한국인 영양섭취기준에 대한 이해 및 새 교과서에의 적용 방안 (The Changes of Dietary Reference Intakes for Koreans and Its Application to the New Text Book)

  • 현대사회의 식생활 행태는 영양보충제와 건강보조식품의 사용 증가 및 영양소의 과다 섭취 문제에 따른 새로운 식생활 구조 변화와 건강 및 질병 양상 관리를 위해서는 새로운 개념이 도입되고 적용되기 위하여 2005년 한국인을 위한 영양섭취기준을 설정하게 되었으며 현재 새로운 개념의 영양섭취기준은 우리의 올바른 영양건강상태 관리는 물론 합리적인 식생활 관리 분야에서 적용되고 있으며 이에 따른 다양한 관련 분야의 식품, 영양학 분야에서 활용이 되고 있다. 이에 본 연구에서는 한국인 영양섭취기준을 중심으로 변화된 식생활 영역의 내용을 알아보고 올바른 이해를 통하여 개정된 교육과정에 준한 새 교과서에 적용할 수 있도록 방향 제시를 함으로서 새 교과서의 식생활 영역에 있어 내용의 충실함과 질적 향상을 도모하고자 하는데 목적을 가지고 있다. 한국인 영양섭취기준은 지금까지 사용된 영양권장량보다 보다 다각적인 측면에서 기준을 제공하므로 실제 적용 현장에서도 이해하는 정도와 적용 가능 여부에 대하여 어려움이 있는 실정이다. 더욱이 중학생 수준에서의 적용 수준을 결정하는 것은 어려운 일이다. 더욱이 7차 교육과정에 비해 개정 교육과정은 식생활영역의 내용의 제시 위치 및 분량 그리고 구성 요소의 근거 등에 변화가 있어 훨씬 어렵게 접근되어져야 하는 부분이다. 이는 국가의 미래를 책임질 어린이와 청소년의 학교교육에서 인간에게 가장 기본적이고 중요한 생활을 실천하는 실천 교과인 본 가정 교과의 새로운 교육 과정에 적용을 위해서는 새롭게 도입된 영양섭취 기준에 관한 올바른 이해를 통하여 실제 생활에 적용하여 실천할 수 있도록 노력해야 할 것이다.

한국 연안산 해산 무척추동물의 미네랄 함량과 영양평가 (Mineral Content and Nutritional Evaluation of Marine Invertebrates from the Korean Coast)

  • To measure the mineral contents of marine invertebrates, we collected 239 individuals from 52 species from the east (Pohang), west (Gunsan), and south (Tongyeong) coasts of Korea: 34 species of molluscan shellfish (Gastropoda and Bivalvia), 6 species of Cephalopoda, 8 species of Crustacea, and 4 other species. The mean contents of the macro mineral in the 100g edible portion of molluscan shellfish were high in the oder of Na (355.1 mg), P (128.1 mg), K (110.8 mg), Mg (83.8 mg) and Ca (57.5 mg). And the mean contents of the micro mineral in the molluscan shellfish were high in the oder of Fe ($41.12{\mu}g/g$), Zn ($30.48{\mu}g/g$), Mn ($3.81{\mu}g/g$), Cu ($3.49{\mu}g/g$) and Ni ($0.35{\mu}g/g$). We could not observe clear regional variation in the mineral content of the molluscan shellfish species. The mean contents of the macro mineral in the 100g edible portion of other marine invertebrates (Cephalopoda, Crustacea, etc.) were high in the oder of Na (400.7 mg), P (145.1 mg), K (105.0 mg), Mg (63.2 mg) and Ca (49.0 mg). And the mean contents of the micro mineral in other marine invertebrates were high in the oder of Zn ($24.4{\mu}g/g$), Fe ($13.8{\mu}g/g$), Cu ($4.88{\mu}g/g$), Mn ($2.14{\mu}g/g$) and Ni ($0.12{\mu}g/g$). The daily average intakes of the macro mineral through fisheries products consisted of P (125.9 mg), Na (119.3 mg), K (101.8 mg), Ca (31.0 mg), Mg (27.6 mg). And the daily average intakes of the micro mineral through fisheries products consisted of Zn (0.92 mg), Fe (0.68 mg), Cu (0.12 mg) and Mn (0.07 mg). The respective intakes of the minerals (P, Mg, Na, Ca, K) from fish were about 18.0, 7.9, 8.0, 4.4 and 2.2% of the dietary reference intakes for Koreans (KDRIs) set by the Korean Nutrition Society. And the respective intakes of micro mineral (Cu, Zn, Fe, Mn) from fish were about 14.6, 9.2, 6.7, and 2.1% of the dietary reference intakes for Koreans (KDRIs). Therefore, fisheries products play a very important role as a source of mineral.

The Supplementation of Yam Powder Products Can Give the Nutritional Benefits of the Antioxidant Mineral (Cu, Zn, Mn, Fe and Se) Intakes

  • Yam has been recognized having the beneficial effects for the prevention of various diseases, such as cancer, immunity, infection and obesity etc. There is increasing consideration to supplement the antioxidant nutrients to make up the lack of the antioxidant nutrient intakes. No study has been reported for the analysis of antioxidant mineral contents and comparison to dietary recommended intake for the sense of health promotion. In our study, we analyzed the contents of antioxidant trace elements (Zn, Mn, Fe, Cu and Se) and Cr contents in cultivated Korean yam powders for evaluation of nutrient intake aspects. We collected the commercial yam powders from six different cultivated areas in the South Korea and measured antioxidant minerals (Zn, Mn, Fe, Cu and Se) and Cr contents using trace element-free plasma spectrometer (ICP) or atomic absorption spectrometer (AAS) after dry-ashing and then wet-acid digestion. The accuracy of mineral analysis method was confirmed by the mineral analysis of standard reference material. Each analyzed element contents in yam were compared to dietary reference intakes of Koreans (KDRIs). The average levels of trace elements (Zn, Mn, Fe, Cu, Se and Cr) in yam powders were 18.3, 11.9, 36.0, 3.7, 1.9 and 1.27 ${\mu}g/g$ yam powder, respectively. The intakes of Zn, Fe, Cu and Se of which KDRIs is determined, are accounted as being up to 23.8%, 55.6%, 32.5% and 236% recommended intake (RI) of KDRIs, if daily yam supplementation (50 g) of commercial instruction would be considered. The intake of Mn is about 25% adequate intake (AI) of KDRIs with the daily supplementation of yam powder. Most of mineral intakes from daily yam supplementation were with the range of non-detectable to <10% upper limit (UL) level, which is very much safe. The study results show that daily supplementation of Korean yam power is beneficial to provide the supplemental nutrient intake and also is safe, if the suggested dosage would be considered.

울산지역 유치원 어린이의 <한국인영양섭취기준>에 의한 영양소섭취 실태 및 아연영양 상태에 관한 연구 (A Study on the Nutrient Intakes and Zinc Nutritional Status of Preschool Children in Ulsan)

  • The purpose of this study was to determine the zinc status of preschool children in Ulsan. The study was conducted in 95 children aged 3 to 6 years by investigating the anthropometric indices and assessing the biochemical analysis. The blood was analysed to assess serum zinc and alkaline phosphatase. And a questionnaire for dietary intakes using 24-hr recall method were performed by mothers of 95 subjects. The dietary intakes of children were analysed to determine the prevalence of inadequate and excessive intakes of zinc with Dietary Reference Intakes for Koreans (KDRIs). WHL (Weight-Length Index) and Kaup index were used to define obesity. The overall prevalence of overweight and obese subjects were 14.7% and 6.3% by WHL, were 15.8% and 13.7% by Kaup index. The mean intakes of zinc by children aged 3${\sim}$5y and 6y were 5.5 ${\pm}$ 1.4 mg/d (75.7% RDA) and 6.7 ${\pm}$ 2.0 mg/d, respectively, that was the level exceeding the estimated average requirement (EAR) and the recommended intake (RI) of Korean Dietary Reference Intakes. Less than 1.3% and 7.9% of children had usual zinc intakes below EAR and RI of KDRIs, respectively. The percentages of children with intakes exceeding the tolerable upper intake level (UL) were 2.6%. The zinc nutritional status by biological assay was found that mean serum zinc and alkaline phosphatase (ALP) of total subjects were 64.0 ${\pm}$ 8.4 ${\mu}$g/dl and 72.8 ${\pm}$ 14.9 U/L, there was not a significant difference between boys and girls. The range of serum zinc level was 45${\sim}$89 ${\mu}$g/dl and children with a low serum zinc concentration by several cut-off points were 18.9${\sim}$55.8%, especially. Serum zinc level was positively correlated to the intakes of calorie, calcium, fiber, iron, zinc, zinc/kg and height (p<0.001). Serum ALP was positively correlated height, weight and WLI. The zinc intake of children aiso showed a positive correlation with height and weight. These results indicate that there were significant correlations between the zinc status and growth of preschool children. Preschool children in Ulsan have dietary zinc intakes that exceed the new DRIs. The present level of intake does not seem to pose a health problem, but if zinc intakes with fortified foods and supplements were considered, the amount of zinc consumed by children may become excessive.

Dietary Reference Intakes for Koreans with special consideration to older adults

  • BACKGROUND/OBJECTIVES: The Dietary Reference Intakes for Koreans (KDRIs) were revised in 2020. Due to the rapidly aging Korean population, special consideration was given to reclassify the KDRI age group categories of older adults. This article examines the evidence for modifying the current KDRI age group ranges of older adults (65-74 and ≥ 75 yrs). SUBJECTS/METHODS: We first reviewed the domestic and international data on the elderly, following which we received expert opinions on age classification from the KDRI Advisory Committee. Finally, the 6th and 7th (2013-2017) Korea National Health and Nutrition Examination Survey (KNHANES) data were used to analyze the nutritional intake statuses by considering the age of older adults. RESULTS: According to the review results of domestic and international data and the inputs received from the expert advisory committee, the minimum age considered for the elderly was maintained at 65 yrs. However, the KNHANES data was analyzed to review whether there was a need to subdivide the later periods. Examining the differences in nutrient intakes by age group through the interaction effect term of the piecewise linear regression model revealed the interaction effect was maximum in the groups divided by 65 yrs (50-64 and 65-80), as compared to the groups divided by 70 yrs (50-69 and 70-80) and 75 yrs (50-74 and 75-80). The mean adequacy ratio was calculated per 1 yr of age, and a 3-yr (age) moving average analysis was performed to examine the change in the trends of overall nutrient intake. However, it was challenging to secure a scientific basis for subdivision into age groups in older adults from the results obtained. CONCLUSIONS: This study could not find any scientific evidence for modifying the KDRI age groups for older adults.

Nutritional intake of Korean population before and after adjusting for within-individual variations: 2001 Korean National Health and Nutrition Survey Data

  • Accurate assessment of nutrient adequacy of a population should be based on usual intake distribution of that population. This study was conducted to adjust usual nutrient intake distributions of a single 24-hour recall in 2001 Korean National Health and Nutrition Surveys (KNHNS) in order to determine the magnitude of limitations inherent to a single 24-hour recall in assessing nutrient intakes of a population. Of 9,960 individuals who provided one 24-hour recall in 2001 KNHNS, 3,976 subjects provided an additional one-day 24-hour recall in 2002 Korean National Nutrition Survey by Season (KNNSS). To adjust for usual intake distribution, we estimated within-individual variations derived from 2001 KNHNS and 2002 KNNSS using the Iowa State University method. Nutritionally at risk population was assessed in reference to the Dietary Reference Intakes for Koreans (KDRIs). The Korean Estimated Average Requirement (Korean EAR) cut-point was applied to estimate the prevalence of inadequate nutrient intakes except for iron intakes, which were assessed using the probability approach. The estimated proportions below Korean EAR for calcium, riboflavin, and iron were 73%, 41%, and 24% from usual intake distribution and 70%, 51%, and 39% from one-day intake distribution, respectively. The estimated proportion of sodium intakes over the Intake Goal of 2,000 mg/day was 100% of the population after adjustment. The energy proportion from protein was within Korean Acceptable Macronutrient Distribution Ranges (Korean AMDR), whereas that of carbohydrate was higher than the upper limit and that of fat was below the lower limit in the subjects aged 30 years or older. According to these results, the prevalence of nutritional inadequacy and excess intake is over-estimated in Korea unless usual intake distributions are adjusted for one-day intakes of most nutrients.

한국인의 단백질 섭취권장량 산출방법과 단백질 섭취권장량 변화 - 한국인 영양권장량과 한국인 영양섭취기준을 중심으로 - (A Study on Calculation Methods and Amounts Changes of Recommended Protein Intake in the Recommended Dietary Allowances for Koreans and Dietary Reference Intakes for Koreans)

  • 본 연구는 1962년 한국인 영양권장량의 제정부터 2010년 한국인 영양섭취기준 개정에 이르기까지 성인과 임신 수유부의 단백질의 섭취권장량 산출방법과 섭취권장량의 변화 추이를 살펴보았다. 1. 성인의 단백질 섭취권장량은 1989년까지 요인가산법을, 그 이후에는 질소균형연구를 활용하여 설정되었다. 요인가산법을 적용하였던 시기는 표준단백질 최소 필요량 또는 불가피 질소손실량을 기본 요인으로 하고 식이단백질의 이용율을 적용하였으며, 질소균형연구를 적용하였던 시기는 질소평형 유지에 필요한 식이단백질의 최소 필요량을 기본 요인으로 하였다. 그리고 개인 차, 스트레스 등의 조정 요인을 반영하여 단백질 섭취권장량을 계산하였다. 단백질 섭취권장량은 남성 50~80g/일, 여성 45~70g/일이었으며, 남성의 섭취권장량이 여성보다 크고, 연령대가 높을수록 섭취권장량은 감소하였다. 2. 임신부의 단백질 부가섭취권장량은 태아의 발육에 기인하는 단백질 축적량을 기본 요인으로 하고 식이단백질 이용율 등의 조정요인을 적용하여 산출하였고, 10~30g/일이었으며, 2010년에는 임신 기간을 3분하여 각각 0, 15, 30g/일을 제시하였다. 3. 수유부의 단백질 부가섭취권장량은 모유로 분비되는 단백질의 양을 기본 요인으로 하고 식이단백질 이용율 등의 조정요인을 적용하여 산출하였고, 20~30g/일이었으며, 시기별 증감 경향은 나타나지 않았다. 앞으로 체중 대신 제지방체중을 적용하는 단백질 섭취권장량의 산출 공식이 마련될 필요성이 있으며, 에너지와 마찬가지로 섭취하는 식이단백질의 조성에 근거한 개인별 섭취권장량의 계산방법 고안을 제언한다. 그리고 수유부의 경우 수유 기간을 구분하여 기간별 단백질 부가섭취권장량의 제정을 제언한다.

한국 연안산 어류의 미네랄 함량 및 영양평가 (Mineral Content and Nutritional Evaluation of Fishes from the Korean Coast)

  • To measure the mineral content of fishes, we collected 177 individuals from 53 fish species from the east (Pohang), west (Gunsan), and south (Tongyeong) coasts of Korea. The mean content of the macro mineral in a 100 g sample taken from the edible portion of each fish was (in descending order): P(207.4 mg), K(169.7 mg), Na(101.6 mg), Ca(44.4 mg), and Mg(30.4 mg). In comparison, the mean content of micro mineral in the fishes was (in descending order): Zn ($8.98{\mu}g/g$), Fe ($5.03{\mu}g/g$), Cu ($0.76{\mu}g/g$), Mn ($0.43{\mu}g/g$), and Ni ($0.08{\mu}g/g$). We could not observe clear regional variation in the mineral content of fish species. With regard to minerals considered essential for humans, the amount of Ca per sample (100 g) was the highest in the Scyliorhinus torazame (465.4 mg), and than followed by Ammodytes personatus (338.0 mg), Dasyatis akajei (267.4 mg), Raja kenojei (248.1 mg), Conger myriaster (174.1 mg), Clupanodon punctatus (86.8 mg), Muraenesox cinereus (81.2 mg), and Engraulis japonica (70.4 mg). The daily average intake of the mineral through the fishes consisted of P (100.6 mg), K (82.3 mg), Na (49.3 mg), Mg (14.8 mg), Zn (0.44 mg), Fe (0.24 mg), Cu (0.04 mg) and Mn (0.02 mg). The respective intakes of macro mineral (P, Mg, Na, Ca, K) from the fishes were about 14.4, 4.2, 3.3, 3.1 and 1.8% of the dietary reference intakes for Koreans (KDRIs) set by the Korean Nutrition Society. In comparison, the respective intakes of micro mineral (Cu, Zn, Fe, Mn) from the fishes were about 4.6, 4.4, 2.4, and 0.6% of the KDRIs.

Apolipoprotein E 다형성에 따른 사업장 근로자의 혈중 지질농도, 영양소 섭취 및 건강관련 생활습관 (Blood Lipid Levels, Nutrient Intakes and Health-Related Lifestyles of Industrial Male Workers According to Apolipoprotein E Polymorphisms)

  • The purpose of this study was to investigate the association among nutrient intakes and health-related lifestyles with cardiovascular disease risk assessed by blood lipid profile according to Apolipoprotein E genotypes. Middle-aged industrial male workers who had completed their annual medical examination were recruited and data of 675 subjects who finished the nutrient survey were used in the analysis. Anthropometric parameters, dietary assessment (FFQ), health-related lifestyles and blood profiles were used for statistical analyses. Apo E genotype groups were classified into the following three genotypes: Apo E2 group (including E2/E2, E2/E3, E2/E4), Apo E3 group (including E3/E3), Apo E4 group (including E3/E4, E4/E4). The frequency of Apo E2, E3, and E4 allele were 13.3%, 75.0% and 11.7% respectively. There were no significant differences in the anthropometric parameters depending on different Apo E genotypes. Also, no significant differences in the nutrient intakes were found according to the genotype groups. The nutrient intakes of all subjects were similar to or higher than the level of KDRIs (Dietary Reference Intakes For Koreans) except for intakes of calcium (67.44% of KDRIs), vitamin A (73.83% of KDRIs) and vitamin $B_2$ (78.02% of KDRIs). Also, there were no significant differences of health-related lifestyles according to Apo E genotype groups. As for the lipid profiles, Apo E4 group had significantly higher total and LDL-cholesterol concentrations than the Apo E2 group (p < 0.05). We confirmed that plasma total and LDL-cholesterol concentrations were greatly influenced by Apo E genotypes. However, nutrient intakes and health-related lifestyles were not associated with Apo E genotypes.

폐경 전후 여성의 신체계측, 골밀도, 식품섭취빈도, 영양소섭취 및 식사의 질 평가 - 국민건강영양조사 2008~2011에 기초하여 - (Evaluation of Anthropometric Characteristics, Bone Density, Food Intake Frequency, Nutrient Intakes, and Diet Quality of Pre- and Postmenopausal Women - Based on 2008~2011 Korean National Health and Nutrition Examination Survey -)

  • This study was conducted to investigate the anthropometric data, bone density, serum profiles, nutrient intakes and diet quality of premenopausal and postmenopausal women. For the study, we obtained data for analysis from the combined 2008~2011 Korean National Health and Nutrition Examination Survey (KNHANES). The height and weight were 157.8 cm and 58.7 kg in premenopausal women and 155.5 cm and 58.3 kg in postmenopausal women, respectively. The obesity rate was 27.49% in premenopausal women and 34.98% in postmenopausal women (p<0.001). Total cholesterol, LDL-cholesterol, triglyceride, GOT, GPT and alkaline phosphatase in postmenopausal women were significantly higher than those in premenopausal women (p<0.001). The prevalence of osteoporosis was 0.0~0.89% in premenopausal women and 0.48~13.22% in postmenopausal women (p<0.001). In postmenopausal women, rates of hypertension, stroke, myocardial infarction, depression, and diabetes were significantly higher than those in premenopausal women. Water, fat. ash, sodium, retinol, thiamin, riboflavin and niacin intakes in premenopausal women were significantly higher than those in postmenopausal women. Water, fiber, Ca, and, K intakes were below KDRIs (Dietary Reference Intakes for Koreans) in both groups. The mean adequacy ratio (MAR) of premenopausal women was higher than that of postmenopausal women (p<0.001). The index of nutritional quality (INQ) in premenopausal women was also higher than that of postmenopausal women except iron and vitamin C. Therefore dietary guidelines and an education program should be developed for desirable improvement of health, bone density, nutrient status and dietary quality of postmenopausal women.
