주스제조 장치에 따른 채소 및 과일 주스의 품질 변화 (Quality Changes of Fresh Vegetable and Fruit Juice by Various Juicers)

  • A fresh vegetable and fruit juice has become a new healthy food available for detoxification, dieting and health. This paper presents the useful information about the quality changes of fresh juice according to different juicer. Quality of fresh juice could be evaluated by several factors such as juice yield, enzyme activity, antioxidant activity, polyphenol contents, and anti-inflammatory activity. The juice yields of 12 different vegetables and fruits were compared using 6 different juicers and it was observed that the yield of slow juicer was better than that of conventional blender. Among 12 samples, the juice yield of grape is the best and the pH of the juice was in the acidic range of 3 and 4. Kiwi and grapefruit were the best in terms of protease enzyme activities by Hemoglobin units on the tyrosine basis and Spectrophotometric acid protease unit and papain units on the tyrosine basis of KFDA protocols. The total polyphenol contents were also high in kiwi and grapefruit. The antioxidant activity by diphenyl-1-picrylhydrazyl (DPPH), superoxide dismutase (SOD), and radical scavenging assay were high in the order of kiwi, grapefruit, grape, tomato, and orange. Anti-inflammatory activities were also assay for 12 samples with 6 juicers. It can be concluded that of fresh fruit and vegetable juice provides a source of antioxidant components and enzymes with high activity. And the enzyme activities could be used as one of the quality indicator of fresh juice. Concerning the juicers used in this study, slow juicer could be recommended to prepare the fresh juice in terms of the juice quality.

전기와 자기장 복합 침 자극을 활용한 복부비만 치료 6례에 대한 증례 보고 (A Report on 6 cases of Abdominal Obesity using Electroacupuncture Combined with Magnetic Acupuncture)

  • Objectives : This study was aimed to show the effect of electroacupuncture combined with magnetic acupuncture on abdominal obesity without patient dieting, exercise or use of herbal medication. Methods : Women over 85 cm in waist circumference were treated with electroacupuncture combined with magnetic acupuncture. Acupuncture points were located at the abdomen ($CV_{12}$, $CV_6$, $ST_{25}$, $ST_{21}$, $SP_{15}$, $SP_{14}$), extremities ($LI_4$, $LI_{11}$, $ST_{36}$, $ST_{44}$) and were stimulated 30 minutes with 2.1~3 Gaus, 500 Hz, tolerable strength. The Interference wave forms were by Whata 153 (Medi Lab, Korea). Two or three treatment sessions per week (five or ten sessions in total) were done. Before treatment, and after the last treatment, we measured waist circumference, hip circumference, waist hip ratio, thickness of abdominal subcutaneous fat, body weight, body mass index, body fat ratio, visceral fat area, free fat mass, body fat mass and skeletal muscle mass. We also measured the subcutaneous temperature of the abdomen($CV_{12}$, $ST_{25}(Rt)$, $ST_{25}(Lt)$, $CV_6$) by using digital infrared thermal imaging(DITI). Results : In this study, significant reductions were shown in waist circumference, hip circumference, thickness of abdominal subcutaneous fat, body weight, body mass index, body fat ratio and body fat mass. There were no significant differences in waist hip ratio, free fat mass or skeletal muscle mass. There were also significant increases of the subcutaneous temperature on $CV_{12}$, $ST_{25}(Rt)$, $ST_{25}(Lt)$. Conclusions : From the above results, electroacupuncture combined with magnetic acupuncture might be an effective treatment for abdominal obesity.

  • In this era of ubiquitous service, a computing device has functions similar with human beings. It influences all major fields of human life, such as clothing, dieting and housing. In order to use the coordination functions of the magic mirror, which might be a basic part of clothing in the era of ubiquitous service, this study concentrates on product information that should be inputted in RFID chip in detail in order to exercise virtual fashion coordination. Information should be inputted in RFID chip to use magic mirror for fashion coordination, a direction for doing this was also suggested. After coding the suggested clothing items, virtual fashion coordination was implemented as a fashion illustration. This study is as following, First, sorts standard code for suitable coordination in 4 images and presented to a proof. Code denoted by 10 characters. Each code literal special quality marks by two characters and divided by season, image, fabric, item, rotor, five items. Item middle of characters of 10 code, when agree on article more than 8, coordination is enabled. Secondely, It is presented by coordination to dressing action picture by suitable coordination classified apart in whole occasions, and coordination method by wearer inclination is remembered wearer's dressing action picture to Magic mirror including layered look. Thirdly, wardrobe of Magic mirror clothes that always buy newly in magic mirror, is washing and clothes that do not take to wardrobe did to be controlled. Fourth, Wealth and schedule is suggested firster than wearer's dressing action.

연령별 비만에 대한 인식 및 체중 조절에 대한 태도 (A Study on the Perception of Obesity by Age and the Attitude toward Weight Control)

  • Along with the increasing interests of modem-day society toward topics of health and beauty, various studies are being actively conducted on the effects of diet for obesity prevention, and separate from aspects of disease prevention and health promotion. This study aimed to examine individual perceptions of obesity by age, and to prepare basic data for implementing an age-based weight control system, by comparing attitudes toward weight control. The research and analysis were conducted using questionnaires, provided to high school students(teenagers, 189 students), college students(20 or older, 116 students), and adults(30 or over, 88 adults) living in Daegu City. In terms of the respondents' perceptions of obesity, among those who described themselves as overweight, only about 10% were actually proven to be overweight. Also, significantly more female students than male students perceived themselves as overweight, despite the fact that they were in a normal weight range(p<0.007). There was no significant difference in the cause of obesity by gender, but it was found to be attributed to a lack of exercise for teenagers, and poor eating habits for those in their twenties and thirties. Concerning the intention to participate in a weight management class, the female teenagers showed significantly more interest than the male teenagers(p<0.017). Also, with regard to the respondents' attitudes toward weight control, the teenage females showed significantly higher interest in weight control than the teenage males p<0.003 and those in their twenties p<0.001. Moreover, regarding the period in which the respondents became most interested in weight, the teenage male students were most interested in weight during their middle school years and teenage females became most interested during their high school years. Therefore, the information from this study leads us to propose there is a need to correct the suggested reckless dieting that is occurring within an appearance-based society, as well as a need to establish a systematic weight control system, along with gathering subsequent basic data.

여대생들의 체중조절 실태 및 관련 요인에 대한 연구 (A Study on Weight Control Attempt and Related Factors among College Female Students)

  • The purpose of this study was to investigate the weight control attempts and related factors among 220 female college students in Seoul. Factors examined included body image, body satisfaction, interest in weight control, beliefs related to weight control, social norms, social expectations regarding subjects' body size and weight change. Data were analyzed using t-test and chi-square test(at $\alpha$=0.05). The average height and weight of subjects were 160.7cm, 52.2kg respectively. BMI and body fat(%) were 20.2 and 25.2%, respectively. One hundred seventy two students(78.2%) had attempted to control their weight, mainly to lose weight, and were categorized as the weight control attempt group. Subjects used diet modification as well as unhealthy method to control weight. 48.2% in the attempt group were underweight or normal weight(by BMI), suggesting that their weight control attempts were was unnecessary. Students in the attempt group described their own size as heavier than those in the no-attempt group(p<0.01) or other girls of their age(p<0.05) ; more dissatisfied with their body size(p<0.01), and showed more interest in weight control(p<0.01). Several differences in beliefs were also noted(p<0.001). The attempt group believed less strongly in the harmful effects or difficulties in weight control and believed more strongly in the advantages of weight control. With respect to social factors, the attempt group perceived that their family and friends wanted them to be smaller than they were(p<0.001), perceived that significant others felt that they should lose weight(p<0.05). These results suggest that educational programs for college female students should start focusing on the harmful effects of excessive dieting and information about desirable weight control methods. Students should be helped to have a correct body image. In addition, educational programs should incorporate strategies to change beliefs regarding weight control, as well as modifying social expectations from significant others.

여대생 및 젊은 여성층을 위한 영양교육 웹사이트 개발 (Development of a Website-Based Nutrition Education Program for Female College Students and Young Women)

  • This study was designed to develop a website for providing nutrition information and education for college women and young women. The website focuses on two topics ; general nutrition and desirable weight control. This program is located at http : // www.ezydiet.co.kr. This program is composed of 5 major sections. The first two sections were designed to provide information ; one for general nutrition, and the other for providing information regarding weight control. The first section includes information regarding young adult women's diet, nutrition standards, such as the RDA or Korean Food Pyramid, drinking and smoking. The second section coveres information regarding desirable control, foods with high or low calories, eating disorders and popularly used dieting methods. The third section is for simple nutrition assessment, consisting of assessment of ideal body weight and obesity, energy requirements, and eating habits. The fourth section was designed to introduce and help users to apply behavioral modification techniques, such as monitoring, goal setting, stimulus control and reinforcement. The final section was designed for meal planning, by introducing a food exchange list and menu examples for one week. The characteristics of this web-based program are as follows ; 1) provide nutrition information systematically, 2) involve sections for the participation of the user, 3) include food pictures to help understanding of nutrition information, 4) include management modules for some sections to revise or update the information. One-hundred and ten female university students participated in the evaluation of this website. The evaluation results were favorable. About 90% of subjects rated that this program covers major topics 'well ' or 'very well', and that it was 'easy'to 'very easy'to understand the contents on website. Two-thirds of subjects rated quite positively on questions regarding attractiveness, overall quality and technical quality of website. In addition, about three-fourths of subjects answered that this website was helpful in increasing nutrition knowledge and in applying nutrition information into daily life. These results suggested the possibility of using a website as a means of providing nutrition information and education for young adult women.

서울 근교 지역에 거주하는 비만 여성의 비만 관련 요인, 체형 인지도 및 심리적 섭식 행동 (The Characteristics of Obesity-Related Factors, Perceptions of Body Image, and Psychological Eating Behaviors in Married Obese Women Living in the Seoul Area)

  • The purpose of this study was to obtain information from married women regarding obesity-related factors and psychological eating behaviors, and to compare those variables among three groups, namely underweight, normal, and obese. The participants completed questionnaires regarding general obesity-related factors, major food servings/day, physical activity, dieting behaviors, perceptions of body image, and psychological eating behaviors. The results were as follows: The obese women reported a higher percentage of family history of obesity (74.8%) than the normal (43.5%) or underweight (28.2%) women. Most of the obese women (90.0%) accurately perceived their body image compared to 72.5% of the underweight and 56.6% of the normal weight women(p<0.001). No significant differences were found among the three groups for daily hours of exercise or computer use. In the case of hours of television watched daily, significant differences were found among the groups (obese 104 min/day, normal 87 min/day, underweight 76/min, p<0.05). Only 17.9% of the obese women reported eating 2 servings of milk products/day and only 23.2% of them reported eating 3 servings of protein foods/day as compared to the normal (25.4%, 18.0%) and underweight (29.4%, 41.7%) (p<0.01) women. About 98% of the obese and 78.5% of the normal weight women wanted to loose weight compared to only 10% of the underweight women (p<0.001). Psychological eating behavior was significantly correlated with subject BMI ($r^2$=0.32, p<0.01). Also, more obese women were unsatisfied with their body and had emotional eating behaviors as compared to the normal and underweight women, and this was statistically significant (p<0.001). In conclusion, the obese women had high perception rates of their body image, but had negative-psychological eating behaviors. Special behavior therapy is needed for obese women who show body dissatisfaction, emotional eating behaviors, long hours of daily TV viewing, and low intakes of protein and milk products.

여대생의 체중조절행위와 비만스트레스 (Body Weight Control Behavior and Obesity Stress of College Women)

  • 본 연구는 여대생의 체중조절행위와 비만스트레스를 파악하고자 2013년 9월 7일부터 9월 13일까지 경상남도 C시 소재 4개 대학에 재학 중인 여대생 213명을 대상으로 설문지를 배부하여 자료를 수집하였다. 수집된 자료는 SPSS 20.0 프로그램을 이용하여 빈도와 백분율, t-검증(t-test), 일원분산분석(ANOVA), 사후 검증(Scheffe's-test)을 실시하였다. 본 연구결과 대상자의 비만스트레스 정도는 $18.26{\pm}5.66$으로 중간정도로 나타났다. 대상자의 일반적 특성 및 체중조절행위 특성에 따른 비만스트레스와의 차이는 경제상태(F=3.99, p=.020), 체형인식(F=14.41, p<.001), 체형 체격 만족도(F=15.88, p<.001), 체중조절관심도(F=4.82, p=.001), 음식량 조절(F=2.41, p=.050), 체형 체격 강박(F=24.06, p<.001), 식이요법경험(F=6.04, p<.001), 평균수면시간(t=2.10, p=.036), 원하는 체중 감량정도(F=10.47, p<.001)에 따라 유의한 차이가 있었다. 따라서 여대생을 대상으로 올바른 체중인식과 체중조절 프로그램의 개발 시에는 비만스트레스와 관련한 다양한 특성들을 고려하여 개발하는 것이 필요하다.

전국 승가대학 예비승려들의 식행동과 음식기호도에 관한 연구 (A Study on Dietary Behavior and Food Preference of Sramanera·Sramanerika Monks in Nationwide Buddhist Monk's Universities)

  • Objectives: This study was designed to find out factors that are needed to be improved for the Buddhist training environment of Sramanera Sramanerika monks, who have been newly adapted for their life style after becoming a monk, and to provide basic data for the development of the standard diet in Buddhist temples. Methods: A self-administered questionnaire was applied to 365 Sramanera Sramanerika monks at 11 Buddhist monk universities. The questionnaire was designed to investigate their dietary habits, dietary evaluation, satisfaction of food service, and food preferences. Results: The study population consisted of 52.6% men, and 47.4% women. The subjects who had a vegetarian diet before joining the Buddhist priesthood were 27.7% women, and 13.5% men (p<0.01). 42.2% of the total subjects felt that they are healthy now and 19.4% felt weak. The most difficulty of dieting adaptation as soon as entering the priesthood was the strict diet rules (42.9%). The subjects considered health or nutrition (40.0%) highly when having meals. 94.8% women, 84.1% men ate breakfast every day (p<0.001). Women (55.4%) frequently ate snacks more than men (26.6%) (p<0.001). The results of the dietary evaluation indicated that the intake of milk, soy milk or dairy products and beans or tofu received lower than 3 points and women had lower point result than men (p<0.001). Foods with higher preference were grilled mushrooms, grilled laver, miso stew, sweet and sour mushrooms, steamed tofu with seasoning. Conclusions: Women were more interested in their health than men but they also required to improve the nutritional eating habits. It appeared that the lower intake rates of the calcium containing food (milk and dairy), and proteins (beans and tofu) could result in nutritional imbalance. Therefore, it is necessary to offer food based on the standard menu plan with consideration given to their food preferences in order to maintain their health and desirable dietary habits.

사찰음식에 대한 인식, 기호도 및 대중화방안 연구 - 사찰음식전문점을 이용한 내·외국인대상으로 (A Study on Recognition, Preference and Popularization of Temple Food - Among Local and Foreign Restaurant Visitors)

  • Objectives: This study was conducted to identify factors that influence the consumption of temple food and to find systematic methods improving the popularization of temple food. Methods: A self-administered questionnaire was applied to 304 temple food restaurant visitors, including 232 local and 72 foreign individuals. The questionnaire was designed to investigate recognition, consumption, preference and popularization of temple food among restaurant visitors. Results: The study population consisted of 30.6% men, 69.4% women. 76.3% were Korean while 23.7% were foreigners. The responses on their impression on temple food contained the words, "vegetarian" (4.64), "plain and familiar" (4.19), and "good for dieting" (4.16). The most commont reason to favor temple food was its "mild taste" (63.0%) in the local group while foreigners preferred it because it is "good for health" (35.8%). The preferred kind of side dish of the local group was roasted dish (4.40), stir-fried dish (4.39), blanched vegetables (4.36), and food boiled with sauce (4.23); foreigner's high preference was for stir-fried (4.67), Jangachi (4.63), food boiled with sauce (4.56), and Buggak (4.55).. Most respondents thought that it is necessary to maintain the traditional form of temple food. While 43.5 percent of Koreans responded that "the five pungent vegetables" could be allowed, 62.8 percent of foreign respondents said it is permissible. Conclusions: A systematic approach to improve the temple food that reflects both foreign and local preference while maintaining its originality is necessary for its globalization. Furthermore, restaurants specialized in temple food should be expanded and promoted through effective marketing strategies that would make the cuisine easily accessible and spread throughout the world.
