잡과병 관련 조리법에 관한 문헌고찰 - 조선시대부터 현대까지의 조리서를 중심으로 - (A Literature Review on Recipes in Connection with Japgwabyung - Focus on Recipe Data Published in Korea from the Joseon Dynasty to the Modern Era -)

  • The purpose of this study was to investigate the literature in connection with the names and recipes of japgwabyung recorded between 1392 and 2000. The names of japgwabyung were classified into eight types, including japgwabyung, japgwapyun, japgwajumbyung, japgwago, and japgwadanja. The names of japgwatteoks, classified with recipes, were Jjjin-tteoks, Chin-ttoks, and Salmeun-tteoks. The main ingredients used for japgwabyung were glutinous rice, nonglutinous rice, and buckwheat. The subsidiary ingredients were fruits, spices, seeds, and sweeteners. This study classified the names of japgwabyung, depending on the recipes, as japgwabyung, japgwapyun, japgwadanja, and japgwainjulmi. In addition this study classified recipes, depending on names, as steamed rice cakes made of sedimentary rice, steamed valley rice cake, steamed rice ]cakes with stuffs filled in and with bean powder dredged after striking, and steamed or struck rice cake with bean powder dredged. The main ingredients were glutinous rice and nonglutinous rice. The subsidiary ingredients were chestnuts, jujubes and dried persimmons, with other fruits being added according to taste.

  • To analyze daily reception dishes of Choson Dynasty, studied historic book 'Youngjeob Dogam Zabmulsek Euigwae'(1609, 1643 year) described the daily reception dishes for Chinese envoy in Choson Dynasty. The results obtained from this study are as follows. 1. The daily meal consisted of a table for rice gruel(早飯), daily meal(3時飯) and fruit table(茶啖). 2. A table for rice gruel, taken before breakfast was arranged rice gruel(粥) noodles(麵), soup(湯), fish and meat(肝南), cake(餠) and etc. 3. Daily meal was arranged cooked rice(飯), soup(湯), salted fish shrimp and etc(?), jerked meat(佐飯). pickled vegetables(醬?), meat fish and others broiled with seasoning(炙), and etc. 4. Fruit table was arranged noodles(麵), soup(湯), fried cake made of wheat flour, honey and oil(造果), fruits(實果), various fruits preserved in honey(正果), dried fish and meat(切肉), honey water(水正果) and etc.

Nitric Oxide Inhibitory Constituents from the Fruits of Amomum tsao-ko

  • Bioactivity-guided fractionation of MeOH extract of the dried fruits of Amomum tsao-ko led to isolation of nine compounds (1 - 9). Their structures were elucidated by spectroscopic methods including extensive 1D and 2D-NMR, as alpinetin (1), naringenin-5-O-methyl ether (2), naringenin (3), hesperetin (4), 2',4',6'-trihydroxy-4-methoxy chalcone (5), tsaokoin (6), boesenbergin B (7), 4-hydroxyboesenbergin B (8), and tsaokoarylone (9). Of these, compound 8 was isolated from a natural source for the first time, which was previously reported as a synthetic product. The isolated compounds (1 - 9) were tested for their inhibitory effects on LPS-induced nitric oxide production in RAW 264.7 macrophages. Among them, three chalcone derivatives (compounds 5, 7, and 8) and a diarylheptanoid (compound 9) exhibited significant inhibitory activity on the NO production with $IC_{50}$ values ranging from 10.9 to $22.5{\mu}M$.

코덱스 식품 분류에서 식물성 가공식품의 원료식품 분류 (Primary Food Commodity Classification of Processed Foods of Plant Origin in the Codex Food Classification)

  • 본 연구는 코덱스 식품분류에 포함된 식물성 가공식품에 대해 그 원료식품에 대한 코덱스 식품원료 분류 정보(그룹 및 subgroup)와 국내 식품원료 분류 포함 여부를 파악하기 위해 수행되었다. 연구 결과를 간략히 요약하면 다음과 같다. 첫째 코덱스 주요 가공식품 그룹별로 코덱스 분류 내용을 가공식품 그룹(분류 코드의 수/원료식품이 포함되는 식품원료 그룹 수/식품원료 분류에 포함되지 않은 원료식품의 수)로 보면, 건조 과일류(46/8/0), 건조 채소류(76/11/1), 건조 허브류(54/4/12), 곡류 도정 가공품(36/1/0), 차(19개 코드, 가공식품으로만 분류), 식물성 조제유(17/4/3), 식물성 정제유(34/8/9), 과일 주스(20/8/0), 채소 주스(3/2/0)로 나타났다. 둘째 국내 식품원료 분류에 포함되어 있지 않은 원료식품의 수는 건조 과일류 9종, 건조 채소류 14종, 건조 허브류 35종, 곡류 도정 가공품 0종, 차 6종, 식물성 조제유 3종, 식물성 정제유 9종, 과일 주스 2종, 채소 주스 0종이었다. 셋째 코덱스와 국내 식품 분류에 차이를 보이는 코코넛(코덱스는 열대과일뿐만 아니라 견과로도 분류), 올리브(유지종실뿐만 아니라 열대과일로도 분류) 그리고 코덱스 분류에서 특이점을 보이는 건조 고추(향신료로 분류, 건조채소류로 분류하지 않음), 토마토 주스(원료식품은 채소류, 주스는 과일주스로 분류), 생강(잎은 식품원료 분류에 포함되어 있지 않으나 뿌리줄기는 향신료에 포함)과 같은 식품에 대해 코덱스 식품 분류를 활용하는 데 주의가 필요한 것으로 나타났다.

조선후기 『임원경제지(林園經濟志)』 「인제지(仁濟志)」 속의 구황(救荒) (Famine Relief during the Late Chosun dynasty in 『Limwomgyungjeji』 「Injeji」)

  • During the late Chosun Dynasty, famine was the main cause of climate ecological background, such as frequent floods and droughts, the Little Ice Age (小氷期), and epidemic. In addition, it influenced the social and cultural background, such as failure toprovide Yiangbeop (移秧法), breakout of war and revolt, loss of farming cattle, grain consumption due to brewing, the concentration of wealth, and tenacity of shamanism. "Limwongyungjeji" "Injeji" of the last part had been written about the famine; wild plants to raw, dried, or dried powder, or processed pharmaceutical goods. Grain couldbe replaced in more than 330 types of famine relief food and recipes; 170 species of vegetables, 34 species of vegetation, and 33 kinds of fruit - the botanic foods were mainstream. Edible parts of these plant foods are those of 14 kinds: 175 species of leaves, 113 species of sprouts, 99 kinds of buds, and other fruits, roots, stems, flowers, etc. The recipe (poaching, salting, and oil-marinated) was written 186 times or forsoup, raw, and boiled.

  • 신미종(辛味種) 고추의 추숙(追熟)에 따른 신미성분(辛味成分)의 변화(變化)를 부위별(部位別)과 capsaicin 동족체별(同族體別)로 측정(測定) 고찰(考察)한 결과(結果)는 다음과 같다. (1) 추숙(追熟)에 따라 capsaicin homologues의 조성(組成)에 거의 변화(變化)가 없었다. (2) 과육부(果肉部)(태좌(胎座), 격벽(隔壁), 과피(果皮)) 신미성분(辛味成分)의 건물중당(乾物重當) 함유율(含有率)(%)이 추숙(追熟)에 따라 증가(增加)하고 있다. 이것은 신미성분(辛味成分)의 생성(生成)과 고형물소장(固形物消長)사이의 상관관계(相關關係)의 결과(結果)라고 보겠다. (3) 태좌(胎座) 격벽부(隔壁部)의 신미성분(辛味成分)은 그함량(含量)이 매우 높고 또 chi.-onset stage까지 증가(增加)하고 그후(後)는 감소(減少)하는데 비(比)하여 과피(果皮)의 신미성분(辛味成分)은 줄곧 증가(增加)하고 있어서 신미성분(辛味成分)의 이동(移動)을 짐작할수 있었다. (4) 종자(種子)의 신미성분(辛味成分)은 함량(含量)이 매우 낮으나 추숙(追熟)에 따라 조금씩 증가(增加)하고 있다.

  • The Siuejunsuh is a book of Korean woman's life in the Yi-dynasty which published late in 18 century by unknown author. I have studied the food habits of the Yi-dynasty that wrote in siuejunsuh as following. The staple foods ae Bab (boiled cooked rice) 2, Juk(gruel) 6, Mieum(thin rice gruel) 3, Uee (liquid) 1, D'ockguk 2, Mandu3 Kinds I this book. the side dishes are Guk(soup) 24, Jochi 7, jungol 2, J'im 16, Sinsollo 1, Bockuem 5, Sun 6, Gui 16, Jock 10, jon 12, jorim 7, Namul 14, Sangchae 4, Hyae 17, Joban 2, Nooruemi 1, Sooranpoached egg) 2, Sondae 2, jockpyun 1, Choe 1, Muchim 11, Pyunuk 2, Jockgall 6, Po 9, Ssam 4, Jup 1, Jangaji 27, Kimchi 20, and other 27 Kinds. the desserts are D'ock 41, jabgwa 52, Beverages 17 kinds. the alcohol and frutie liquor are 18 kinds. The seasonings are soybean sauce, Jinjang, red peper bean paste, Zupjang, Dampukjang, Chunggukjang, honey, vinegar, mustard, Yunzup etc. Storage foods are vegetables,fruits and beans etc. There are 62 kinds of table ware and cooking kitchen utensiles, but many of them came to usefulness. 16 kinds of measuring unit are very non-scientific because that is not by weight but by bulk or volume. Thee are many food making terms which are 179 kinds of prepared cooking term, 22 kinds of cutting term and 16 kinds of boiling term. And 20 kinds of expression of taste can be seen in this book. Food serving methods are D'ockiserving method, fruits and dried food serving methode in chanhap (food packed in a nest of boxes) Guksoo serving method, Jock serving method, fruits serving method, Seup serving method etc. Table setting methods ae 9 sets of dinner, 7 sets of dinner, 5 sets of dinner, side table setting, liquor table setting, Sinsollo table setting, food's dab table setting etc.

Effects of Temperature and Moisture on the Survival of Colletotrichum acutatum, the Causal Agent of Pepper Anthracnose in Soil and Pepper Fruit Debris

  • The survival of Colletotrichum acutatum was investigated in soil, infected fruits, and infected fruit debris incorporated into soil at several temperatures with different soil moisture levels. Samples were examined at 2-week intervals for 18 weeks to determine the survival of the pathogen based on the number of colony forming unit (CFU) of C. acutatum recovered on a semi-selective medium. C. acutatum conidia survived in both sterile and non-sterile soil at 4 and $10^{\circ}C$ for 18 weeks. If infected pepper fruits were completely dried, C. acutatum survived for 18 weeks at temperature from 4 to $20^{\circ}C$. Soil temperature and moisture affected the survival of C. acutatum in infected fruit debris incorporated into soil after air-drying. The effect of soil moisture on survival was weaker at low temperatures than at high temperatures. For up to 16 weeks, conidia were recovered from fruit debris in soil that had been kept at 4 to $20^{\circ}C$ and below 6% soil moisture. Conidia were recovered from fields until approximately 6 months after pepper fruits were harvested. Using PCR with species-specific primers and a pathogenicity test, we identified conidia recovered from soil and infected fruit from both the laboratory and field as C. acutatum and as the primary inoculum causing pepper anthracnose.

초등학생의 성별과 비만도가 아침 식사와 간식 섭취에 미치는 영향 (Effect of Sex and Obese Index on Breakfast and Snack Intake in Elementary School Students)

  • The survey was conducted in July first to 15th, among 463 elementary school students, 4th grade to 6th grade in Chonj. The subjects were 252 male and 211 female students. The mean age of the subjects was 9.8 year The percent of relative body weight of the subjects compared to Korean standard was 100.1%, it almost matched to Korean standard. The percent of relative body weight in male students was 100.4%, where as the female's was 99.7%. Thirty six percent of the subjects have breakfast irregularly. The reason skipping breakfast were 'no appetite' 50.5%, 'get up late' 35.8%,' no delicious food' 18.2%. The reason skipping breakfast was significantly different by sex and obese index. The frequency taking snack was significantly different by sex, 34.6% of female subjects took snack more than twice per day, while 16.7% of male subjects did it. The most frequently taking snack were fruits, the points was 4.0 of 5.0. Ramyun, Sundai were taking more frequently among males than females. Females took fruits more frequently than males. Hot dog, ice cream ,and chocolate intakes were significantly different by obese index. The most preference of snack were fruits and ice cream in all subjects. The preference of ramyun, hamburger, egg, chicken, dried squid, milk, peanut, and soft drink were higher in males than in females. Biscuit, ice cream, and chocolate preference were significantly different in obese index.

천년초의 성분특성과 항산화 활성 (Chemical compositions and antioxidant activities of Cheonnyuncho (Opuntia humifusa) stems and fruit)

  • 천년초 줄기와 열매의 성분특성을 알아보고자 일반성분, 무기성분, 아미노산 함량 및 유리당 함량과 폴리페놀 및 플라보노이드, 항산화 활성을 조사하였다. 천년초 줄기와 열매의 일반성분을 측정한 결과 줄기의 경우 조회분이 10.85%, 조단백질이 8.3%, 조지방이 1.91%이었으며 열매는 조회분이 7.47%, 단백질이 2.62%와 조지방이 1.82%로 나타났다. 무기성분은 K이 가장 높게 나타났으며 줄기보다 열매가 더 높게 나타난 반면 Ca, Mg, Na 및 P의 함량은 열매 보다 줄기가 더 높게 나타났다. 천년초의 주된 아미노산은 줄기의 경우 glutamic acid, aspartic acid, arginine이었고 열매는 glutamic acid, aspartic acid, leucine으로 나타났다. 유리당의 주된 성분은 sucrose, fructose, glucose로 확인되었다. 총 폴리페놀 총 플라보노이드의 함량은 추출 용매에 따라 다소 다르게 나타났으며 75% 에탄올 추출물이 가장 높았고 그 다음으로 75% 메탄올, 물 순으로 나타났지만 그 함량의 차이는 유의적으로 차이가 없었다(p<0.001). 항산화 활성으로 DPPH를 측정한 결과 추출물의 농도가 증가함에 따라 소거 활성능력도 증가하는 경향으로 75% 에탄올 추출물이 가장 높은 소거 활성능력을 보였다. 용매별 $RC_{50}$ 값은 $956.30{\sim}1,267.60{\mu}g/mL$로 우수한 항산화 작용을 나타내었으며 천연 항산화제인 ascorbic acid와 BHA는 각각 $10.50{\mu}g/mL$, $35.05{\mu}g/mL$의 소거능력을 가짐을 확인할 수 있었다. 따라서, 천년초의 줄기와 열매의 영양성분 특성을 확인할 수 있었고 페놀류 및 플라보노이드 함량도 높았으며 항산화 효과가 있어 가공제품 개발이 식품소재로서 유익한 이용도를 높일 것으로 보인다.
