This study was conducted in order to improve nutritional support based on analysis of the eating habits and training schedule of junior and senior high school fencers. A survey was conducted on 30 fencers (junior boys=9, girls=7; senior boys=4, girls=10) using a questionnaire. Total daily calorie intakes were 2325.7${\pm}$1168.5 kcal (boy), 2344.0${\pm}$786.3 kcal (girl) for junior fencers and 2183.3${\pm}$726.6 kcal (boys), 2654.4${\pm}$1043.6 kcal (girls) for senior fencers. Nutrients below the RDIs were riboflavin and vitamin C for junior boy fencers and vitamin A, riboflavin, niacin, and vitamin C for senior boy fencers. The rates of the participants who had obtained nutritional information were 44.4% (boys) and 14.3% (girls) for junior fencers and 50.0% (boys) and 80.0% (girls) for senior fencers. Approximately half of the fencers had meals twice a day (55.6% for junior boy fencers, 57.1% for junior girl fencers, and 50.0% for senior fencers). The number of the fencers who were interested in nutrition varied: 66.7% and 28.6% of the junior boy and girl fencers answered they were interested in nutrition, while 25% and 60% of the senior boy and girl fencers showed interest in nutrition issues. Recommendations of total calories were 2,874 kcal (boys) and 2,377 kcal (girls) for junior fencers and 3,398 kcal (boys) and 2,375 kcal (girls) for senior fencers respectively. A dietary plan for the fencing players during training periods was designed to improve their health and performance. Athletes can simultaneously refuel and repair their bodies while contributing to their rehydration goals by consuming fluids that are sources of carbohydrates and protein, e.g., flavored milk and liquid meal supplement. Specific sport nutrition education applicable to athletes, especially young athletes, is recommended under professional support. Professionals may then target particular categories of athletes for the development of educational programs aimed at improving growth and athletic performance.
This study was performed for the purpose of establishing proper dietary behaviors and improving sodium intake status by investigating nutrition knowledge, dietary behaviors, and food intake frequency related to sodium in 398 university students living in Gyeonggi-do and Incheon. Female students showed a higher rate of eating out more than five times a week as well as daily snack intake than male students. Female students showed a higher score for sodium-related nutrition knowledge than male students, whereas male students showed higher sodium intake than female students. Subjects who showed a higher frequency of eating out and snack intake also showed a higher salt intake ratio and sodium-related nutrition knowledge. Subjects with higher scores related to sodium-related nutrition knowledge showed a higher low salt intake ratio and incidence of low sodium food intake. From this research, depending on the level of nutrition knowledge related to sodium university students showed differences in dietary behavior related to sodium intake. This result would be helpful to develop lower sodium training materials specific to low sodium food selection tips, reading nutrition labels, and so on.
The purpose of this study was to investigate the status of teacher's perception about the nutrition education of elementary schooL The results of this study were as follows. Most of the teachers responded that nutrition education necessitate in curriculum of elementary school, the main reason for necessity of nutrition education was for proper growth, they thought starting period of nutrition education was to begin when children are in a kindergarten and a infant home. The average score of nutrition knowledge was 6.3$\sim$6.9 out of 10 and teachers of Gwangju scored more higher on nutrition knowledge than teachers of Jeonnam, as they arranged a dietician was so.
This study sought to understand the requirements of registered institutions and parents of beneficiary children's through a satisfaction survey conducted at Center for Children's Foodservice Management (CCFSM) and to improve quality to create a model example of site-based meal safety management in accordance with population trends. In 2019, the comprehensive satisfaction level of the director and parents rose 2.4 points and 2.9 points, respectively, compared to the previous year, and the comprehensive satisfaction level of the director and parents continued to rise from 2015 to 2019. The gap between the highest and lowest institutions is narrowed to 13.5 points year-on-year from 21.4 points. National Institute of Food and Nutrition Service will need to make efforts to upgrade regional centers through (Human Resource Development(HRD) training to strengthen their job-specific capabilities and minimize the standard deviation of each center. Since local centers are distributed across the country and have field-oriented service support systems, CCFSM will need to manage the healthy eating habits of the underprivileged, provide information necessary to establish proper eating habits, strengthen education, and establish a customized food safety service system.
This study was conducted to investigate the validity of using a cameraphone for a dietary intake survey method. The subjects were 28 female college students. After eating a standard lunch meal which consisted of plain rice, seaweed soup, bulgogi, cucumber salad, roasted anchovy and kimchi, the quantity of dietary intake, calorie intake & nutrients intake were analyzed by weighed method, diet record method and cameraphone method by dietitian with k without cameraphone analysis training. There were no significant differences in the quantity of 6 foods intake between weighted method and cameraphone method by dietitians with camera phone analysis training. However, the quantity of seaweed soup, bulgogi & cucumber salad intake analyzed by diet record method was significantly lower than the weighed method. And the quantity of seaweed soup, bulgogi, cucumber salad, roasted anchovy and kimchi intake analyzed by the cameraphone method by dietitians without cameraphone analysis training was significantly lower than the weighed method. There were no significant differences in the calorie intake and nutrients intake between the weighted method and camera phone method by dietitians with camera-phone analysis training. However, protein, calcium, iron, phosphorous, Vitamin A, Vitamin $B_2$, Vitamin E and cholesterol intake analyzed by diet record method was significantly lower than the weighed method. And fat and Vitamin $B_2$ intake analyzed by the camera phone method by dietitians without cameraphone analysis training was significantly lower than the weighed method. Therefore, this study suggests that the use of the camerephone may be a valid and convenient method fur evaluating a dietary intake survey. However, systematic and standard education is necessary about the size and volume of dishes and angle of photo for more accurate results.
This study was conducted to investigate the effect of nutrition education on improving dietary attitudes, food habits and Food Frequency of 32 female shift workers by administering questionnaires. Dietary nutrient consumption data were obtained from the female shift workers by using 1 day 24-hr recall. The results were as follows: Score on 'Concerns about health (p < 0.05)' was significantly higher after-training. Dietary attitude (32.3 vs. 34.9, p < 0.01) and food habits (60.2 vs. 67.1, p < 0.01) were significantly higher after the training. Scores on 'Eating a lot of food that I want to eat is more important than nutrition (p < 0.01)', 'I have a tendency to use instant foods when I am busy (p < 0.01)', 'I am interested in information on nutrition and health (p < 0.01)' were significantly higher after the training. Scores on 'I have three meals a day (p < 0.001)', 'I have breakfast regularly (p < 0.01)', 'I take vegetables other than kimchi at every meal (p < 0.01)', 'I drink milk every day (p < 0.001)', 'I eat fruits every day (p < 0.01)', and 'I apply nutrition knowledge to daily life (p < 0.001)' were significantly higher after the training. Protein (p < 0.05), fiber (p < 0.05), vitamin C (p < 0.01), and calcium (p < 0.001) intakes were significantly higher after the training. These results showed that nutrition education had improved the dietary attitudes, food habits, and nutrient intakes. Therefore, we conclude that providing more systematic and appropriate nutrition education to shift workers during their tenure of office period is likely to improve dietary attitudes, food habits, and nutrient intakes.
Objective: There are many meditation methods used in clinical field. But the effect of meditation may be different to people's mind, and meditation itself. Now we investigate this subject with two different meditation methods which has been analyzed by heart rate variability. Method: We tried to check people's heart rate who educated meditation, before educated and during the meditation. The meditation was educated differently for each group. One is the auto genes traning, and the other is the imaginary meditation by thinking about eating and smelling favorite fruits. All of them are used to oriental psychiatry clinic patients. And we simultaneously conduct people's emotional state by SCL-90-R. Result: The result in Autogene traning group has significant difference in total power and HRV-index score between before and during the training but in imaginary meditation group has no significance: Autogene traning group has a significance in low frequency score and has increased tendency with increasing tendency of Heart rate index and Total power. Through the SCL-90-R score, the higher depression t-score, the anxiety t-score, and the hostility score is, the HRV scores such as total power, low frequency, and HRV-index much increase. and so on. Conclusion: We can guess that the Autogenes training has more significant effect than the imaginary meditation. And we can also guess that as the emotional problem is getting more severe, the effect of meditation would be much better. And we finally suggest that we should make a standard guideline of imaginary meditation, cause the imaginary meditation has so many variation.
Objectives: The purpose of this study is to verify the usefulness and practicality of the program in the daily life of the elderly by performing a three-dimensional tongue muscle exercise for the elderly to identify the dysphagia, swallowing ability, and tongue pressure. Methods: The subjects of the study were 29 elderly people aged 65 or older living in Busan, divided into a oral exercises group and tongue strength training program combined with oral exercises group, and operated 16 times for 8 weeks twice a week, and the pre and post-program evaluation was conducted in the 1st and 8th weeks. For variable selection, 7 general characteristics, 5 oral health-related characteristics, 5 Likert scale for swallowing disorder, repetitive swallowing ability test for swallowing power measurement, and tongue pressure measurement was used. Data analysis was conducted using SPSS window program 25.0 version (IBM), general characteristics and homogeneity tests, oral health-related characteristics and homogeneity tests were chi-square test, swallowing disorder, swallowing ability, and change in tongue pressure were paired t-test, Wilcoxon signed rank test, t-test, Mann-Whitney U test for swallowing disorder and changes in swallowing ability and tongue pressure, and Spearman's correlation for the relationship between swallowing disorder and swallowing ability and tongue pressure. Results: As a result of tongue strength training program combined with oral exercise, both relieve swallowing disorder and improve low eating and tongue pressure than oral exercise, and the difference in improvement effects of both relieve swallowing disorder, swallowing ability, and tongue pressure is higher. Conclusions: Based on the results of this study, it is believed that simple and practical oral muscle function reinforcement products and practical use are needed, and institutional devices to seek oral health promotion programs for the elderly are needed.
Objectives: The intention of this study was to find out the impact of mother's body mass index, eating habits, nutrition status and sociodemographic factors on the body mass index of the children. Methods: The study used original data of Korea National Health and Nutrition Examination Survey (2010-2011) and had 957 children in the ages of 1-5 years and 957 mothers of these children, a total 1,914 as subjects. The weights (body mass indexes) of the children, subjects under 5th percentile were classified into a underweight group, 5~84th percentile into a normal weight group, 85-94th percentile into an overweight group and more than 95th percentile into an obesity group based on the 2007 Korean children and adolescents growth chart. Results: We observed that when the body mass index of a mother increased by 1, the possibility that her child would belong to the overweight group increased by 6.5% (95% confidence interval: 1.01~1.13), and the possibility that the child would belong to the obesity group increased by 95% (confidence interval: 1.01~1.18). With regard to the number of deficient nutrients which were ingested according to estimated average requirements (EAR) amid nutrients ingested by the mother increased by 1, the possibility that the child would belong to the obesity group increased by 16.6% (95% confidence interval: 1.01~1.35). In case the birth weight of child increased by 1kg, the odds ratio that the child would belong to the obesity group was 2.022 (95% confidence interval: 1.08~3.77). Conclusions: We conclude that the body mass index, eating habits and nutrition status of the mother had significant effects on the body mass index of the child. Therefore, it is critical to recognize the importance of this observation and provide practical training for eating habits and nutrient intakes in order to achieve healthy growth and prevention of obesity among children.
This study developed a vegetable preference increase program that can be applied at the Center for Children's Foodservice Management (CCFM) for children in child-care facilities and kindergarten and the training performance was evaluated by 192 5-year old children. Teachers considered 'disliked food' ($3.23{\pm}0.85/out$ of 5) as the most serious nutritional problem and typical disliked food was 'vegetables' (54.2%). Based on this finding, to increase the preference for vegetables, a five-phase education program was developed. In this program, each phase was composed of activities to increase children's interest in vegetables by using each sense out of the five senses. Center dieticians had visited and conducted the program in 12 facilities. By using an illustration assessment tool, the training performance was evaluated by comparing the children's knowledge level and their preference changes in vegetables. Consequently, as examined by 10 questions on the knowledge of vegetables, trained children's (in total 192) knowledge of vegetables had considerably increased (p<0.01, p<0.001), and their preference for 15 out of the 16 vegetables, except for carrots, also showed a considerable preference increase after the training (p<0.01, p<0.001). Therefore, this program is considered to have contributed to reducing disliked vegetable eating behaviors.
