This study was carried out to investigate the quality characteristics of pear jam containing fresh ginger(G1) and ginger powders; dried ginger powder(G2), freeze-dried ginger powder(G3), and hot-air dried ginger powder(G4). The moisture, crude protein, and crude ash content of the control group were significantly higher than those of the experimental groups (p<0.001, p<0.05, p<0.01). The pH of the dried ginger powder added jam(G2) was the lowest(p<0.05). Texture profile analysis found that the dried ginger powder added jam(G2) had the highest firmness, consistency, cohesiveness, and resistance to flow/viscosity among all samples(p<0.001). Regarding the spread-meter value of the pear jam, the control group (G1) and hot air-dried ginger powder added jam(G4) had the highest values. The dried ginger power added jam(G2) had the lowest value among the samples(p<0.01). Regarding the color values of the pear jam, the control group(G1) had the highest L and b values. Hot-air dried ginger powder added jam(G4), on the other hand, had the lowest(p<0.001). The opposite was true for a value: hot-air dried ginger powder added jam(G4) had the highest. From the sensory evaluation, a positive trend was observed for the appearance of the dried ginger powder added jam(G2)(p<0.001). For sweetness, the dried ginger powder added jam(G2) had the highest value. A positive trend was observed for the overall acceptability of the dried ginger powder-added jam(G2)(p<0.001). Therefore, the dried ginger powder-added sample(G2) seemed to be the most appropriate to make pear jam with high acceptability.

The hydrolyzed-lactose milk for the lactase-deficient subject is sweeter than whole milk, and some subjects dislike its taste. To overcome this shortcoming the dried liposomes containing ${\beta}$-galactosidase to digest lactose in milk after drinking were prepared and examined the possible application of this dried liposomes to the lactase-deficient subjects. To improve the stability of conventional liposome suspension, the dried liposomes in the presence of trehalose were prepared by the dehydration-rehydration vesicles method. Small unilamellar vesicles, prepared with egg phosphatidyl cholesterol, and cholesterol, were mixed with ${\beta}$-galactosidase solution and then ;up[jo;ozed. The freeze-dried liposome was rehydrated and centrifuged. The resultant multilamellar vesicles were mixed with trehalose(4g/g lipid) and then lyophilized to produce final dried liposome. Trehalose increased the entrapping efficiency of liposomes by 3 fo1d compared to the liposomes without trehalose (13% vs. 46%).
This study was conducted to investigate the water vapor permeability of packaging film, Al- foil laminated paper, and sorption properties of dehydrated and powdered foods. The results are as fellows. 1. Absorption rate of each products was greately affeoted by physicochemical properties of foods rather than initial moisture contents of the products. 2. The absorption rate of each products were in the order of freeze dried coffee, spray dried coffee, freeze drie4 ginseng extract, spray dried ginseng extract, ginger tea, black tea, citrus juice Powder and ssang wha tea. 3. Most of the products such as freeze dried coffee, spray dried coffee, freeze dried ginseng extract, ginger tea and black tea have shorter than a month of shelf life. 4. The stability of the products were greatly affected by its desorption properties than the degree of desorption of moisture. 5. Water vapor permeability of packaging materials which are laminated Al-foil with polythylene and glassin paper were mainly affected of thickness of Al-foil and polyethylene.
Volatile flavor components of fresh, shady air dried, and presteamed shady air dried Chamnamul (Pimpinella brachycarpa) were collected by simultaneous steam distillation-extraction method, and essential oils were analyzed by gas chromatography-mass spectrometry (GC/MS). Twenty five, 17 and 23 volatile flavor components were identified in essential oils extracted from the fresh, shady air dried, and presteamed shady air dried Chamnamul samples, respectively; however, the kinds of individual components and its percent content of the total volatiles were varied depending on samples. The principal components of Chamnamul were isobutanal, trans caryophyllene, trans ${\beta}$-farnesene, and ${\alpha}$-selinene. Terpenoid compounds reached 44.11%, 33.91% and 72.63% respectively in fresh, shady air dried, and presteamed shady air dried Chamnamul.
In a conventional sense, dried-spermatozoa are all dead and motionless due to the lost of their natural ability to penetrate oocytes both in vivo and in vitro. However, their nuclei are completely able to contribute to normal embryonic development even after long-term preservation in a dried state when the dried-spermatozoa are microinjected into the oocytes. In this sense, dried spermatozoa must still be alive. Thus, defining spermatozoa as alive or dead seems rather arbitrary. Several drying method of sperm including freeze-drying, evaporative/convective-drying and heat-drying were represented in this review. Although the drying protocol reported here will need further improvement, the results suggest that it may be possible to store the male genetic resources.
Blacken spoilage is one of the common problems during the cold storage of dried persimmon in Korea. We collected the spoiled dried persimmon in the refrigerator and classified them to 4 types depending on their appearances. Furthermore we isolated blacken spoilage inducing bacteria from type D of dried persimmons. Among the isolates we identified the seven blacken spoilage inducing bacteria. They are Aeromonas hydrophila DP1, Cedecea davisae DP2, Ewingella americana DP3, Flavimonas oryzihabitans DP4, Providencia rettgeri DP5, Providencia rustigianii DP6 and Serratia plymuthica DP7. Strains were identified based on their morphological, cultural and physiological properties. We also found that Ewingella americana DP3, Flavimonas oryzihabitans DP4 were the major blacken spoilage inducing bacteria during dried persimmon storage.
I. Shear Bond Strength to Air-dried and Remoistened Dentin.. The effect of air-drying and remoistening of acid-conditioned dentin before priming with the primer of All-Bond 2(BISCO. INC., U. S. A.) on shear bond strength(SBS) was investigated. Ninty freshly extracted sound human molars were divided at random into 9 groups of 10 teeth each. SBSs were meaured for acid-conditioned and non-conditioned dentin to which the primer and bonding agent of All-Bond 2 and composite resin(Z-100, 3M Dental Products, U. S. A.) were applied. The following values(Mean${\pm}$ SD, MPa) were obtained for the groups conditioned with 10% phosphoric acid for 15 seconds: Group l(blot dried) $6.7{\pm}4.1$ ; Group 2(10 seconds dried) $16.1{\pm}5.3$ ; Group 3(20 seconds dried) $15.4{\pm}4.8$ ; Group 4(30 seconds dried) $15.2{\pm}6.3$ ; Group 5(10 seconds dried/remoistened) $26.4{\pm}2.6$ ; Group 6(20 seconds dired/remositened) $22.2{\pm}2.7$ ; Group 7(30 seconds dried/remoistened) $21.5{\pm}4.1$. For the non-conditioned groups the values were: Group 8 (blot dried) $13.3{\pm}2.6$ ; Group 9(10 seconds dried) $12.9{\pm}3.5$. The data were analyzed using ANOVA. In the acid-conditioned groups, mean values of SBS for the air-dried specimens(Grps. 2, 3 and 4) and the 20 and 30 seconds dried/remoistened specimens (Grps. 6 and 7) were significantly lower than that of blot dried specimens.(p<0.05) The value for 10 seconds dried/remoistened specimens (Grp. 5), however, was not statistically different compared to that of blot dried specimens.(p>0.05) In the non-conditined groups, there was no statistical difference between blot dried and 10 seconds dried specimens.(p>0.05) The results suggest that the acid-conditioned dentin surface is more vulnerable to dentin bonding when it is air-dried or even remoistened after long period of drying. II. Shear bond stengh to the moistened and primed enamel. The effect of moistening and priming of enamel compared to the air-drying of enamel on the shear bond strength of enamel bonding agent was investigated. The experiment was divided into 4 groups each containing 10 caries-free maxillary incisor teeth. Shear bond strength values were measured for the primed and non-primed enamel to which All-Bond 2 and Z-100 were applied. The following values(MPa) were obtained for the primed groups pretreated with 32 % phosphoric acid for 15 seconds. : Group 1 (10 seconds dried) $29.8{\pm}2.2$ ; Group 2(moistened) $26.8{\pm}5.4$. For the non-primed groups the values were: Group 3(10 seconds dried/primed) $27.6{\pm}5.0$ ; Group 4(mostened/primed) $28.2{\pm}3.5$. The data were subjected to statistical analysis using ANOVA. The results showed that mean shear bond strengths among the experimental groups were not statistically different. (p>0.05) Conclusively, It is suggested that the bonding ability to enamel is not decreased by the moistening and priming of the enamel.
The physicochemical quality characteristics of the domestic and imported commercial dried persimmons were investigated. The moisture content of dried persimmon was approximately 22.78~61.64%, while the moisture contents of the Chinese dried persimmon were 22.78 and 28.20%, respectively, and were lower than the domestic dried persimmon. The pH of the Chinese dried persimmon was 5.09~5.99, while the pH of the Haman dried persimmon has the highest value (pH 5.99). The Brix was approximately $25.07{\sim}42.93^{\circ}Brix$ and weight of dried persimmons were 29.77~77.95 g, while the weight of Yeongdong dried persimmon has the lowest (29.77 g), and the weight of the Sancheong dried persimmon has the highest value. The L values were 18.27~66.20. The a values were -1.26~10.70 and a value of the Sancheong dried persimmon was 10.70, which was the highest. The b values were 2.81~25.25, wherein the b value of the Cheongdo semi-dried persimmon and Sancheong dried persimmon were25.25 and 21.98, respectively, and were higher than others. The appearance score of the sensory characteristics were the highest in Cheongdo semi-dried persimmon, while the appearance score of Wanju black persimmon was 1.39, which was the lowest. The overall acceptability of the Chinese dred persimmons (No.2) was the highest, while that of the Yeongdong, Hadong and Sangju dried persimmons have higher values than the other dried persimmons. The sulfur dioxide content of the 9 kinds of commercial dried persimmon was lower than 10 mg/kg, but not detected.

This study was conducted to assess the effects of flaxseed oil and dried whitebait as a source of ${\omega}$-3 fatty acids (${\omega}$-3 FA), which could be used to produce eggs enriched with ${\omega}$-3 FA, and of fructo-oligosaccharide (FOS) as a source of prebiotics on performance of hens (commercial Hy-Line Brown laying hens), and FA composition, internal quality, and sensory characteristics of the eggs. Dietary FOS increased egg weight. The amounts of ${\alpha}$-linolenic (ALA), eicosapentaenoic (EPA) and docosahexaenoic acids (DHA) in the eggs from the hens fed the flaxseed oil alone or flaxseed oil+dried whitebait diets were higher than those of the control. Hedonic scores for off-flavor, fishy flavor, buttery taste and overall acceptability of the eggs from the hens fed the diet containing flaxseed oil+dried whitebait were lower (p<0.05) than those of the control. Overall acceptability of the eggs from the hens fed the diet containing soybean oil+dried whitebait was lower (p<0.05) than that of the control. However, all the sensory attributes of the eggs from the hens fed the diet containing flaxseed oil, dried whitebait and FOS were not significantly different from those of the control. These results confirmed that flaxseed oil increases the ALA content in the eggs and a combination of flaxseed oil and dried whitebait increases EPA and DHA in the eggs. Of significance was that addition of FOS to the flaxseed oil+dried whitebait diet improves the sensory characteristics of the eggs enriched with ${\omega}$-3 FA.
This study was performed to evaluate the quality characteristics and antioxidant activities of rice crispy cereal supplemented with dried laver powder. Reducing sugar content decreased in the dried laver-supplemented group. According to the Hunter color system, the L, a, and b values of rice crispy cereal decreased with an increase in the amount of dried laver. The LP5 (rice crispy cereal added with 5% dried laver) group showed the highest phycocyanin and chlorophyll contents, which tended to increase with increased amounts of added dried laver. Total phenolic and flavonoid contents increased with the amount of dried laver, as did 2,2-diphenyl-1-picrylhydrazyl (DPPH) and hydroxyl radical-scavenging activities. Intensity test results showed that the color, flavor, and taste of rice crispy cereal improved with the addition of dried laver. The LP5 group scored the highest on overall satisfaction. These results suggest that the addition of dried laver to rice crispy cereal improves sensory properties by increasing antioxidant activities.
