Fifteen Inner Mongolian wethers with permanent ruminal and duodenal cannulas were used to study the effects of dietary rumen-undegradable protein (RUP) to rumen-degradable protein (RDP) ratios or protein sources on fiber digestion in the gastrointestinal tract and ruminal fluid characteristics. Fiber digestion and ruminal fermentation were not affected (p>0.05) by dietary RUP to RDP ratios (from 1.54 to 0.72). Soybean meal supplementation improved ruminal digestion. Fish meal supplementation increased (p<0.05) the ruminal degradability of fiber. The different RUP to RDP ratios (from 1.54 to 0.72) did not influence (p>0.05) ruminal fluid pH, but there were differences (p<0.05) in ruminal fluid $NH_3-N$ concentration because of urea replacement. Soybean meal as a dietary protein source decreased (p<0.05) ruminal fluid pH and increased (p<0.05 or p<0.01) $NH_3-N$, acetate, propionate and butyrate concentrations in the rumen. Fish meal as a dietary protein source decreased (p<0.05 or p<0.01) ruminal $NH_3-N$ and acetate concentrations and increased (p<0.05) ruminal propionate concentration. It can be concluded that dietary protein sources have more significant effect on fiber digestion and ruminal fermentation than different dietary RUP to RDP ratios, when the dietary crude protein requirements of growing sheep are satisfied.
Dietary proteins are the most important factors affecting growth performance of fish and feed cost. Generally, most of the formulated diets for marine fish include a large amount of fish meal as a protein source because of its high nutritive value and palatability. Quality of fish meal in diet may affect on growth and feed efficiency of fish. This work was undertaken to study the effect of dietary fat source on the fatty acid profile of pork, and to evaluate the effect of inclusion of vitamin E in pig diets on lipid oxidation of pork tissue and processed pork products. Fifty-six pigs were allocated to four treatments, that included two dietary fat sources and two levels of vitamin E inclusion. Dietary fat was derived from either tallow, a source of saturated fatty acids (SFA), or from a mixture of soybean and linseed oils, which contain polyunsaturated fatty acids (PUFA). Vitamin E was included at either 0% or 0.011% of the diet. Growth and carcass characteristics were not affected by the dietary treatments. Dietary fat source affected the fatty acid profile of the longissimus muscle and subcutaneous fat tissue, with the PUFA diet resulting in significantly more polyunsaturated fatty acids in the tissues, and more favourable ratios of SFA to PUFA and C18:2 to C18:3 in terms of human health considerations. Lipid oxidation was significantly greater in tissues and processed products from PUFA-fed pigs. Inclusion of vitamin E in the diets, however, reduced the extent of lipid oxidation in the meat and meat products. Dietary manipulation of the fatty acid profile of pigs is an effective means of altering the fat composition of pork in order to provide human consumers with a healthy product. Vitamin E is effective as an antioxidant agent, particularly where processed products are concerned.
A feeding trial was conducted to investigate the effects of dietary carotenoid source and level on growth and skin color of red- and white-colored fancy carp Cyprinus carpio var. koi. Nine experimental diets (designated as CON, SP5, SP10, AS50, AS100, CA50, CA100, PA5 and PA10) were formulated to contain 5-10% Spirulina powder, 5-10% paprika powder, 50-100 ppm astaxanthin and 50-100 ppm canthaxanthin. The CON diet without supplementation of carotenoid source was considered as the control diet. Each experimental diet was fed to three replicate groups of fish (3.6 g/fish) to visual satiation three times a day for 8 weeks. Survival, growth and feed efficiency of fish were not significantly affected by dietary inclusion of carotenoid source and level (P>0.05). After 8 weeks feeding period, the values of $a^*$, $L^*$and $b^*$ of fish skin were significantly changed by dietary carotenoid source (P<0.05), but not carotenoid level. The $a^*$ value of fish fed the diets containing CA and PA was higher than control and SP diets (P<0.05). Based on the results of this study, it can be concluded that dietary inclusion of 50 ppm canthaxanthin or 5% paprika powder could increase the redness of red-and white-colored fancy carp fingerling.

Two inorganic (zinc sulfate and zinc oxide) and three organic (zinc acetate, zinc-methionine, and zinc-lysine) zinc sources were evaluated for their effects on the performance and carcass characteristics of broiler chicks. The birds were randomly assigned to one control (non-supplemented) and 15 treatment (supplemented) groups consisting of four replicates of 10 chicks each in a $5{\times}3$ factorial arrangement of treatments (five zinc sources and three supplemental zinc levels). Birds were kept in floor pens in a temperature-controlled room from 1 to 42 d of age and fed a non-supplemented basal diet (control) or the basal diet supplemented with 40, 80 or 120 mg/kg of Zn as mentioned sources. Dietary zinc source had considerable effect on feed intake in all experimental periods. Increasing Zn level from 80 to 120 mg/kg decreased the average feed intake in the growth stage (p<0.01) and also in the entire experimental period (p<0.001). Similarly, the average daily gain during the entire trial period was affected by the type of Zn source (p<0.001) and supplemental level (p<0.01). One degree of freedom contrast comparisons showed that the inclusion of organic zinc sources into the diets caused significant increases in feed intake and body gain when compared with inorganic counterparts. Except in wk 1, dietary supplementation with organic sources improved (p<0.05) feed conversion ratio; FCR values were not affected by dietary Zn source or supplementation level. Breast meat yield increased with supplemental levels of organic Zn sources; however, other carcass parameters were not affected by dietary Zn source. On the other hand, organic versus inorganic zinc supplementation caused a significant increase in liver, breast and carcass weight percentages. The present findings suggest that supplemental levels of organic Zn compounds had beneficial effects on broiler performance, and Zn requirements can be reduced using these feed supplements in poultry rations.

An experiment was conducted to investigate effects of fiber source on growth performance, N and neutral detergent fiber (NDF) digestibility, and utilization of energy in chicks fed an isocaloric low-energy diet from 7 to 21 days of age. Two fiber sources, cellulose and corn dietary fiber (CDF), were included in a diet at 10, 20 and 30% at the expense of kaolin, an inert diluent. The CDF contained 76.5% NDF consisting mainly of hemicellulose. The results showed that growth performance, N and NDF digestibility, dietary DE and ME values, energy deposition, and NE for production in birds fed CDF were inferior to those in birds fed cellulose. It can be concluded, from the present study, that chicks can utilize cellulose more efficiently than CDF up to a level of 30%.
In this study, food protein hydrolysates were prepared from six types of food protein: purified meat protein, whole egg protein, casein, isolated soy protein, concentrated rice protein, and gluten. Food proteins were hydrolyzed with pepsin and ethanol (80%)-soluble fractions of pepsin hydrolysates were employed for analysis. The products were colorless and odorless powders with low fat content and good solubility. The MW (molecular weight) of the protein hydrolysates was confirmed to be $200{\sim}1,800$ via gel filtration. Free amino acid contents accounted for less than 5% of the samples. The results of our amino acid analysis revealed that all food protein hydrolysates preserved their original amino acid compositions and nutritional values of their source proteins with highly pure oligopeptide mixtures. These results show that the food protein hydrolysates prepared in these investigations should prove excellent dietary nitrogen sources for a variety of applications.
The purpose of this study was to compare dietary behavior and food intake in relation to physical complaints, such as farmer' syndrome(FS) and gastro-intestinal(GI) problem among Korean farmers. The questionnaire was composed of 24 Cornell Medical Index (CMI), 8 farmers' syndrome, and 5 GI problem questions. Food intake data was gathered by the semi-quantitative food frequency method. The subjects(male 226, female 415) who had FS and Gi problem were 12./8% and 8.3%, respectively. The physical complaints were higher in female and the elderly group. In the FS group, lower activity was seen that in normal groups. The lower health status and fatigues were found in the physical complaint groups. Dietary behavior showed low appetite in the physical complaint group, irregular lunch in FS, and irregular breakfast in GI problem group. Changes in dietary behavior were shown in the aspects of lower amount of intake quantity(40.8%), lower consumption in fat(32.8%) and salty(38.8%) foods, and diverse food items(47.8%). Quantity of food consumed was significantly different withing groups with FS. Kinds of food consumed, intake of protein source foods, milk and calcium and total animal foods were lower in the FS group. But milk and calcium source food and all animal food intakes were higher in the GID problem group. The results suggest that dietary behavior and food intake differ within the group of physical complaints.

This study was conducted to explore the antioxidant potential and functional value of guava (Psidium guajava L.) powder in muscle foods. Guava powder was used as a source of antioxidant dietary fibre in sheep meat nuggets at two different levels i.e., 0.5% (Treatment I) and 1.0% (Treatment II) and its effect was evaluated against control. Guava powder is rich in dietary fibre (43.21%), phenolics (44.04 mg GAE/g) and possesses good radical scavenging activity as well as reducing power. Incorporation of guava powder resulted in significant decrease (p<0.05) in pH of emulsion and nuggets, emulsion stability, cooking yield and moisture content of nuggets while ash and moisture content of emulsion were increased. Total phenolics, total dietary fibre (TDF) and ash content significantly increased (p<0.05) in nuggets with added guava powder. Product redness value was significantly improved (p<0.05) due to guava powder. Textural properties did not differ significantly except, springiness and shear force values. Guava powder was found to retard lipid peroxidation of cooked sheep meat nuggets as measured by TBARS number during refrigerated storage. Guava powder did not affect sensory characteristics of the products and can be used as source of antioxidant dietary fibre in meat foods.
Dietary fiber imparts both mutritional and functional properties to foods. This review deals with (1) the classification of dietary fiber, (2) the plant cell wall models, (3) the relations between structure and physicochemical and functional properties of dietary fiber and (4) the applications of dietary fiber in foods. Dietary fiber can be classified in terms of source, plant function, solubility, charge and topology. Plant cell wall models are presented to provide information on the interconnections of dietary fiber components which determines the content of soluble and insoluble dietary fiber content. In reality, physicochemical and functional properties of dietary fiber originate factors such as chemical constituents , charge, branching degree, conformation and etc. Dietary fibers possess a variety of functional properties in food systems, which thus make them useful in food application. In particular, rheology and gelation of water-soluble gums or hydrocolloids are discussed for their effects on food quality. A guideline s also listed for the gum selection to meet the best product requirements.
