To determine the effect of sodium plus potassium to chloride ratio and lysine level on blood pH, blood acid-base parameters, lysine-arginine antagonism and growth performance, four hundred and thirty two chicks of 3 days age were used in a completely randomized $3{\times}3$ factorial experiment. Variables contained three levels of lysine (0.8, 1.2 and 1.6%) and dietary electrolyte (100, 200 and 300 mEq/kg). Birds fed 200 mEq/kg and electrolyte had the best growth rate and feed efficiency, followed by those fed 300 mEq/kg and 100 mEq/kg electrolyte. It is proposed that high levels of dietary electrolyte may improve the growth of chicks fed diets containing excess lysine by increasing lysine catabolism. High or low levels of lysine and dietary electrolyte resulted in higher mortality than those of optimum level (1.2%) of lysine and 200 mEq/kg of electrolyte balance. When the electrolyte level was increased, the pH, $pCO_2$, base excess, $HCO_3{^-}$ and total $CO_2$ of blood plasma were increased. The utilization of nutrients was changed when the electrolyte and lysine were manipulated. Plasma chloride tended to be greater in chicks receiving high chloride diet and was the highest in chicks fed the high lysine diet. Plasma sodium and potassium were unaffected by dietary lysine. Diet containing high lysine decreased the level of arginine and excess dietary electrolyte increased arginine level in plasma. It may be concluded that cation supplementation tended to alleviate the lysine-arginine antagonism but chloride exacerbated. Tibia bone length and ash contents were significantly affected by electrolyte balance and lysine level.

The purpose of this study was to investigate the effects of dietary xylooligosaccharide on lipid levels of serum in rats fed high cholesterol diet. Male Sprage-Dawley rats weiging 100$\pm$10g were randomly assigned to groups of two normal(N, N+10X) and four high cholesterol diets which contained 1%(w/w) cholesterol. High cholesterol diet groups were classified to xylooligosaccharide free diet (C group), 5% xylooligosaccharide diet(C+5X group), 10% xylooligosaccharide diet(C+10X group) and 15% xylooligosaccharide diet(C+15X group) according to the level of dietary xylooligosaccharide supplementation. These experimental diets were fed ad libidum for 4 weeks. The weight gain of high cholesterol diet group were significantly increased more than that of normal group, but those of 10% and 15% dietary xylooligosaccharide groups were significantly decreased more than that of high cholesterol diet(C)group. The higher content of xylooligosaccharide, the more food intake was increased. The food efficiencies of 10%, 15% cholesterol diet groups were lower than that of high cholesterol diet(C)group. The levels of serum triglyceride(TG) and total cholestoral were significantly high in cholesterol diet groups compared with normal diet group but were decreased in groups fed 5% and 10% dietary xylooligosaccharide. Especially, the lowest level showed in group fed high cholesterol diet containing 10% xylooligosacchride. High cholesterol diet group containing 10% xylooligosaccharide increased HDL-cholesterol level and then decreased LDL-cholesterol level and atherogenic index compared with other groups. The level of TBARS(thiobarbituric acid reactive substances) in serum was decreased in rat group fed xylooligosaccharide in high cholesterol diet. The higher content of xylooligosacchride, the more gastrointestinal transit time was decreased. The results indicate that dietary xylooligosaccharide can improve status of TG and total cholesterol and repress lipid peroxidation in serum lipid at hypercholesterolemia induced by high cholesterol diet.
A total of 1512 Ross 308 broilers (one - day - old) were assigned (random blocks) to 1of 3 dietary treatments with 28 replicates of 18 chicks/cage. The dietary treatments were Cornsoybean-meal based basal diet supplemented with 0%, 0.1%, and 0.2% of commercial yeast hydrolysate (YH [Saccharomyces cerevisiae]). The graded level of YH supplementation has linearly increased broilers body weight gain on d 21, 35, and overall (p = 0.044, 0.029, and 0.036, respectively) experimental period. In addition, the increased level of YH supplementation has linearly reduced feed conversation ratio of broilers on d 21, 35, and overall trial period (p = 0.041, 0.052, and 0.032, respectively). However, the feed intake and mortality of broilers were not affected by the graded level of YH supplementation. Though nutrient digestibility of dry matter (p = 0.012) and nitrogen (p = 0.021) was linearly increased in broilers fed YH supplementation, at the end of the trial it fails to affect the total track digestible energy. Dietary inclusion of YH supplementation showed a beneficial effect on the microbial population as linearly improved lactobacillus (p = 0.011) and reduced Escherichia coli counts (p = 0.042). An increasing level of YH supplementation has tended to decrease NH3 (p = 0.069) and linearly decrease H2S (p = 0.027) of noxious gas emission in broilers. Moreover, dietary YH supplements trend to increase the glucose (p = 0.066) and reduced cholesterol (p = 0.069) level. At the end of the test, YH supplementation elicited a linear reduction in drip loss on days 5 and 7, respectively (p = 0.045, and 0.021). Furthermore, dietary inclusion of YH supplementation had linearly increased villus height (p = 0.051) but fails to affect crypt depth. Therefore, in terms of positive effects on the broiler's overall performance, we suggest that dietary supplements containing graded YH levels in the broilers diet could serve as a potential alternative for growth promoters.

This study evaluated the effect of microwave-dried black soldier fly (Hermetia illucens) larvae meal (HILM) as a dietary protein source for broiler diets. A total of 250 male broilers were randomly allocated to five dietary treatment groups (10 replicates and 5 birds·pen-1) which were respectively fed the following: a control diet (HI0) and four experimental diets in which soybean meal was replaced with 2 (HI2), 4, 6, and 8% HILM. At the end of the study (35 d), blood samples were collected from 10 randomly selected broilers (1 bird per pen) to determine serum parameters. Then, the broilers were slaughtered to determine volatile fatty acid (VFA) profiles in cecal digesta. The average daily gain and average daily feed intake linearly decreased (p < 0.01), and the feed conversion ratio linearly increased (p < 0.05) according to the inclusion level of HILM; however, there were no significant differences between the HI0 and HI2 groups. Dietary HILM increased (p < 0.01) the total VFAs in cecal digesta and decreased (p < 0.05) the triglyceride level in the blood. The broilers fed HILM had lower (p < 0.01) serum phosphorus levels; dietary HILM increased (p < 0.05) the serum calcium level. The total VFAs in cecal digesta were positively influenced by the dietary microwave-dried HILM. However, a low inclusion level (2%) of HILM in broiler diets is proper in terms of growth performance and health.
Fifty-four PIC barrows were used to evaluate the effects of lower dietary lysine content and energy level on carcass characteristics and meat quality in slaughter pigs. Pigs were allotted to one of three treatments by body weight with six replicate pens in each treatment. The dietary treatments for body weights of 20-50 kg, 50-80 kg and 80-90 kg were as follows, respectively: control diet (digestible energy 14.22 MJ/kg, lysine/DE 0.67 g/MJ, 0.53 g/MJ and 0.42 g/MJ); a low lysine group (digestible energy 14.22 MJ/kg, lysine/DE 0.49, 0.38 and 0.30 g/MJ); and a low lysine-low energy group or low nutrient group (digestible energy 13.11 MJ/kg, lysine/DE 0.49, 0.38 and 0.30 g/MJ). The daily weight gain, daily feed intake and feed efficiency were calculated in the overall growth period (nearly 12 weeks). Meanwhile, carcass characteristics and meat quality were evaluated at 60 and 90 kg body weight respectively. During the overall growth trial, lowering dietary lysine and nutrient level both decreased weight gain (p<0.05) and feed efficiency (p<0.01). At 60 kg body weight, decreasing dietary lysine and nutrient level noticeably decreased dressing percentage (p<0.01) and back fat depth at last rib of PIC pigs (p<0.01), but enhanced marbling scores (p<0.10), intramuscular fat content (p<0.10) and water loss rate (p<0.01) of the longissimus dorsi muscle. At 90 kg body weight, lean percentage (p<0.01) was evidently reduced by both lowering lysine content and nutrient level in the diet. However, the shoulder back fat depth (p<0.05) and marbling scores of the loin eye muscle (p<0.05) were increased; Lowering dietary nutrient level could improve back fat depth of 10th rib (p<0.01) and last rib (p<0.01), intramuscular fat content (p<0.10), redness (p<0.01) and water loss rate of the loin eye muscle (p<0.05), but decrease loin area (p<0.05). Finally, when comparing the 60 kg and 90 kg slaughter weights, it was found that the shoulder back fat depth (p<0.01, p<0.10), 6th-7th rib (p<0.01, p<0.01), 10th-rib (p<0.01, p<0.01) and last rib back fat depth (p<0.01, p<0.01) of the low lysine and low nutrient group were all obviously increased comparing with the control group. Taken together, the results showed that decreasing dietary lysine content and nutrient level increased intramuscular fat content and water loss rate of longissimus dorsi muscle; On the other hand, both lowering dietary lysine and nutrient level markedly compensated to increase back fat deposition in the later finishing period (body weight from 60 to 90 kg) in contrast to the control group.
This study aimed at the effect on serum glucose and lipid profiles according to carbohydrate / lipid intake ratio in Korean 191 NIDDM patients. Most of NIDDM patients belong to under 50-64 years. As carbohydrate intake level increased, lipid intake level decreased. The group of higher carbohydrate / lipid intake ratio shows significantly high in fasting glucose level and postprandial glucose in NIDDM patients. The higher carbohydrate / lipid intake ratio the higher dietary linoleic and $\omega$-3 fatty acid level but not in dietary $\omega$3/$\omega$6 ratio. Serum HDL decrease inhigher carbohydrate lipid intake ratio group. Serum total lipid and PUFA level decrease according to ditary total lipid intake decrease in men but not significantly different.

The purpose of this study was to find out the stress level, dietary behavior score, and relationship between stress level and dietary behavior score of middle school male students in Daejeon. Eight items of stress such as family, study, amusement, health, friend, girl friend, teacher, and daily life, and 3 items of eating behavior such as diet regularity, dietary balance and healthy diet were analyzed. The data were gathered by questionnaires from 140 students in Joong gu, Daejeon city during July 10 to 14, 2006 and 128 questionnaires(91.4%) were analyzed. The conclusion of this study were summarized as follows: 1st, the total stress level was 2.36 out of 5 full scales. The study related stress was the highest 2.93, and the stress related to girl friend was the lowest, 1.96, though there were no significant differences among the 8 kinds of stress items. 2nd, the total score of dietary behavior was 3.02 out of 5 full scales. 3rd, when the students were divided into 3 groups(low, meddle, and high group) according to the stress level, the middle group showed the highest score of dietary behavior, while the high group showed the lowest score, but non-significant. 4th, according to the relationships between stress levels and dietary behavior scores, significant relationships were found between the total stress score and dietary balance. And diet regularity score were influenced by stress items such as family related, study related, and health related.
Objectives: The study was performed to examine the dietary behaviors and life stress of middle school students in the Gyeonggi area. Methods: A total of 580 middle school students (295 males, 285 females) in the Gyeonggi area participated in the study between July and August in 2011. The study was a questionnaire-based survey that included dietary habits, dietary behaviors, and life stress. Results: For dietary habits, the score for drinking milk was higher in male students than in female students, whereas the score for eating fruits was higher in female students compared to male students. There were significant differences in foods eaten and preferred under stress between male and female students. Male students showed significantly less changes in the number of meals, amount of meal intake, number of snacks, snack intake, frequency of overeating, and appetite during stress than female students. Life stress score of students largely came from academic factors, and female students showed higher stress levels in personal and surrounding environment factors than male students. Life stress score was significantly lower in students with high and moderate levels of dietary habits than in students with a low level of dietary habits. Total score for dietary habits and scores for eating adequate amounts of foods for each meal, considering a combination of food groups at each meal and eating green and orange vegetables, were significantly negatively correlated with life stress score. Life stress score was significantly negatively correlated with meal regularity and positively with the level of overeating. Conclusions: This study may provide basic information on dietary habits and life stress according to gender and the relationship between dietary behaviors and life stress of middle school students, and it suggests gender-based nutrition education programs to solve undesirable dietary habits and dietary behaviors in students with higher stress.
This study wa performed to investigate the effects of dietary protein and fiber on the lead and protein metabolism in lead poisoning rats. Seventy male rats of Sprague-Dawley strain weighing 172$\pm$2g were blocked into 14 gropus according to body weight. Protein(casein) was given at levels of 15 or 40%, and fibers(pectin, cellulose and CMC) were given at levels of 0, 4 or 10%. The results are summarized as follows: 1. Food intake, weight gain and food efficiency ratio(FER) in groups fed high protein diets were higher than those in low protein groups. Liver weight in groups fed no dietary fiber was higher than that of animals fed fiber. Kidney and femur weights were greater in high protein groups. Tibia and femur lengths, and tibia weight were not significantly different among groups. 2. Hemoglobin content and hematocrit values showed no significant differance with dietary factors. 3. Total protein contents of serum and liver showed no significant difference, but tended to increase with increasing dietary protein level. Both daily urinary and fecal nitrogen excretions in high protein groups were higher than those in low protein groups. Especially daily fecal nitrogen excretions in high dietary fiber groups were significantly high. Body nitrogen absorption rate was the highest in animals fed no fiber. 4. Pb levels in blood, liver, kidney and bone tended to decrease with high dietary protein and fiber levels. Especially Pb level of kidney was high in all groups. Daily urinary Pb excretion showed no significant difference with dietary factors, but fecal Pb excretion increased significantly in high protein and fiber groups.
This study explored the effect of dietary levels of Na and Ca on spontaneously hypertensive rats (SHR). SHR were randomly divided into 5 groups and fed a high fat/cholesterol diet containing three levels of Na (0.05, 0.1, 1.5%) and Ca (0.1, 0.5, 1.5%) for 9 weeks. Body weight gain was not influenced by dietary intake but water intake significantly increased in high Na supplementation. Systolic blood pressure was not influenced by dietary Na and Ca levels but was decreased by dietary low Na/high Ca levels at 9 weeks. Angiotensin-II level was affected by dietary Na level but not by Ca levels. Plasma Ca, Mg, K and Na levels were in the normal range regardless of dietary Na and Ca levels. Weight, and K and Na contents of the heart and kidney were not significantly different among those with different dietary Na and Ca levels. Ca and Mg contents of the heart and kidney were significantly higher in the normal Na/normal Ca group. Ca and Mg in the feces were higher in those with high Ca intake. Na in the feces was higher in those with high Na intake. Therefore, Na and Ca had different mechanisms in the hypertension/hyperlipidemia models, respectively. And we suggested that Mg must be supplemented when Ca intake was high because Mg excretion was increased by Ca supplementation.
