There is growing evidence that soy isoflavone play beneficial roles in the prevention of chronic diseases such as hormone dependent cancers, cardiovascular diseases, osteoporosis and also reduced incidence of menopausal symptoms. However current data are not sufficient to determine the effective doses for beneficial as well as harmful effects and to support dietary recommendation for isoflavones. Since soy products containing isoflavone are one of the common food items that Koreans consume daily basis, assessing consumption of soy isoflavone by Koreans will give a valuable information on making dietary recommendations for isoflavones. the present study was designed to assess dietary intake of isoflavone of Korean middle-aged women who might receive the most beneficial effects from isoflavone consumption thereby prevent post menopausal related symptoms and diseases. In this study isoflavone contents of soy products were analyzed and soy products and isoflavone consumption of these subjects were assessed by a self-reported dietary questionnaire and isoflavone intake data base. Subjects were consisted of 178 Korean women (35~60 y) who live in urban and rural area. All subjects provided detailed information on demographics, anthropometry, health history, menopausal symptoms, health history, menopausal symptoms, and dietary intake using food frequency questionnaire (FFQ) which was developed for Koreans. The average age of the subjects was 46.6 years. The soy products which the subjects frequently consumed were soybean paste soup, braised fried soybean, tofu residue stew, tofu, soy milk, natto stew, bean sprouts, and soybean broth which contained 10.68 mg, 3.34 mg, 2.44 mg, 2.42 mg, 2.42 mg, 1.12 mg, 1.02 mg, 0.33 mg of isoflavone per 100 g, respectively. The estimated daily intake (EDI) of isoflavones ranged from 0 to 144.3 mg, and the mean daily isoflavone (sum of daidzein and genisten) intake of the subjects was 24.41 mg.
Sister chromatid exchanges(SCE) in peripheral lymphocytes is recently used as a biomarker for increased cytogenetic damage in smokers. The purpose of the investigation was to determine if there were any relationships between dietary factors and their DNA damage as measured by SCE test in a group of 62 male cigarette smokers and 36 non-smokers. As expected, smokers as compared with non-smokers had high SCE levels (10.59$\pm$0.21 versus 9.23$\pm$0.17 SCE/lymphocytes ; p<0.05). No significant relationships were observed between SCEs and age in smokers and non-smokers. In smokers, SCEs were negatively correlated with egg frequency score(r=-0.336) and total food frequency scores(r=-0.283). In non-smokers, SCEs were positively correlated with white vegetable frequency score(r=0.333) and instant food frequency score(r=0.382). There was a positive association between SCEs and the history of coffee intake of smokers(r=0.318). SCE frequency was not influenced by any other dietary factors considered ; dietary diversity and quality scores, alcohol consumption, use of processed foods and intake of burned food. No significant relationships were found between SCEs and serum cholesterol or other hematological parameters of the subjects. These results indicate that increased egg frequency score, total food frequency score which reflects dietary quality, and decreased coffee intake may reduce cancer risk by preventing smoking-induced DNA damage as reflected by sister chromatid exchanges in human lymphocytes.
This study was carried out to see dietary intakes of patients with coronary heart disease since we don't understand their dietary patterns even though the mortality and prevalence rate of coronary hear disease are increasing in this country. We studied 75 coronary heart disease patients and 150 randomly selected controls, matched for age, sex, height and weight, in a population based study. All subjects completed a questionnaire that included disease history, diagnosis time, current treatment, etc., a 24 hour dietary recall, and measurement of height and weight. Compared to controls, patients had less likely to drink alcohol and smoke cigarette (p<0.05). The energy intake of patients was significantly lower than that of controls, but the intakes of fiber, $\beta$-carotene, sodium, folate, vitamin C, potassium in male patients and those of vitamin C and sodium in female patients were significantly higher than those of controls (p<0.05). Mean adequacy ratio and dietary variety score of patients were also higher than those of controls (p<0.05). Patient group's consumed less cereals than controls, but more vegetables, milk products, and nuts in male patients and fruits, beans and seasonings in female patients compared to controls'. There were not significant differences of lipid compositions between two groups, except linolenic acid. These data suggest that patients with coronary heart disease in Korea had better dietary nutrient intakes compared to healthy controls, which might be helpful to prevent recurrence of coronary heart disease.
A diet rich in proinflammatory components and inflammation are suggested to be significant risk factors for multiple sclerosis (MS). This study aimed to investigate the association between the risk of MS and the inflammatory potential of an individual's diet and dietary diversity through pro-inflammatory/anti-inflammatory food intake score (PAIFIS) and dietary diversity score (DDS). In a hospital-based case-control study, 397 participants, including 197 patients with MS and 200 healthy participants aged over 18 years, were evaluated. The history of smoking, dietary intake, and anthropometric characteristics, including body mass index, waist circumference, total body fat, and fat-free mass were assessed. A validated 160-item semiquantitative food frequency questionnaire was used to calculate the PAIFIS and DDS scores. The mean age of the participants was 32.45 ± 8.66 years, and most were females (274, 79.4%). The PAIFIS score was significantly higher among MS patients than healthy participants (p = 0.001). Between PAIFIS and DDS, only PAFIS was significantly related to MS risk (odds ratio, 1.002; 95% confidence interval, 1.001-1.004; p = 0.001). PAIFIS, as an index of dietary inflammation, can predict MS. Further studies are needed to document these findings.
The effects of dietary calcium levels on the blood pressure and calcium metabolism were investigated. Nine normotensive female college students having hypertention family history were participated in 4-week dietary expeiments. They were provided with either high Ca diet (HCa, average 797mg/day) or low Ca diet(LCa, average 225mg/day) during two weeks, each, consecutively. Sodium amounts of the body diets were 3566~4022mg/day, which were ordinary sodium intake levels in Korea. After the HCa, systolic blood pressures(SBR) in both seated and isogrip-seated postitions were decreased by about 2.5mgHg, comparing with those after the LCa(p<.05). Diastoilc blood pressures(DBP) were not changed by dietary calcium levels. Serum total Ca, ionized Ca, Mg and P levels and Ca/Mg ratio were not different between the HCa and the LCa. Serum parathyroid hormone(PTH) levels were similar between two diets, but individually in seven of nine subjects, the slightly lower values of PTH were observed after the HCa than after the LCa. Urinary excretion of Ca(p<.01), Mg(p<.05) and P(p<.1) were increased after the HCa comparing with the LCa, but Ca/Mg ratio were not different between the two diets. SBP was in positive correlations with boty urinary excretion of Ca(supine, r=.7356, p<.05) and urinary Ca/Mg ratio(isogrip-seated, r=.7483, p<.05). SBP was also negatively correlated with serum P level(supine, r=-.6930, p<.05) and DBP was in negative correlation with urinary P excretion(seated, r=-.8586, p<.01). Serum total and ionized Ca, Mg, Ca/Mg ratio were not significantly correlated with blood pressures.

We aim to unveil dietary history recorded in Neolithic human bone from Janghang site at Gadeok Island, Busan. Excavation of Janghang site at Gadeok Island from 2010 to 2011 is an outstanding discovery in Korean Neolithic archaeology. A large number of human bones (48 individuals) were found at Janghang site, which is the largest-scale Neolithic cemetery in Korea. We extracted human bone collagen from 10 individuals and stable carbon and nitrogen isotope analysis were carried out using carbon and nitrogen analyzer connected to a continuous-flow isotope-ratio-monitoring mass-spectrometer. Although bone histological analysis shows poor preservation state, stable isotope results correspond well with bone collagen quality indicator, which implies that bone collagen reflects lifetime signature. Stable carbon and nitrogen isotope result indicates highly marinebased diet(${\delta}^{13}$C=$-14.5{\pm}1.3$‰, ${\delta}^{15}$N=$-17.4{\pm}1.7$‰, n=10), however the possible input of terrestrial animal and wild plant cannot be excluded. Our isotopic findings provide an invaluable information on Neolithic subsistence economy in this coastal area. In addition, Janghang site shows specific features in burial methods and burial goods. Two different burial methods of arranging bodies are found with extended burial type and particularly high ratio of flexed burial type. There are also burial goods such as pottery. However, there are no significant isotopic differences according to burial methods and burial goods. Although this is a preliminary study on this site, our research will provide important clues in understanding isotopic dietary history of Korean Neolithic people.
The purpose of this study was to investigate the dietary compliance and related variables in NIDDM patients. One hundred and fourteen patients at two hospitals in Seoul were interviewed and height, body weight, family history and postprandial blood glucose were analyzed statistically along with the dietary practices. 1) When the degree of dietary compliance was expressed as Tunbridge score, 75% was grouped as satisfactory, 9.7% as Tolerable, and 14.9% belonged to Hopeless group. 2) Calorie intake of the subjects was lower then RDA. Carbohydrate, fat, and protein contributed each 60 : 22 :18. When SFA was used 1, the relative ratio of PUFA : MUFA : SFA was 0.8 : 1.2 : 1. 3) The mean score of knowledge test on diet therapy was 5.6$\pm$2.9 out of possible 12.0 points. 4) Age had significant positive correlation with duration of diabetes(p<0.001), and significant negative correlation with scores of knowledge test on diet therapy was observed(p<0.001). 5) The difference of actual and prescribed calorie intake had positive correlation with PP2 blood glucose level(p<0.05), and significant negative correlation with age(p<0.05). 6) Statiscally significant variables on the practice of diet therapy were the present body weight, protein and carbohydrate intake, age, and sex.
Several self-administered dietary assessment questionnaires have recently been developed, validated, and used in nutritional epidemiological and clinical studies in Japan. This article describes recent evidence on development and validation of them. After extensive search of published articles both in English and Japanese languages, we identified 25 articles on 13 questionnaires of which validation studies have existed. Number of foods/menus assessed varied from 31 to 169 according to questionnaires. Eleven questionnaires were food frequency type, either with fixed portion size or semiquantitative, and two diet history types. All the 13 questionnaires were validated against intakes assessed with dietary record or 24-hour recall, and only two with biomarkers. Number of subjects used in the studies was between 23 and 350. All the studies used adult subjects. In the studies with dietary record or recall, the correlation coefficient for or orgy intake was between 0.22 and 0.65 (median = 0.44). Median correlation coefficient for nutrients was between 0.21 and 0.61. In the studies with biomarkers, serum marine-origin n-3 polyunsaturated fatty acids and carotenes, and urinary potassium seemed useful biomarkers. In conclusion, recent progress of this field in Japan is remarkable. But more research is needed for validation studies with biomarkers, and the development and validation of questionnaires for children and elderly subjects. (J Community Nutrition 5(2) : 83∼92,2003)
Objective: Gastric cancer is an important public health problem in the world and Turkey. In addition to Helicobacter pylori (H. pylori), smoking, alcohol consumption and family history, certain dietary factors have been associated with its occurrence. The impact of dietary habits and life-style factors on the risk of gastric cancer in Turkey were evaluated in this study. Design: A questionnaire was applied to 106 patients with gastric adenocarcinoma and 106 controls without cancer matched for age (range 28-85 years) and gender selected from a hospital based population. Adjusted odds ratios (ORs) and 95% confidence intervals (CI) were calculated with logistic regression analysis. Results: The incidence of H. pylori was 81.3% in patients. Frequent consumption of salty dishes, very salty foods like pickles, soup mixes, sausages, foods at hot temperature (ORs = 3.686, 7.784, 5.264, 3.148 and 3.273 respectively) and adding salt without tasting (OR = 4.198) were associated with increased gastric risk. Also heavy smoking and high amount of alcohol consumption (p = 0.000) were risk factors. Frequent consumption of green vegetables, onion, garlic and dried fruits (ORs = 0.569, 0.092, 0.795 and 0.041) was nonsignificantly associated with decreased risk. Conclusion: Improved dietary habits, reducing salt consumption and eradication of H. pylori infection may provide protection against gastric cancer in Turkey.
