Eating patterns of children's favorite foods and its related factors among elementary, middle, and high school students in Korea

  • BACKGROUND/OBJECTIVES: There are limited studies investigating the eating patterns of children's favorite foods. The present study aimed to evaluate a wide range of children's favorite foods, derive its eating patterns, and identify factors related to the patterns. SUBJECTS/METHODS: A nationwide cross-sectional study included 5,458 students in elementary, middle, and high schools. The survey was conducted at each school to evaluate children's favorite food intake, including the intake frequency of 31 food items or food groups, and its related factors, such as demographic, economic, and environmental characteristics and awareness of policies on children's favorite foods. Factor analysis using varimax rotation method and logistic regression analysis were conducted. RESULTS: Two factors were derived as major eating patterns from data of children's favorite foods: the 'unhealthy eating pattern' which mainly involves confectionery, chocolate, ramen, fried food, etc.; and the 'healthy eating pattern' which mainly involves soybean milk, vegetables, fruit juice, and nuts. A stepwise selection procedure through the regression analysis revealed that allowance, use of screen media, less awareness of policies on children's favorite foods, and less interest in health were positively related to the tendency of unhealthy or less-healthy eating patterns (P < 0.05). CONCLUSIONS: This study examined that the eating patterns of children's favorite foods were associated with certain environmental characteristics and awareness about the related policies. These findings suggest that a nutrition education program regarding children's favorite foods needs to be conducted according to the characteristics of students to develop their healthy eating habits and proper choice of favorite foods.

부산대학가 외식 유형과 고객 선호도 연구 (Patterns and Preference of Eating out in Pusan National University Area)

  • Changes in eating culture patterns has been observed among modern Koreans from seeking out traditional types of eating out restaurant to the modern, luxurious, and hybrid food. This study aimed to investigate the patterns of eating out and preference of food in Pusan National University (PNU) area, representing typical Patterns of eating out in Pusan. Data revealed that the most popular places in which the subjects visited were Korean traditional restaurants and snack bars. The names of the places were in trendy style of Korean connotation, with Intention to appeal to the new generation. The interviewee reported that decision making on choice of plates were made by taste, price, and service in that order. The frequency of eating out was once In two or three days, Korean traditional restaurants, noodle shops, and restaurants of offering fusion food being the Place of choice. Preferred reasons for the PNU area were reported to be low price, followed by variety of food offered and geographical accessibility to the places. Most of the interviewees in the area were satisfied with the taste of food and service quality. A list of food they were willing to introduce to oversea foreigners included raw fish, Dongrae Pajon, Pulgoki, Kimchi and dog soup in that sequence. The results of survey indicator that changes in the eating out environment in Pusan were improvement of service quality, development of new recipes, improvement of hygiene standards and development of area-specific food. The results may also act as a guide in changing the eating out environment and developing tourism in Pusan.

여자 중학생의 섭식장애 패턴 분류와 이에 따른 체형인식, 체중조절행태 및 식습관과의 관계에 대한 연구 (Classification of Eating Disorder Patterns of Female Middle School Students and their Association with Self-body Image, Weight Control Behavior, and Eating Behavior)

  • This study was performed to provide sources of nutrition education for female adolescents by identifying eating disorder patterns and their relationships with self-body image, weight control, and eating behavior. A total of 329 female middle school students were recruited and completed a general characteristics survey, the Eating Attitudes Test(EAT-26), a perception of self-body image survey, a concern for weight control survey, an eating behavior survey, and the Mini Dietary Assessment Index(MDA). Eating disorder patterns were identified to be obesity stress and weight control(OW), risk of binge eating(RB), and dietary restraint(DR) by factor analysis. OW pattern was related with stout body shape, body dissatisfaction, experience of weight control, skipping of dinner, and low MDA score. RB pattern was associated with lean body shape, body satisfaction, indiscreet snack behavior, and the eating time of snacks. The DR pattern was associated with normal body shape, regular meal times, desirable snack behavior, and high MDA scores. The results indicated that the eating patterns of adolescent were not identical to existing diagnostic categories. Furthermore, each eating pattern displayed different characteristics of perception on self-body image, concern for weight control, and eating behavior. In conclusion, nutrition education for female middle school students could reflect the different characteristics of each eating disorder pattern.

우간다 성인의 외식과 식이패턴의 관련성: 온라인 기반 설문조사 (Away-from-Home Eating and Dietary Patterns of Ugandan Adults: a Web-based- Survey)

  • Objectives: Away-from-home (AFH) eating has been associated with poor diet quality and health outcomes like obesity in developed countries. AFH eating is also emerging in low-income countries, but its influence on overall diet quality is under-researched. We examined the prevalence of AFH eating and its influence on the dietary patterns of Ugandan adults. Methods: This cross-sectional study employed a web-based survey to interview Ugandan adults aged 18 ~ 65 years. A qualitative food frequency questionnaire was used to assess the food group intake, which was then converted into daily intake frequencies. Principal component analysis was used to derive dietary patterns. The participants were then classified based on the tertiles (T) of dietary pattern scores. Results: About 75% of the 375 participants reported eating AFH. The young men, food insecure, and urban dwellers were more likely to eat AFH ≥ 5 times/week. Three dietary patterns emerged; the animal-based, beverage pattern; the high fat, sweet pattern; and the traditional, plant-based pattern. Participants who frequently ate AFH were 2.85 times and 5.64 times more likely to be in the second and third tertiles, respectively, of the animal-based, beverage pattern compared to the rare eaters (OR = 2.85, 95% CI: 1.35-6.06 for T2 vs T1; and OR = 5.64, 95% CI: 2.50-12.73 for T3 vs T1). The odds of being in the second tertile of the high fat, sweet pattern was significantly higher for frequent AFH eaters compared to the rare eaters (OR = 2.61, 95% CI:1.23-5.52). Conclusions: The prevalence of AFH eating was high. Frequent AFH eating was common among the young, male, food insecure, and urban dwellers, and was associated with unhealthy dietary patterns.

일부 한국 노인의 식습관과 식사 섭취 패턴에 따른 혈중 지질 수준과의 관련성 (The Study on Blood Lipid Levels according to the Food Habits and Food Intake Patterns in Korean Elderly)

  • The purpose of this study was to analyze the eating habits and food intake patterns to elucidate the relationship between on blood lipid levels. The subjects based on the nutrition counseling data of medical health examination. The subjects were 774 adults(448 males and 326 females). Survey samples were divided by age $65\leq$ years. The subjects were 774 adults(448 males and 327 females). Survey samples were divided by age $65\leq$ years. Blood samples were analyzed for total cholesterol (TC), triglycerides(TG), LDL-cholesterol. The results showed there were significant difference frequency of overeating meal and total cholesterol(p<0.05), meal frequency, regularity of meals, frequency of meal out, eating breakfast, speed of meal et eating habits and blood lipid levels not significant difference. However, food intake patterns were significant difference in some kind of food such butter and cream bakery but there were not significant relationships between eggs, cod roe, Chinese foods, fried foods, Gal-bi-tang, Sun-ji-soup and blood lipid levels. Eating habits and food intake patterns was do not seem to be cause for blood lipid level in Korean elderly.

The effect of dietary ions difference on drinking and eating patterns in dairy goats under high ambient temperature

  • Objective: The present study was carried out to evaluate the effect of high dietary cation and anion difference (DCAD) rations on diurnal variations in eating and meal patterns, water intake and urination patterns in dairy goats fed under high ambient temperature (HTa). Methods: Ten crossbred dairy goats during peri-parturition period were selected and divided into two groups of five animals each. Experimental diets were control DCAD (control, 22.8 mEq/100 g dry matter [DM]) and high DCAD (DCAD, 39.1 mEq/100 g DM). The composition of two diets consisted of 44% corn silage and 56% concentrate. From the 2nd week to 8th week postpartum, goats were fed ad libitum twice daily either with the control or DCAD total mix ration with free access to water. The spontaneous eating and drinking patterns were determined. Results: The environmental conditions in the present experiment indicated that goats were fed under HTa conditions (average peak THI = 85.2) and were in heat stress. In addition to the typical HTa induced tachypnoea in both groups, the respiratory rate in the DCAD group was significantly higher than the control group (p<0.05). Although the goats from both groups showed comparable level of eating, drinking and urination during experiment, the meal pattern and water intake were different. High DCAD apparently increased eating and meal patterns compared with the control. At week 8 postpartum, goats from high DCAD group had significant (p<0.05) bigger meal size and longer meal duration. Moreover, high DCAD appeared to increase night-time water intake (p<0.05). Conclusion: Both meal pattern and night-time drinking effects of DCAD suggested that feeding with high DCAD ration may alleviate the effect of heat stress in dairy goat fed under HTa conditions.

Trends in nutrient intakes and consumption while eating-out among Korean adults based on Korea National Health and Nutrition Examination Survey (1998-2012) data

  • BACKGROUND/OBJECTIVES: Eating-out among Korean people has become an important part of modern lifestyle due to tremendous growth of the food service industry and various social and economic changes. This study examined trends in meal patterns and meal sources while eating-out among Korean adults aged 19 years and older. SUBJECTS/METHODS: Data were from the 1998-2012 KNHNES (Korea National Health and Nutrition Examination Survey) by the 24-hour dietary recall method. This study included 55,718 adults aged 19 years and older. For analysis of eating-out frequency, data were categorized by source of meals and serving place. RESULTS: Average frequency of meals consumed away from home increased from 1998 to 2012, although it remained lower than that of meals at home. In addition, male, unmarried, employed, higher educated, and high income individuals more frequently consumed meals away from home. Moreover, sodium intake while eating-out significantly increased from 2,370 mg in 1998 to 2,935 mg in 2012. Lastly, percentage contributions of daily total protein intake, fat intake, and sodium intake from eating-out increased to more than half (53-55%) in 2012 compared with 47-48% in 1998. CONCLUSIONS: As eating-out has grown in popularity, greater recognition of public health and nutritional education aimed at promoting healthy food choices is needed. In addition to developing consumer education for overall healthier eating patterns, individuals who are younger, unmarried, higher educated, and males are especially at risk and require attention.

청소년의 외식 경향 실태 조사: 중.고생 지역별 비교 연구 (A Study on the Eating Out Behavior Patterns of Youth: Junior High and Senior High School Students from Different Regions)

  • This study was conducted to investigate eating-out behavior patterns of youths, especially junior high and senior high school students. 1600 questionnaire surveys were distributed and 1487 were used for analysis. In order to consider regional differences as well as overall characteristics of youths' eating-out behaviors, the subjects were evenly sampled from north Seoul, south Seoul, big cities, middle/small cities and small towns. As for the frequency of eating-out, 62.7% of respondents answered once to twice per week. For the can of more than 5 times of eating-out per week, the respondents from south Seoul showed the highest frequency. For the case of no eating-out, the highest frequency was shown from the small towns. As for the most frequently visited place for eating-out, 33.6% of respondents answered Korean style restaurants, and 17.6% Boon-sik(Sanck-bar). Regarding the preference of Korean style restaurants, the highest rate was shown from the residents of big cities. For the question of when they eat out, 89.6% answered dinner and 6.3% lunch. For the question about reason of choosing particular restaurants, 61.5% of respondents referred to tastes and 16.6% price. For the question of the most important reason of eating out, 52.6% point out 'meal solution' and 25.6% 'for meeting.' As for the people accompanied when eating out, 67.2% of the respondents answered family. For the cost of eating out per person, 45.7% of the respondents spent 2000-4000 won for lunch; 31.1% spent 5000-10,000 won for dinner; 33.7% of the respondents spent more than 20,000 won for the special events. Regarding the regional differences of eating-out cost, respondents from south Seoul tended to spend the biggest amount of money for lunch, dinner and special day.

일부 대학생의 상태-특성 불안 정도와 식사 장애 위험 정도의 관계 (The Relationship between Risk of Eating Disorder and Severity of State-Trait Anxiety)

  • This quantitative study was investigated to examine the relationship between severity of state-trait anxiety and disordered eating patterns in some university students. This study used a cross-sectional study design. Total 347 students participated in this study (88 male and 259 female) among three universities. The assessment of eating disorder was conducted by Eating Attitudes Test (EAT-26), a score of >or=20 identified individuals likely to have an eating disorder, including anorexia nervosa and bulimia nervosa. Scores of healthy dietary behaviors were obtained by self-assessment instrument on healthy diet scale(20-item questionnaire), and severity of state-trait anxiety was calculated by state-trait anxiety inventory(Total 40- item questionnaire). In groups for each state anxiety and trait anxiety, there were divided between 50 percentile point of cumulatived scores of state anxiety and trait anxiety in all subjects. Linear regression analysis showed overall significant difference between dietary patterns(anorexia nervosa and healthy dietary behaviors) and severity of state-trait anxiety in all sex. Our results indicated that severity of state-trait anxiety may marked eating disorder symptomatology on dimensions of eating disorder prevention.

기능성 식품에 대한 인식과 건강에 관여하는 식생활에 관한 연구 -대구지역을 중심으로- (A Study on Image of Functional Food and Meal Patterns of Health Behavior)

  • This study was conducted to determine the image of functional foods and the meal patterns for health behavior of 242 persons in Daegu area. Anthropometric data showed that female and male were 38, and 204 respectively. The most BMI group was standard group(55.4% )The most eaten functional foods were Lactobicilli goods while the lowest functional foods were Taurine goods. The highest functional food image score on the basis of Likert's 5 scales was 3.89(expensive) and the lowest score was 2.98 (experienced in eating functional food). Accepted food groups were significantly associated with eating rate of protein food and age(p < 0.01),eating rate of cabohydrate foods and sex(p < 0.05), eating rate of mineral foods and monthly average income, eating rate of vitamin foods and sex.
