  • This is an analysis of the dietary behavior, nutrient intake status and INQ(Index of nutritional quality) of 129 college women according to their residences in the Daegu area. The average height and weight were 160.0 cm and 54.5 kg respectively. Diet intake data were obtained by using the 24-hour recall method to evaluate the usual diet of the subjects. The energy intake of the group, living alone was higher than that of living a roommate and living at home. Ca, Fe, Zn and folate intakes were low in all the groups. The composition rate of carbohydrate, protein and fat for energy intake was 58.9 : 15.5 : 25.6 in living alone, 59.9 : 15.1 : 25.0 in living with a roommate and 61.2 : 15.5 : 23.3 in living at home, compared with the preferred of 65 : 15 : 20. The group living alone showed significantly better mean adequacy ratio(MAR, 0.7) than the other groups (p<0.05). The group living with a roommate showed significantly better INQ in vitamin $B_6$ (p<0.01) and Fe (p<0.05) than the other groups did In conclusion, this study indicates that nutrient intake in college women in Daegu is considerably lower than the RDA values. Furthermore the group living alone showed better dietary behavior and nutrient intake status than the other groups. A nutrition education program for college women is necessary.

  • The Dietary Reference Intakes (DRI's) are new nutrient intake standards that are being set for the United States and Canada. There are currently four types of DRI's: Estimated Average Requirements (EAR), Recommended Dietary Allowances (RDA), Adequate Intakes (AI), and Tolerable Upper Intake Levels (UL). The EAR is the nutrient intake that would be adequate for about half the population, while intake at the RDA should be adequate for 97-98% of the population. When the data are insufficient to set an EAR and RDA, then an AI is set. The UL is the highest intake level that does not pose a risk of adverse effects. The EAR, AI, and UL may be used to assess intakes of both individuals and of groups of people. For individuals, the EAR is used to calculate the probability that intake is inadequate, the AI is used to decide if the probability of inadequacy is low, and the UL is used to determine if a risk of excess intake is present. For groups. the EAR is used to estimate the prevalence of inadequacy, the AI is used to decide if the prevalence of inadequacy is low, and the UL is used to estimate the prevalence of excessive intakes. Because this approach to setting and applying nutrient standards is new, research recommendations include improving estimates of risk, improving dietary data, and improving statistical methods.

  • Using data obtained from 1, 473 adults aged 18-68 yrs, residing in large cities and by use of a semi-quantitative food frequency questionnaire, we assessed the relative importance of various foods as indicators of both the amount and the variability of selected nutrient intake to develop a simple food frequency questionnaire. Since Cronba- ch's alpha value of the questionnaire including 78 food items was 0.76, the reliability of this questionnaire was acceptable. A large fraction of the variability of nutrient intake in this population could be explained by the small number of food items. The estimation of dietary nutrient intake such as total calories or protein content, which are derived from almost all foods, will require more food items with nutrients such as calcium or vitamin A, which are concentrated in a few food items. A dietary history ascertaining the intake of as few as 5-19 food items mighted be all needed in order to determent the associa- tion between disease outcome and the intake of a single nutrient. There was certainly a high level of agreement with nutrient intake by the sbujects who were cross-classified by quartiles of nutrient indices based on all the food items(78) and by quartiles of nutrient indices based on food items selected by stepwise multiple regression for selected nutrients. The data provided further evidence that useful information on dietary intake over an extended period can be obtained by a simple and relatively inexpensive food frequency questionnaire.

  • Working towards the compression of morbidity, we attempted to find the way to contribute to desirable aging and/or healthy old age. By looking into the factors affecting nutrient intake in middle-aged adults, we sought to find ways to improve their health status, Two hundred and fifty middle-aged adults from 40 to 60 years of age residing in Seoul and its vicinity were recruited for the survey. Subjects were interviewed for general characteristics, dietary habits lifestyle, status and food intake by a trained interviewer. Two -day food record was included in addition to the 1 -day 24 hr recall. Date were analyzed for the relationship among nutrient intake, health status, socio-economic status dietary habits and lifestyle using a statistical program (SAS) Although the mean energy intake of the subjects did not reach the recommenced dietary allowances(RDA), mean protein intake was well above the RAD for both sex groups(111.2% and 129.1% for men and women, respectively) The caloric contribution of fat was 15 to 20 % of total energy intake among different groups. Riboflavin was the most deficient nutrient and its mean intake reached only 71.0% of RDA for mean This seemed to be due to the lower intake of milk and dairy products among middle-aged Koreans who are more accustomed to traditional meals. Income and exercise habit were the most important factors influencing the nutrient intake of middle-age adults. Also, BMI, smoking habit, level of education regularity of meal, and hours of sleeping influenced the nutrient intake, In conclusion, middle-age adults appeared to have similar problems with the elderly in terms of nutrient intake and this age group should to included when considering nutritionally vulnerable groups in addition to the elderly and young children. The improvement in the nutrition status of middle-age adults is even more important because that could lead into the better health the elderly.

  • The purpose of this study was to estimate the relationships between dietary factors and the stress perception levels of College students. A survey was conducted in June, 2010, targeting 332 college students in Gwangju. General environmental factors, stress perception levels, dietary behaviors, and dietary action guide performance of the subjects were evaluated by questionnaire, and food intakes was determined by the 24-hour recall method. The results are summarized as follows.: The score of frequency experiencing was $45.1{\pm}16.9$ for male students, and $47.0{\pm}16.7$ for female students. The importance scores were $50.8{\pm}18.5$ for males, and $53.3{\pm}18.7$ for females. The total score for dietary action guide performance was $39.6{\pm}7.2$ for males and $40.6{\pm}6.5$ for females. Nutrient intake levels were evaluated based on dietary reference intake (DRI), revealing energy intakes to be 68.5% EER in males and 73.9% in females. The mean intakes of nutrient were 54.2% RI for calcium, 73.6% RI for riboflavin, and 51.2% RI for vitamin C but 203.6% AI for sodium, which indicates an imbalance in nutrient intake. Analysis of the correlations between stress perception levels and dietary factors, scholarship achievements, financial problems, future problems, value senses, and family relationships revealed significant correlations with general environment factors, dietary behaviors, Dietary action guide performance, and nutrient intakes (p<0.05). The higher the stress perception levels of the students, the higher the energy, coffee and alcohol intake, which predicts that appropriate stress control in college students will lead to better dietary habits. It is expected that the results above will be used as basic data for the development of proper nutrition education programs and stress control strategies.

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. • This study investigated the effect of sleep duration on food and nutrient intake among adult Koreans. The effects of sleep duration on dietary patterns was studied in 7,370 Korean adults, aged 20 and older, who participated in the 1998 Korean National Health and Nutrition Survey in which the 24 hour recall method was used to estimate dietary intake. Sleep duration data from individual subject were collected by interview as a part of a behavior survey. Analysis of variance and Duncan's multiple range test were used to test the differences in food and nutrition intake and sleep duration. Food intakes of the male subjects were not significantly different among three groups. However, there were significant differences observed in intakes of beverage and alcohol among female subjects among the three groups. There were no significant differences observed for nutrient intake by sleep duration for either gender. Unlike the observation from European and American studies, food and nutrient intake of Korean subjects, in general, were not greatly affected by duration of sleep. This result may suggest that dietary habits of Koreans, as affected by sleep, are quite different from those of Europeans & Americans.

  • To assess the nutrient intake and diet quality of Korean adults living in rural area, dietary survey with one day 24 -hour recall method was given to 2037 subjects over 30 years of age living in Yeoncho-gun, Kyungki province of Korea, together with health survey. The mean daily energy intake was 1583 kcal, with 65.4% of energy intake being supplied by carbohydrate, 15.9% by protein and 18.7% by fat. Eighty percents of total food intake were supplied by vegetable food and the rest in the form of animal food . As well as insufficiencies in calcium and iron intake, the bioabailability of calcium and iron is considered to have been low because most of those intakes came form plant origins. For most nutrients except phosporous, proportions of subjects with intake levels less than 75% of RDA was over 40% and highest in the elderly. Those proportion of low intake among female were higher than those among male. The mean adequacy ration(MAR) , an index of overall dietary quality was 0.62 for females and 0.68 for males and decreased with increase of age. The indexes of nutritional quality (INQ) were over 1 for most nutrients except 0.06 of vitamin A, 0.73 of calcium and 0.85 of vitamin C, Nutrient intake levels less than 75% of RDA may be appropriate as a criteria for insufficiency of nutrient intake. Based on these results, it is evident that some of adults in rural areas did not consume enough nutrients, especially vitamin A, calcium and vitamin B$_2$, and that the dietary intake of female and the elderly was not adequate .

  • As a disease that reduces quality of life, functional dyspepsia (FD) is associated with foods that may worsen its symptoms or cause it. The purpose of this study was to examine the nutritional status and dietary behaviors of FD patients. We investigated food intake, food intake frequency, and dietary habits of 45 FD subjects according to the Rome III Diagnosis Criteria. Average age and body mass index (BMI) were 47.7 years and $22.6kg/m^2$ (males: $23.4kg/m^2$, females: $22.1kg/m^2$), respectively. Average energy intake was 77% of Korean Dietary Reference Intake (KDRI), and it was less than that of the Korea National Health and Nutrition Examination Surveys (KNHANES). Other nutrient intake levels were similar to the KNHANES. Energy intake proportion of carbohydrates : protein : fat was 56 : 18 : 26, and the ratio of fat intake was higher than that of the KNHANES. Beans, laver, tomato, and yogurt were consumed very frequently. In the results of meal regularity, dietary behaviors and composition of diet were relatively good. It is likely that the patient controlled their diet by eating cautiously and by reducing alcohol drinking and smoking. Our results indicate that FD patients' nutritional status by consumption of nutrients was at a level of normal healthy people and that dietary habits were better than normal adults. However, their fat intake levels were somewhat higher than normal people. Therefore, further research is required to identify the relationship between dietary intakes and FD.
