  • Dietary fibers (DF) have been used as functional food components due to the various health promoting activities. Dietary fibers have been separated from the peels of Korean tangerine by employing ultrafiltration (UF) membranes. Optimum conditions in a batch type ultrafiltration unit using YM100 (molecular weight cut-off, MWCO=100,000), YM 10 (MWCO=10,000) and YM1 (MWCO=1,000) membranes were : transmembrane pressure 7.5 psi, temperature of the peel extracts $35^{\circ}C$, and pH of the peel extract 3.0, respectively. The flux in YM 10 membrane unit was higher than that in YM 10 or YM 1 membrane unit. However, YM 100 membrane was superior to YM 10 or YM 1 membrane with respect to the recovery of the retentate and the contents of DF The contents of DF in the tangerine peel extract, in the 170 mesh retentate, and in the YM 100 retentate were shown to be 33.4%, 18.5% and 8.4% based on dry matter, respectively. Most dietary fibers were recovered at the separation stages of 170 mesh and YM 100.

  • This study was designed to obseve the effect of defatted perilla as a dietary fiber on lipid components of serum feces and liver in rats. Serum cholesterol and triglyceride were signfican-ly decreased in defatty perilla added groups. total lipid cholesterol and triglyceride of feces were significantly increased in defatted perilla added groups. Liver phospholipid content was higher in the defatted perilla added groups. The other lipid components of the liver were not affected by the defatted perilla administration. These results suggest the possibitlity that defatted perilla have a reducing effect of serum cholesterol and triglyceride through the incre-ment of feacal excretion of lipid component and phospholipid in liver.

  • As Korea is expected to become super high aged society in 2026, nutrition is important elements of health in the elderly and affects their life. In epidemiological surveys, anthropometric and biochemical measurements represent important components of nutritional assessment in elderly. In the present study, we investigated anthropometric index, biochemical markers, and nutrient intake for elderly aged over 85 by using data on 71 elderly (24 men, 47 women) over 85 years which was obtained from Korea National Health and Nutrition Examination Survey in 2009. According to BMI values, the prevalence of underweight and obesity was 9.7% and 34.5% in men, and 7.9% and 26.4% in women. The prevalence of sarcopenia was 70.7% in men and 25.0% in women. However, plasma biochemical data are normal range in the older population. In nutrients intake, daily Intake of energy, protein, dietary fiber, water, thiamin, riboflavin, niacin, calcium, and potassium was inadequate considering the Dietary Reference Intakes for Koreans(KDRIs). In conclusion, elderly need to be educated nutrition and their health dietary life to prevent malnutrition, and standard of nutrition intake should be rearranged in elderly aged 85 over considering their antrhopometric index.

  • This study compares the major nutritional components of the leaf, flesh, and seed of dry loquat (Eriobotrya japonicaLindl.). Among proximate compositions, the crude fat, crude ash, and dietary fiber of the leaf exceeded those of the seed and flesh, whereas the carbohydrate content of the leaf was lower than that of the seed and flesh. The main component of free sugars in the leaf, flesh, and seed was fructose. Total amino acids of the leaf, flesh, and seed were 552.43, 63.00, and 260.29 mg%, respectively. Although the amino acid composition of the leaf, flesh, and seed varied, glutamic acid and ${\gamma}$-aminobutyric acid were the major amino acids in the leaf, flesh, and seed. Major fatty acids of total lipid were oleic acid and stearic acid in the leaf and seed, and the major acid was linoleic acid in the flesh. Major organic acids were oxalic acid in the leaf, maleic acid in the flesh, and citric acid in the seed. Vitamin C content was higher in the seed than in the leaf and flesh.

  • Recently it has been reported that vitamin A and retinol binding proteins (RBPs) in blood and urine were changed in the condition of diabetes mellitus or hyperlipidemia. Fruits and vegetables are recommended to consume for the people suffered from these chronic degenerative diseases. The main components of fruits and vegetables are dietary fibers, for example cellulose and pectin, of which function to affect the absorption and excretion of dietary fat and fat-soluble substances. This study was conducted to investigate the effect of dietary fibers on RBPs mRNA expression in liver, small intestine and serum of rat fed high fat diet during 4 weeks. Sprague-Dawley rats, weighing 121g on average, were divided into four groups; (Control; $17\%$ fat & cellulose supplement diet, HF0: $25\%$ fat & fiber free diet, B:.Uc: $25\%$ fat & cellulose supplement diet and HF0: $25\%$ fat & pectin supplement diet) . The rats fed high fat diet groups (HF0, HFC, HFP) tended to consume the food less than the control group, but FER of HF0 groups was significantly higher than the control (p < 0.05) . The weight of adrenal gland in high fat diet groups (HF0, HFC, HFP) was significantly less than the control. Total lipid in feces daily excreted and in liver did not show any significant differences among the groups. Total cholesterol in HFP group was significantly different from that of HFC group. Serum total cholesterol and triglyceride in other group tended to lower than other groups and HDL cholesterol higher. Consequently, AI (atherogenic index) was the lowest in HFP group. Vit A contents in feces daily excreted tended to lower in high fat diet groups (HF0, HFP) compared to the control group. That content in adrenal gland was the lowest in HF0 group, but not in liver. In HFP group were down-regulated cRBPI mRNA in liver and cRBPII mRNA in small intestine and up-regulated RBP and transthyretin expression in serum compared to the other groups. In conclusion, dietary fibers, especially pectin, in high fat diet might down-regulate the expression of CRBP I, CRBP II mRNA in liver and small intestine, but increase the secretion of RBP into serum and therefore inhance the bioavailability of Vit A through the body. • This study aimed at investigating correlation of nutrients intake and serum lipids in middle-aged korean male and female workers. One hundred sixty eight(male ;105, female ;63) for adult aged 30-59yr(average age male ;36.5yr, female ;44.5yr) were selected as subjects during 2 months, from April to May, 1996. Nutrients intake status was investigated by questionnaire, 24-hour recall method. Antropometric assessments, serum lipids and blood pressure of the subjects were investigated. The results as follows: 1. Nutrients intake status ; male was superior to female. Vitamin A intakes of 40-49yr group were inferior to other group but amounts of intake were above Korean RDA(recommended dietary allowances), Intakes of calcium and vitamin C of 30-39yr and over 50yr group in female were below Korean RDA. In overweights group of male and underweight group of female, most nutrients intake were increased than other groups. 2. Antropometric assessments ; female was higher than male in BMI (body mass index). All subjects increasingly with age were increased in BMI. 3. Blood components were above normal range in triglyceride in both sexes and all subjects increasingly with age were increased In level of serum lipids and blood pressure, especially in male's forty and in female's fifty were higher than other groups In serum lipids and blood pressure. In overweights group, serum lipids and blood pressure had a significantly($\alpha$=0.05) increasing tendency in both sexes. 4. Serum lipids and connected factors; atherogenic index correlated positively with triglyceride, total-chol(total cholesterol), LDL-chol(low density-lipoprotein cholesterol) and negatively with HDL-chol(high-density-lipoprotein cholesterol) significantly(P<0.001). Systolic blood pressure correlated positively with total-chol and diastolic blood pressure correlated positively with total-chol, LDL-chol significantly(P<0.05). 5. Serum lipids and nutrients intake status: energy correlated positively(P<0.05) with BMI, dietary fiber correlated positively with LDL-chol(P<0.05), calcium correlated positively with triglyceride, atherogenic index and dietary fiber correlated negatively with BMI in male significantly(P<0.05). Triglyceride correlated positively with vitamin C and phosphorus correlated negatively with BMI in female significantly(P<0.05). Above results, in male's forty and in female's fifty were liable to variation in terms of serum lipids and blood pressure. As increasing triglyceride, total-chol, LDL-chol and decreasing HDL-chol Increased atherogenic index that suggest increasing risk of atherosclerosis. But, this point will be considered more subdivided study.

  • This study examined the nutrient components and physicochemical properties of three new potato cultivars: Gui Valley, Bora Valley, and Gogu Valley, which were acquired from PotatoValley Ltd., and compared them to the Superior cultivar that is widely distributed in food markets. Amino acid, fatty acid, and mineral compositions, as well as total starch, reducing sugar, dietary fiber, vitamin C, and phenolic acid contents were measured. The gelatinization and pasting properties of the potatoes were evaluated using differential scanning calorimetry (DSC) and a rapid visco analyzer (RVA). The three new potato cultivars showed differences for various characteristics compared to the existing Superior cultivar. The Gui valley cultivar has a high potential for processing into items such as French fries or chips, due to its high starch content and low reducing sugar content. Bora valley showed an incredibly high phenolic acid contents, and Gogu valley contained high levels of dietary fiber, minerals, vitamin C, and essential amino acids. Overall, these cultivars are expected to be highly valuable items for develpment and applications of functional food.

  • Nutritional composition, including total phenolics, tannins and nutrient components, of acorns of Q. actissima, Q. serrata, Q. variabilis and Q. mongolica were analyzed. Acorns were collected from each tree species, which were grown in a seed orchard. Contents of both total phenolics and tannins in acorns of Q. serrata were higher than those of Q. actissima (p<0.05). Interestingly, Q. serrata contained the highest amount of water soluble tannins (71 mg/g dw) and the lowest levels of water insoluble tannins (8.1 mg/g dw) among 4 oak species, resulting that acorns of Q. serrata had the lowest proportion of insoluble tannins. Among 4 oak species tested, Q. mongolicav acorns contained the highest levels of both total dietary fiber (TDF) and ascorbic acid, while the content of beta-carotene in Q. mongolicav was 52-fold lower than that in Q. variabilis ($520{\mu}g/100g$). Our result showed that nutritional composition of acoms was significantly different between oak species, indicating that tastes or nutritional values might be different as well among major oak species in Korea.

  • Thinned fruits, apple, pear and peach were investigated into chemical components and physiological activities. On proximate compositions, crude protein, crude fat and ash of thinned fruits were higher than those of ripe fruits, showing lower carbohydrate in thinned fruits. The contents of inorganic substance were Ca, Mg, P, Na, K and B in order. On heavy metals, As, Cd, Cr and Hg were not detected and Ge, Mo, Ni and Pb were trace. Organic acid in thinned apple and peach were detected as tartaric acid, citric acid, malic acid and succinic acid, but thinned pear did not contain citric acid. Free sugars in thinned pear and peach were composed of glucose, fructose and sucrose but sucrose was not detected in thinned apple. Contents of insoluble dietary fiber in thinned fruits were higher than soluble dietary fiber. The thinned apple extracts showed high antioxidant activity. Nitrite scavenging activity of thinned apple and pear extracts were 71∼80 e/o and 61∼63% at pH 1.2, respectively. Tyrosinase inhibitory activity of thinned pear extracts was 61.0∼89.4 %, however peach extinct showed no activity.
