Surface crack detection is an important aspect in the quality control process of egg markets. The acoustic vibration of an egg could be used as a critical factor in evaluating the eggshell quality. The mode shape indicates the egg vibration behavior at different locations with respect to the input impulse and provides important information for the optimum sensor location to obtain the desired acoustic measurements. Theoretical analysis and experimental measurements were conducted to determine the acoustic vibration modes in eggs. The resonant fiequencies of the first and second resonance mode of intact eggs were found to be distributed between 2kHz and 7kHz range. The measured mode shapes of an egg were similar to theoretical shapes of homogeneous, elastic spheres. An elliptical deformation at the equator ring of the egg was observed. The frequency peak of this mode was dominantly present in the frequency spectrum of an intact egg impacted at its sharp position. The mode shapes related to the first resonant frequency of an egg shelved that the optimum location for the measuring sensor was the 180 degrees position. A optimum location for the egg support was found to be the 90 degrees position having the smallest vibration magnitude.
A 10-wk layer feeding trial was conducted to investigate the effects of high quality corn distiller's dried grains with solubles (DDGS) on performance, egg qualities, and yolk fatty acid composition. The economics of using DDGS in the Korean situation was also analyzed. A total of 216 Hy-line Brown layers, 23-wk of age, were employed in this trial consisting of three dietary treatments (0%, 10%, and 20% DDGS), and six replicates per treatment. All experimental diets were prepared as iso-protein (17%) and iso-calorie (2,780 kcal/kg). The use of DDGS up to 20% in layer diets did not affect the feed intake, laying rate, egg weight, and feed conversion ratio (P>0.05). At 5th and 10th wk of the trial, the eggshell color, albumen height, and Haugh unit were not influenced by the DDGS supplementation. At 5th wk of the trial, the eggshell qualities, like eggshell weight, eggshell thickness, and eggshell strength, were not affected by the DDGS feeding; however, these eggshell qualities were decreased at 10th wk due to the 20% DDGS feeding (P<0.05). Yolk color of DDGS 20% increased compared to DDGS 0% at 5th and 10th wk of the trial (P<0.05). At 10th wk, yolk/egg ratio of DDGS 20% decreased compared to DDGS 0% (P<0.05). The yolk fat content was not changed due to DDGS feeding. The monounsaturated fatty acid content of yolk decreased linearly by feeding DDGS (P<0.05). The yolk polyunsaturated fatty acid content of DDGS 20% increased significantly compared to DDGS 0%. The DDGS feeding was not found to affect the degree of yolk fat unsaturation. The cost of feed (₩/kg feed) decreased as the level of DDGS increased. The production costs of egg (₩/kg egg) were cheap in the order of DDGS 10%, DDGS 20%, and DDGS 0%, indicating that DDGS is a viable alternative feed ingredient to corn and soybean meal. In conclusion, high quality DDGS ($L^*$ 61.72) could be used economically up to 20% level without any harmful effect on laying performance: however, the use of DDGS up to 10% is more economical than DDGS 20%.

This experiment was aimed at investigating the effects of dietary supplementation with fermented rice bran (FRB) or fermented broken rice (FBR) on egg-laying performance, egg quality, blood parameters, and cholesterol level in egg yolk of Hy-Line Brown egg-laying hens. Altogether, 144 Hy-Line Brown egg-laying hens (32-week-old) were randomly allocated to one of 4 dietary treatment groups, with 4 replicates per treatment. Of them, 3 treatments diets were prepared by supplementing the basal diet with 0.1% probiotics (PRO), 1% fermented rice bran (FRB), or 1% fermented broken rice (FBR) at the expense of corn. Hen-day egg production was higher (P<0.05) in PRO and FRB treatment groups than in the basal treatment groups. However, feed intake, egg weight, egg mass, and feed conversion ratio did not differ among the treatment groups. Additionally, supplementation with FRB or FBR did not affect eggshell strength, eggshell thickness, egg yolk color, and Haugh unit during the feeding trial. There was no significant difference in leukocyte count. Total cholesterol level was lower (P<0.05) in the FRB treatment group than in the basal treatment groups. Asparate aminotransferase, alanine transferase, glucose, and albumin levels were unaffected by dietary supplementation with FRB or FBR. Egg yolk cholesterol level was lower (P<0.05) in the FRB and FBR treatment groups than in the basal treatment groups. In conclusion, dietary supplementation with FRB or FBR improved egg-laying performance, and reduced the levels of total serum cholesterol and cholesterol in egg yolk of Hy-Line Brown egg-laying hens.
An experiment was conducted to investigate the effects of forced molting and egg storage time on the various egg qualities. A total of 240 ISA Brown layers (60 wk of age) were employed as the unmolted treatment (Control). Two hundred and forty ISA Brown layers, molted at the age of 55 wk, were used as a forced molting treatment (T1), and the same number and strain of layers, molted at the age of 70 wk, were also used as the another forced molting treatment (T2). A total of 120 eggs were sampled from each treatment, and divided into six sets, 20 eggs per set. These six sets were stored for 1, 3, 6, 9, 12, and 15 days at $18^{\circ}C$ temperature, respectively. Eggs from T1 were collected from laying hens at the age of 68 wk, which started molting at 60 wk of age and achieved 50% egg production at 63 wk of age. Eggs from T2 were collected from hens at 82 wk of age, which started molting at 70 wk of age and achieved 50% egg production at 78 wk of age. The eggshell strength of T1 was significantly (p<0.05) higher than the Control and T2, and the storing periods did not affect the eggshell strength at all. Neither the forced molting nor the storing periods did not exert any consistent effect on the egg weight, eggshell thickness, eggshell color and egg yolk color. The albumin heights of T1 and T2 were significantly (p<0.05) lower than the Control, and it was remarkably reduced gradually as the storage periods increased in all three treatments. The Haugh unit showed very similar trends as the albumin height, indicating that both albumin height and Haugh unit were very much related to each other. In conclusion, the forced molting improves the eggshell strength, but decreases the albumin height and Haugh unit. The storage of eggs also decreases the albumin height and Haugh unit regardless of molting.

Betaine functions as an osmoregulators in the cells and its inclusion can spare the choline, carcass fat reduction. Thus, two hundred eighty eight of seventy eight weeks old laying hens were fed with 0, 500, 1,000, 2,000 ppm betaine addition during the environmentally high temperature stress. Basal diets contained 16% CP and 2,800 ME. Egg production, feed intake, feed conversion were examined for eight weeks. Egg qualities, liver betaine, blood osmolarity, AntiDiuretic Hormone(ADH) were measured at the end experiment. Egg production of hens fed 500, 2,000 ppm dietary betaine and showed significance between control and 2,000 ppm betaine treatment(P<0.05). ADH of blood sera tended to increase as dietary supplemental betaine increased. The results of this experiments indicated that dietary supplemental betaine was able to improve the performance, eggshell breaking strength, liver betaine in this experiment.
Egg grading is determined by exterior and interior quality. Among the evaluation methods for the egg quality, a candling method is common to identify eggs with cracked shells and interior defects. But this method is time-consuming and laborious. In addition, practically, it is challenging to detect hairline and micro cracks. In this study, an on-line inspection system based on acoustic resonance frequency analysis was developed to detect hairline cracks on eggshells. A roller conveyor was used to transfer eggs along one lane to the impact position where each of eggs rotated by the roller was excited with an impact device at four different locations on the eggshell equator. The impact device was consisted of a plastic hammer and a rotary solenoid. The acoustic response of the egg to the impact was measured with a small condenser microphone at the same position as the impact device was installed. Two acoustic parameters, correlation coefficient for normalized power spectra and standard deviation of peak resonant frequencies, were used to detect cracked eggs. Intact eggs showed relatively high correlations among the four normalized power spectra and low standard deviations of the four peak resonant frequencies. On the other hand, cracked eggs showed low correlations and high standard deviations as compared to the intact. This method allowed a crack detection rate of 97.6%.
The effects of fermented garlic powder on production performance, egg quality, blood profiles and fatty acid composition of egg yolk in laying hens were studied in a 35-d experiment. Two-hundred and forty (ISA brown) layers aged 41 weeks were randomly allocated into the following four treatments: i) CON (basal diet); ii) G1 (CON+fermented garlic powder 1.0%); iii) G2 (CON+fermented garlic powder 2.0%) and iv) G3 (CON+fermented garlic powder 3.0%). There were no differences (p>0.05) among treatments in egg production, egg weight, eggshell breaking strength and eggshell thickness throughout the whole experimental period. However, yolk height was increased significantly (p<0.05) by the addition of fermented garlic powder during the 5th week while yolk color was greater (p<0.05) in G2 and G3 than in CON and G1 in the 5th week. Compared with CON, Haugh unit was increased (p<0.05) in response to fermented garlic powder treatments during the 5th week. No significant effects on total protein, albumin and IgG were observed in response to any of the treatments over the experimental period (p>0.05). There was a significant (p<0.05) reduction in plasma cholesterol concentration when the dietary level of fermented garlic powder was increased from 0.0 to 3.0%. The levels of saturated fatty acids (SFA) were significantly decreased (p<0.05) in response to G2 and G3 while monounsaturated fatty acids (MUFA) were higher (p<0.05) in G2 and G3 treatment groups than in CON and G1. Compared with other treatments, polyunsaturated fatty acids (PUFA) and PUFA:SFA ratio were higher (p<0.05) in G3. In conclusion, this study demonstrated that addition of fermented garlic powder reduced plasma cholesterol concentration and did not cause adverse effects on production performance. Moreover, addition of 3.0% garlic powder decreased SFA but increased PUFA and PUFA:SFA ratio in egg yolk.
This study was investigated to study split diets on laying performance and eggshell quality with Hy-Line brown layers 43 weeks old for 12 weeks Layers fed a conventional diet and split diets were divided into morning and afternoon diet. The conventional diet contained 3.4 % Ca was given constant nutrients all day. Hens of the split diets fed morning diets contained 0.5 % Ca constantly and afternoon diets contained 5.9, 8.0, and 10.0 % Ca in T1to T3. Split diets were given morning diets from 04:00 to 15:00 and afternoon diets 15:00 to 21 :00 alternately. Egg production, egg weight, and egg mass were not significantly different among diets. Abnormal eggs decreased in T1 and T2, but no significantly differed(P>0.05). Feed intake decreased in all of split diets compared to control diets (P <0.05). So, feed conversion ratio also improved in split diets(P<0.05). ME and CP intake decreased in T2 and T3, and Ca intake increased in proportion to Ca content of diets(P<0.05). ME and CP requirements per kg eggs decreased in the split diets, and that of Ca increased. Although there were not different significantly, egg shell strength and thickness improved slightly in T2 at 12 week. Yolk color, haugh unit and yolk index were not different among diets. Therefore, we concluded that split diet feeding to layer could improve feed and economic efficiency with normal egg production.
The effects of four factors-two dietary protein levels (12 and 16%), feeding methods(ad libitum and restricted), strains (A and B), and age of hens-on egg quality and laying performance were examined. Use of the 12% dietary protein level resulted in significantly lower (p < 0.05) hen-day egg production, higher feed intake to about 85% of the ad libitum intake decreased mean hen-day production. Significant feeding method-by-age interactions ($F{\times}A$) were obtained for all parameters. Restricted feeding had favorable effects on shell strength and Haugh unit values after 28 and 16 weeks of egg production, respectively. There was significant difference in shell strength between the two strain. Examination of the three-factor interaction among protein levels, feeding method and strain ($P{\times}F{\times}S$) disclosed that the favorable effect of the A strain on shell strength was significant only with the 16% protein-restricted fed group. The other treatment group did show a trend for greater shell strength of the A strain. Mean values for all the parameters examined changed significantly (p < 0.01) with the age of hens. Feed intake per dozen eggs tended to increase, with some fluctuation, as the hens aged. There was a linear decrease in Haugh unit scores and shell strength. The effect of restricted feeding on either shell strength or Haugh unit scores were favorable for the aged chickens.
Two hundred and sixteen Institut de S$\acute{e}$lection Animale (ISA) brown layers (40 wks of age) were studied for 6 wks to examine the effect of microalgae powder (MAP) on egg production, egg quality, blood lipid profile, and fatty acid concentration of egg yolk. Dietary treatments were as follows: i) CON (basal diet), ii) 0.5% MAP (CON+0.5% Schizochytrium powder), and iii) 1.0% MAP (CON+1.0% Schizochytrium powder). From 44 to 46 wks, egg production was higher in 1.0% MAP treatment than in control treatment (linear, p = 0.034); however, there was no difference on the egg production from 40 to 43 wks (p>0.05). Serum triglyceride and total cholesterol were significantly reduced in the groups fed with MAP, compared to those in groups fed with control diets (Quadratic, p = 0.034 and p = 0.039, respectively). Inclusion of 0.5% MAP in the diet of layers improved egg yolk color, compared with hens fed with basal diet at 46 wks (quadratic, p = 0.044). Eggshell thickness was linearly increased in MAP-fed treatments at 46th wk (p<0.05). Concentration of yolk docosahexaenoic acid (DHA; C22:6n-3) was increased in treatment groups fed with MAP (linear, p<0.05). The n-6 fatty acids, n-6/n-3 fatty acid, and unsaturated fatty acid/saturated fatty acid were decreased in treatment groups fed with MAP (linear, p<0.05). These results suggest that MAP improved the egg production and egg quality, and may affect serum lipid metabolites in the layers. In addition, MAP increases yolk DHA levels, and deceases n-6/n-3 fatty acid ratio.
