남녀 대학생의 지방에 대한 영양지식과 실천도 (College Students' Nutrition Knowledge and Practices toward Dietary Fat)

  • This study was made for male and female university students regarding the nutrition knowledge about fat, fat contents in food, and practice toward fat. The result is as follows;1.Out of 13 questions inquiring the knowledge about fat a significant difference was observed between female and male students in 10 questions. Male students' nutrition knowledge about fat was $6.33{\pm}0.16$, and that of female students' was $6.33{\pm}0.16$ and there was no significant difference. The ratio of correct answer was 49% and 59% respectively. Female students marked high ratio of correct answer such items as ${\omega}-3$ fatty acid, the relation between high fat diet and atherosclerosis(coronary disease), the relation between obesity and fat, the relation between ${\omega}-3$ fatty acid and heart disease, cholesterol, fatty acid in butter, degree of unsaturation in liquid oil, margarine, chicken fat, rancity of fat. 2.Male students' total score of knowledge about fat quantity in food was $4.91{\pm}0.10$ and that of female students was $5.58{\pm}0.10$. There was significant difference(p<0.001) and the ratio of correct answer was 55% and 62% respectively. Out of 9 food items, significant difference was observed in 7 items according to student's majoring subject. The ratio of correct answer for the questions about the quantity of fat in food female showed high figures in such items as white meat(p<0.01), whole milk(p<0.0001), skim milk(p<0.01), potato chips(p<0.001), biscuit(p<0.001). However, male students showed high figures on the question about the quantity of fat in vegetable margarine. 3. Out of 12 items observing the degree of diet practice on fat, significant difference was observed between male and female students in 6 items. Female students practice the question items positively with high ratio: intake of fish instead of meat(p<0.01), removing visible fat in meat(p<0.0001), removing chicken skin(p<0.0001), removing oil during cooking (p<0.05), selection of low fat milk or skim milk(p<0.05), selection of meat part(p<0.001). There was significant difference between male and female students in practicing diet on fat (p<0.001) and the total score was $31.52{\pm}0.52$ and $34.65{\pm}0.41$ respectively.

Glycine betaine의 급여가 돈육의 품질에 미치는 영향 (Effect of Dietary Glycine Betaine on Pork Qualities During Storage)

  • 80두의 3원교잡종 돼지를 이용하여, 40일간 글라이신 베타인이 함유된 시험사료를 급여한 후 도축하여 글라이신 베타인 급여가 돈육 등심의 품질에 미치는 효과를 측정하였다. 돈육 등심내 글라이신 베타인의 축적율은 글라이신 베타인의 급여량이 높을수록 높게 나타났다(P<0.05). 0.4% 글라이신 베타인 급여구는 저장기간의 증가에 따라 등심육의 pH가 유의적으로 (P<0.05) 증가하였으며, 저장 13일에는 글라이신 베타인 급여구가 대조구에 비교해 유의적으로(P<0.05) 높은 pH를 나타내었다. 글라이신 베타인 급여 수준에 의한 명도값$(L^*)$은 유의적인 차이를 나타내지 않았으며, 적색도$(a^*)$ 또한 글라이신 베타인의 급여에 의한 주목할만한 경향을 나타내지 않았다. 황색도 $b^*$는 저장 9일에 0.4%와 0.6% 글라이신 베타인 급여구가 대조구와 0.2% 글라이신 베타인 급여구에 비교해 유의적으로 (P<0.05) 낮게 냐타났다. 또한 저장 13일에는 0.6% 급여구가 가장 낮은(P<0.05) 황색도 값을 나타내었다. 글라이신 베타인 급여에 의한 전단력 차이에서는 글라이신 베타언급여구가 대조구에 비교해 유의적으로(P<0.05) 높은 전단가를 나타내었다. 또한 저장 9일까지는 0.4% 글라이신 베타인 급여구가 가장 높은(P<0.05) 전단력을 나타내었으며, 저장 13일에는 0.2% 글라이신 베타인 급여구가 유의적으로(P<0.05) 가장 높은 전단력을 나타내었다. 근절의 길이의 변화를 보면 0.6% 글라이신 베타인 급여구가 전 저장기간동안 기장 짧은(P<0.05) 근절길이를 냐타내었으며, 대조구의 근절길이는 전 저장기간동안 가장 길게 나타났다. 지방산패도의 변화는 저장기간이 경과할수록 모든 처리구의 지방산패도는 유의적으로(P<0.05) 증가하였으나, 처리구간의 지방산패도는 전 저장기간동안 유의적인 차이를 나타내지 않았다. 글라이신 베타인의 급여에 의해 불포화지방산의 함량은 감소하고 포화지방산의 함량은 증가하는 결과를 나타내었다. 특히 linoleic acid와 myristic acid는 글라이신 베타인의 급여수준이 높을수록 감소하는(P<0.05) 경향을 나타내었다. 신선육의 관능검사에서 육색은 저장 1일차에 글라이신 베타인 급여구가 대조구에 비교해 유의적으로(P<0.05) 높게 나타났으나 저장기간이 경과한 이후에는 처리구간의 육색은 차이가 나타나지 않았다. 그러나 신선육 육향과 전체적언 가호도 및 가열육 관능검사는 처려구간의 주목할만한 차이를 나타내지 않았다.

유아기 어린이의 영양 인식과 관련된 요인 분석 -III. 식이 섭취와 영양 인식- (Analysis of Factors Associated with The Preschool Children's Nutrition Awareness -III. Dietary intakes and nutrition awareness of children-)

  • This study estimated the status of dietary intake of 258 children from ages 3 to 6 living in Seoul and analyzed the correlation between the degree of children's nutrition awareness and dietary intake, to provide some basic informations on nutrition education program for their health promotion. Average height and weight of the children were 110.5 cm and 19.7 kg. And their body mass index was 16.2 and obesity index was 6.5%. Proportions of carbohydrate, protein and fat to the total calorie intakes were on the average 55.8%, 15.6% and 28.6%. Calorie intake proportion of breakfast, lunch, dinner and snack were 20.9%, 21.9%, 22.3% and 34.9%. In protein intake, proportion of animal and vegetable protein was 1.4, in fat intake pattern, P/M/S ratio was 1.2/1.2/1.0. As a consequence of analyzing the correlation between children's nutrition awareness and dietary intake, children of high awareness degree to the food value did not intake much calorie and carbohydrate, and did not choose cereals and starches, condensed fat food. As a result, dietary intake of pre-school children showed very good but partially showed a problem of over and under nutrition in quantity or in quality we hope that the result of this study could be helpful for the nutrition education program for the health and nutrition of the pre-school children.

The Use of Cassava Chips as an Energy Source for Lactating Dairy Cows Fed with Rice Straw

  • Thirty-six crossbred (70% Holstein Friesian) cows in mid-lactation were assigned to one of four treatments. The dietary treatments were concentrate based, containing 13.5, 27.0, 40.5 and 54.0% of cassava in concentrate replacing ground maize (16.0% CP). There were curvilinear responses to intake of organic matter, non-structural carbohydrate and metabolisable energy. Cassava and corn fed in a ratio of 50:50 maximised organic matter, metabolisable energy intake; milk yield, milk protein and lactose yield. Milk fat yield was not affected by levels of inclusion. Dietary treatment did not influence ruminal pH, ammonia and volatile fatty acid concentrations or plasma glucose. The low market price for cassava resulted in a lower concentrate feed cost. The optimal level of cassava in a dairy cow diet is suggested as being between 20.0 and 30.0% of cassava in dry matter intake when fed with rice straw.

Evaluation of Vitamin $B_{6}$ Status and Korean RDA in Korean College Students Following a Uncontrolled Diet

  • The vitamin $B_{6}$ status of 49 healthy college student (women, aged 20-26 y) was estimated for evaluation of vitamin $B_{6}$ status and the Korean Recommended Dietary Allowance (RDA) for vitamin $B_{6}$. The average daily vitamin $B_{6}$ intake of the subjects was 0.86 $\pm$ 0.289 mg/d or 61.43 $\pm$ 24.10% of Korean RDA. The average ratio of vitamin $B_{6}$ intake to daily protein intake was 0.014 $\pm$ 0.003 mg/g protein. Foods from animal and plaint sources provided 34.25 $\pm$ 18.62% and 65.78 $\pm$ 18.72%, respectively, of total vitamin $B_{6}$. Plasma pyridoxal 5'-phosphate (PLP) concentration was significantly (p<.01 - p<.001) positively correlated to intakes of all other nutrients except vitamin C. However, no significant correlation was found between plasma PLP and nutrient intake. Vitamin $B_{6}$ intake only tended to have a positive correlation with plasma PLP concentration. Plasma total cholesterol was correlated to plasma PLP concentration (p<.05). Plasma PLP had no correlation with levels of glucose, triglyceride, and albumin. These results confirm that the present Korea RDA for vitamin $B_{6}$ of 1.4mg/d based on 0.02 mg/g protein is adequate.

Effects of Increasing Level of Dietary Rice Straw on Chewing Activity, Ruminal Fermentation and Fibrolytic Enzyme Activity in Growing Goats

  • Effects of increasing dietary rice straw on chewing activity, ruminal fermentation, and fibrolytic enzyme activity in growing goats were investigated in a $4{\times}4$ Latin Square experiment. The goats were offered four diets with an increasing proportion of rice straw (i.e. 0.05, 0.10, 0.15 and 0.20, respectively, on dry matter basis). Increasing level of rice straw increased ($P_{linear\;effect}$ <0.05) the time spent on eating, ruminating, and chewing. The ruminal pH and acetate: propionate ratio were increased ($P_{linear\;effect}$ <0.05), while the $NH_3$-N concentration was decreased ($P_{linear\;effect}$ <0.01). Increasing level of rice straw in the diet increased ($P_{linear\;effect}{\leq}0.01$) molar proportion of acetate and isovalerate, and decreased ($P_{linear\;effect}$ <0.01) molar proportion of propionate. The CMCase, xylanase and cellobiase activities in the rumen were decreased ($P_{linear\;effect}$ <0.05) with increasing level of dietary rice straw, whereas the avicelase activity was increased ($P_{linear\;effect}$ <0.01). In summary, increased level of rice straw elevated the dietary neutral detergent fibre (NDF) content in the diet and had a great impact on chewing activity and ruminal fermentation.

Chocolate consumption and the prevalence of metabolic syndrome in the Korean adult population: an analysis based on the 2014-2016 Korea National Health and Nutrition Examination Survey

  • BACKGROUND/OBJECTIVES: Recent studies have reported chocolate consumption has beneficial effects on blood pressure, obesity, and dyslipidemia, which are components of metabolic syndrome (MetS). However, evidence regarding these relationships in Asia is limited. The aim of this study was to investigate relations between chocolate consumption and MetS in Korea. SUBJECTS/METHODS: Study subjects were 6,982 adults aged 19-64 years free of major chronic diseases that participated in the 2014-2016 Korea National Health and Nutrition Examination Survey. Information on chocolate consumption was obtained using food frequency questionnaires. For primary analysis, subjects were divided into two groups: non-consumer (n = 3,741, 53.6%); consumer (n = 3,241, 46.4%). In order to investigate dose-response effects on MetS, chocolate consumers were divided into quartiles based on amounts consumed: Q1 (n = 789, 24.3%); Q2 (n = 837, 25.8%); Q3 (n = 863, 26.6%); Q4 (n = 752, 23.2%) in second analysis. RESULTS: Chocolate consumers; 1) were more physically active(P < 0.0001); 2) less likely to smoke(P < 0.0001); 3) paid more attention to food nutrition labels (P < 0.0001), and 4) had healthier dietary patterns, that is, they consumed vegetables, fruits, and dairy products more frequently(P < 0.0001) than non-consumers. Furthermore, chocolate consumers had a 30% lower risk of MetS (odds ratio, 0.70; 95% confidence interval, 0.58-0.86; P = 0.0005). However, dose-response effects between chocolate intake and MetS was not found by secondary analysis after excluding non-consumers. CONCLUSIONS: In conclusion, chocolate consumers had healthier lifestyles and dietary patterns and a lower prevalence of MetS than non-consumers, as determined by our primary analysis. Although dose-response effects were not found to be significant among chocolate consumers during secondary analysis, the patterns were partially similar. This cross-sectional finding shows chocolate consumption does not increase the risk of MetS. The prospective studies and intervention trials in Korea are needed to confirm this cross-sectional finding.

식사구성안의 생애주기별 권장 식단의 영양 적정성 분석 -2015 한국인 영양소 섭취기준- (Nutritional Adequacy Analysis of Recommended Menu in Dietary Reference Intakes for Koreans 2015)

  • Objectives: Recommended Menu (RM) prepared according to the Target Pattern expected to meet the dietary reference intake (DRI) of nutrients. Nutritional adequacy of RM in 'DRI for Koreans 2015' were analyzed to verify whether such expectation was fulfilled. Methods: Dishes in RM are categorized by 5 food groups, and number and types of dishes for main meal and between-meals were analyzed. The energy and 12 nutrients (protein, dietary fiber, Ca, P, Fe, Na, K, vitamin A, thiamin, riboflavin, niacin and vitamin C) contents in 10 RMs were calculated using the food composition table (CD) in 'DRI for Koreans'. Energy, energy contribution ratio, and nutrient contents in 10 RMs for 18 age groups were evaluated based on the 'DRI for Koreans 2015'. Results: Number of dishes per meal were 4.83, and representative table setting consisted of cooked rice + soup (or stew) +3 side dishes. Energy contents of RM were 75~109% of estimated energy requirement (EER). None of the RM met the DRI of all 12 nutrients examined. Calcium was the most insufficient nutrient. Only 1-2 years' RM met the DRI, all the other RMs did not meet the calcium DRI. Dietary fiber and potassium contents were also insufficient in most RM. In adult male's RM, only 1 nutrient, i.e. calcium did not meet the DRI, but in female adult's RM, 5~6 nutrients did not meet the DRI. Energy contribution ratio of carbohydrate, protein, and fat in RM were 59.0~70.4%, 15.7~17.5%, 12.1~23.5%, respectively. And 4 RMs out of 10 exceeded the upper limit of acceptable macro-nutrient distribution range (AMDR) of carbohydrate and 3 RMs out of 10 RM were below the lower limit of fat AMDR. Contribution ratio of nutrients were ${\geq}40%$ by food groups were as follows: grain group in energy and carbohydrate; meat fish egg legume group in fat, protein, and niacin; vegetables group in dietary fiber, vitamin A, and vitamin C; milk dairy products group in calcium. Conclusions: RM prepared according to the Target Pattern did not meet nutritional adequacy as expected. Especially calcium, potassium, and dietary fiber contents are needed to be increased in many RMs. Further, energy content in RM needs to be adjusted for fat sugar food group assigned in Target Pattern and condiment.

어유(魚油)식이에 의한 흰쥐체내의 생화학적 변화연구(II) - Lipoprotein Lipase 활성과 미토콘드리아 호흡계의 변화 - (The Study of Biochemical Changes Induced by Fish Oil Diet in Rat ( II ) - Changes in Lipoprotein Lipase Activity and Mitochondrial Respiration and Structure -)

  • 다섯 종류의 실험유지로 고등어유, 장어유, 콩기름, 채종유 및 쇠기름을 사용하여 먹이의 10%(w/w)되는 조제식이를 2주간 휜쥐에게 시행하여, 혈장, 심장, 지방조직의 lipoprotein lipase의 활성도, mitochondrial respiration측정하고, mitochondrial membrane matrix 지질의 지방산구성을 조사하였다. Lipoprotein lipase의 활성은 혈장에서는 쇠기름군이 식물유 및 어유군에 비해 약 60%정도 높고, 지방조직에서는 거의 3배가량 높았으나, 식물유와 어유군 간에는 차이가 없었다. 각 군간에 mitochondrial respiration율은 심장조직에서는 차이가 별로 없었고, 채종유군이 P/O ratio가 심장, 간장조직에서 모두 낮았고 어유(魚油)군의 간장조직mitochondrial respiration이 타조직에 비해 낮았다. Mitochondrial inner membrane matrix분획의 지질 지방산조성은 콩기름군에서 $C_{18:2}$, $C_{20:4}$ 함량이 높고 고등어유군은$C_{22:1}$가 간장조직에서 발견되는 반면 채종유군은 동일 지방산이 심장 mitochondria에서 발견되었다.

복합미생물 발효제(Eco-Farm$^{(R)}$ ) 급여가 비육돈 생산성과 돈사 환경개선에 미치는 영향 (Effects of Dietary Supplementation of Fermented Microbial Complex (Eco-Farm$^{(R)/}$) on Performance of Finishing Pigs and Air Quality in Finishing Building)

  • 본 시험은 L. casei, S. lactis, C. utilis, M. heimalis, S. albus, R. palustris, R. sphaeroides 통의 유용미생물이 혼합된 복합미생물 발효제를 비육돈 사료에 0.5% 및 1% 수준으로 첨가하여 급여할 경우 증체량, 사료섭취량, 사료요구율, 비육돈사내 암모니아, 황화수소 및 이산화탄소 농도에 미치는 영향을 분석하기 위하여 3처리$\times$3반복$\times$15두로서 총 135두를 공시하여 실시하였는데, 그 결과를 요약하면 다음과 같다. 1. 복합미생물 발효제 급여는 일당증체량에는 영향을 미치지 않았으나, 사료섭취량은 0.5% 급여구가 가장 낮았으며(p<0.05), 사료 요구율은 복합미생물 발효제 급여로 개선되는 경향을 나타내었고 0.5% 급여구가 가장 우수하게(p<0.05) 나타났다. 2. 복합미생물 발효제 급여가 비육돈사내 환경개선에 미치는 영향은 긍정적인 것으로 평가된다. 복합미생물 발효제 급여는 돈사내 암모니아 농도를 30% 이상 저감시키는 효과가 인정되었으며, 황화수소 농도는 복합미생물 발효제 1% 급여구에서 대조구에 비하여 뚜렷한 저감 효과를 나타내었다. 그러나 이산화탄소 농도에는 영향을 미치지 않았다. 이상의 결과를 요약해보면 비육돈에 대한 복합미생물 발효제 40일 간의 급여는 사료요구율을 개선시키고, 돈사내 암모니아 및 황화수소 농도에 영향을 미치며, 암모니아의 경우 30% 이상의 저감효과가 인정되어 복합미생물 발효제는 돈사 환경개선에 효과적인 것으로 판단된다.
