Physicochemical Composition of Ramie Leaf According to Drying Methods (건조방법에 따른 모시잎의 이화학적 성분)

  • This study was investigated to compare the physicochemical properties between hot air dried ramie leaf (HR) and freeze dried ramie leaf (FR). There were no significant differences in moisture, crude protein, crude fat, crude ash, and carbohydrate content depending on the drying methods, but the dietary fiber content was significantly higher in FR than in HR. The major amino acids were aspartic acid, glutamic acid, and leucine, and the contents of total amino acids, total essential amino acids, and essential amino acid ratios were higher in FR compared with HR. Major fatty acids were linoleic acid, palmitic acid, arachidic acid, and linolenic acid. Hot air drying caused a decrease in unsaturated fatty acids and an increase in saturated acids; however, there was no significance difference between the two different drying methods. The contents of vitamin A, E, and C in FR were higher than those in HR, and there were significant differences in the contents of vitamin A and C depending on the drying methods. Regardless of the drying methods, both HR and FR were abundant in order of Ca, K, Mg, Mn, Fe, Na, and Zn. The contents of total minerals, total organic acids and total free sugars in HR were significantly higher than those in the FR.

Physicochemical Composition of Baked Garlic (구운 마늘의 이화학적 성분)

  • This study was conducted to investigate the major chemical components of dried baked garlic powder. The proximate compositions of baked garlic powder as a dry-matter basis were 5.30% moisture, 36.89% crude protein, 12.60% crude fat, 4.36% crude ash, 2.88% dietary tiber, and 37.97% carbohydrate, respectively. The major free sugars were identified as fructose and galactose. In the analysis of the total amino acids, 18 kinds of components were isolated from baked garlic powder. The essential amino acid contained in baked garlic powder accounted for 36.60% of total amino acids, while the non-essential amino acids accounted for 63.40%. The major unsaturated fatty acids of total lipids were linoleic acid. The ratio of polyunsaturated fatty acids to saturated fatty acids (P/S ratio) was 5.77. Oxalic acid was the major organic acids. The contents of vitamin A, C, and E were 0.064, 1.452, and 0.037 mg%, respectively. The mineral contents of baked garlic powder were greater, in order of K>Mg>Ca>Na>Zn>Fe. The total polyphenol, flavonoids and thiosulfates contents of baked-garlic ethanol extract were $2.85{\pm}0.05$ mg/100 g, $0.97{\pm}0.04$ mg/100 g and $0.61{\pm}0.02$ OD/g, respectively.

Relation among Mineral (Ca, P, Fe, Na, K,Zn) Intakes, Blood Pressure, and Blood Lipids in Korean Adults (일부 성인남녀의 무기질 (Ca, P, Fe, Na, K, Zn) 섭취와 혈압 및 혈중 지질과의 관련성)

  • The purpose of this study was to investigate the relation among mineral intakes, blood pressure, and blood lipids for health management of Korean adults over 20 years old. Subjects were recruited from the district where they lived, which included rural (Yoju, n = 137) , coastal (Taean, n = 100) , and urban district (Suwon, n : 117) . hnthropornekical measurement, blood pressure measurement, dietary intake assessment using 24-hour recall method, and blood collection and analysis of blood lipids were conducted. The average age, height, weight, and BMI were 54.1 years, 168.5 cm, 67.3 kg, and 24.5 kg/$m^{2}$ for men and 53.9 years,153.8 cm,59.2 kg, and 25.0 kg/$m^{2}$ for women, respectively. The mean daily intakes of total food and energy were 1219.1 g and 1740.9 kcal for men and 1071.3 g and 1432.6 kcal for women. The mineral intakes of men and women were 448.5 mg and 400.4 mg for calcium,955.3 mg and 803.7 mg for phosphorus, 13.3 mg and 11.1 mg for iron, 4302.8 mg and 3393.3 mg for sodium,2588.0 mg and 2264.9 mg for potassium, and 8.9 mg and 7.3 mg for zinc. The daily intakes of energy, calcium, zinc, vitamin $B_{2}$, and vitamin I were $76.1\%$, $60.1\%$, $73.1\%$, $68.6\%$, and $80.4\%$ of RDAs, respectively. The intakes of energy, calcium, zinc, vitamin $B_{2}$ and I were not meet Korean RDAs. Especially, calcium, zinc, and vitamin $B_{2}$ were less than $75\%$ of RDAs. Blood pressure of the subjects was 128.3/75.5 mmHg for men and 124.1/73.7 mmHg for women. Serum lipids of men and women were 180.2 mg/dL and 184.9 mg/dL for total cholesterol, 160.8 mg/dL and 137.6 mg/dL for triglyceride,41.5 mg/dL and 44.7 mg/dL for HDL-cholesterol,106.6 mg/dL and 112.7 mg/dL for LDL-cholesterol, and 3.5 and 3.3 for atherogenic index. While serum triglyceride and AI of men was significantly higher, HDL-cholesterol was lower than those of women. In the relation among mineral intakes, blood pressure, and serum lipids, we found a significantly negative correlation of intakes of calcium, calcium/phosphorus, calcium density with systolic blood pressure. There were significantly negative correlation between intake of calcium/phosphorus and serum cholesterol, calcium density and serum cholesterol, sodium intake and serum HDL-cholesterol. Based on these results, we concluded that high intakes of calcium, calcium/phosphorus and low sodium intake were associated with favorable blood pressure and serum lipid profiles in adult men and women. Efficacy evaluation of novel organic iron complexes in laying hens: effects on laying performance, egg quality, egg iron content, and blood biochemical parameters

  • Objective: This study was conducted to determine the optimal dose of novel iron amino acid complexes (Fe-Lys-Glu) by measuring laying performance, egg quality, egg iron (Fe) concentrations, and blood biochemical parameters in laying hens. Methods: A total of 1,260 18-week-old healthy Beijing White laying hens were randomly divided into 7 groups with 12 replicates of 15 birds each. After a 2-wk acclimation to the basal diet, hens were fed diets supplemented with 0 (negative control, the analyzed innate iron content was 75.06 mg/kg), 15, 30, 45, 60, and 75 mg Fe/kg as Fe-Lys-Glu or 45 mg Fe/kg from FeSO4 (positive control) for 24 wk. Results: Results showed that compared with the negative and positive control groups, dietary supplementation with 30 to 75 mg Fe/kg from Fe-Lys-Glu significantly (linear and quadratic, p<0.05) increased the laying rate (LR) and average daily egg weight (ADEW); hens administered 45 to 75 mg Fe/kg as Fe-Lys-Glu showed a remarkable (linear, p<0.05) decrease in feed conversion ratio. There were no significant differences among all groups in egg quality. The iron concentrations in egg yolk and serum were elevated by increasing Fe-Lys-Glu levels, and the highest iron content was found in 75 mg Fe/kg group. In addition, hens fed 45 mg Fe/kg from Fe-Lys-Glu had (linear and quadratic, p<0.05) higher yolk Fe contents than that with the same dosage of FeSO4 supplementation. The red blood cell (RBC) count and hemoglobin content (linear and quadratic, p<0.05) increased obviously in the groups fed with 30 to 75 mg Fe/kg as Fe-Lys-Glu in comparison with the control group. Fe-Lys-Glu supplementation also (linear and quadratic, p<0.05) enhanced the activity of copper/zinc-superoxide dismutase (Cu/Zn-SOD) in serum, as a result, the serum malonaldehyde content (linear and quadratic, p<0.05) decreased in hens received 60 to 75 mg Fe/kg as Fe-Lys-Glu. Conclusion: Supplementation Fe-Lys-Glu in laying hens could substitute for FeSO4 and the optimal additive levels of Fe-Lys-Glu are 45 mg Fe/kg in layers diets based on the quadratic regression analysis of LR, ADEW, RBC, and Cu/Zn-SOD.

Utilization of Plant Phytase to Improve Phosphorous Availability for Broiler (육계의 인 이용율 향상을 위한 식물성 Phytase의 이용)

  • This study was conducted to evaluate the efficacy of wheat and wheat bran  as the source of phytase in a 5 week broiler feeding trial. One thousand day-old broiler chickens(Ross$^{(R)}$) were divided into 20 pens of 50 broilers(25 male and 25 female) each. Four pens were randomly arranged to one of the five dietary treatments: T1, control diet containing normal nonphytate P(NPP) ;  T2, T1 - 0.1% NPP; T3, T2 + 600IU microbial phytase(NOVO$^{(R)}$) per kg diet; T4, T2 + 600IU plant phytase from wheat and wheat bran; T5, T2 + 600IU plant phytase from wheat and hydrothermally treated wheat bran. Reduction of NPP level by 0.1%(T2) reduced weight gain and feed intake but plant phytase treatments(T4 and T5) recovered the lost performance. Plant phytase treatments showed better (p<0.05) weight gain and intake than the microbial phytase treatment(T3). There was no difference between regular wheat bran treatment(T4) and hydrothermally treated wheat bran treatment(T5). Mortality was the highest by low NPP diet(T2). Availability of ether extract and crude ash of grower diet was the highest(p<0.05) in normal wheat bran diet(T4). Availability of Ca and P of grower diet was the highest(p<0.05) in T4 followed by T3 and T5. Availability of Mg, Fe and Zn was drastically improved by phytase treatments(T3, T4 and T5). Excretion of Ca, P, Mg, Fe and Zn was the lowest(p<0.05) with microbial phytase treatment(T3). Serum level of Ca and Mg was the highest(p<0.05) with the low NPP treatment(T2). Tibial ash content of T2 and T3 was lower(p<0.05) than that of T1, T4 and T5. However, tibial Ca content was higher(p<0.05) in T1 and T2 than other treatments. Tibial P and Mg contents were the highest(p<0.05) in T1. It was concluded that plant phytase from wheat bran can be effectively used to improve P utilization. Hydrothermal treatment of wheat bran prior to inclusion in the diet had no beneficial effects.

The Effect of Level and Period of Fe-methionine Chelate Supplementation on the Iron Content of Boiler Meat

  • A broiler experiment was conducted to compare the effects of duration and level of iron-methionine chelate (Fe-Met) supplementation on the iron, copper (Cu) and zinc (Zn) content of broiler meat. Two hundred and fifty hatched Ross broiler chickens were randomly assigned to 5 dietary treatments. Each treatment had 5 replicates of 10 birds (5 males and 5 females) each. Birds were housed in raised floor batteries and fed traditional broiler diets ad libitum for 5 weeks. Dietary treatments were as follows: Control and two levels of Fe-Met (100 or 200 ppm in Fe) supplemented for either the whole period (0-5 wk) or grower period (4-5 wk). Production performance was not significantly affected by treatments. Iron content in the muscles (breast, leg and wing) and organs (liver and spleen) were significantly (p<0.05) increased as the level and duration of Fe-Met supplementation increased. The highest concentration of iron was shown in Fe-Met 200 fed for the whole period. Liver contained the highest amount of iron followed by spleen, leg muscle, wing muscle and breast muscle. Supplementation of Fe-Met 200 for the grower period resulted in higher iron concentration in liver and spleen than supplementation of Fe-Met 100 for the whole period. However, the same treatment resulted in lower iron concentration in muscles (breast, leg and wing) than the treatment of Fe-Met 100 for the whole period. In order to achieve the highest iron enrichment in the muscles, Fe-Met should be supplemented at 200 ppm in Fe for the whole period (5 wks). Fe-Met supplementation increased copper concentration in all muscles and organs except wing muscle. Zinc concentration decreased in breast and wing muscle but tended to increase in leg muscle, liver and spleen by Fe-Met 200 supplementation. Color of muscle was not significantly affected by Fe-Met treatments. However, redness of leg and breast muscle, and yellowness of leg and breast muscle tended to increase by supplementation of Fe-Met for the whole period. It was concluded that iron content of broiler meat can be effectively enriched by supplementation of 200 ppm of Fe as Fe-Met for 5 wks.

Effects of graded levels of cupric citrate on growth performance, antioxidant status, serum lipid metabolites and immunity, and tissue residues of trace elements in weaned pigs

  • Objective: The goal of this study was to investigate the effects of cupric citrate (CuCit) on growth performance, antioxidant indices, serum lipid metabolites, serum immune indices, and tissue residues of copper (Cu), zinc, and iron in weaned pigs. Methods: A total of 180 weaned pigs ($Duroc{\times}Landrace{\times}Large$ White) with an average body weight of $8.98{\pm}1.21kg$ were randomly assigned to a corn-soybean meal control ration, or 4 similar rations with 30, 60, 120, or 240 mg/kg Cu as CuCit. All diets contained 10 mg/kg Cu as cupric sulfate from the vitamin-mineral premix. The experiment was divided into two phases: 0 to 14 d (phase 1) and 15 to 28 d (phase 2). Results: Average daily gain (ADG; linearly, p<0.01) and average daily feed intake (ADFI; linearly and quadratically, p<0.05) were affected by an increase in CuCit during phase 2. Overall period, ADG (p<0.05) and ADFI (p<0.01) were linearly increased with increasing dietary levels of CuCit. Serum malondialdehyde concentrations (p<0.05) and glutathione peroxidase activity (p<0.01) linearly decreased and increased respectively with an increase in CuCit. Serum levels of Cu-Zn superoxide dismutase were linearly affected with an increase in CuCit (p<0.01). Hepatic malondialdehyde levels decreased with an increase in CuCit (linearly and quadratically, p<0.01). Serum total cholesterol concentrations were quadratically affected (p<0.05) and decreased in pigs fed Cu as CuCit at 60 and 120 mg/kg and increased in pigs fed 240 mg/kg Cu as CuCit. Serum high-density lipoprotein concentrations were linearly affected with an increase in CuCit (p<0.01). Serum $IL-1{\beta}$ levels were quadratically affected (p<0.05) by dietary treatment. Compared with other treatments, 240 mg/kg Cu from CuCit quadratically increased hepatic (p<0.01) and renal (p<0.05) Cu concentrations, and quadratically decreased hepatic and renal iron concentrations (p<0.05). Conclusion: Cu administered in the form of CuCit at a dosage range of 30 to 60 mg/kg, effectively enhanced the growth performance and antioxidant status of weaned pigs.

Characteristics of Nutritional Components in Astringent Persimmons according to Growing Region and Cultivar (떫은감의 재배지역과 품종에 따른 영양성분 특성)

  • The nutritional components of astringent persimmons according to growing region (five different regions) and cultivar (Daebong and Bansi) were analyzed. The analyzed nutritional components were proximate compositions, insoluble and soluble dietary fibers, vitamin C, carotenes (${\beta}$-carotene and lycopene), free sugars (glucose, fructose, and sucrose), sugar alcohols (xylitol, sorbitol, and mannitol), minerals (Na, Mg, K, Ca, Mn, Fe, and Zn), organic acids (tartaric acid, malic acid, citric acid, and succinic acid), tannic acid, total phenolic compounds, and flavonoids. Daebong and Bansi, which are representative cultivars of astringent persimmons grown in Korea, exhibited significant differences in nutritional components. Insoluble dietary fibers, ${\beta}$-carotene, fructose, sucrose, mannitol, potassium, malic acid, succinic acid, and total phenolic compounds were present at higher levels in Daebong as compared to Bansi. On the other hand, Bansi was rich in moisture, crude protein, vitamin C, Ca, Mn, tartaric acid, and flavonoids. Nutritional components were highly influenced by growing region. Daebong grown in region A was greater in ${\beta}$-carotene, sorbitol, mannitol, zinc, and total phenolic compounds among the all other tested persimmons grown in five different regions. The crude protein, Na, Ca, Mn, tartaric acid, and flavonoids were highest in Bansi grown in E region.

The Effect of Dietary Ionized Water and Premixed Mineral on Fatty Acid and Amino Acid Composition in Finishing Pigs (이온수와 복합광물질 급여가 비육돈의 지방산 및 아미노산 조성에 미치는 영향)

  • This study was conducted to determine the effects of ion water and premixed mineral supplementation on the growth performance, carcass, and meat quality parameters in finishing pigs (LY$\times$D). Each 20 pigs were randomly allotted to three treatments; CON (basal diet), T1 (CON diet added active water), T3 (T1 diet added 1.0% premixed mineral). Used ion water and premixed mineral consisted mainly of Zn and Si, respectively. Cholesterol content (mg% meat) were not differ significantly in the samples, however, the ratios of cholesterol to fat in T1 and T2 was significantly lower than the control (p<0.05). The fatty acid qualities of palmitic acid, linoleic acid, arachidonic acid, SFA (saturated fatty acid), EFA (essential fatty acid), and EFA/UFA ratio were the highest significantly, however, those of the oleic acid, UFA (unsaturated fatty acid), and UFA/SFA ratio were the lowest significantly in T2 (p<0.05). The amino acid levels of glutamic acid, alanine, leucine, lysine, total amino acids, and EAA (essential amino acid) were the highest in T1 (p<0.05). Whereas, the levels of serine, valine, isoleucine were the highest in T2 (p<0.05). The results indicate that dietary ionized water and premixed mineral affects fatty acid composition and improves amino acid composition.

  • The application of Consomm prepared with different ingredients of ground beef and ground chicken ingredients to improve the taste preferences and reduce saving the food cost of Consomm was attempted by reviewing fundamental data and its examining the effect on the physicochemical characteristics of treatment. These treatments were prepared with the following different ratios (9:1, 7:3, 5:5, 3:7, 1:9 ; w/w) of ground beef to and ground chicken: 9:1, 7:3, 5:5, 3:7, and 1:9, w/w, respectively. Gelatin contents were increased significantly with by increasing the mixed ratio of ground chicken. The free sugars identified from Consomm were, glucose, fructose, and sucrose. Free sugar contents, increased significantly by with increasing the mixed ratio of ground beef. (Ed- what are the highlighted treatments? The contents of arginine, glutamic acid and alanine contents were high in the free amino acids of Cconsomm prepared with different ingredients. The In the changes of mineral contents in the Consomm prepared with different ingredients, the mineral showed high contents increased according to in the following order of: K, Na, P, Mg, Ca, Fe, and Zn. From the The results of analysis results, in the Relatin contents, free sugars, free amino acids and mineral contents were all increased with by increasing the mixed ratio of ground chicken. The 7:3 treatment showed From above results, it was showed that B treatment prepared with a ratio of 1 ground beef to 3 ground chicken was the bestmost preferred in physicochemical qualities.
