This study is on the changing pattern of fish-and-shellfish uses during the last two thirds of Chosun period on the premise that they are influenced by development of fishing technology. With a literary approach, this paper researches how fish-and-shellfish production and consumption pattern changed, especially in relation to technological development of fisheries. First, we examine into the changes of fishery production. And next, we analyze the kind and cooking method of fish-and-shellfish in [Eum-sik-di-mi-bang](1670) and [Gyu-hap-chong-seo](1815). The analysis of two books revealed that there were significant differences in fish-and-shellfish uses. Because the two books were written with a gap of 145 years and the development of fishing technology and remarkable changes of fishery production affected on the fish-and-shellfish uses. Due to primitive fishing tools and skills, fresh-water and reverse-river-fish and shellfish had been caught in substantial amount until the middle ages of Chosun period. As a result, the availability of seafood were limited extremely even in the upper classes. These situations are evidenced by the analysis of [Eum-sik-di-mi-bang]. Only 12 kinds of fish-and-shellfish are described in [Eum-sik-di-mi-bang]. Most of the sesfoods is mollusc which is easy to catch. As for the salt-water fish, dried cod and dried herring were mentioned. Mullet, the reverse-water-fish, is used most frequently. Only one kind of 'Hoe', which needs extreme freshness, is described. This means that the use of fresh fish-and-shellfish was very limited to some kinds which could be caught near the village. As the netting fishery began to be developed in the 18th century, the production of some salt-water fishes, such as anchovy, shrimp, yellow corvina, pollack, and herring, had increased remarkably to make marine resources more available. Small fish, such as anchovy and shrimp were preserved as 'Jeot-gal' and sold nationwide. Therefore, 'Jeot-gal' and seafood could be used in Kimchi around this time and had a deep influence on the change of Kimchi in taste and nutrition. In [Gyu-hap-chong-seo], 33 kinds of fish-and-shellfish are described. Including cod and herring, 17 kinds of sea water fish and mollusc are mentioned. Some of these are consumed in fresh state, neither as dried nor as salted. Because the merchants promoted the transport of seafoods to other regions according to the growth of commercial economy. As a result the diet of the people could be enriched by the various seafoods.
Experiments were conducted to assess the quality properties of steamed fish paste by addition level, along with a fish meat replacement(dried bovine plasma). The moisture, crude protein, crude fat and ash contents evidenced partially significant difference among the controls, DBP1, DBP2 and DBP3 groups(p<0.05). The pH values of the steamed samples were higher than those of the non-steamed samples, and when the content of the dried bovine plasma as meat replacement agent was increased, the pH was increased. The water holding capacity of the steamed fish past samples, along with the replacement levels were significantly higher than in the samples without the meat replacer(p<0.05). The range of cooking loss was $5.19{\sim}5.38%$. Structural weakening of the boiled samples was significantly higher than that observed in the fried sample. Hardness and chewiness were increased slightly by the addition of bovine plasma, but gel strength evidenced a pattern of decreased in DBP1, DBP2 and DBP3 groups. The result of our sensory evaluation on taste, texture, color and overall acceptance evidenced significant differences among the controls, DBP1, DBP2 and DBP3 groups, and the sensory score of color was the highest.

The protection of dry matter and nitrogen from rumen degradation of dhaincha seed (Sesbania aculeate) meal was studied using nylon bag technique. The dhaincha seed meal was subjected to various heat treatments that included oven drying, autoclaving and boiling. Similar experiment was conducted with fish meal as reference for comparison. The oven-dried dhaincha meal was found to retain more dry matter and nitrogen than was found boiled or autoclaved meal. While autoclaving appeared to improve nitrogen and dry matter retention to some extent, boiling seemed to cause more loss of dry matter from nylon bag. Heat treatment caused high retention of nitrogen by fish meal. The calculated effective protein degradation was 80.4% and 83.2% for the oven dried fish meal and dhaincha seed meal whereas same values were 74.2% and 86.7% for autoclaved fish and dhaincha seed meal respectively at the outflow rate of 4.4% per hour. The in vitro study revealed higher digestibility for heat treated samples by pepsin. The dry matter, nitrogen and ash content of dhaincha seed meal were 85.93%, 5.93% and 7.31% respectively.
A feeding experiment was conducted to determine the use of distillers dried grain (DDG) as a partial replacement for fish meal in the diet for juvenile rockfish, Sebastes schlegeli. Four iso-nitrogenous (50% crude protein) and iso-caloric (4.3 kcal/g) diets (designated as DDG0, DDG7, DDG14, and DDG21) were formulated to contain 0, 7, 14, and 21% DDG. Triplicate groups of juvenile rockfish (initial body weight, $10.2{\pm}0.2g$) were fed one of the experimental diets to visual satiety twice a day (09:00 and 17:00) for 8 weeks. At the end of the feeding trial, survival of rockfish was above 97% and not affected by dietary DDG levels (P>0.05). Weight gain, feed efficiency and daily feed intake of juvenile rockfish were significantly decreased with increase of dietary DDG levels (P<0.05). Condition factor, hepatosomatic index and visceralsomatic index of juvenile rockfish were not significantly affected by dietary DDG levels (P>0.05). No significant differences were observed in the contents of moisture, crude protein, crude lipid and ash of the whole body and dorsal muscle in juvenile rockfish fed the experimental diets (P>0.05). Therefore dietary inclusion of DDG as a replacement for fish meal could depress the growth of juvenile rockfish.
This studies was carried out in order to investigate the browning reaction of lipid originated compound with nitrogenous compound in dried conger eel. The major fatty acids were $C_{16:0},\;C_{16:1},\;C_{18:1},\;C_{20:5}\;and\;C_{22:6}$. The nonpolar lipid contained the highest percentage of $C_{16:0}$, while the polar lipid contained the highest percentage of $C_{22:6}$. The browning reaction there was a rapidly developed with the beginning of the decline in carbonyl value and remarkable decrease in polyunsaturated fatty acids such as $C_{20:5},\;C_{22:5},\;C_{22:6}$ compared with the other fatty acid, in the water soluble fraction of the browning product obtained from tile fish was detected some antioxidation activity but in the lipid soluble fraction which covers most of the browning reactions in the fish meat antioxidation activity was not detected. In the test of conger eel oil, the phosphatidylcholine was largest in quantity and browning products provided in this experiment showed very low reducing activity.
건어물 중의 냄새나는 질소화합물을 증류동시 추출법으로 추출하여 GC-MS로 분석하였다. Amine의 equivalent chain length를 구하여 머무름시간으로부터 탄소수와 차수를 예측할 수 있었다. 새우, 멸치, 북어, 대구, 오징어, 문어, 쥐포, 병어포, 홍합, 조갯살 등 우리 나라에서 많이 식용되는 시료를 분석대상으로 하였다. Dimethylamine, trimethylamine, diethylamine 등은 건어물에서 검출되지 않았으나 methylamine, acetamide, thiazole, 2-hydroxy isopropylamine, N-methyl pyrroline, cyclohexylamine 같은 냄새나는 질소화합물들이 GC-MS로 확인되었다. 건어물의 냄새패턴을 식별하기 위하여 GC-MS 피크면적을 자료로 주성분분석을 적용하였다. 주성분분석에 의한 다변량해석은 건어물의 냄새패턴의 유사성과 이질성의 식별에 유익하다는 결론을 얻었다.
This paper aims to study the browning reactions of lipid originated carbonyl compounds with nitrogenous compounds in dried fishes, flounder, mackerel, shrimp, hair tail fish, and whale. The major fatty acids in the flounder, the mackerel, the shrimp, and the hair tail fish were $C_{16:0},\;C_{18:1},\;C_{22:5},\;C_{22:6}$, and those in the whale meat were $C_{16:0},\;C_{18:1},\;C_{20:4}$. The nonpolar lipid contained higher percent of $C_{18:1}$ while the polar lipid contained higher percent of $C_{22:6}$. When those fishes were dried and stored, the PoV and CoV were high in the mackerel and the hair tail fish, whereas low in the flounder, the shrimp, and, the whale. The browning was developed more rapidly in the lipid soluble fraction than in the water soluble fraction of each sample, and the loss of available lysine and polyenoic acids were accompanied. The polyunsaturated fatty acids markedly decreased, particularly, in phospholipid than in neutral lipid, and $C_{20:5},\;C_{22:5},\;C_{22:6}$ were rapidly decreased during the storage.
보다 간편하게 핵산관련물질을 정량할 목적으로 고속액체크로마토그래피를 이용한 정량법을 검토하였으며, 이 방법을 이용하여 시판 수산건제품의 ATP분해생성물의 함량을 정량하였다. 장치는 HPLC/ALC-244(Waters Associates Inc.)를, 칼럼은 ${\mu}-Bondapak\;C_{18}$ stainless steel column($3.9mm\;i.d.{\times}30.0cm$)을, 검출기는 UV검출기(254nm)를, integrator는 Yanagimoto system-1000을 각각 사용하였으며, 이동상(移動相)으로서는 $1\%$ triethylamine${\codt}$phosphoric acid 혼액 (pH 6.5, $1\%$ triethylamine 용액을 phosphoric acid로써 pH조절)을 사용하고 2ml/min로 용리시키는 것이 가장 분리능이 좋았다. 용리되는 순서는 hypoxanthine, IMP, inosine, AMP, ADP 및 ATP의 순이었으며, retention time 20분이내에 분석이 완료되었다. 그러나 5'-IMP와 5'-GMP는 분리되지 않았다. 자건품(煮乾品)은 이노신산(IMP) 함량이 전반적으로 많았는데, 그 중에서도 벤뎅이가 가장 함량이 많았다. 소건품(素乾品)에는 inosine, hypoxanthine 함량이 많았으며, 조미건제품(調味乾製品)도 소건품과 비슷한 양상이었으나 IMP 함량이 비교적 높은 것은 조미할 때 핵산계조미료가 첨가되었기 때문이라고 볼 수 있었다.
명태의 건조경향은 초기의 평형상태가 뚜렷하지 않은 과정을 제외하면, 일반적인 식품건조형태를 따르는 것으로 보인다. 따라서 시간이 지날수록 건조속도는 어육과 외기의 수분농도차이가 줄어듦에 따른 결과뿐만 아니라, 표면 건조에 의한 고화현상에 의해 수분이동이 억제됨에 따라 느려지게 된다. 명태의 부위별 건조속도는 잘 알려진 바와 같이 머리 부분이 몸통부분보다 빨랐다. 건조가 진행될수록 어육표면과 중심부의 수분함량과 그에 따른 수분활성도의 차이는 증가함으로써 어육내부의 수분이동이 잘 일어나지 않아 전체적인 건조속도의 저하를 나타내었다. 주어진 외기의 건조조건(온도, 습도, 풍속)에서 초기의 높은 건조속도에 의한 어육 표면응고로 인해 건조개시 수 시간 이내에 어피(피부)와 어피 바로밑부분의 어육과 어체 내부 어육의 수분함량 차이가 급격히 일어나는 것을 알 수 있었다. 황태 제조과정의 전단계인 건조과정에서 건조가 시작된 뒤 주기적으로 수분활성도의 차이가 급격히 일어나는 시간(지점)은 황태 특유의 조직감을 형성하기 위해 건조과정에서 조직의 고화를 방지함으로써 일정한 건조속도를 유지하기 위해 주기적으로 수분을 공급해 주어야 하는 시점임을 제시해 준다.
pH 전이공정에 따라 어육 단백질을 회수하고 드럼건조하여 분말 단백질을 제조한 후, 이들 단백질의 몇 가지 식품학적 기능성을 측정하였다. 건조 어육 단백질 분말의 용해도는 pH 7.0으로 조절한 단백질이 PH 5.5에 비하여 높았다. 유화활성지표는 $0.035\sim0.043m^2/g-protein$(pH 5.5 단백질 분말)로 비교적 낮았다. 그리고 유화안정성, 거품능 및 거품안정성은 관측되지 않았다. 점도 값은 수리미 단백질의 1/10에 불과한 $50,200\sim39,000\;cP$의 범위였다. 수분과 지방흡착능력은 각각 $2.63\sim2.89g-water/g$과 $2.13\sim2.17g-oil/g$이었고, 입자의 크기와 pH에 따른 영향은 없었다. 이 같은 실험 결과는 지방흡착을 위한 육의 대체제로 patty 제품 등에 건조 어육 단백질을 적용할 수 있을 것으로 보인다.
