  • Food intake patterns and iron nutritional status of male and female college students were studied based on dietary iron density. Dietary data were collected using the method of 24-hour recalls for 3 consecutive days from 106 students, and fasting blood were drawn to measure iron nutritional status indicators such as total iron binding capacity, serum iron, hematocrit, hemoglobin, and red blood cell count. Mean daily iron intakes of male and female students were 13.3㎎ and 10.0㎎, which were 107% and 63% of the RDA, respectively. However, dietary iron density were similar between male and female students as 5.9㎎/1,000㎉ and 5.7㎎/1,000㎉, respectively. The diets were divided into two groups according to iron density; high iron density group (6㎎/1,000㎉ or more) and low iron density group (less than 6㎎/1,000㎉). The students in high density group had lower intakes of energy, especially fat, than those in low density group. Female students in high density group showed significantly higher intakes of iron, and non-heme iron and folate than those of low density group. The students in high density group consumed more rice, hamburger, and eggs, while those in low density group consumed more Ra-myon and alcoholic beverages. The students in high density group consumed greater proportions of iron from plant-origin foods. Vegetables, legumes and seasonings were the food groups that female students in high density group consumed significantly more than those in low density group. Also the percentages of female students with iron deficiency were higher in low density group. These results suggest that diet with high iron density is important to improve iron nutritional status of women, and further research about the effective way to increase iron density in our diet is needed.

  • This study was intended to investigate the nutritional status between lactating and non- lactating women, especially calcium and iron. The subjects were 84 lactating women and 20 non-lactating women visiting a public health center and hospital in Daegu. Each subject was interviewed to collect the information on dietary intake for 2 consecutive days. Biochemical assessment of iron status and bone mineral density (BMD) measurement were conducted. Dietary intake of carbohydrate, potassium, Vit $B_1,\;B_2$, Vit C were significantly higher in women during lactating period (p<0.05). However, relative intake as expressed by percentage of Korean Recommended Dietary Allowances (RDA) was not significantly different between the two groups. The dietary intake of iron and calcium were 58.8%, 60.4% of Korean RDA respectively in women during lactating period. The current food habit score of these women was significantly higher than that of non-lactating women (p<0.05). When we compared the quality of nutritional status, the Index of nutritional quality (INQ) was significantly higher for vitamin $B_2$, P in lactating women than in non-lactating women (p<0.1). Mean adequacy ratio (MAR) was not significantly different between two groups. Dietary variety score (DVS) was significantly higher in women during the lactating period (p<0.05). There was no significant difference in biomarkers (Hb, Hct, Serum ferritin, Transferrin) related to iron status between the two groups. No significant difference in bone mineral density (BMD) T-score was not observed. However, it appeared that BMD of lactating women was lower than that of non-lactating women.

  • This study was conducted to examine the correlation among growth development, bone mineral density, and nutrient intakes in preschool children. A total of 62 preschool children measured the anthropometric characteristics and the bone mineral density of carpus using DEXA. The questionnaires categorized to determine health status, life style, dietary behaviors, and dietary intakes were filled out by children's mothers. The average ages of the study subjects were 62.4 months in boys and 62.1 months in girls. The birth height and weight of the subjects were 50.9 cm and 3.4 kg in boys and 50.3 cm and 3.3 kg in girls, respectively. The average height, weight, % body fat, and obesity index were 111.7 cm, 19.6 kg, 15.0%, -2.1% in boys and 109.4 cm, 18.7 kg, 17.5%, 0.2% in girls, respectively. The bone mineral density in carpus was 0.25 g/cm$^2$ in boys and 0.24 g/cm$^2$. In girls. Proportions of children having regular meals were 69.0%, 94.7%, and 69.0% for breakfast, lunch, and dinner, respectively. The major reasons for irregular meal were poor appetite and lack of time for breakfast and snacks for dinner. Most of the children(52.6%) had breakfast with the whole family together, and all the children had lunch and dinner with a part of the family. Most of the children answered they had snack more than once a day, and 64.3% had an unbalanced diet. The intakes of energy, calcium, iron, zinc, vitamin A, vitamin B$_1$, niacin, and vitamin C did not meet the Korean RDAs. Average bone mineral density in carpus was positively correlated to the body weight, the total body water, the lean body mass, and the obesity index, respectively(p<0.01, p<0.01, p<0.01 and p<0.01). The body weight, the total body water, and the lean body mass showed the significant negative correlations with the animal iron intake(p<0.05, p<0.01 and p<0.01). The bone mineral density in the distal carpus was negatively correlated to the animal protein intake and the animal iron intake(p<0.05 and p<0.05). And the bone mineral density in the ultradis carpus and the average bone mineral density in the carpus were positively correlated to the plant calcium intake(p<0.05 and p<0.05). Therefore, more systematic studies to investigate the roles of protein, iron, and calcium in growth development of preschool children were required.

  • The purpose of this study was to investigate the relationship between nutritional status of iron and bone minernl density in premenopausal women. In the study, we classified the subjects into osteopenia (-2.5-I, n=29) groups according to their lumbar spine bone mineral density. Anthropometric measurements, dietary intake analysis and blood biochemistry measurements were performed on the subjects. The average ages of those in the osteopenia and normal groups were 22.2 yrs and 23.0 yrs, respectively, with no significant difference. The average body mass index (p<0.05) of those in the osteopenia group (19.6) was significantly lower than that of the normal group (21.3). The mean protein intake of those in the osteopenia group was significantly lower than that (p<0.05) the subjects in the normal group. The osteopenia group consumed a significantly lower amount of iron (p<0.05) and non-heme iron (p<0.05) compared to the normal group. The intakes of total food, vegetables and milk of those in the osteopenia group were significantly lower than those of the subjects in the normal group. The serum ferritin (p<0.001) level of those in the osteopenia group was significantly lower than those of the subjects in the normal group. In conclusion, a balance of iron status may be helpful in the prevention of bone mass loss in premenopausal young women.

  • This study was conducted to examine the effect of dietary iron levels on lipid metabolism, antioxidative and antithrombogenic capacities in 16-month-old rats. Thirty-two Sprague-Dawley male 16-month-old rats weighing 618 $\pm$ 6 g were raised for 10 days with medium-iron diet (35 ppm in diet) and blocked into 4 groups according to their body weights. One of groups was sacrificed to obtain initial data and the rest 3 groups were raised for 3 months with experimental diets containing different levels of iron (5 ppm, 35 ppm, and 350 ppm). Total lipid, triglyceride and total chole-sterol concentrations in plasma and liver, HDL-cholesterol concentration in plasma, fecal total lipid triglyceride and total cholesterol excretions, thiobarbituric acid reactive substances (TBARS) level in plasma LDL + VLDL (low density lipoprotein + very low density lipoprotein) fractions, blood-clotting time and eicosanoids levels in plasma were measured. The results are as follows: Plasma total lipid, triglyceride and total cholesterol concentrations, TBARS level in plasma LDL + VLDL fractions were increased and blood-clotting time tended to be shortened during 3 months of experimental period. Low (5 ppm) iron diet improved lipid metabolism via increasing HDL-cholesterol and fecal choles-terol excretion. High (350 ppm) iron diet decreased plasma total lipid, triglyceride and total cholesterol concentrations as compared to medium (35 ppm) iron diet and lowered body weight and epididymal fat pad weight. On the other hand, TBARS level in plasma LDL + VLDL fractions and blood-clotting time were increased with high iron diet. It is plausible that low iron diet improves lipid metabolism, antioxidative and antithrombogenic capacities in 16-month-old rats.

  • To investigate the effects of dietary patterns on bone mineral density and its biochemical markers among Korean healthy college women for 2 years, 34 female college students were recruited through convenience sampling. Bone mineral density was measured using Dual Energy X-ray Absorptiometry (DEXA) twice at baseline and two years later. Osteocalcin and parathyroid hormone were measured in fasting serum and N-teleopeptides of type collagen (NTx) in urine. Dietary intake was assessed by 24-hour recall method 8 times with average 4-month interval. Dietary patterns with percent energy of each food group using cluster analysis were classified into two groups. The first cluster (n = 16) was characterized with high consumption of bread, snack, fast foods, beverage and considerable of rice so it was determined as 'Modified dietary pattern group'. The second cluster was characterized with high consumption of rice and kimchi so determined as 'Traditional dietary pattern group'. There were no significant difference of age, menarcheal age, body mass index but percent of body fat by pattern groups. The traditional group showed higher value of bone mineral density among lumber spine and all femur sites at baseline and 2 years later but it was not significant after adjusted for percent of body fat. Serum osteocalcin and urine NTx was higher among the traditional group at baseline than the modified group. There were similar proportions of carbohydrate:fat:protein between groups but significantly higher intake of protein, iron, vitamin A among the traditional group. In conclusion, there were two distinctive dietary patterns among Korean college women. There was difference of bone mineral density and its biochemical markers between two patterns. Further research would be necessary to explore the relationship between dietary patterns and health risks for larger-sized and various populations.

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. • This study was conducted to investigate the anthropometric data, bone density, serum profiles, nutrient intakes and diet quality of premenopausal and postmenopausal women. For the study, we obtained data for analysis from the combined 2008~2011 Korean National Health and Nutrition Examination Survey (KNHANES). The height and weight were 157.8 cm and 58.7 kg in premenopausal women and 155.5 cm and 58.3 kg in postmenopausal women, respectively. The obesity rate was 27.49% in premenopausal women and 34.98% in postmenopausal women (p<0.001). Total cholesterol, LDL-cholesterol, triglyceride, GOT, GPT and alkaline phosphatase in postmenopausal women were significantly higher than those in premenopausal women (p<0.001). The prevalence of osteoporosis was 0.0~0.89% in premenopausal women and 0.48~13.22% in postmenopausal women (p<0.001). In postmenopausal women, rates of hypertension, stroke, myocardial infarction, depression, and diabetes were significantly higher than those in premenopausal women. Water, fat. ash, sodium, retinol, thiamin, riboflavin and niacin intakes in premenopausal women were significantly higher than those in postmenopausal women. Water, fiber, Ca, and, K intakes were below KDRIs (Dietary Reference Intakes for Koreans) in both groups. The mean adequacy ratio (MAR) of premenopausal women was higher than that of postmenopausal women (p<0.001). The index of nutritional quality (INQ) in premenopausal women was also higher than that of postmenopausal women except iron and vitamin C. Therefore dietary guidelines and an education program should be developed for desirable improvement of health, bone density, nutrient status and dietary quality of postmenopausal women.
