Quality Characteristics of Dried Shredded Radish and Stir-fry Dried Shredded Radish by Different Drying Methods (건조조건이 다른 무채말랭이 및 무채말랭이 볶음의 품질특성)

  • This study investigated changes in the chemical properties and antioxidant activity of dried shredded radish (Raphanus sativus L.). Shredded radishes with a thickness of either 3.5 mm or 7.0 mm were dried using hot air at $45^{\circ}C$ or were sun dried. The degree of browning for the 3.5 mm sun dried radish, the 7.0 mm sun dried radish, the 3.5 mm hot air dried radish and the 7.0 mm hot air dried radish was 0.12, 0.14, 0.04 and 0.04, respectively. The DPPH radical scavenging activity (EDA%) of the hot air dried radish had a higher value than the sun dried radish. In contrast, the ABTS values of the sun dried radishes were higher than the hot air dried radishes. The total polyphenol content of the 7.0 mm and 3.5 mm hot air dried radishes reached high values of 15.99 and 11.62 mg/g, respectively. The total polyphenol contents of the 7.0 mm and 3.5 mm sun dried radishes were 9.63 and 6.77 mg/g, respectively. In sensory evaluation of the stir-fry dried shredded radishes, the 7.0 mm hot air dried sample scored the highest in terms of smell, color, gloss and overall preference. In conclusion, hot air drying ($45^{\circ}C$) and a thickness of 7.0 mm were found to be the optimal conditions for dried shredded radish and stir-fried dried shredded radish products.

Effect of Salts on the Hardness of Cubed White Radish (시판 소금이 깍두기 무의 경도에 미치는 영향)

  • The principal objective of this study was to investigate the association of variable salts with the hardness of cubed white radish. We analyzed the contents of domestic sun-dried salt, Chinese sun-dried salt, domestic refined salt, Australian rock salt and Australian industrial sun-dried salt in the radish samples. Our assessment of the water content of variable salts showed that domestic refined salt was highest(7.27%) and Australian rock salt was lowest(0.16%). The NaCl contents of variable salts were as follows : 93.23% in refined salt, 93.76% in Australian rock salt, 87.85% in domestic Shinan sun-dried salt and 87.98% in Chinese sun-dried salt. The content of insoluble matter in water were $0.03{\sim}0.05%$ in all salts except 0.85% in Australian industrial sun-dried salt. The pH values of salts were as follows : 8.93 in domestic sun-dried salt, 8.62 in Chinese sun-dried salt, 6.69 in refined salt, 5.83 in Australian rock salt and 6.41 in Australian industrial sun-dried salt. Regarding the mineral component content assays, domestic salt was found to harbor lower Na content but far higher Mg, K, Ca contents than other salts. In our evaluation of the hardness of cubed white radish, we detected a continuous increase in the hardness of cubed white radish soaking in a 4% salt solution of domestic Shinan natural salt, but an initial increase followed by a decrease in the hardness of cubed white radish soaking in a 4% solution of the other salts.

  • This study was investigated traditional food utilization actual conditions of Gwangju and Chollanamdo. Frequency of main meal ice plain white rice, boiled rice and cereals, bean-mixed rice, gruel Dakjuk, winter squash porridge, sesame porridge, noodles by noodles cut out with a kitchen knife, noodles with assorted mixtures, soup with dough flakes order frequency much have. Steamed dish is egg steamed dish, fish steamed dish, steamed short-ribs order, fried fish egg speech, by Gimchijeon, Pajeon order, meat roasted with seasoning ate often by laver meat roasted with seasoning, hair-tail meat roasted with seasoning, mackerel meat roasted with seasoning order. Quality Characteristics of Kimchi Prepared with Chinese Radish and Its Quality Change by Freeze-Drying (무 첨가김치의 품질특성과 동결건조에 의한 품질변화)

  • Kimchi was prepared with 5, 10 or 20%(w/v) Chinese radish and ripened at $20^{\circ}C$ for 3 days. Acid production and growth of lactic acid bacteria, sensory properties, and several volatile odor components in kimchi were examined. The effects of freeze-drying on the quality of kimchi were also studied. The pH of the control (kimchi prepared without Chinese radish) was 4.31 and gradually decreased as the amount of Chinese radish increased. The acidity of the control was 0.673% and gradually increased as the amount of Chinese radish increased. Viable counts of lactic acid bacteria in the samples did not differ significantly from the control. The pH of freeze-dried/rehydrated kimchi slightly decreased as the amount of Chinese radish increased while its acidity gradually increased. The viable count of lactic acid bacteria of freeze-dried/rehydrated kimchi did not differ significantly as the amount of Chinese radish increased. Overall acceptability and taste of kimchi and freeze-dried/rehydrated kimchi generally improved by the addition of 10% or 20% Chinese radish. Six volatile odor components including ethanol and five sulfur-containing components (SCC) were identified from unripened kimchi, and the level of two SCCs increased as the amount of Chinese radish increased. Eight volatile odor components, ethanol and seven SCCs, were identified from ripened kimchi and the level of five SCCs increased as the amount of Chinese radish increased. Diallyl sulfide and methyl trisulfide were newly detected from the ripened samples, but not from the unripened kimchi. Freeze-drying substantially reduced all of the volatile odor components from kimchi. Five volatile odor components including ethanol and four SCCs were identified from the freeze-dried/dehydrated samples.

A Study on the Quality Evaluation of Imported Processed Foods(1)- With Special Reference to Chinese Products- (수입식품의 품질조사연구원(1) -중국산을 중심으로-)

  • The purpose of present paper is to compare and analyze the quality of imported Chinese products with the Korean local products in terms of proximate composition, character of external appearance , ingredient composition of dried bracken , dried radish cubers, meju , dried pollack, dried mussel , and dried brown seaweed(Undaria puinnatidifida) which were imported between Oct., and Dec. 1992 and distributed in the market. Moisture recovery of dried products resulted in changed shape and incomplete moisture recovery due to an excessive drying in consideration of hygroscopic property in the course of distribution. The amounts of water soluble brown pigment were two times greater in Korean dried pollack and bracken than those of Chinese products. The content of volatile basic nitrogen (VBN) were twice in Chinese dried pollack, and this may be due to foregin odor from a long transport time and distribution process. The contents of aflatoxin in Korean products were not detectable and these of Chinese products were 5 $\mu\textrm{g}$(%) in dried pollack, bracken and radish cuber. the remaining agricultural chemicals were not detectable in all products. Because of poor technique and facilities, the external appearance of Chinese products especially dried mussels and dried pollack were not uniformed in size and color. Discoloration and foregin substance such as hair, dust were checked , Korean products were mostly packed in small size in PP or bag, and Chinese products were packed in bulk size and distributed as a bulk.

  • Distribution of $P^{32}$ in a pot-grown plant of the radish was studied by means of fertilization with phospbate labeled with $P^{32}$ followed by autoradiography of the dried parts. (1) An accumulation of $P^{32}$ occurs in the growth point, the root of hair, the younger leaves and the top of leaves in the radish similary other plants. (2) In the yellow leaves of the radish it was counted too weak by monitor. (3) $P^{32}$ absorbed by the root in radish was transported through the xylem of the radishtissue.

Rehydration Characteristic of Dried Root Vegetables (근조 근채류의 복원 특성)

  • This study was attempted to establish the basic data for effective utilization of the dried radish and sweet potato. The rehydration characteristic was carried out from these dried root vegetables in various conditions. The following results were obtained. The rehydration value was increased in glycine solution, whereas It decreased in lactic acid solution. Also the vacuum freezing was higher than that in hot air drying, and it was higher the slow freezing than in the quick freezing. The rehydration rate and the rehydration surface area curve were composed of three stages, and these stages were corresponded to each other. At the range of initial immersion to 2min., the largest rehydration rate was showed. The activation energy obtained from the Arrhenius plot of the rehydration rate constant(K) were 3. Bx103ca11g mol and 3.7$\times$103cal/g mol for dried radish and sweet potato, respectively.

Characterization of pork patties containing dry radish (Raphanus sativus) leaf and roots

  • Objective: This study investigated the effects of dry radish leaf and root on the quality of pork patties during refrigeration storage. Methods: The patties were divided into the following three groups: the control containing 0% dry radish leaf root powder, RL1 containing 0.5% dry radish leaf root powder, and RL2 and RL3 containing 1% and 2% dry radish leaf root powder, respectively. Proximate composition, pH, cooking loss, microbial analysis, lipid oxidation analysis, color, texture profile analysis and sensory test were performed. Results: Moisture, crude protein, and crude ash contents in RL2 and RL3 were significantly higher than those in other groups (p<0.05), whereas crude fat contents in RL2 and RL3 were significantly lower than other groups (p<0.05). Lightness was significantly lower in RL2 and RL3 than in CON (p<0.05). Cooking loss for RL2 and RL3 were significantly lower than those for the other groups (p<0.05). The pH, thiobarbituric acid levels, and total plate counts of RL2 and RL3 were significantly lower than those of CON at days 7 and 14 (p<0.05). Hardness values of RL2 and RL3 were significantly lower than those of CON, whereas chewiness values were higher than those of CON (p<0.05). In addition, the juiciness of RL2 were significantly greater (p<0.05) than those of the other groups. Conclusion: Dried radish leaves and roots improved the proximate composition and quality characteristics of pork patties, providing a basis to produce high-quality patties with extended expiration dates. Thus, dried radish leaves and roots are effective ingredients for health or functional foods.

Antihypertensive Properties of Dried Radish Leaves Powder in Spontaneously Hypertensive Rats (자연발증적 고혈압 흰쥐에서 무청 건조분말의 항고혈압 효과)

  • The study aim was to investigate the antihypertensive effect after oral supplementation of dried radish leaves powder (DRLP). Angiotensin-converting enzyme (ACE) activity was measured by spectrophotometric assay. The systolic blood pressure (SBP) was measured in spontaneously hypertensive (SHR) and normotensive rats (Wistar) by the tail cuff method after a 4-week diet with DRLP at the level of 2.5% or 5%. The supplementation of DRLP decreased SBP of SHR although the 5% supplementation level did not show any more pronounced effect than the 2.5% level did. The decrease in the SBP observed for both 2.5% and 5% DRLP was accompanied by significant increases of the urinary Na and K excretion. The DRLP supplementation showed a potent ACE-inhibitory activity in pulmonary tissue from both hypertensive and normotensive rats. However, the DRLP supplementation did not affect the SBP in normotensive rats. These results indicated that DRLP exerted an antihypertensive effect in SHR due to the decreased ACE activity and increased urinary Na excretion.

Comparisons of Measurement Methods of the Moisture Content of Dried Vegetables (건조채소(乾燥菜蔬)의 수분측정방법(水分測定方法) 비교(比較))

  • Measurement methods of moisture content were compared with 7 dried vegetables (red pepper, onion, green onion, garlic, ginger, carrot and radish). The moisture contents of dried vegetables having different moisture contents were determined by atmospheric oven drying, infrared balance, vacuum oven and Karl Fisher methods. Vacuum oven and Karl Fisher methods gave the relatively agreed results and considered to give the accurate moisture content. Atmospheric oven drying and infrared balance methods resulted in higher moisture content than methods mentioned above, because of the thermal decomposition of solid. Calibration of the moisture data of atmospheric oven drying method into the vacuum oven data was undertaken. The thermodecomposable solid fraction was high in onion, radish, green onion and carrot, and was in the range of 8.0-11.7% of the total solid in these products.
