영양정보를 제공하는 웹사이트에 대한 평가 (Evaluation of Websites on Nutrition Information)

  • The rating instrument to evaluate the quality of nutrition information websites was developed and ten websites which were maintained by nutrition expert(s) and frequently linked to other related sites were evaluated. The rating instrument with 15 questions on credibility, content, purpose, and design was developed. Eleven college students majoring in Food and Nutrition rated each question as 'Yes', 'No', 'Cannot tell' while visiting each site. The questions rated most often as 'Yes' were 'Is it capable for a user to interact with a responsible person for the site?', 'Is the information provided by nutrition expert?', 'Does the information fit in with dietary guideline?' in the order. The questions rated most often as 'No' were 'Is the source of the information indicated?', 'Is the purpose of the site stated?', and 'Is an internal search engine working?', indicating these categories need betterment. The questions rated most often as 'Cannot tell' were 'Is the information current?', 'Is the information provider credible?', indicating that these may be difficult questions for college students to evaluate. Individuals or institutions who are providing nutrition information on the internet now or plan to provide later are expected to consider the problems pointed out in this study, and offer highly qualified information to the users in an effective way. Various rating instruments to evaluate the quality of nutrition information websites can be developed based on a variety of criteria. It is, however, to be desired that a standardized rating instrument would be developed by a leading group of nutrition experts, and the results of site review with the instrument be open to the public in order to improve the quality of Korean nutrition information on the internet.

맞벌이가정과 일반가정의 식생활현황에 관한 비교 연구 (A Study on the Status of the Employed and Housewives' Meal Management in Daejeon City)

  • In order to obtain an information for the improvement of wives' meal management especially in dual-income families, the survey was carried out through questionaires to 159 married women teachers(employed wives: EW) and 157 housewives(HW) in Daejeon city, from the Sep. 20 to 30, 1983. Most of the two groups' wives did not plan menu(74.7 %), and considered taste firstly when meal preparation and food buying. In EW, time was more considered than the other points for meal preparation and cookbook was more used than other sources of cooking methods, while in HW, cost, and, the mass media (p<0.01). Among 6 convenience foods, sausage, ham were used more frequently in EW and instant noo-dles and fried fish cake, in EW. Both the two groups' dietary pattern of three meals was similar, but much more of the EW(56.1 %) purchased foods for between meals rather than prepared at home in comparision with the HW. Almost all the HW prepared three meals themselves but the EW did not so. In the EW, husband and mother-in-law often assisted with meal-related activities, but in the HE, daughters (p<0.01) . HE spent more time on meal-related activities than do EW (Hw: 4.1 hrs/day, Ew·: 3.2 hrs/day) . The preparation time for supper was longest among three meals. As the problems of meal management, both the two groups' wives pointed 'too much time' (43.1 %), 'lack of nutrition knowledge '(42.8 %), but EW' husbands, 'no variety of cooking method'(42.8 %), while HW' husbands, 'lack of nutrition knowledge'(34.3 %).

  • 비만의 치료와 관리에 있어서 식이요법과 운동요법은 비교적 단기간의 효과는 입증 되었지만, 장기간 체중유지가 되지 못한다는 문제가 있다. 그래서 비만연구가들은 치료의 현장에서 행동수정요법을 활용한다. 그러나 행동수정요법의 식습관 및 생활습관 개선만으론 체중관리에 있어서 지속적인 결과유지는 여전히 큰 문제로 남아 있다. 그래서 본 연구에서는 기존 비만치료의 한계를 조금이나마 해결하고자, 행동수정요법의 장점에 인공지능을 활용한 비만관리를 제안한다. 인공지능 비만관리는 대상자들에게 인공지능으로 테이터화 된 문자메시지를 각자의 상황에 맞게 보내는 프로그램이다. 무엇보다도 인공지능 일대일 맞춤형 비만관리 메시지는 유연한 설득, 격려, 동기부여를 통한 운동지속의 효과를 강화시키는 연구 제안이다.

서울시 일개 지역에 거주하는 중장년의 건강문제 및 건강행위 (The Middle-aged's Health Problems and Health Behavior in an Urban Area)

  • The purpose of this study is to identify health problems and health behaviors of the middle-aged residing in urban areas and to plan and implement health promotion programs based on their health needs. The subjects' age ranged from 30-64 years in 1.040 middle-aged residing in an area of Kangbook-ku in Seoul. The data were collected from September 1998 to February 1999 with structured questionnaire using face-to-face or telephone interviews. The data were analyzed by SPSS-PC+ and identified by $X^2$ test and ANOVA. The results were as follows: 1. 35.4% of the males and 27.8% of the female responded that they were healthy regarding their perceived health status. In the order of chronic illness prevalence in the case of males was hypertension, diabetes, and digestive disorders and. in the case of females, was digestive disorders, hypertension, arthritis, anemia, and diabetes. 2. Male and female's smoking rates were 7.3% and 3.6% each and marked the highest rate of 30 to 40 years: drinking behavior was 66.9% in males and 32.2% in females. 3. The younger males had the worse dietary habits and had the lowest frequency of regular exercise. The older the females were, the more their weight increased. According to the results, health promotion programs by sex are recommended, especially in the target population of 30 to 40 years. and focused on the strategies for promoting self-care and actual health practice: it is strongly suggested that health promotion programs for adolescent and school-aged children before middle aged health behavior begins.

북한이탈 청소년을 위한 통합적 건강증진 프로그램 개발 (Development of a comprehensive health promotion program for North Korean young adult defectors in South Korea)

  • Purpose: The purpose of this study was to develop a comprehensive health promotion program for North Korean young adult defectors in South Korea. Methods: The comprehensive health promotion program consisted of nutrition, mental healthcare, physical activity and sexual behavior was developed on the basis of need assessment results. For the evaluation of the program, 70 North Korean young adults who were attending two alternative schools for North Korean defectors were recruited. The program had taken place once a week for 13 or 19 weeks. Effectiveness of the health promotion program was evaluated using anthropometric measurement, 3-day food records and a questionnaires that comprised the Hospital Anxiety and Depression Scale (HADS), the Short Form with 36 questions (SF-36) and health behaviors. The surveys were proceeded at the beginning and after the program. Results: After health promotion program, participants' height was significantly increased (p=0.004) and body fat mass (0=0.004) and percentage of body fat mass (p=0.003) were significantly decreased. The number of subjects who ate breakfast alone was decreased whereas the number of subjects who ate breakfast with friends was increased (p<0.001). There were no significant changes in dietary intakes, mental health status and quality of life. North Korean young adult defectors' willingness to participate and interests in the health promotion program were high, however the practice rate was low. Conclusion: The health promotion program could induce interests and willingness to participate, but bring about limited effects on the health behaviors. These results imply that a health promotion program for North Korean young adult defectors should have a long-term strategy as well as short-term plan. Furthermore, it should be based on their health problems, health related behaviors, academic performance and daily life matters.

암묵적 태도검사(Implicit Association Test, IAT)를 이용한 남녀 중학생의 가정교과에 대한 성편향성 태도 연구 (A Study of the Gender-Biased Attitudes of Korean Middle School Students toward Home Economics as a Subject: Implementing the Implicit Association Test)

  • The purpose of this study was to develop an Implicit Association Test to measure students' gender-biased attitude toward Home Economics, a required subject in middle-school and to examine the effects of gender, gender-biased attitude toward Home Economics, and gender egalitarianism on the perception of the subject. A total of 508 male and female middle-school students were surveyed using Qualtrics. The results revealed that the students had a gender-biased attitude of perceiving Home Economics as feminine as a whole, and this tendency was more evident among female than male students. To the contrary, their attitudes toward Home Economics as a subject was generally favorable when asked explicitly using self-administered questions. Among the high school elective classes, students preferred 'fashion' most, followed by 'dietary life', 'technology and home economics', and 'family life culture'. Female students, students with patriarchal attitude, and students who has gender-biased attitude toward Home Economics were more likely to perceive Home Economics as an alienated and less important subject. The generally positive explicit attitude toward Home Economics may be the results the social desirability effect due to the education. However, the home economists should develop a plan to overcome the gender-biased implicit attitude in order for the value of Home Economics as a subject to be fully addressed.

Probabilistic exposure assessment, a risk-based sampling plan and food safety performance evaluation of common vegetables (tomato and brinjal) in Bangladesh

  • Along with the widespread use of pesticides in the world, concerns over human health impacts are rapidly growing. There is a large body of evidence on the relationship between the exposure to pesticides and the elevated rate of chronic diseases such as different types of cancers, diabetes, neurodegenerative disorders like Parkinson, Alzheimer, and amyotrophic lateral sclerosis (ALS), birth defects, and reproductive disorders. This research assessed the health risk of pesticide residues by the dietary intake of vegetables collected from the agro-based markets of Dhaka, Bangladesh. As some of the banned pesticides were also found in vegetable samples, they may pose a higher risk because of cheaper availability and hence the government of Bangladesh should take strong measures to control these banned pesticides. Five organo phosphorus (chlorpyrifos, parathion, ethion, acephate, fenthion) and two carbamate (carbaryl and carbofuran) pesticide residues were identified in twenty four samples of two common vegetables (tomato and brinjal). The pesticide residues ranged from below a detectable limit (< 0.01) to 0.36 mg·kg-1. Acephate, chlorpyrifos, ethion, and carbaryl were detected in only one sample, while co-occurrence occurred twice for parathion. Continuous monitoring and strict regulation should be enforced regarding the control of pesticide residues in fresh vegetables and other food commodities in Bangladesh.

밀키트(Meal Kit) 제품의 사용자 경험 디자인 연구 (A Study on Meal Kit User Experience Design)

  • 본 연구는 밀키트(Meal Kit) 제품 정보의 사용자 경험 디자인 연구로서 구매자에게 필요한 제품 정보와 사용 편의성을 위한 필요사항을 도출하고 개선방안을 제안하는 데 목적이 있다. 밀키트 제품을 구매할 때 영양 섭취에 관한 정보 표기와 패키지 디자인, 환경에 관한 문제를 국내 밀키트 브랜드 피코크와 프레시지 2종을 비교 분석하였다. 연구방법으로는 1차로 문헌 연구와 선행연구를 통해 밀키트 제품 구매 요인 7가지 요소를 도출하여 설문 조사를 진행하였고, 2차로 30대 1인 가구 남녀 4명씩, 총 8명을 대상으로 심층 인터뷰를 진행하였다. 연구 결과, 구매자에게 만족을 주는 요인으로는 조리 과정, 음식, 맛/영양, 패키지, 편리성, 가격, 정보 순으로 나타났으며, 과대포장 또한 문제점으로 드러났다. 이를 통해 밀키트 제품의 개선사항 도출과 발전 방안을 제시할 수 있었다. 본 연구가 향후 1인 가구의 식생활개선과 밀키트 제품 개발에 도움을 줄 것으로 기대한다.

Development of an Evidence-based Nutritional Intervention Protocol for Adolescent Athletes

  • [Purpose] Effective nutritional intervention can help reduce the risk of nutritional problems and improve athletic performance in adolescents. The five A's (assess, advise, agree, assist, and arrange) model is widely used as the theoretical framework for advice on nutrition, smoking, drinking, and physical activity and it recommends that practitioners in primary health care promote behavior change to facilitate positive outcomes. This model has also been useful in understanding the underlying processes of behavior change. This study aimed to develop both a novel evidence-based nutritional intervention protocol, rooted in sound nutritional theory, and a customizable nutritional intervention program to support sustainable healthy eating, enhance nutrient intake, and improve athletic performance in adolescent athletes. [Methods] In this study, we adapted the 5 A's behavioral change model and motivational interview to develop a theoretical framework to help adolescent athletes change their behavior and achieve their goals. [Results] During each step of the 5 A's protocol, a customized nutritional intervention protocol was developed by nutrition experts for each of adolescent athletes. Each plan was developed to improve the eating habits of adolescent athletes through group education and counseling. All nutritional counseling sessions were designed to enable participants to apply nutritional knowledge and practical action plans to their training and competition conditions to enable each of them to achieve individual athletic goals and facilitate self-management. [Conclusion] A theoretical and evidence-based nutritional intervention protocol was developed to identify and address obstacles to healthy dietary habits in adolescent athletes. This could be used as the basis for further studies aimed at improving nutrient intake and athletic performance in adolescent athletes.

서울지역 여대생의 BMI를 기준으로 식생활, 영양섭취상태 및 혈액인자 비교 연구 (Comparison of the Dietary Pattern, Nutrient Intakes, and Blood Parameters According to Body Mass Index (BMI) of College Women in Seoul Area)

  • 본 연구는 $20{\sim}24$세의 여대생 대상으로 비만유형에 따라 각 군별로 식습관과 식생활 평가, 영양섭취상태 및 혈액인자가 건강에 어떠한 영향을 주는지를 조사하였다. 체질량지수 (BMI)에 따라 저체중군, 정상군, 비만군으로 분류하였을 때, 신장은 군 간에 유의적인 차이가 없었지만, 체중 골격근량 체지방량 제지방량 체지방률 및 waist-hip ratio는 비만군에서 가장 높았다(p<0.05). 조사대상자의 식습관은 매일 아침식사를 하는 경우는 129명 중 저체중군은 36명 27.9%, 정상군은 88명 68.2%, 비만군은 5명 3.9%로 나타났으며, 전체 조사대상자의 아침 식사의 결식률도 15.3%나 되었다. 아침 결식의 이유로는 아침시간이 바쁘거나, 늦게 일어나서 아침을 거르는 경우가 많았으며, 결식으로 인한 배고픔을 간식으로 대체하고 있어 하루에 $1{\sim}2$회 정도 간식을 한다고 답하였다. 식생활 평가를 보면, 저체중군에 속하는 여대생들은 육류, 생선, 알류 등의 단백질 식품의 섭취(23.4%)와 과일 및 과일주스의 섭취(37.8%)를 많이 하는 경향을 보였으며, 비만군에 속하는 여대생들은 삼겹살, 갈비 등 지방이 많은 육류를 주 2회 이상 먹는 비율(77.8%)과 김치 및 채소를 식사 때마다 먹는 비율(66.7%)이 다른 군에 비해 높았다(p<0.05).그러나 비만군에 속한 여대생의 경우 모든 식품을 골고루 섭취하려고 많은 노력을 하였으며, 저체중군에 비해 오히려 비만군에서 식생활과 건강에 더 많은 관심을 보이고 있는 것으로 나타났다. 영양소 섭취상태 중 콜레스테롤 섭취량은 오히려 다른 군에 비해 비만군에서 낮았고(p<0.05), 전체 여대생의 영양소 섭취상태를 한국인 영양섭취기준과 비교해 볼 때, 철, 칼슘, 섬유소의 섭취는 제시된 기준치에 비해 현저히 낮았으며, 소디움의 섭취는 오히려 기준치에 비해 과다하게 섭취하는 것으로 나타났다. 혈액 검사 결과 혈중 총 콜레스테롤, HDL-cholesterol 및 HDL-C/LDL-C(ratio)는 비만군에서 낮았으며, 중성지방 수치는 다른 두 군에 비해 비만군에서 매우 높은 수치를 나타내었다(p<0.05). 혈중 총콜레스테롤은 각각 HDL-cholesterol 및 LDL-cholesterol과 정의 상관관계를 보였으며, 중성지방은 HDL-cholesterol과 역의 상관관계를 보였다. 따라서 본 연구의 결과를 보면, BMI에 의해서 분류된 세 그룹 모두에서 아침 결식률과 운동부족이 문제가 있는 것으로 나타났다. 저체중군에서는 균형적인 영양섭취가 요구되는 것으로 나타났고, 비만군에서는 너무 본인의 신체적 문제를 의식하여 식품의 섭취에 있어서 균형적인 식사를 무시하고, 체중을 줄이려고 편식을 시도하려는 경향이 있는 것이 문제점으로 지적되었다. 따라서 저체중군, 정상군 및 비만군에 상관없이 여대생의 현실에 맞는 전반적인 식생활의 개선과 건강 증진을 위한 영양교육 강화의 필요성 및 체계적인 식사관리 프로그램이 요구됨을 알 수 있었다. 또한 비만인 뿐만 아니라 저체중의 비율도 높아 자신의 건강상태를 올바르게 판단하여 자신에게 맞는 식생활 계획을 세우는 것이 필요하다고 사료된다.
