조피볼락 사료의 어분 평가 (Comparison of Various Fish Meals as Dietary Protein Sources for Korean Rockfish, Sebastes schlegeli)

  • 여러 가지 어분의 이용성을 검토하기 위해 어분의 종류와 혼합비를 달리한 실험사료로 2회에 걸쳐 사육 실험을 실시하였다. 단백질원으로 북양어분 간접식을 $100\%$ 첨가한 사료와 북양어분을 갈색어분으로 $100\%$ 대체한 2종류의 실험사료를 제조하여 평균체중 5.7g의 조피볼락을 대상으로 45일간 사육한 결과, 최종평균체중, 증중율 및 사료효율 모두 갈색어분 첨가구가 대조구보다 유의하게 낮은 값을 보인 반면 (P<0.05), 일간 사료섭취량, 단백질 및 지질축적율과 단백질 및 지질의 외견상 소화율은 대조구와 차이가 없었다. 단백질원으펀 북양어분 간접식 $100\%$ 첨가구 (대조구)와 북양어된 간접식을 북양어분 직접식으로 $50\%$$100\%$ 대체한 실험구, 갈색어분으로 $50\%$$100\%$ 대체한 실험구 및 어류가수분해단백질로 $50\%$ 대체한 실험구를 설정하여 평균체중 86.6g의 조피볼락을 21주간 사육한 결과, 사육기간에 따른 체중의 변화는 사료간에 거의 차이가 없이 직선적으로 증가하였으며, 최종평균체중, 증중율, 사료효율, 지질축적율은 어분종류에 따른 유의차가 인정되지 않았다(P>0.05). 단백질축적율은 갈색어분 $50\%$ 대체구가 유의적으로 높은 값을 보였으나(P<0.05), 모든 실험구의 값이 $22.4\~25.0\%$의 범위로 큰 차이는 없었다. 두 실험 모두 전어체의 단백질 및 지질 함량은 사료의 어분종류나 첨가비에 따른 차이는 없었다(P>0.05). 위의 결과들로 보아 성장효과가 어체 크기에 따라 달라짐을 알 수 있고, 성장함에 따라 어분 이용성의 선택 폭이 넓어지므로 어체 크기에 따라 배합사료의 주 단백질원을 적절히 조정하여 값비싼 북양 어분 간접식은 다른 값싼 어분으로 일부 또는 완전히 대체 가능할 것으로 판단된다.

UV-C 조사가 수입 건어포류의 저장 중 품질에 미치는 영향 (Effect of UV-C Irradiation on the Quality of Imported Dried Fish during Storage)

  • UV-C 조사가 국내에 유통되고 있는 수입 건어포류의 저장 중 미생물학적 변화와 품질에 미치는 영향을 연구하였다. UV-C 조사량은 5, 10, $20\;kJ/m^2$으로 처리하여 대조구와 비교하였다. 조사시간은 5분 33초, 11분 6초, 22분 12초를 사용하였다. UV-C 조사에 의한 건어포류에 존재하는 오염된 미생물의 감소는 $20\;kJ/m^2$ 처리에서, 쥐포는 호기성 세균과 효모 및 곰팡이에서 각각 0.82, 1.23 log CFU/g, 문어포는 각각 1.20, 1.01 log CFU/g이었다. 또한 저장 중 대조구 대비 초기 감균 효과를 유지하였고, 조사선량이 증가함에 따라 미생물이 더 감소하였다. UV-C 조사된 시료에 대한 Hunter L, a, b 값을 측정한 결과 저장 중 시료의 색도에 있어서 조사선량에 따른 유의적인 차이는 없었다. 따라서 본 연구결과, UV-C 조사 처리가 수입 건어포류의 미생물 생육 억제 및 품질 유지의 가능성을 확인하였다.

빨간유글레나, Euglena rubra 건조분말의 사료첨가에 따른 나일틸라피아, Oreochromis niloticus에서의 영향 (Effects of feeding of dried Euglena rubra on Nile tilapia Oreochromis niloticus)

  • To examine the effects of Euglena rubra (E. rubra) feeding on Nile tiapia, Oreochromis niloticus were fed diets containing dried powder of E. rubra at 0.5 or 2% for 4 weeks. Growth, selected hematological and non-specific immune parameters were assessed at 2 and 4 weeks. There were no significant changes in body weigh gain and erythrocyte levels. However a significant and diet E. rubra level-related decrease in leukocyte level was noted. Significant increases were observed in respiratory burst activity (nitroblue tetrazolium reduction) and lysozyme activities following E. rubra feeding. These results indicate that E. rubra could be beneficial to fish, but excess feeding could toxic.

  • The effects of six kinds of phosphate complex on the water holding capacity (W.H.C) and protein solubility of hair tail, yellow tail runner and dried pollack meat paste were investigated and animal meat(pork, chicken and hare meat complex) The formulation of six kind of phosphate complex employed to this experiment were made by mixing several phosphate such as sodium polyphosphate, sodium pyrophosphate, sodium acid pyrophosphate, potassim pyrophosphate, sodium ultra-meta-phosphate, sodium-tetra-phosphate and monoglyceride at different mixture ratio Among the six kinds of phosphate complex, phosphate B complex which was formulated by mixing sodium polyphosphate 40%, sodium pyrophosphate 30%, sodium tetra mata phosphate 10%, sodium ultra meta phosphate 10% was most effective on enchanging the W H. C, and protein solubility of hair tail, yellow tail runner dried pollack meat past and in case of pork, chicken and hare meat paste. Phosphate C complex which was formulated by mixing sodium polyphosphate 50%. sodium pyrophosphate 30%, sodium tetra meta phosphate 10%, potassium pyrophosphate 10%, was more effective them other phosphate complex, and thief optimum addition level was 0.5% respectively in weight of fish meat paste. Texture characteristics such as hardness, cohesiveness and springiness value of Kamaboko(fish meat and pork, chicken, hare meat complex past meat product) were evaluted as best when 0.5% of Phosphate B complex was added The optimum cooking condition of Kamaboko to get good texture was heating for 20 minutes at 12$0^{\circ}C$.

고품질 수산 건제품의 건조열전달에 관한 연구 (A Study on the Drying Heat Transfer for the High Quality Product of the Dried Sea Foods)

  • 우리나라의 수산 양식과 어로기술은 세계적 수준임에도 불구하고, 가공기술은 상대적으로 낙후되어 있다. 수산가공품은 냉동품, 통조림, 염장식품(젓갈), 연제품(어묵) 등이 대부분으로, 특히 부가가치가 가장 높은 고품질의 수산 건제품은 매우 적다. 이러한 문제는 단적으로 건조기술의 부족에 기인한다고 사료된다. 본 논문은 부패하기가 쉽지만 향후 대량 생산이 계획되어 있는 고가 수산물의 고품질 건조 가공이 기능하게 하기 위한 에너지 절약형 진공건조장치의 건조열전달특성에 관하여 수행한 실험적 결과를 보고한 것이다.

건어육(乾魚肉) 저장(貯藏)중의 단백질(蛋白質) 소화율(消化率) 저하요인(低下要因) (Factors Influencing on the Drop of in vitro Protein Digestibility in Dried Fish Meat)

  • 우리나라에서 건제품(乾製品)으로 많이 이용되고 있는 갈치와 가자미의 건조(乾燥) 및 저장시(貯藏時) 일어나는 지질(脂質) 및 산화지질(酸化脂質)과 단백질(蛋白質)과의 반응(反應)이 이들 어육(魚肉)의 in vitro protein digestibility저하(低下)에 미치는 영향과 이에 수반되는 available lysine의 불용화(不溶化) 및 효소(酵素) 불소화성(不消化性) 물질(物質) 생성(生成) 정도의 변화를 실험한 결과는 다음과 같다. 가자미 및 갈치 생시료(生試料)의 소화율(消化率)은 87.63, 86.08%이었고, 일건(日乾), 열건시료(熱乾試料)는 건조(乾燥) 중 $1{\sim}2%$정도 저하(低下)되었으나 탈지시료(脫脂試料)는 각각 89.15, 87.15%로 증가하였다. 저장(貯藏) 중의 소화율(消化率)은 모든 시료(試料)에서 저하(低下)되었고 특히 갈치 열건시료(熱乾試料)는 78.00%로 심한 감소를 나타내었다. TIS함량은 생시료(生試料)에서 가자미, 갈치가 각각 0.88, 0.96mg/g solid이었으며, 탈지시료(脫脂試料)는 건조(乾燥) 및 저장(貯藏) 중 TIS함량의 증가가 적었고 소화율(消化率)은 높게 나타났다. VBN 및 PoV는 저장 10일에 저장초기의 2배(倍)정도로 증가하였고, 저장 30일에는 급격히 감소되었다. 갈변물질(褐變物質)의 형성은 저장기간이 증가함에 따라 증가되었다. 가자미 및 갈치 지질(脂質)의 주요(主要) 구성지방산(構成脂肪酸)은 $C_{18:1},\;C_{16:0},\;C_{22:6}\;C_{16:1}$등이었으며 총불포화지방산(總不飽和脂肪酸)함량은 가자미 79.2%, 갈치 67.8%이었고 저장 중 포화지방산(飽和脂肪酸)이 증가하고 불포화지방산(不飽和脂肪酸)이 감소하는 경향을 보였다. Available lysine은 갈치가 가자미보다 많았으며 저장 30일에는 저장초기량의 8.23%가 각각 손실되었다. 이상에서 수산단백식품(水産蛋白食品)은 건조(乾燥) 저장(貯藏) 중 산화지질(酸化脂質)과의 반응(反應)으로 단백질(蛋白質)의 양적(量的) 손실(損失)을 초래하였고, 비효소(非酵素)적 갈변(褐變), 지질일단백질(脂質一蛋白質)의 불용성(不溶性) 복합체(複合體) 형성(形成), available lysine의 불용화(不溶化), TIS의 생성(生成), 어육(魚肉)내의 구성지방산(構成脂肪酸)과 아미노산의 변화(變化)로 in vitro protein digestibility 저하(低下)를 비롯하여 어육(魚肉)의 갈변(褐變), 풍미손상(風味損傷) 및 영양가손실(營養價損失)등의 어육(魚肉)의 품질저하(品質低下)를 초래하는 주요인(主要因)으로 분석되었다.

배합사료 내 식물성 원료 대체원으로 막걸리 부산물이 미꾸리(Misgurnus anguillicaudatus) 치어의 성장 및 체조성에 미치는 영향 (Distillers' Dried Grain as a Replacement for Plant-derived Sources in the Diet of Juvenile Muddy Loach Misgurnus anguillicaudatus)

  • We designed a 16-week feeding experiment to test the effects of dietary supplementation with distillers' dried grain (DDG) on the growth, feed utilization, and body composition of juvenile muddy loach Misgurnus anguillicaudatus. Seven isonitrogenous and isocaloric diets were formulated to contain 0% DDG (Control); 10%, 20%, and 30 % DDG from rice (diets RM10, RM20 and RM30); and 10%, 20%, and 30% DDG from rice and wheat flour (diets RWM10, RWM20 and RWM30), respectively. Three replicate groups of juvenile muddy loach averaging $1.5{\pm}0.10$ g were fed one of the diets to satiation twice daily. Survival of juvenile muddy loach fed the RWM20 and RWM30 diets was higher than that of the control group (P<0.05), while weight gain tended to decrease when fish were fed diets containing DDG. Weight gain of fish fed the RWM10 diet was greater than that of fish fed other diets, but the RM30 diet resulted in less weight gain than did the control (P<0.05). The feed and protein efficiency ratios of fish fed the RM10, RM20, RM30, RWM10, RWM20 and RWM30 diets were all similar to the control (P>0.05). Neither daily feed intake nor proximate composition of the whole body was affected by dietary DDG (P>0.05). The compositions of isoleucine, leucine, lysine, threonine, and valine were all elevated in fish fed the RM30, RWM10, RWM20 and RWM30 diets relative to those of other groups (P<0.05). In contrast, methionine + cystine and phenylalanine + tyrosine were all lower in fish fed the RM30, RWM10, RWM20 and RWM30 diets, as compared to those of other groups (P<0.05). Our results suggest that DDG is suitable as a partial replacement for soybean meal and wheat flour, and could be used at a rate of up to 20% for rice, or 30% for rice and wheat flour, for optimum growth performance of juvenile muddy loach.

  • The Gwugonsiuebang is a book of Korean woman's life in the Yi dynasty which published I 1653 by Mme. Jang. I have studied the food habits of the Yi dynasty that wrote in Gwugonsiueband as following. The staple foods are Guksu (wheat vemicell as like western noodles) 5, Mandu (bun stuffed with seasoned meat and vegetables) 6 kinds in this book. the side dishes are Guk (soup) 8, J'm (steamed meat or fish) 6, chae6, Nooruemi 5, Hyae (sliced raw fish) 3, Jockpyun (jellied beef soup) 3, Jockgall (salted sea food) 2, Jock (skewer or broach) 2, jihee 2, Sun (Steaming of stuffed vegetable) 1, Bockuem (saute) 1, Jon (pan fried fish) 1, Gui (meat or fish grilled with seasoning) 1, and the other 13 kinds. The desserts are D,ock (Korean rice cake) 11, jabgwa 8, Beverages 5 kinds and Jungwa 1 kind. The alcohol and fruits wine are 51 kinds. The alcohol and fruits wine are 51 kinds. The seasonings are Soybean sauce, oil, Sesamol oil, pepper, Ginger, Garlic, Vinegar, Wine, Salt, Bean paste etc. Raw materials of Guksu, Mandu, D'ock, Jabgwa, Beverage, Wine, vinegar are all carbohydrates. It shows that a tendency of Korean people too much take a carbohydrates. Now and then, there are no special difference of winter over pass for vegetables, fruits, dried beef, dried fish and salt fishes. In yi dynasty, there are 62 kinds of table ware and cooking kitchen utensils, but many of them come to uselessness. 19 kinds of measuring unit are very non-scientific because that is not by weight but by bulk or volume. There are many food making terms which are 198 kinds of prepared cooking term, 11 kinds of cutting term and 20 kinds of boiling term. And 10 kinds of expression of taste can see this book.

Evaluation of HP300 Soybean Protein in Starter pig Diets

  • One growth trial and one digestibility trial were conducted to evaluate the nutritional value of HP300, a commercially processed soybean meal product for weanling pigs. Dried whey, fish meal and/or full fat extruded soybeans (FFES) as well as portions of soybean meal (SBM) were replaced with HP300 in weanling pig diets. The objectives were to investigate the effects of HP300 on growth performance, digestibility, ileal amino acid digestibility and blood amino acid concentration in weanling pigs. One hundred and twenty crossbred $(Duroc{\times}Beijing\;Black{\times}Landrace)$ pigs weaned at 28 days of age were used in the growth trial. The pigs were randomly allocated to five treatments, with three pens per treatment and eight pigs per pen. The trial duration was 28 days. The control (CTRL) diet contained no HP300; in treatments 2, 3 and 4, dried whey and fish meal were replaced by 3.0%, 7.5% and 10.5% HP300; in treatment 5, full fat extruded soybeans were replaced by 10.5% HP300 plus soybean oil to attain the same metabolic energy content as FFES. Five T-cannulated barrows were used in a digestibility trial with a $5{\times}5$ Latin square design to determine nitrogen retention and amino acid ileal digestibility of HP300 used alone or mixed with other ingredients. The results indicated that replacement of dried whey, fish meal, full fat extruded soybeans and a part of the soybean meal with HP300 in piglet diets improved average daily gain and feed conversion ratio (p < 0.05). There was a trend toward improved DM, crude protein and amino acid ileal digestibilities and improved protein and amino acid ileal digestibilities and improved protein net availability with the use of HP300 in swine diets.

Rice Distillers Dried Grain Is a Promising Ingredient as a Partial Replacement of Plant Origin Sources in the Diet for Juvenile Red Seabream (Pagrus major)

  • This study was designed to test the effects of dietary distillers dried grain (DDG) level on the growth performance, feed utilization, body composition and antioxidant activity of juvenile red seabream (Pagrus major). Six isonitrogenous and isocaloric diets were formulated to contain 0%, 5%, 10%, 15%, 20%, and 25% DDG from rice (designated as DDG0, DDG5, DDG10, DDG15, DDG20, and DDG25), respectively. Juvenile red seabream averaging $10.1{\pm}0.05g$ were randomly distributed into 400-L tanks in a flow through systems. Three replicate groups of fish were fed one of the experimental diets to visual satiation two times a day for 10 weeks. Survival, weight gain, feed efficiency, protein efficiency ratio and hepatosomatic index of fish were not affected by dietary DDG levels (p>0.05). Proximate and amino acid composition of whole body in juvenile red seabream were not affected by dietary DDG levels (p>0.05). Plasma content of total protein, glucose, cholesterol, glutamic-pyruvic transaminase, phospholipid and triglyceride were not affected by dietary DDG levels (p>0.05). 1, 1-Diphenyl-2-picryl-hydrazyl radical and alkyl radical scavenging activities in plasma and liver of fish were not affected by dietary DDG levels (p>0.05). The results of this experiment suggest that DDG has the potential to replace plant origin ingredients such as wheat flour and corn gluten meal and could be used up to 25% in diet without incurring negative effects on the growth performance of juvenile red seabream.
