대구지역 운수종사자의 영업지역별 식행동 특성 및 음식 기호도 조사 연구 (A Study on Eating Behaviors and Food Preferences of the Workers at Transportation Business in Daegu Areas by Work Site)

  • This study was to investigate eating behaviors and food preferences of the worker at transportation business in Daegu areas by work site. The survey was performed by questionnaires from July 13 to August 25, 1999 against 353 of males. As a general factor, the subjects of survey were male drivers in their forties to fifties. Their education level was middle school (46.5%) and high school (47.3%) diploma. The subjects were composed of 44.2% of city workers and 55.5% of suburban workers. This study showed that the city workers eat three meals per day with high percentage (92.9%) and a large number of suburban workers (21.3%) eat two meals only. Most of the subjects 782.% responded that their diet life were irregular due to the property of their job. The food preferences of most of workers (94.9%) were Korean food rather than any other foods. Frequency of eating-out was much higher in city drivers than in suburban drivers. They considered taste of food firstly and the prices of food secondly, but the nutritional value of food was considered with a very low percentage (14.7%). Their favorite menu turned out to be the Korean style one-dish food, of those one-dish Koran food, they preferred rice or soup to the noodles. These results suggest that he nutritional education against the workers at transportation business is needed to set the proper menu considering the characteristics of the preference each group of workers.

대학생의 외식행동과 식당 선택요인에 관한 연구 (A Study on the Eating Out Behavior and Its Factors in Restaurant Selection of University Students)

  • This study was conducted to investigate the eating out behavior and its factors in restaurant selection by students in Incheon area. Self administered questionnaires were collected from 297 students. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: The average age, weight, height, BMI and male and female students were $24.31,\;67.96\cal{kg},\;174.93\cal{cm},\;22.17\;;\;20.55,\;51.99\cal{kg},\;165.44\cal{cm},\;19.00$ reflectively. About $54.2\%$ of male students and $38.0\%$ of female students responded to eat out at least once a day. And lunch was most frequent meal for eating out. About $57\%$ of students responded to have eat at restaurants around campus, and $19.5\%$ of students used the university foodservice system. Korean-style food was most favorite dish when they ate out. Major source of restaurants information was recommended action by friends or family. But the use of internet or magazine was negligible. The factor of restaurants choice was in order 'taste', 'price', 'atmosphere' and 'hygienic'.

생활습관에 따른 유방암의 위험요인 (Risk Factors of Breast Cancer According to Life Style)

  • 본 연구는 유방암 환자와 일반 성인여성 간에 생활습관의 차이를 파악하고 유방암 발생에 영향을 미치는 위험요인을 규명하기 위하여 실시되었다. 자료수집은 2011년 10월부터 2012년 6월까지 전주시에 소재한 J대학병원에 입원 또는 외래로 내원한 102명 유방암 대상자와 암 병력이 없는 110명 대상자에게 생활습관을 조사하였다. 대상자의 유방암 발생에 영향을 미치는 요인은 식습관 중 주로 먹는 음식(채식/육식 여부), 신체활동 및 스트레스 해소가 주요요인으로 확인되었다. 결론적으로 유방암을 예방을 위해서 채식 위주의 식습관을 갖고 평상시 활발한 신체활동을 하며 스트레스를 적절히 해소하는 생활습관을 제안한다.

중국 연변 조선족 집합주택의 취사 및 식사공간에 관한 연구 (The Study on the Space for Cooking and Dinning of Multi-family Housing at Yanji City in China.)

  • Recently, the space organization of Korean-Chinese houses is different from that of other territories. The characteristics of eating and dinning space for Korean-Chinese Multi-family Housing are as follows ; ⅰ) The most obvious change in Korean-Chinese urban housing style was seen in kitchen space, which can be classify three types such as traditional type, improved type, and LDK type on the bases of heating and cooking method. ⅱ) Special feature of Korean-Chinese housing in Yanji city was that kitchen fulfilled important functions such as heating, cooking, dinning, sleeping, bathing and washing. Since then, each function was separated and functions of kitchen were cut down after all. iii) The arrangement of kitchen space have changeed according to the change of heating fuel, heating system, equipment, relatcd policy, etx. Multi-function kitchen discovered only in Yanji had lasted until 1980's by equipping heating floor system, which is suitable for sit-down living style. In 1990's, this kitchen style was prohibited legally, and the balcony area of kitchen widened due to the abolition of outdoor storehouse for foodstuff.

일부 대학생들에 있어서 생활습관과 신체 및 정신건강도와의 관련성 (The Relationship between Life-style and Physical, Mental Health Status in College Students)

  • This study reports the relationship between life-style and physical, mental health status in college students. The questionnaire survey was carried out from September to October, 1991. The questionnaire included life-style, physical health condition centered on unhealthy habits and complaints about physical symptoms, and mental condition which was assessed by Zung's self-rating depression scale(SDS). Days absent from school during the last year in males(3.6) were significantly more than those in females (1.0). Days catching the common cold were more in females than in males. The amount of complaints and the SDS score were significantly higher in females than in males. In the relationship between physical and mental health status and individual health habits, abscence-days from school significantly correlated with regular life, snacking, physical exercise, smoking, drinking. The amount of complaints and the SDS score were significantly associated with regular life, regular meal-time, eating breakfast, nutritional balance and physical exercise. In the relationship between health practice index to health status, the group having good habits showed significantly less days catching the common cold, less complaints, less SDS score and less amount of stress. It was also shown that life-style correlated with physical and mental health status.

어머니의 식생활 지도 유형과 자녀의 식생활 실천도에 대한 연구 (Mother's Parenting Style at Meal Time and Their Preschooler's Dietary Behavior)

  • Objectives: This study was conducted to evaluate the nutrition quotient (NQ) by mother's parenting style which may influence the NQ in preschool children. Methods: Subjects were 310 mothers and their 4-6 year old children. The questionnaire composed of demographic characteristics, mother's parenting style at meal time and eating behavior as measured by NQ questions. The NQ questions consisted of 19 food behavior checklist items and all items were grouped into 5 factors: balance, diversity, moderation, regularity, and practice. Mother's parenting style was classified by using words for nutrition education at meal time. All data were statistically analyzed by SPSS program (Ver. 23) and the statistical differences in variables were evaluated by Student's t-test, ${\chi}^2$-test, One-way ANOVA. Results: We observed that in children whose mothers use the parenting style at meal time of 'explanation' and 'compliment & cheer up' had high dietary regularity, diversity, practice. The children of mothers who use the parenting style at meal time of 'persuasion' and 'reward' were found to have a lower degree of balance, diversity, and practice. Especially, children of 'reward' style mothers had lower moderation of dietary life. On the other hand, among the parenting style at meal time of 'comparison & demand', 'treating' and 'faire', there was no significant difference in the NQ factor by each group. NQ grade was higher among those who used more explanation (p < 0.001) and persuasion (p < 0.01) and with use of less persuasion (p < 0.01) and reward (p < 0.01). The positive association observed between the frequency of dietary education of mothers and higher NQ grade indicated the degree of dietary practices of those children. On the other hand, the children of mothers who rarely practice the dietary education at home had lower NQ grade (p < 0.001). Conclusions: In order to promote children's proper dietary behaviors, it is important to provide nutrition education to children as well as provide guidance on parenting style at meal time.

당류에 대한 대학생들의 인식과 섭취빈도 조사 및 단체급식용 당류 저감 메뉴 제안 (Recognition and Intake Frequency of Sugar by College Students and Suggestions on Reducing Sugar Recipes for Institutional Foodservices)

  • Purpose: Although excessive intake sugar may increase the overall energy intake, it leads to a reduction in the intake of foods containing other nutritionally adequate calories. Excessive sugar intake can also lead to an unhealthy diet, weight gain, and risk of metabolic disorders. The purpose of this study was to assess the recognition by college students, their frequency of eating sugar containing foods, and suggesting sugar reduction in the menus of institutional foodservices. Methods: A questionnaire was used to survey 145 college students to evaluate their recognition and eating frequency of consuming sugar containing foods. Subsequently, sugar reduction menus for institutional foodservice were suggested. Results: Most of the subjects (80.0%) were aware of the meaning of sugar reduction. The necessity of reducing sugar in their meals was recognized by 57.8%. These participants tended to check nutrition labeling more. Eating frequencies of sugar containing foods were not significantly different by the subjects' BMI, but they were significantly different by gender, when evaluating cooked foods. We suggested 20% sugar reduction recipes of Korean style barbequed pork, and sweet and sour chicken for institutional foodservices. Conclusion: The awareness of college students and the knowledge regarding sugar reduction were low. Sensory acceptabilities of Korean style barbequed pork and sweet and sour chicken were not significantly different, until the benefit of 20% sugar reduction was mentioned. Thus, continuous education for reduction of sugar intake are required, and also efforts are needed to develop menus containing less sugar.

대전시 초등학교 5학년 학생의 아침식사 섭취가 학습태도 및 학업적 효능감, 정신건강에 관한 자각증상에 미치는 영향 (Effect of Breakfast Eating on Lening Attitude, Academic Efficacy and Self-Rated Mental Health of the 5th Grade Students of Primary School in Daejeon City in Korea)

  • The purpose of this study is to examine the effect of breakfast eating on learning attitude, academic efficacy and self-rated mental health. Survey was carried out with 460 subjects of the 5th grade elementary school student in Daejon area. The study subjects were divided into 3 groups with frequency of eating breakfast defined as an intake of 7 d/wk, 3-6 d/wk and 0-2 d/wk. The results are summarized as follows. The frequency of eating breakfast was 7 d/wk in 52.4%, 3-6 d/wk in 35.4% and 0-2 d/wk in 12.2% of the subjects. The most common pattern of breakfast was the traditional Korean style. The students who have breakfast every day(7 d/wk group) show better learning attitude and academic efficacy(p<.001) and positive on self-rated mental health while 3-6 d/wk and 0-2 d/wk groups were negative(p<.001). In conclusion, regular breakfast eating group shows better learning attitude, academic efficacy and self-rated mental health so that they have positive health status and academic achievement.

국민학교 교사들의 영양지식과 식습관 및 영양태도에 관한 조사연구 (A Study on the Nutritional Knowledge, Eating Habits and Nutritional Attitudes of Elementary School Teachers)

  • This study was designed to observe the degree of nutritional knowledge, eating habits and nutritional attitudes of elementary school teachers in Seoul. Two hundred seventy eight teachers were examined on questionnaire I October. 1994. The results of this study are summarized as follows. 1. 82.7% of the subjects were not experienced the nutrition education after graduated. They had information about nutrition through the newspaper and magazine and only 26.4% of the subjects reflected in their daily lives the nutrition information. 2. More than 65% of the subjects took a regular meal and above 90% of the subjects took korean food style as breakfast and dinner and 71.5% of the subjects ate mixed food such as barley or bean. 3. 693% of the subjects pointed out the problem of meal pattern such as overeating, too salty and hot, and irregular meal time. 4. The average score of their nutritional knowledge was 21.88(the highest mark was 30.00) and related to the sex, age, monthly total income, the length of career in school lunch program. 5. The average score of their eating habits was 8.65(the highest mark was 16.00) and related to the sex, the number of family, monthly total income, the length of career in school lunch program. 6. The average score of their attitude toward the nutrition was 26.83(the highest mark was 45.00) and related to the only age. 7. Nutritional knowledge had positive correlation with their eating habits and nutritional attitude. Eating habits had positive correlation with nutritional attitudes, too. In this study, the subjects was poor in nutritional knowledge, attitude and eating habits. It is necessary to develop the nutrition education program to make us recognize the importance of nutrition and health.

미국 Texas 일부 지역에 거주하는 한국 유학생 부인들의 식생활습관에 관한 연구 (Research on the Food Habits of Housewives of Korean Students Residing in a Southern Region of Texas, U.S.A.)

  • The purpose of this study was to research on the preparing fermented foods and food habits of Korean women in Texas U. S. A. The preparing method of fermented foods and food habits of Korean housewives whose husbands are studying at the various universities in Houston, Texas are surveyed. The analysed results indicated were as follows ; 1. 64.4% of women were in the thirties at their age, those in twenties 29.7%. 75.2% of subject graduated college. Period of residence in America were 52.5% under 3yr, 25.7% over 5yr. The respondents were aged twenties(29.7%) to thirties(64.4%) who have graduated from college(75.2%) or graduate school(24.8%) and have had the residence period of less than three-(52.5%) to more than five years(25.7%). 2. The kind of cuisine chosen for dinner were Korean style food. The most considerable person when preparing menu were husband. 48.51% of those in age were 3∼39yr(p < 0.1). 60.40% of the response graduated college(p < 0.1). The Korean-style foods overwhelmed over western ones in their frequency for dinner(82.2% vs. 17.8%). The person most considered for choosing menu was their husbands as responded by the majority groups of aged thirties(48.5%), college graduates(60.4%) and residence period of less than three years(42.6%). They satisfied comparatively when they prepared the meal (p < 0.1). 55.4% of the response learned cooking method from neighbor, 39.6% of remainder studied from cuisine book, newspaper, magazine, TV. They satisfied comparatively for the preparation of the meal(56.4%) and have learned the new methods of cooking from neighborhoods(55.4%) or cuisine book, newspaper, magazine and TV(39.6%). 3. The frequency of eating-out mostly had once a month. 30.69% of response were 30∼39yr(p < 0.1). 33.66% of subjects lived under 3yr in America. Eating-out once a month occupied 30.7, 33.7, and 20.7% of the selected group of aged thirties, college graduates, and residence periods of less than three years, each respectively. The type of food selecting eating-out were western style. 38.31% of them were 30∼39yr(p < 0.1). 39.60% of them graduated college(p < 0.1). 29.70% of them lived under 3yr in America. For eating-out menu, the western-style foods were most favored by the groups of aged thirties(38.3%), college graduates(39.6%), and residence periods of less than three years(29.7%). 4. 50.5% of subject had beef once three days, 23.8% of the response had pork once two weeks, 27.7% of subject ate chicken once two weeks, 34.7% of the response enjoyed fish once a week. Eating animal foods once three days for beef(50.5%), once two weeks for pork(23.8%) and chicken(27.7%), and once a week for fish(34.7%) were most frequent. 5. Korean traditional fermented food were mostly enjoyed in order of kanjang(91.1 %), kochujang(87.2%), fermented fish(85.1%), deonjang(81.2%), jang-a-chi(76.2%). 81.2% of subject used prepared-food by themselves. 56.4% of response made kimch at home. Among Korean traditional fermented foods, kimchi(56.4%) and prepared side dishes(81.2%) were provided at home while kanjang(91.1%), kochujang(87.2%), fermented fish(85.1%), deonjang(81.2%), and jang-a-chi(76.2%) were mostly purchased from stores.
