  • To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively.   • The increased oxidative stress may play an important role on the pathogenesis of diabetes and diabetic complications, and the blood level of vitamin C and lipid peroxidation in NIDDM patients may be used as an indicator for oxidative stress. However there is only scanty evidence on the blood level of vitamin C in NIDDM patients with or without diabetic complications. The study population consisted of 90 NIDDM patients(diabetes without complication, 48, and diabetes with complications, 42) and 41 normal subjects. The 42 diabetic complications were divided into 3 groups : 15 diabetic nephropathy, 18 diabetic neuropathy, 9 diabetic retinopathy. The anthropometric data and blood biochemical data were studied. The dietary intake was determined by 24 hour recall methods and food frequency questionnaire. The plasma concentrations of MDA and vitamin C were determined by fluorophotometer and HPLC respectively. 1) In blood lipoprotein study, diabetes with complication had higher level of TG than diabetes without complications, while no significant differences in total cholesterol, HDL, and LDL were shown. Diabetic neuropathy had the highest TG level among diabetic complication groups. 2) The intakes of vitamin B complexes(vitamin B$_2$, vitamin B$_{6}$, not vitamin B$_1$) and antioxidant vitamins(vitamin A and vitamin E, not vitamin C) and certain minerals such as iron and calcium in diabetes were not sufficient but the intakes of energy, protein, niacin, and phosphorus in diabetes were sufficient. The dietary intakes between diabetes with-and without complications were not significantly different. Among diabetic complications, the diabetic retinopathy had the lowest intake of vitamin B$_2$ and B$_{6}$(p < 0.05). the diabetic neuropathy or nephropathy consumed extremely low amount of vitamin A. 3) The MDA concentrations of NIDDM was significantly higher than that in controls(p < 0. 05) while no significant difference in the MDA concentration between with and without complications was shown. Although there were no statistical differences, the diabetic nephropathy and diabetic neuropathy showed the higher concentration of MDA than the diabetes without complications or diabetic retinopathy. 4) The plasma concentration of vitamin C in controls was higher than that in diabetes(p < 0.05) while the plasma vitamin C in diabetes with and without complications were similar. In diabetic complications, no differences in plasma vitamin C concentration of three groups were shown. This study showed that the oxidative stress in NIDDM patients was highly increased and the vitamin C reserve was significantly depleted, as compared with normals, although their intakes of vitamin C met korean RDA, which means that diabetes need more vitamin C intake to decrease oxidative stress in NIDDM patients.nts.

Evidence and suggestions for establishing vitamin D intake standards in Koreans for the prevention of chronic diseases

  • BACKGROUND/OBJECTIVES: Vitamin D is produced in the skin during sun exposure and is also ingested from foods. The role of vitamin D needs to be considered in the prevention and management of various diseases. Moreover, since the majority of Koreans spend their days indoors, becoming susceptible to the risk of vitamin D deficiency. The current study aims to prepare a basis for determining dietary reference intake of vitamin D in Korea, by reviewing the evidence against various diseases and risks. MATERIALS/METHODS: Literature published in Korea and other countries between 2014 and 2018 was prioritized based on their study design and other criteria, and evaluated using the RoB 2.0 assessment form and United States Department of Agriculture Nutrition Evidence Library Conclusion Statement Evaluation Criteria. RESULTS: Of the 1,709 studies, 128 studies were included in the final systematic analysis after screening. To set the dietary reference intakes of vitamin D based on the selected articles, blood 25(OH)D levels and indicators of bone health were used collectively. Blood vitamin D levels and ultraviolet (UV) exposure time derived from the Korean National Health and Nutrition Examination Survey were analyzed to establish the dietary reference intakes of vitamin D for each stage of the life cycle. The adequate intake levels of vitamin D, according to age and gender, were determined to be in the range of 5-15 ㎍/day, and the tolerable upper intake level was established at 25-100 ㎍/day. CONCLUSIONS: The most important variable for vitamin D nutrition is lifestyle. A balanced diet comprising foods with high contents of vitamin D is important, as is vitamin D synthesis after UV exposure. The adequate intake level of vitamin D mentioned in the 2015 Dietary Reference Intakes for Korean (KDRI) remained unchanged in the 2020 KDRI for the management of vitamin D nutrition in Koreans.

일상식이를 섭취하는 일부 한국 농촌여성의 Mg영양 상태에 관한 연구 (A Study on Mg Status in Adult Korean Rural Women on Self-Selected Diet)

  • This study was carried out to investigate Mg status and the relationship between dietary Mg the blood pressure in 30 healthy women, 26 to 57 year of age, living in rural area of Korea. Dietary intake of the subjects on self-selected diet were recorded. Duplicated food sample and 24-hour urine samples were collected for 3 days. Mean daily dietary Mg intake levels were determined by chemical analysis of duplicated food samples and mean daily urinary Mg excretion was measured from urine samples. Fasting serum Mg levels of each subjects was measured on the 3rd day of the survey. The results were as following: 1) The mean daily intakes of energy, protein were 1770.36㎉ and 55.55g, respectively. Carbohydrare, fat and protein supplied 77.1%, 10.4% and 12.5% of total energy intake. 2) The dietary Mg showed positive correlations with carbohydrate(P<0.05), vitamin A and vitamin B2(P<0.01), energy, Ca, P, fiber, vitamin B1 and niacin(P<0.001), but negative correlation with SBP(P<0.05). 3) The daily mean intake of Mg was 259.07$\pm$74.54mg and the urinary excretion of Mg was 75.48$\pm$33.14mg which was 29.5% of the dietary intake of Mg. And there was no significance between the dietary intake and the urinary excretion of Mg. 4) The dietary fiber showed negative correlations with SBP and DBP(P<0.05). 5) The serum and urinary concentrations of Mg were normal range and the serum Mg showed negative correlation with dietary vitamin C(P<0.05, r=-0.3655). It was concluded that the dietary Mg level of Korean rural women consuming self-selected diets was lower than that of RDA of American women but higher than that of RDA of Canadian. And the dietary intake levels of Mg and fiber, which are contained mostly in cereals and vegetables are useful to prevent hypertention.

어린이의 식생활태도가 영양 상태 및 성격에 미치는 영향에 관한 연구 (An Effect of Children's Food Alttitude on Nutritional Status and Personality)

  • This survey of 527 children, aged 4 to 6 years, focused on family and dietary environment, nutritional status and personality. It was conducted from June to October, 1986. The results showed that 68.0%(breakfast)and 55.4% (evening meal ) of the subjects indicated they had meals with the family everyday. Analysis of the nutritional status children showed all nutrient intake except protein an diron was insufficient compared with RDA. Carbohydrate provided 58.3% of total calorie intake ; protein accounted for 15.7% . fat provided 26.0%. There was a positive relation between income and nutrient intake. Children with employed mothers showed lower nutrient intake than children with unemployed mothers. Food attitude was positively related to nutrient intake, nutrient intake of children with good eating behavior was higher than that of children had poor eating behavior . Activity level had a significant correlation with intake of calories, fat, vitamin A, vitamin B$_1$, and Vitamin B$_2$. Mood was correlated with intake of protein, iron, vitamin A, vitamin B$_2$ and vitamin C.

충북지역 일부 여자대학생들의 건강관련행동과 식행동 및 그에 따른 영양섭취수준 비교 (Dietary Behavior, Health Related Behavior and Nutrient Intake of Female College Students in Chungbuk Area)

  • This study was intended to investigate dietary behavior, health related behavior and the effects of nutrient intake of female college students. Dietary behavior, health related behavior and the perception of the body conditions were surveyed with anonymous questionnaires, and 24hrs recall method for nutrient intake was obtained from 161 female college students in Chungbuk area. The mean height and weight of the subjects were $161.4{\pm}5.0$cm and $53.8{\pm}7.4 $kg, respectively. The dietary behavior of female college students was generally inadequate. More specifically, irregularity of meals, indifference of dietary balance, and skipping breakfast, showing $4.77{\pm}2.20$for dietary behavior score, $11.76{\pm}3.89$ for DVS and $3.58{\pm}0.82$ for DDS, respectively. It was found that almost 63% of subjects did not anything for health care and the frequency of exercise of subjects was low. The perception of body conditions of the subjects seemed to be generally positive. However, satisfaction levels on body shape was very negative showing that only 12.4% of subjects answered as 'very satisfied' and 'satisfied'. When nutrient intake of the female college students was compared with Dietary Reference Intake for Korean, folate(45%), potassium(55%), vitamin C(59%), Ca(72%), fiber(72%), Fe(79%) and energy(80%) were found to be insufficient. But protein(138%), P(122%) and Na(179%) were found to be oversupplied. The nutrient intake of fiber, plant Ca, vitamin A, ${\beta}$-carotene, vitamin B6, vitamin C, folate and vitamin E were significantly higher, and those of Fe, Zn and protein were a little high in the high score group of dietary behavior. Also Food group intake, DDS and DVS were higher in the high score group of dietary behavior.

일부 성인직장여성들의 식습관 및 계절별 영양소섭취상태 조사 (A Study on the Food Habit and Seasonal Difference of Nutrient Intake of Adult Working Women)

  • To assess the food habits and the seasonal differences of nutrient intakes and diet qualities of adult working women aged 30 - 49y in Busan, dietary survey was conducted in summer and in winter by a questionnaire and two-day food record. Anthropometric assessment was also investigated in two seasons. $91.8\%$ of those skipped breakfast in the main. $44.3\%$ had irregular meals. The mean daily energy intake was 1725.8 kcal with $63.3\%$ of energy intake being supplied by carbohydrates, $14.7\%$ by protein, $22.3\%$ by fat in summer and 1598.4 kcal with $62.1\%$ of energy intake being supplied by carbohydrates, $15.6\%$ by protein, $22.1\%$ by fat in winter. Over $70\%$ of iron intake came from plant origin in two seasons. The mean intakes of energy, calcium, iron and vitamin A in summer and energy, calcium, iron, vitamin A and vitamin $B_2$ in winter were below Recommended Dietary Allowance (RDA) for Koreans. As well as insufficiency in iron, the bioavailability of iron is considered to have been low because most of iron intake came from plant origin in two seasons. For calcium and iron in summer and calcium, iron, vitamin A and vitamin $B_2$ in winter, proportions of subjects with intake levels less than $75\%$ of RDA were over $40\%$ in summer and over $50\%$ in winter, respectively. The nutrient adequacy ratios (NAR) were below 0.75 for calcium and iron in summer and calcium, iron, vitamin A and vitamin $B_2$ in winter. NARs of iron (p<0.05), vitamin A (p<0.01) and vitamin $B_2$ (p<0.001) in winter were significantly lower than those in summer. The mean adequacy ratios (MAR), an index of overall dietary quality were 0.85 in summer and 0.80 in winter. The MAR in winter was significantly lower than that in summer (p < 0.05). The indexes of nutritional quality (INQ) were below 1 for calcium and iron in summer and calcium, iron, vitamin A and vitamin $B_2$ in winter. The intake (p<0.05) and NAR (p<0.05) of vitamin $B_2$ showed positive significant correlations with height in winter. In conclusion, nutrient intake and diet quality of adult working women were different between the summer and the winter. So nutritional education programs for summer and winter are needed for adult working women.

일부 지역 농촌 노인의 철분 영양상태에 관한 연구 (A Study on Nutritional Status of Iron in the Rural Elderly)

  • The purpose of this study was to examine nutritional status of iron in 27 rural elderly subjects. The daily intake, urinary excretion and serum level of iron were determined by 24-hr food collection method, and 24-hr urine and serum collection for 3 days. The results were summarized as follows. 1. The mean age, height, weight, and blood pressure were 67.7 years, 163.2cm, 55.9kg, and 121.1/80. 0mmHg in men and 69.9 years, 146.5cm, 47.6kg, and 108.9/71.1mmHg in women, respectively 2. The daily intake of energy, protein, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, and iron were lower than Korean recommended dietary allowances. 3. The daily iron intake was 7.82mg. The proportion of heme iron and nonheme iron to the total iron intake were 8.05% and 91.94%, respectively Major iron sources of the rural elderly were cooked rice, Ko Chu Jang, beef blood, anchovy, soybean paste, and leafy radish. 4. The hemoglobin, hematocrit, serum iron, and total iron binding capacity were 14.3g/㎗, 42.9%, 79.4 $\mu\textrm{g}$/㎗, and 268.4 $\mu\textrm{g}$/㎗ in men and 12.9g/㎗, 38.8%,92.4 $\mu\textrm{g}$/㎗, and 277.9$\mu\textrm{g}$/㎗ in women, respectively. 5. There was a significant positive correlation between dietary intake and urinary excretion of iron.

전남 일부지역 영양사와 비영양사의 영양지식, 식생활태도 및 영양소 섭취량의 비교 연구 (A Comparative Study of Nutrition Knowledge, Dietary Attitude and Nutrient Intakes of Dietitians and Non-Dietitians Working in the Chonnam Area)

  • This study was performed by a comparative analysis of nutritional knowledge, dietary attitudes and nutrient intakes of dietitians and non-dietitians. The subjects of this study were 103 dietitians and 166 non-dietitians working in the Chonnam area. The general characteristics, nutrition knowledge and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes were examined using 24-hour recall method. The results were as follows: Dietitian group ($15.17{\pm}3.88$) scored significantly (p<0.0001) higher than non-dietitian group ($13.34{\pm}3.31$) in nutrition knowledge. Dietitian group ($69.58{\pm}10.67$) scored significantly higher on dietary attitudes than the non-dietitian group ($63.97{\pm}11.18$). The correlation between nutritional knowledge scores and dietary attitudes scores were statistically significance on job, age ($20{\sim}39$), education level (below university), marital status and work experience ($2{\sim}5$, above 10). The dietitian group was significantly higher than the non-dietitians in body weight and BMI of anthropometric data. The prevalence of obesity was 5.8% from the dietitian group and 6.6% from the non-dietitian group when judged by BMI and therefore obesity rate was significaltly (p<0.001) different between the two groups. In case of the dietitian group, the average intake of vitamin A, vitamin $B_1$, vitamin $B_6$, niacin, vitamin E, phosphorous, zinc were above the Korean RDA whereas the average intake of vitamin C, calcium, iron, folic acid were below the Korean RDA. The average intake of most nutrients, except vitamin $B_1$, vitamin $B_6$, phosphorus, were below the Korean RDA in the non-dietitian group. Therefore the non-dietitian group needs nutrition education in order to improve their nutritional status.

A Study on Dietary Intake and Vitamin and Mineral Supplement Use by Korean College Students Attending Web Class

  • The Purpose of this study was to investigate the dietary intake of nutrients and the use of vitamin and mineral supplements by Korean college students attending Web class and the socioeconomic, dietary and health-related factors involved. The subjects were 137 male and 115 female students amending a health and nutrition-related Web class at a cycler university. This cross-sectional survey was conducted by self-administered questionnaire and the data were analyzed by SAS and SPSS PC package programs. Nutrient intake data collected using three-day recall method were analyzed by the Computer Aided Nutritional Analysis Program. Average intake by male students of most nutrients except energy, vitamin B$_2$ and calcium and intake by female students of those except energy, vitamin $B_2$, calcium and iron was higher than Korean RDA. Nutrient intake of male students was significantly influenced by the mother s job, skipping meals, exercise, vitamin and mineral supplement use, flood supplement use and self-evaluated anemia. Skipping meals and flood supplement use significantly influenced the nutrient intake of female students. A total of 47.4% of male students and 53.9% of female students were vitamin and mineral supplement users. In female students, socioeconomic characteristics such as the father s education level and household income were significantly different between vitamin and mineral supplement users and non-users. In both male and female students, there were significant differences in cross analysis between vitamin and mineral supplement use and flood supplement use. As for the self-reported health status of male and female students, vitamin and mineral supplement users perceived their health status to be worse compared to non-users. Therefore, nutrition education via the Internet is necessary in order to encourage college students to practice optimal nutrition strategies, including maintaining well-balanced diets by choosing various floods wisely.
