  • This study was designed to assess the iron nutritional status of girls at puberty in Kangnung area. The subjects consisted of 161 adolescents in sixth-grade in primary school and first-grade in middle school girls. Anthropometric measurements were taken for body weight, height, percentage of body fat, and circumferences of waist and hip. Nutrient intakes were assessed by modified 24-hour recall method. Food models and other measuring tools were also used. Fasting blood samples were obtained and analyzed for hemoglobin(Hb) concentration, hematocrit(Hct), serum iron(FE) and total iron binding capacity(TIBC). Mean values for Hb, Hct, Fe, TIBC, TS and serum ferritin were $13.6{\pm}0.9g/dl$, $39.6{\pm}3.9%, 91.3{\pm}36.3{\mu}g/dl$, $327.9{\pm}45.2{\mu}g/dl$, $28.3{\pm}11.8%$ and $37.4{\pm}24.2ng/ml$, respectively. Prevalence of iron deficiency greatly varied by indices from 4.8% when judged by Hb to 18.4% by serum Fe concentration. The Hb concentration was positively correlated with Hct(r=0.641), serum iron(r=0.266) and transferrin saturation(r=0.237)(p<0.05). On the other hand, serum ferritin concentration showed significantly negative correlation with TIBC(r=-0.572). Mean daily intake of iron was 14.94mg and heme iron intake was 1.13mg and which was 7.6% of total iron intake. Total absorbable iron calculated by the method of Mosen was 1.38mg and bioavailability of dietary iron was 9.3%. These results suggest that the prevalence of iron deficiency of pubertal girls is very high, therefore the guidelines for diet and social supports, such as, school food service system should be provided to improve their iron status in middle school students.

  • This study was conducted to investigate the effects of smoking on nutrient intake and blood mineral status. The subjects were composed of two groups.55 smokers and 52 non-smokers. A 24-hour recall method was used along with questionnaires and serum mineral levels were analyzed by ICP spectrometer. The average ages of the smokers and non-smokers were 55.5 and 59.3 years old, respectively. The height, obesity degree, BMI, and WHR of the smokers were significantly higher than those of the non-smokers (p < 0.05, p < 0.05, p < 0.05, p < 0.01) Approximately 45.5% of the smokers smoked 16-20 cigarettes per day. The average age that the smokers started smoking was 22.0 years old and their smoking history was 33.5 years. About 74.5% of the smokers drank alcoholic beverages, while 44.2% of the non-smokers did. The smokers tended to eat less meals and breakfast meal, but drink coffee more often compared to the non-smokers. The mean daily energy intake and CPF energy intake ratio were 1231.8 ㎉ and 69.8 : 14.8 : 14.7 in the smokers and 1210.2 ㎉ and 72.1 : 14.7 12.7 in the non-smokers, respectively. The results show that the smokers tended to consume more energy, lipid, and cholesterol compared to the non-smokers. The results also show that in both groups, nutrient intake was lower than the RDA. The two groups were not significantly different in terms of the intake frequency of green-yellow vegetables and fresh fruits. There were no significant differences in serum levels of Ca, P, Mg, Cu, Fe, Mn, and Zn. However, serum Se level of the smokers was significantly higher than that of the non-smokers. In conclusion, the subjects of this study showed a serious imbalance in the nutrient intake, and the smokers showed a more undesirable dietary intake in the light of their high intake of energy, lipid, cholesterol, alcoholic beverages, and coffee. The serum Se level of the smokers was higher than that of the non-smokers, showing that Se is involved in smoking, Therefore, it could be suggested that more systematic research be conducted with respect to Se and smoking and that increased nutrition education and guidelines for smokers are required.

  • The elderly is a target group for health functional foods (HFFs). We surveyed 825 Korean elderly (71.4- years-of-age) for HFF use and significant variables for HFF use including demographic characteristics, health related variables, and nutritional beliefs. The prevalence of HFF use was 48.7%, and among all types of HFF, red ginseng products were eaten most frequently, followed by ginseng products, nutritional supplements, and mushroom products. The mean age of users of HFFs was lower than nonusers (p<.01). HFFs were eaten more frequently by subjects from families living with a spouse or unmarried children (p<.01) and those with higher levels of monthly pocket money (p<.001). HFFs were also eaten more frequently by subjects or their spouses with a higher education level (p<.001). The social activity participation ratio (p<.01) of subjects and the HFF usage ratio by the spouse (p<.001) were higher in users of HFF than in nonusers. Dietary assessment scores were not different between the two groups, and users had a more positive view concerning the potential health benefits of HFFs than did nonusers (p<.001). Most users of HFF ate HFFs "when they were healthy" (52.2%) and experienced some effect through HFF use (45.8%). Most users of HFFs received information on HFFs through their families or relatives (38.1%) and most purchased HFFs at the pharmacy or oriental medicine clinic (44.8%). HFF users preferred multivitamin- and Ca-supplements most among the vitamin and mineral supplements belonged to HFFs. The above results show that HFF use is widely spread among subjects, and that use of HFF is influenced by various factors. Thus, practical guidelines for HFF use should be provided for the elderly through elderly focused-nutrition education based upon significant variables and consumption behaviors for their HFF use of present study.

  • To revise the clinical guideline for childhood urinary tract infections (UTIs) of the Korean Society of Pediatric Nephrology (2007), the recently updated guidelines and new data were reviewed. The major revisions are as follows. In diagnosis, the criterion for a positive culture of the catheterized or suprapubic aspirated urine is reduced to 50,000 colony forming uits (CFUs)/mL from 100,000 CFU/mL. Diagnosis is more confirmatory if the urinalysis is abnormal. In treating febrile UTI and pyelonephritis, oral antibiotics is considered to be as effective as parenteral antibiotics. In urologic imaging studies, the traditional aggressive approach to find primary vesicoureteral reflux (VUR) and renal scar is shifted to the targeted restrictive approach. A voiding cystourethrography is not routinely recommended and is indicated only in atypical or complex clinical conditions, abnormal ultrasonography and recurrent UTIs. $^{99m}Tc$-DMSA renal scan is valuable in diagnosing pyelonephritis in children with negative culture or normal RBUS. Although it is not routinely recommended, normal scan can safely avoid VCUG. In prevention, a more natural approach is preferred. Antimicrobial prophylaxis is not supported any more even in children with VUR. Topical steroid (2-4 weeks) to non-retractile physiologic phimosis or labial adhesion is a reasonable first-line treatment. Urogenital hygiene is important and must be adequately performed. Breast milk, probiotics and cranberries are dietary factors to prevent UTIs. Voiding dysfunction and constipation should be properly treated and prevented by initiating toilet training at an appropriate age (18-24 months). The follow-up urine test on subsequent unexplained febrile illness is strongly recommended. Changes of this revision is not exclusive and appropriate variation still may be accepted.

  • This study was conducted to reduce children's fat intake and to establish healthy dietary lifestyles. To achieve these goals, we searched, collected, and analyzed the materials related to the fat education, based on which the research personnel-professors and graduate students in nutrition and child education and elementary school teachers-discussed to figure out major topics, objectives, and detailed contents and activities appropriate for fat intake reduction. We also organized an advisory committee composed of 15 professionals in related fields to discuss the adequacy and validity of the specific contents. Finally, we systematically organized the contents and developed children's textbooks and teacher's guidebooks. Considering the different cognitive development stages of junior and senior elementary students we developed two different textbooks for each of them which are easy to read and understand, fun to play with lots of activities, and designed to practice into daily life. The contents cover three major topics-the concept of lipid, lipid in food, lipid in life and are composed of 6 units in total. To help teachers understand and and to instruct, teacher's guidebooks contain an overview of the education, specific information and practical guidelines for each class. We developed these education materials with the aim of lowering children's fat consumption and eventually promoting their health welfare; hopefully we expect these materials would be useful for children's nutritional education in the field.

  • Salicylate from plant foods and histamine from animal foods have been suggested to cause various food allergic symptoms. Salicylate regarded as one of the inducing agents f3r chronic urticaria and asthma in allergic patients was studied. There is much interest about the effects of salicylate in food allergy. It it recently suggested that the intake of salicylate from foods may have contributed to chronic urticaria and asthma. The purpose of this study is to analyze the salicylate content in various foods. 153 ingredients commonly used in Korean foods were analyzed by HPLC. Among the vegetables, chard(8.22$\mu\textrm{g}$/g), soybean sprout(5.13$\mu\textrm{g}$/g), perilla lean3.03$\mu\textrm{g}$/g), Chinese cabbage(2.25$\mu\textrm{g}$/g), carrot(2.16$\mu\textrm{g}$/g), and squash(1.33$\mu\textrm{g}$/g) con-rained higher amounts of salicylate as compared to other vegetables. Among fruits, oranges(5.13$\mu\textrm{g}$/g), grapefruits(2.90$\mu\textrm{g}$/g), and plums(1.65$\mu\textrm{g}$/g) contained the most. In animal foods, almost no salicylate was found except in chocolate milk(0.32$\mu\textrm{g}$/g). It was also found in black pepper(8.2$\mu\textrm{g}$/g), coffee(can)(5.00$\mu\textrm{g}$/g), mustard(4.16$\mu\textrm{g}$/g), curry powder(3.24$\mu\textrm{g}$/g), kochujang(2.37$\mu\textrm{g}$/g), cream powder(1.19$\mu\textrm{g}$/g), brown rice(1.04$\mu\textrm{g}$/g) and sesame oil(1.00$\mu\textrm{g}$/g). All information found in this study can be used as nutritional education materials in potentially allergic people for a prudent diet plan and can also provide proper dietary guidelines for these allergic patients. • BACKGROUND/OBJECTIVES: Given the increasing proportion of the Korean population that is aged 65 years and older, the present study analyzed the relationship between diet quality and sarcopenia in elderly persons by using data from the 2008-2011 Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Data for 3,373 persons aged 65 years and over (men: 1,455, 43.1%) were selected from the 2008-2011 KNHANES. Sarcopenia assessments are based on a formula that divides a subject's appendicular skeletal muscle mass (ASM) by their weight (wt) and multiplies that result by 100 ([ASM/wt] × 100). Sarcopenia is present if the subject's result was less than one standard deviation (SD) below the sex-specific mean for a young reference group. For evaluation of diet quality, data obtained via the 24-hour recall method were used to calculate the Diet Quality Index for Koreans (DQI-K). A general linear model was applied in order to analyze general information and nutritional intake according to sarcopenia status. For analysis of the relationship between diet quality and sarcopenia, a binominal logistic regression analysis was undertaken. RESULTS: The sarcopenia prevalence rate among the study subjects aged 65 years and over was 37.6%. The DQI-K of those without sarcopenia was 3.33 ± 0.04 points, while that of those with sarcopenia was 3.45 ± 0.04 points (P < 0.05). The relationship between diet quality and sarcopenia revealed that subjects aged 75 and older had a poor diet quality, and their odds ratio (OR) of sarcopenia presence was significantly higher (OR: 1.807, 95% confidence interval: 1.003-3.254, P < 0.05). CONCLUSIONS: This study revealed that poor diet quality was related to sarcopenia presence in Koreans aged 75 and older. In order to improve the diet quality of the elderly (aged 75 and older), it is necessary to develop dietary improvement guidelines.

  • The purposes of this study were to estimate nutritional intakes of the long-lived elderly and to obtain the data for establishing dietary guidelines that may be recommended for the general population for the sake of longevity. The subjects of the study were 300 elederly people of age over 85 years living in Kyungpook Sung-Ju area who had no problem in daily living. Four times of food consumption survey were carried out seasonally by the repeated 24-hr recall method for one year. Mean daily energy intakes and RDA percentage of energy intakes of the male and female subjects were estimated as 1222 kcal(67.9%) and 1047 kcal(65.4%) respectively. Mean daily intakes of nutrients were estimated as 38.3g for protein, 287mg for calcium, 5.8mg for iron, 314R.E. for vitamin A, 0.6mg for vitamin B1 and 0.43mg for vitamin B2 The mean RDA percentages of nutrients intake were 64.4% and 59.8% for protein in male and female, 39.8% for Ca, 48.3% for Fe, 44.9% for vitamin A, 60% for vitamin B1, and 35.8% for B2. The average PFC ratio of energy-yielding nutrients throughout the year in male and female were 15.1 : 15.2 : 69.7 and 13.8 : 13.2 : 73.0 respectively. The mean daily intakes of energy and most of nutreints were significantly high in winter season. The contribution of plant food sources to nutrient intakes were over 60% for protein and fat, 50% for calcium, and 70% for iron. Long-lived elderly people an Sung-Ju, Kyungpook showed considerably smaller physiques compared to the avergae Korean elderly, however their average BMI fell in normal range. The subjects were consuming much less energy and nutrients compared to the present Korean RDA for the elderly over age 75. The subject showed relatively good health state in spite of low intakes of energy and nutrients. Therefore it seems to be necessary to establish a set of new RDA for the elderly over age 8.5.

  • The purpose of this study was to investigate the relationship between coffee intake and metabolic syndrome, which has increased the burden of social illness, based on the data of the $6^{th}$ National Health and Nutrition Survey in 2015. The subjects' coffee intake level was divided into <1 cup/a day, 1~2 cups/a day, and ${\geq}3cups/a\;day$ and the general characteristics of the subjects were examined according to the classification. The effect of coffee consumption on the risk factors of metabolic syndrome was evaluated by OR value. The age of the subjects was higher than that of the other groups in the < 1 cup/day group and the TG in the prediabetic group was above the normal level in the ${\geq}3cups/day$ group. In the normal group of blood glucose, coffee intake was the highest in <1 cup/day group and BP was significantly different according to intake. In the multiple regression analysis conducted to identify the causal relationship between the risk of metabolic syndrome and coffee intake, BP was significantly decreased in ${\geq}3cups/day$ coffee group in normal group. In order to control the level of blood lipids in pre-diabetic subjects, it is necessary to establish dietary guidelines for foods that are frequently consumed, and various situations and long-term studies are needed to determine the precise effect of coffee intake on BP.
