A Survey of Nutritional Status on Inhabitant in a Isle by Area of Demilitarized Zone in Korea. -In Kyodong Island Area located at Kanghwa-Gun, Kyungki Province- (전방도서지역 주민의 여름철 식품 및 영양섭취 상태조사 -경기도 강화군 교동도를 중심으로-)

  • The survey was carried out to obtain some fundmental data to improve the dietary life and to establish the nutritonal education and policy on inhabitants limed in isle area near by demilitarized zone in Korea. For this, 33 families in the area of Kyodong island located at Kanghwa-Gun, Kyungki province were randomly selected. Trained surveyors visited each house to survey the food and nutritional status in summer during 3 days in August, 1987. The results are summarized as follows ; The number of foods they were taking totalled 17 categories and 134 kinds of which 104 kinds were vegetable foods. The average amount of food intake was 1465.3g per person per day, animal food occupied 9.6% only. The intake amount of fruit among vegetable foods, and fishes, shells, milk and eggs among animal foods was lower than the national average. Each proportion of carbohydrates fat and protein to the total energy intake was 70.4%, 9.7% and 19.9%. The foods they used to take a lot were rice, potatoes. cucumbers, cabbage KIMCHIE and YULMOO KIMCHIE in order of their intake amount. The energy intake was 3064 Kcal which is higher than nutritional requirements, and the energy ratio of cereals to the total energy in take is 76%. If the amount of fat intake is fixed to 20% of total energy intake, the amount of fat intake is 68g, but the actual amount of fat intake was only 33g. With an increase of total energy intake, supply of calcium and vitamin A should be increased much more.

Effects of Dietary Attitudes on the Nutritional Status of Nurses in Kyungnam Province

  • This study has investigated the effect of dietary attitudes on nutritional status of nurses living in Kyungnam province. A total of 249 muses working at hospitals in the Kyungnam area participated in this study. The general characteristics and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes were examined using one day 24-hour recall method from November 14 to December 20, in 2001. The data of nutrient intakes were analyzed by the Computer Aided Nutritional Analysis Program and then the diet quality was estimated using the Index of Nutritional Quality (INQ). The subjects were classified as the high score group (17.3 %), medium score group (54.2%), and low score group (28.5%) based on dietary attitude score. The results were as follows: Average age of subjects was 27.1 years old, average nursingexperience was 5.7 years, and 70.7% of the subjects graduated from a junior college. The rate of shift work (45.4%) and non-shift work (54.6%) were similar. The average score on dietary attitudes in thehigh score group was 78.8, and those in he medium score group and in the low score group were 58.6 and 40.8 out of 100 points respectively. The average intake of energy (p < 0.001), carbohydrate (p < 0.001), protein (p < 0.05), animal protein (p < 0.01), animal fat (p < 0.05), vitamin $B_1$ (p < 0.01), vitamin $B_2$ (p < 0.0l), niacin (p < 0.001), Ca (p < 0.001), Fe (p < 0.001), animal Fe (p < 0.01), P (p < 0.001), and crude fiber (p < 0.00l), were significantly higher in the high score group than those in the medium score group and low score group. In the high score group, the average intake of protein, vitamin $B_1$, niacin, vitamin C and P were above 125% of the Korean RDA, and in medium score group, those of vitamin C and P, and in low score group, that of vitamin C were above 125% of the Korean RDA. In the high score group, nutrient of intake below 75% of the Korean RDA was Ca, and those in medium score group were vitamin $B_2$, Ca, and Fe, and those in low score group were energy, vitamin $B_2$, Ca and Fe. The intake ratio of Ca and P showed an unbalanceof 1:2, and that of animal protein/plant protein, and that of animal fat/plant fat were high (1.45-1.64) in all group;. The dietary attitude had a positive correlation (p < 0.00l) with nutrition intake except vitamin A and vitamin C.

Effects of Garlic on Uncoupling Protein 2 (UCP2) Transcriptional Regulation in Metabolic Tissues of UCP2 Transgenic Mice Fed on a High-Fat Diet (마늘이 고지방 식이를 섭취한 UCP2 형질전환 마우스의 대사성 조직에서 UCP2 전사 조절에 미치는 영향)

  • This study was performed to investigate the effects of garlic on uncoupling protein 2 (UCP2) transcriptional regulation of UCP2-luciferase transgenic mice fed on a high fat diet to induce obesity. To examine the transcriptional regulation of UCP2, we generated transgenic mice with a UCP2 promoter (-1,830/+30 bp) containing luciferase as a reporter gene. UCP2-luciferase transgenic mice were fed a 45% high-fat diet for 8 weeks to induce obesity. Subsequently, mice were maintained on either a high-fat control diet (TG-CON), or high-fat diets supplemented with 2% (TG-GL2) or 5% (TG-GL5) garlic for a further 8 weeks. Dietary garlic reduced body weight and energy efficiency ratio in the TG-GL5 group, compared to the TG-CON group. Furthermore, garlic supplementation significantly decreased white adipose tissue fat mass and plasma levels of triglycerides, total cholesterol, and leptin in the TG-GL2 and TG-GL5 groups, compared to the TG-CON group. Specifically, UCP2 promoter activity in metabolic tissues such as liver, white adipose tissue, brown adipose tissue, and skeletal muscle was increased by garlic supplementation. These results suggest that dietary garlic was partially associated with an increase of UCP2 transcriptional activity in metabolic tissues for decreasing obesity.

  • This study was conducted to investigate the dietary and nutritional status supplied by group feeding for blue color and white color in Seoul and Kyunggi area. The results are summarized as follows : 1. Blue color and white color of the average food supply per person per day was 1370.0g. Blue color of the total fool supply was consisted of 35.1% grain, 44.1% vegetables. White color of the total fool supply was consisted of 31.8% grain, 44.0% vegetable. The amount of milk product, fruit and fat supply were very small. 2. Blue color and white color of the ratio of main dish and side dish supplied was 69 : 31, 60.0 : 39.7. 3. Main dish all is rice. Side dish ard kinds of soupes and Jigeai Johngol in the two groups. In the kind of side dish white color much more than blue color. Dessert are scarcely supplied in the two groups. 4. The mean daily supplies of energy and 9 nutrients were above the level of the R.D.A. Blue color and white color of the mean daily amount of energy supply was 2653.0㎉ 3022.6㎉. Blue color and white color of the ratio of carbohydrate, protein, and fat supplied was 68.4%, 18.6%, 13.1%, and 62.1%, 20.9%, 17.0%. 5. Blue color and white color of the average feeding cost amounts to 460won, 812won per meal. 6. Blue color; There were high correlations in supply amoung energy, protein, fat. Carbohydrate, calcium, iron, riboflavin, niacin. White color; There were high correlation in supply amoung energy, protein, carbohydrate, calcium, iron, thiamin, riboflavin, niacin, vit-C.

Nutritional Adequacy of Target Pattern in Dietary Guidance System - Dietary Reference Intakes for Koreans 2015 - (식사구성안 권장식사패턴의 영양 적정성 평가 - 2015 한국인 영양소 섭취기준 -)

  • Nutritional adequacy of Target patterns in Dietary Guidance System were evaluated. Study subjects were 18 Target patterns designed for 2 children groups, 4 adolescent and 4 adult male and female groups in Dietary Reference Intakes for Koreans 2015. Nutrients examined were 4 macro-nutrients(protein, fat, carbohydrate, and dietary fiber), 5 minerals(Ca, P, Fe, Na, and K), and 5 vitamins(vitamin A, thiamin, riboflavin, niacin, and vitamin C). Energy and nutrients contents were calculated based upon assigned multiples of single serving in Target pattern and Representative Food Composition Table by Excel program. Among the 18 Target patterns, only 5 were mean adequacy ratio(MAR) of 1.0, fulfilled the expectations of Dietary Guidance System. Protein and Na contents were more than dietary reference intakes(DRI) in all 18 Target patterns. Dietary fiber, Ca, and K were deficient nutrient in 15, 10, and 9 Target patterns, respectively. The units of vitamin A were not same in Target pattern and DRI, retinol equivalent(RE) in Target pattern and retinol activity equivalent(RAE) in DRI. When calculate RE content of vitamin A in Target pattern to RAE content, 15 Target patterns did not reach to DRI of vitamin A. The Target pattern of elderly women showed the lowest mean adequacy ratio(MAR), 7 nutrients were less than DRI, need to be revised. Average energy contribution ratio of protein, fat, and carbohydrate were 16.04%, 24.35%, and 60.91%, respectively, fulfilled the adequate acceptable macro-nutrient distribution range(AMDR). To improve the nutritional inadequacy of dietary fiber, Ca, K, and vitamin A in Target pattern, effective mean may be the increasing vegetable group assignment. Also decreasing the meat fish egg legume group assignment in some Target pattern may be the way of preventing of protein overconsumption. The energy in adequate amount for condiment use also need to be considered.

  • Changes in total lipid content. total cholesterol content and fatty acid composition of human milk were investigated longitudinaly from 2-5 days to 12 weeks postpartum Milk samples were collected from 19 Korean lactating women at 2-5 days and at 1. 2. 4. 6. and 12 weeks postpartum. The obtained results were as follows : On average the daily energy intake protein intake and fat intake of Korean lactating women was 1812 kcal 72.5g and 29.8g respectively. The composition ratio of energy consis-ting of protein fat and carbohydrate was 16:15:69 The total lipid content increased from 1.39g/이 at 2-5 days to 2.86g/dl at 12 weeks ; while the total cholesterol concentration (mg/g) decreased significantly with time following postpartum. The total unsaturated fatty acids content was higher in colostrum than in mature milk. and the total saturated fatty acids were higher in mature milk. The average DHA content was 0.55% and the P/S ratio of human milk lipids was 0.37.

A Study on Nutrient Intakes and Hematological Status of Female College Students of Ulsan City -1. Emphasis on Serum Lipids- (여대생의 영양섭취상태 및 혈액성상에 관한 연구 - 제1보 혈청지질 성분을 중심으로-)

  • The purpose of this study was to examine nutrient intakes, food and daily habits, and serum lipids for female college students. The subjects consisted of 70 female college students aged 20 to 29 years old. Their dietary intakes were assessed by means of 24 hour dietary recall method. Food models and other measuring tools were also used. Concentrations of serum lipids were measured. The energy intake of the subjects averaged 1837Kcal, whereas the expended energy was 1871Kcal. The subjects consumed 310g of carbohydrates, 66g protien, 37g lipid, 14mg iron, 586mg calcium, 513R.E. vitamin A, 1.0mg vitamin B1, 1.3mg vitamin B2 1.5mg niacin, and 69mg vitamin C, respectively. Vitamin A and iron intakes were lower than the RDA. The percentages of total calorie from carbohydrate, fat, and protein were 67%, 18%, 14%, showing desirable calorie construction. The mean serum triglyceride(TG), cholesterol (Chol), HDL-Chol and LDC-Chol concentrations were 72.4mg/dl, 161.3mg/dl, 44.5mg/dl, and 102.3mg/dl, respectively. All of these values seem to fall in the desirable range. There were positive correlations between serum Chol and HDL-Chol or LDL-Chol or TG ; negative correlations between serum Chol and HDL-Chol/LDL-Chol ratio, between serum TG and HDL-Chol or HDL-Chol/LDC-Chol ratio.

The Dietary Status of Kindergarten Child from a High Socioeconomic Apartment Compound in Seoul (일부(一部) 고소득(高所得) 아파트 단지내(團地內) 유치원(幼稚園) 어린이의 성장발육(成長發育) 및 영양(營養)에 관(關)한 연구(硏究))

  • A dietary survey of 100 children, aged 5 to 6, of Y.C. Kindergarten located in Yowido apartment compound of Seoul, was conducted July 18 to August 21, 1979. The results are summarized as follows: General family environment: Ninety four percent of the subjects were from families having two to three children, without grandparents in the home. One hundred percent of fathers were educated at or above the college level, while 83.9% of mothers had completed college. Mothers' ages ranged from 30 to 40 years, with 58% in the $31{\sim}35$ age bracket. Nearly 60% of the fathers were office and government employees, 10% were professors and teachers, 30% were engaged in businesses and other work, while 91.3% of mothers were unemployed. Anthropometric measurements: Mean values of standing height, body weight, girth of head and girth of chest, ranged from the 75th to the 90th percentile of Korean standards. None of the subjects had anthropometric indicators below the 5th percentile, representing the malnutrition borderline, of the Korean standards; while 12%, 24%, 17% and 14% of subjects supposed the 97th percentile in standing height, body weight, girth of head, and girth of chest, respectively. Furthermore, 58% of subjects exceeded Jelliffe's standard in arm circumferences; 60%, in triceps skinfold thickness; and 14.5% of subjects exceeded 120% of the latter standard. From this data, a certain number of these children were judged to he rather overweight. Dietary intake: Mean intake per day of energy and of nutrients, excluding iron, reached or exceeded Korean recommended dietary allowances. The energy input ratio of carbohydrate: protein: fat was 61.4 : 13.2 : 25.4, showing lower dependance on carbohydrates and higher dependance on fat for energy needs, compared with the average for Korean children of the same age group. Mean FAO-protein score of each subject's diet was shown to be as high as 90.6. Energy intake was divided among breakfast, lunch, and evening meal, on the average, in a ratio of 19.6 : 24.1 : 23.0. Approximately 33.3% of the daily caloric intake came from the snacks. Nutrition Knowledge of mothers: Nutrition knowledge of mothers was highly scored. Mothers' self-evaluations of their knowledge of nutrition was highly correlated with attitudes toward nutrition behavior.

A Comparison of the Resting Energy Expenditure of Korean Adults Using Indirect Calorimetry (Indirect Calorimetry를 이용한 한국 성인의 휴식대사량 비교 연구)

  • The purpose of this study was to provide baseline data for revising the recommended energy intake for Korean adults. We recruited 290 adults so as to determine their resting energy expenditure (REE) and energy intake. The REE was measured by indirect calorimetry. We also calculated the REE from prediction equations formulated by World Health Organization (WHO), The energy intake for two consecutive days was assessed using the 24 hour recall method. The body weight, lean body mass (LBM) and percentage body fat were measured using the INBODY 3.0 system. We compared the results of three age groups ; 20 to 29 years,30 to 49 years and 50 years or more. The average energy intake of each age group was below the 7th Korean Recommended Dietary Allowances (RDA). The average energy intake was lower in the older age groups. However, no difference was observed among the age groups when the energy intake as a percentage of the Korean RDA was compared. Our measurement of the REE was higher than the REE calculated by the WHO's method. Correlation coefficients between the measured and the calculated values of REE for all age groups showed significant correlations (r=0.475-0.672). As the ages of all the subjects increased, the REE/kg of body weight decreased. There were no significant differences in the REE / kg of the LBM between the different age groups; however, the REE/kg of the LBM was higher in the female group than in the male group. Negative correlations of the REE with the age (r=-0.242) and body fat ratio (r=-0.313) were observed; positive correlations of the REE with the BMI (r=0.265), height (r=0.570), weight (r=0.562) and LBM (r=0.586) were also found (p<0.01).

A Nutrition Survey of Children Attending a Model Elementary School of Rural Type School Lunch Programs (경기도 용인군 농촌형 급식시범국민학교 아동의 영양실태 조사)

  • A nutrition survey of 209 children, 6 to 13 years old, in the namgok elemetnary school at Namsamyun, Yongin-gun, Kyonggi province, was undertaken in July of 1987, to investigate dietary and nutritional status. Mean value of hight was 98% of the Korean standard established by the Korean Standards Research Institute. However, in these terms, 7.7% of the subjects were proven to be short, mean value of weight was 94.5 of the Korean standard. However, in these terms, 9.3% of the subjects were proven to be moderatly underweight ; whereas 10.4% of the subjects were proven to be over weight. By the WHO criterion, 18.4% of the subjects showed lower figures of hemoglobin than anemic level of 12gm%/이. Mean urinary urea nitogen/creatinine ratio was 9.1$\pm$5.0 Carbohyudrate provided 68% of total energy intake ; protein accunted for 13% ; fat provided 19%. Energy intake was divided among breakfast, lunch, dinner and snacks in a percentage ratio of 22 : 44 : 24 : 13. The survey clarified that the elementary school feeding largely supplemented the inadequate intake of these chidren at home.
