취학전(就學前) 아동(兒童)의 식품기호(食品嗜好)와 식습관(食習慣) 조사연구(調査硏究) (A Study on Food Attitude and Dietary Habits of Pre-school Children)

  • A group of 132 pre-school children with a mean age of six years and one month was the subjects of this investigation. These children were members of three nursery schools locating in Kwang-ju city. Each child's mother replied to a questionaire which included 42 food items and 4 questions. The results showed that the food preference of each child was variable and the group as a whole expressed more positive than negative feelings. The average number of foods liked per child was 22.9(range: $7{\sim}42$) among 42 food items. Peach, Apple, Strawberry, Laver, Egg, Tomato, Sweet Potato, Tangerine Orange and Beef were ranked in descending order of 'like' ratings. The average number of foods refused was 4.9 (range: $0{\sim}25$). Onion, Liver, Red Pepper Leaf, Root of Bellflower, Taro, Wild Seasame Leaf, Egg Plant, Cabbage, Water Cress and Bracken were ranked in descending order of 'refuse' ratings. The odor of hurting feelings, the hot taste and the flabby texture were the reasons why the children refused these foods. The average number of foods unexperienced was 4.4 (range: $0{\sim}14$). Kidney, Dried Small Whitebail, Tangle (DA SHI MA), Liver, SA RI Mushroom, Acorn Mook, Dried Fragrant Mushroom, Pine Agaric, Root of Bellflower and Ped Pepper Leaf were ranked in descending order of 'unexperience' ratings. Children's 'like' rating toward total foods was 57.3% and the 'refuse' rating was 11.7%. Among eight food groups, fruits showed the highest favority (91.4%) and mushroom showed the least (25.9%). The difference between male and female in the preference of total foods did not showed significant level. But the difference were significant in those of individual food groups; other vegetables, green and yellow leafy vegetables, mushrooms(above, p.<01), fishes and shellfish and sea weeds (above, p<.05). Children who had experienced meals missed rated 59.1% and 34.1% of these children missed meals once a week. The main reason for maels missed was due to the heavey snacks before meal time. Children who had snacks twice a day rated 45.6%. Main foods used as their snacks were starch foods (Cake, Biscuit, Sweet Potato) and citrous foods (Fruits, Apple, Tangerine).

  • Koryo(918-1352) made a certain progress in her culture and agriculture except the latter part of the era when the development in social economy were retarded due to military dictatorship and Mongol invasion. Despite of these external conditions, cultivations and kinds of horticulture foods were expanded With the help Of many king's agriculture first policy and the advancement in cultivating method . Among the horticulture foods, fruits such as peach, plum, Japanese apricot, apricot, cherry, pear, persimmon, pomegranate, crab apple, Jujube, grape, Chinese quince, walnut, orange, yuzu, chestnut, ginkgo nut(silvernut), pine nut, nutmeg nut, and fiat were crowed, and vegetables such as Chinese cabbage, turnip, radish, garlic, welsh onion, gynmigit, scallion, taro, malva, cucumber, white gourd, bottle gourd, water melon, eggplant, Japanese ginger, ginger and litchi were cultivated, while semi, water shieled and bamboo sprouts were taken in natural. Fruits were taken in natural or through dry, and particularly grapes were used to make wine, Flowers of Japanese apricots, some fruit trees, and chrysanthemum were also made into wine. Certain fruits were used as medicine owing to its medicinal nature. Vegetables were used to make Kimchi or to boil soup, sometimes they were dried to be kept in storage to be used in rare season and also used as medicine Increase in kinds of horticulture foods does not have any direct relation with the reform of social economy, but the fact that so many kinds of horticulture foods were cultivated and used in Koryo era shows that they elevated people's life and dietary culture.

골감소증을 동반한 지속성 복막투석환자의 다빈도섭취 음식조사 및 골밀도 개선을 위한 레시피 개발 (Frequently Consumed Dishes and Development of Recipes to Improve Bone Mineral densities in Continuous Ambulatory Peritoneal Dialysis Patients with Osteopenia)

  • The purpose of this study was to assess the frequently consumed dish consumption frequencies of continuous ambulatory peritoneal dialysis(CAPD) patients with osteopenia and develop recipes to improve bone mineral density of CAPD. The subjects were 96 CAPD patients with osteopenia(male 39, female 57) (osteopenia group) and 45 CAPD patients with normal BMD(male 24, female 21), matched with key variables(normal group). Fifty dishes(foods) that most frequently consumed were determined and food consumption frequency for each dish(food) for two groups were compared. Osteopenia group showed lower consumption frequency for ice-cream but higher frequency in apple. Of the 50 most frequently consumed dishes(foods), 20 dishes assessed as safe and recommendable for CAPD patients with osteopenia based on the contents of protein and mineral were selected : white boiled rice, white gruel, beef soup, steamed cabbage, roasted dried laver, fried egg, roasted bean-curd, cooked and seasoned bean sprouts, corn-starch jelly, cheese, ice-cream, orange juice, apple, grape, peach, peanut, raw lettuce, raw cucumber, and injulmi rice cake. wenty eight new dishes with modified recipes were developed for CAPD patients. Protein and mineral contents were analyzed for frequently consumed 17 dishes, assessed as modification of recipes are needed. The recipes were modified to decrease P, Na and K contents and to increase protein and Ca contents. Twenty dishes(foods) selected as having reasonable protein and mineral contents ratio or 28 newly developed dishes modified with protein and mineral contents or ratio would be helpful for nutrition education or counseling for CAPD patients with osteopenia. Dishes(foods) suggested in this study would also be useful for all CAPD patients for preventing osteoporosis.

한국 성인에서 과일 종류별 섭취 및 대사적 지표와의 관련성 - 2016 국민건강영양조사 자료를 활용하여 - (Fruit Consumption by Fruit Type and Its Relation to Metabolic Factors in Korean Adults - 2016 Korea National Health and Nutrition Survey -)

  • This study used a food-frequency questionnaire to estimate fruit consumption by sex, age, and type of fruit to analyze the association between fruit type and metabolic factors. Using food-frequency-questionnaire data from 3,091 adults aged 19~64 years (1,184 men and 1,907 women) in the 2016 Korea National Health and Nutrition Examination Survey, this study analyzed weekly fruit consumption and the consumption frequency of strawberry, oriental melon, watermelon, peach, grape, apple, pear, persimmon/dried persimmon, tangerine, banana, orange, and kiwi by sex and age groups. Apple was the most-consumed fruit (459.45 g/wk), followed by pear (165.80 g/wk), watermelon (124.80 g/wk), and banana (115.32 g/wk). After adjustment for confounding factors, ED: Please give examples. in the women who ate more than the median consumption of apple, the prevalence of hyperglycemia was 27.4% (OR: 0.726, 95% CI: 0.539~0.979) (p=0.0362), and of high triglycerides, 25.7% (OR: 0.743, 95% CI: 0.564~0.978) (p=0.0340). These rates were lower than those of women who ate less than the median consumption of apple. The results of this study suggest that apple consumption helps improve metabolic indicators in Korean adults.

사랑의 변주곡에 대한 기호학적 접근 (A Semiological Study of Kim Soo-Young′s ″A Variation of Love″)

  • "A Variation of Love" is a characteristic Kim Soo-Young poem, in that it embodies the poet′s innovative use of language and proceeds speedily, like many of his other poems. Above all, the poem reveals the core of Kim′s poetical spirit, his speculation about love. The poem is difficult to understand because it broadly uses run-on lines and even run-on stanzas, a technique that many readers are unfamiliar with. The semiological approach of this paper will bring new light on the poem by restructuring the relationship between signs, that is, by taking apart the sign system of the original text and reconstructing its sentence structure. If we rearrange the poem from its original six stanzas and fifty-one lines to four stanzas and twenty-three lines, we will discover a close connection between stanzas 1 and 2, and between stanzas 3 and 4. Of the many keywords of the poem, we may establish the dominant word as "love," into which every poetic word converges and from which each word emanates. Another important keyword is "fatigue of the city" in stanza 4. Similarly negative aspects of the city may be found in the line "the same may be said of Bombay, of New York, of Seoul" in stanza 3, as well as in the words "desire" in combination with "the lamplights of Seoul like leftovers in the pig sty" in stanza 1. The persona of the poem tries to overcome the "fatigue of the city" by "love," but the way he realizes love is, somewhat peculiarly, through stillness and silence. The persona aligns "the stones of the peach and the apricot and the dried persimmon" with the his faith in love. He calls the stones "beautiful hardness" presumably because that hardness (the stillness and silence) may blossom into beauty. In the earlier stanzas, the persona′s quest for love results in an awareness that love is omnipresent, but the persona determines "not to shout it out loud." The reason for this determination is found in stanza 4. Those who experience the "fatigue of the city" will be able to realize it by themselves. This seemingly defeatist conclusion by no means suggest pessimism, for the persona holds the conviction that "there will come a day when [one] will rave for love." This conviction rescues the poem from the dismal mood suggested by the "fatigue of the city." At all events, it is important to note that the "fatigue of the city" should not be considered apart from "love." Yet, strangely enough, the poem embodies a severe critique of the city, and further investigation is necessary in order to clarify why this critique appears in the form of "love." But this will be the treated in another paper.

조선시대 밥류의 종류와 조리방법에 대한 문헌적 고찰(1400년대${\sim}1900$년대까지) (The Literary Investigation On Types and Cooking Method of Bap (Boiled Rice) During Joseon Dynasty($1400's{\sim}1900's$))

  • 조선시대 (1400년대부터${\sim}$1900년대)까지 고조리서와 고문헌 50권을 위주로 밥류를 분류하여 그 종류와, 사용된 식품재료, 조리방법을 분석 고찰한 결과 전체적인 내용의 요약은 다음과 같다. 1. 밥류의 종류 밥의 종류로는 쌀만으로 조리한 밥이 1종, 찹쌀로 조리한 제밥이 1종류, 잡곡류와 견과류 등을 섞어 조리한 목맥반(메밀밥), 소맥반(밀밥), 조밥, 기장밥, 율무밥, 현미밥, 보리밥, 잡곡밥, 팥물밥, 팥밥, 콩밥, 별밥, 밤밥 등이 13종류이었다. 야채류와 꽃, 과일류 등과 약초, 한약재료를 함께 섞어 조리한 밥은 청전반, 오반, 복숭아밥, 검은색밥, 황국감초밥, 연근밥, 옥정밥, 고구마밥, 두부밥, 삼씨밥, 도라지밥, 감자밥, 송이밥, 죽실밥 등 12종류 이었다. 조류, 육류, 어패류, 우유를 재료로 섞어 한그릇용으로 조리한 밥은 황탕, 개장국밥, 장국밥, 굴밥, 김치밥, 추사반, 비빔밥 등 7종류로 분석한 밥의 종류는 총 34종류이었다. 2) 조선시대 밥류의 취급율 변화추이 밥류 취급율은 1500년대 18.5%(17종)으로 가장 높았고, 1600년대 9.7%(11종), 1700년대 6.6%(4종)으로 급격히 감소하다가 1800년대 18.5%(17종), 1900년대 15.4%(16종)으로 다소 증가하였다. 2. 밥류에 사용된 식품재료 밥류에 사용된 식품재료로 잡곡류는 23종류, 견과류는 5종류, 육류는 11종류가 사용되었고 생선류는 6종류, 채소류는 35종류이며 과일류는 2종류로 배와 복숭아를 사용하였다. 밥이기 때문인지 마늘은 사용되지 않았다. 3. 밥류의 조리방법 쌀밥은 물을 먼저 펄펄 끓인 후 쌀을 넣어 조리하였고, 잡곡류는 낱알이 큰 것을 부수거나 물에 침지하였으며, 견과류, 서류, 구근류, 과일 등도 잘게 썰어 사용하였다. 치료식으로 한약재료는 물에 우리거나 삶았고, 육류는 푹삶아 육수에 밥을 하였다. 비빔밥은 되게 밥을 조리하여 나물과 밥을 일부 비빈후에 웃기로 얹었다. (1) 쌀밥은 물을 먼저 끓이다 쌀을 넣고 펄펄 끓여 된밥으로 조리하였다. 육수에 쌀을 넣고 밥을 조리하기도 하였으며, 찰밥은 제사밥으로 시루에 조리하였다. (2) 잡곡밥은 메밀, 보리, 율무 등을 사용하여 물에 곡식알이 큰것(콩)부터 미리 담가 삶거나 잘게 부숴 조리하였다. 팥등은 미리 삶거나 두쪽으로 조개 솥밑바닥에 깔았으며 대추나 밤은 세쪽으로 자른 후 물을 많이 붓고 기타재료를 섞어 밥을 하였다. 3) 국밥등은 말린국화 황국을 우려내 쌀을 넣고 밥을 조리하였으며, 국밥은 고기류와 뼈등을 푹삶아 육수에 밥을 말아 고기와 나물로 웃기를 얹었다. 굴밥등은 밥이 반쯤 익으면 재료를 미리 볶거나 씻어 넣고 조리하였다. 4) 비빔밥은 먼저 쌀로 밥을 되직하게 조리한 후 나물을 미리 밥과 슬쩍 비비다가 밥위에 나물과 웃기, 고명을 얹고 고추가루를 뿌렸다. 5) 남촉잎 등은 삶아 냉각후 쌀로 밥을 조리하였으며, 남촉줄기와 잎은 찧어 즙내 쌀로 밥을 조리하였다. 복숭아 연근 고구마는 잘게 썰어 쌀이 반쯤 익으면 함께 넣고 도라지는 물에 우려 푹 삶았고, 감자, 송이 등은 잘게 썰어 쌀과 함께 밥을 조리하였다. 4. 약선 음식조리방법 약선음식의 재료는 평상시 식생활에 사용되고 있던 식품들의 기능성분과 약이성을 이용하여 만성적인 질병과 급성적인 복통 설사 등에 재료의 전처리를 통해 죽으로 많이 이용하였다. 특히 곡류 등은 갈아 수비하여 이용하였으며, 동물성식품재료를 이용 할 때에는 재료를 만화(중간불)로 오랫동안 끓여 된장이나 향신료 등을 함께 사용해 먹기에 수월하게 조리하였으며, 한약재료인 약초류 등을 이용하였는데 오랫동안 푹 삶아 그물에 곡류 등을 넣어 죽이나 밥으로 조리하였으며 면으로도 조리하였다. 이상과 같이 조선시대 주식류의 종류 및 조리방법에 대한 문헌적 고찰을 분석한 결과로 조선시대로부터 현재까지 주식류의 변천과정을 파악할 수 있었으며 새롭게 문헌으로라도 복원된 전통음식인 주식류의 음식을 국민들이 식생활에 응용하여 건강에 도움이 되길 바란다. 또한 후속연구로서 이러한 문헌의 고찰과 분석 결과를 토대로 하여 더 깊이 있는 연구로 학문 발전을 기대한다. 산업현장에서는 과학적인 실험과 표준화된 메뉴개발을 통하여 전통음식을 상품으로 개발하여 국민건강에 도움을 주며, 전통음식문화를 세계화하는데 자료로 활용되어 경제발전에 기여할 수 있기를 기대한다.
