17.5% CP and 2,800 ME. Egg production egg weight, feed conversion(FC), and egg qualities were measured in every four weeks. Egg production and FC was slightly improved in 0.05% supplemental CE group compared to that of other treatments, but was not signhificant different. Average egg weight was significantly higher in 0.025% and 0.1% than other treatments(P<0.05). Total egg mass tended to be higher in 0.05% supplementation. Daily feed intake increased in 0.1% supplementation than the others, but was not statistically different. Eggshell breaking strength and Haugh unit were tended to be higher in 0.05% supplementation. There were no significant difference in eggshell thickness and yolk color of all treatments.
Yackwa was prepared by the addition of different amounts of egg white, and the samples were analyzed by texture profile analysis, Hunter's colorimetry and sensory evaluation during 5 days of storage. Tn texture profile analysis, the hardness, gumminess and chewiness of Yackwa were increased in all the samples during storage and the texture parameters were increased by increasing egg white level. No significant difference was observed in the lightness, redness and yellowness (p〉0.05), but Hunter's color values were slightly increased during storage in all the samples. In sensory evaluation, no significant difference was observed among the samples during storage except the increase of crispiness and overall acceptance by the addition of egg white. The results showed that Yackwa prepared with 10 g of egg white/(100 g of other ingredients ---약과재료 얼마당 10g 첨가인지 명확히 해야 함) had an acceptable sensory quality.
This study was carried out to investigate the effect of food-waste(FW) between weeks(0, 1, 2, 3, 4 week) and additive levels(0, 1, 3, 5, 10, 20%) on egg production and egg qualify in laying hens. One hundred sixty two White Leghorn laying hens at fifty weeks of age were used for this work. There was no significant difference on feed intake, egg production, and egg weight among all treatments. But, 20% FW group was decreased at 1, 2, and 3 week on egg production and it was recovered at 4 weeks(p<0.05). There was no difference on the eggshell thickness and egg yolk index among all treatments. However, eggshell breaking strength were $4.13kg/cm^2\;and\;4.04kg/cm^2$ at 3 week and 4 week, individually, and there was difference on eggshell breaking strength(p<0.05). Haugh unit and egg yolk color were high at 20% FW group as 92.3 and 9.4, individually, and there was shown the significant increasing in weeks and additive levels(p<0.05). Conclusionally, 20% FW group was decreased on egg production, while 5% FW group was maintained on egg production, and haugh unit and egg yolk color were cleary developed. Therefore, if the nutrients balance of FW diets were controlled, FW diets will be used with one of the valuable feed sources.
A total of 225 ISA Brown layers, 63-wk-old, were used in a 5-wk feeding trial to measure the effect of dietary canthaxanthin(0, 50, 100, 200, and 300mg/kg feed) on its accumulation in various body parts and the egg yolk. There were three replications per treatment and 15 birds per replication. The redness(a$\^$*/) and yellowness(b$\^$*/) of wing and thigh skin significantly(P<0.05) increased when canthaxanthin was fed at 2200 and 250mg/kg feed, respectively. However, the color of breast skin was not significantly affected by the canthaxanthin supplementation. Skin lightness(L$\^$*/) was not influenced by the dietary canthaxanthin. The dietary canthaxanthin supplementation did not significantly affect the redness or the yellowness of breast and thigh muscles. However, feeding canthaxanthin at 300mg/kg, compared to the control(0mg/kg feed), significantly(P<0.05) decreased the lightness of wing and breast muscles. Feeding of canthaxanthin for 1-3d also significantly increased the color of egg yolks. In conclusion, canthaxanthin can be used to improve the color of skin and egg yolks, but it should be used cautiously because too intense egg yolk redness could be rejected by consumers.
A 42-d study with 384 Hy-line brown laying hens was conducted to assess the effects of dietary octacosanol supplementation on laying performance, egg quality and blood metabolites of laying hens. Hens were randomly allocated into 4 dietary groups of 8 cages each, which were fed basal diet supplemented with 0 (Control), 9 (OCT9), 18 (OCT18), and 27 (OCT27) mg/kg diet of octacosanol isolated from rice bran, respectively. The experiment was conducted in an environmental controlled house and hens were fed twice daily for ad libitum intake. Laying performance was determined over the 42-d period, and egg quality as well as blood metabolites were estimated on d 21 and d 42. Diets in OCT18 and OCT27 increased (p<0.05) laying rate, egg weight, egg mass, egg albumen height, Haugh unit and eggshell strength on d 42, but decreased (p<0.05) feed conversion rate and levels of total cholesterol, triglyceride and low density lipoprotein cholesterol in the serum as compared to those of Control. Feed intake, yolk color, yolk diameter, eggshell thickness and high density lipoprotein cholesterol were similar (p>0.05) among treatments. Results demonstrate that supplementing 18 to 27 mg/kg diet of rice bran octacosanol can improve laying rate and egg quality and reduce blood lipid of laying hens.
