Composition of Food Groups Appropriate for Evaluation of Diet Quality of Korean Adolescents -Based on Kant's Minimum Amount- (한국 청소년의 식사의 질 평가에 적절한 식품군의 조성 -Kant의 최소량에 기초하여-)

  • The purpose of this study was to determine composition of food groups appropriate for the evaluation of the quality of total diet or food guide, using the data from the 1998 National Health and Nutrition Survey. Twenty-four-hour-dietary recalls of total 1,110 Korean adolescents aged 13 - 19 years (male 543, female 567) were analyzed for food group consumed (Dietary Diversity Score, DDS), intake patterns of food group, mean index of nutritional quality (mINQ) and nutrient adequacy ratio (NAR). Considering Korean food pattern different from the Americans, this study is to check if Korean 5 food groups with both of oil & sugar group and vegetable & fruit group, and a minimum amount of 30 g in grain group and 15 g in meat group modified from Kant's minimum amount, 15 g in grain and 30 g in meat, could also be appropriate for the diet evaluation of Korean adolescents. Combination of food group and minimum food intake per each food group used in the first trial were categorized into 6 kinds of types: 1) American 5 food groups with Kant's minimum amount as control or 2) American 5 food groups with modified Kant's minimum amount 3) Korean 5 food groups excluded by sugar with the modified amount 4) Korean 5 food groups with modified amount 5) American food groups added oil group with the modified amount 6) American food groups added oil & sugar group with the modified amount. In case of oil group or oil and sugar group, 5 g was quoted for the minimum amount. Correlation between DDS and indices of other diet quality in each type of food group composition were analyzed and the best food group composition was traced by comparing the correlation coefficients of DDS and mINQ or MARs at ${\alpha}\;<\;0.01$. There was no meaningful difference in weight length index of the subjects of eating or not-eating oil or oil & sugar, while the values of mINQ showed higher in the subjects eating oil but no difference in the subjects eating oil & sugar, compared to the group not-eating, respectively. In comparison of type 1 and type 2, correlation between DDS and indices of other diet quality showed higher in type 1 using Kant's amount. And comparing the type of a combined group of fruit & vegetable (type 3 and 4) and the type of separated group of fruit and vegetable (type 5 and 6). six groups of separated vegetable and fruit showed the higher correlation of DDSs and indices of diet quality. In case of being classified into six groups with oil, DDS showed correlation of r = 0.293 with INQ. While, being classified into six groups with oil & sugar instead of oil only, DDS showed correlation of r = 0.249 with INQ. Accordingly the type 5 with oil is regarded as the better food group type than the type 6 with oil & sugar. Since better result was shown in the composition of six groups with Kant's minimum amount, the comparative analysis on both of type1 with oil and oil & sugar was finally performed. Then oil added type 1 showed higher correlation of DDS and indices of diet quality. These result indicated that it would be more appropriate to use six food groups with separate vegetable and fruit including oil group (oil-added type 1) rather than oil & sugar group for evaluation of dietary quality of Korean adolescents using DDS.

Assessment of Dietary Intake of Preschool Children in Busan : Assessment Based on Food Group Intake (부산지역 학령전 아동의 식생활평가 : 식품군 식품섭취 상태평가)

  • To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. Assessment of Food Consumption, Dietary Diversity and Dietary Pattern during the Summer in Middle Aged Adults and Older Adults Living in Gugoksoondam Logevity Area, Korea (전라도 구곡순담 장수벨트지역에 거주하는 중노년층의 연령군에 따른 여름철 식품 섭취량과 식품 섭취 다양성 및 식이 패턴 평가)

  • The purpose of this study was to investigate food intake, dietary diversity and dietary pattern during the summer in middle aged and older adults living in Gugoksundam (Gurye, Goksung, Sunchang and Damyang counties), Jeonla Province located in southern part of Korea and known as one of the representative Korean longevity areas. Food intake and dietary diversity were assessed by using the data from 2 day-24 hour recall of 1,051 subjects (394 males and 711 females) aged 45 years and older (45-93 years in male, 45-105 years in female). The average ages of males and females were 70.7 years and 71.1 years, respectively. Average total daily food intake was significantly decreased with aging in both genders, and the average animal food intake ratio to total food intake was ranged 10~14% in 3 different age groups, 45~64 years, 65~74 years and 75 years and older. The contribution of each food group, in weight, to total food intake showed the descending order of grains, fruits, vegetables and alcohols in males, and grains, fruits, potatoes and meats in females. On daily intake amount of each food item, rice, watermelon, soju, kimchi, and potato were ranked on top 5 in descending order in males, and rice, watermelon, potato, kimchi and ylmukimchi in females. On intake frequency, rice, kimchi, onion, green pepper and potato were ranked on top 5 in descending order in both genders. Dietary variety score (DVS) and dietary diversity score (DDS) for the assessment of dietary diversity and balance were significantly decreased with aging in both genders. In food group intake pattern (DMGFV), 01101 type without consumption of dairy and fruits was the most prevalent, and only 3.6% of male and 3.9% of female subjects showed 11111 type, consumed all the 5 food groups a day. Dietary pattern of subjects was analyzed by cluster analysis with 18 food groups intake. Overall dietary pattern was classified into two clusters, one was more desirable and the other was less desirable. The percentage of subjects with more desirable dietary pattern was about 15% in male and 32% in female. In conclusion, most of our subjects living in Gugoksundam area were taking very simple diet with low amount of dairy products and fruits. These results indicate that nutrition intervention and education for older people living in rural areas should be focused on various food intake including dairy products and fruits.

Comparison of Indices for Diet Quality Evaluation of Korean Adolescents by Residence Area and Body Size (한국 청소년의 거주지역별 및 체격별 식사의 질 평가지수의 비교)

  • The purpose of this study was to assess several indices of diet quality based on nutrient, food and food group intake of Korean adolescents based on several indices on diet quality according to residence area and body size. Using the data from the 1998 National Health and Nutrition Survey, twenty-four-hour-dietary recalls of a total of 1,110 Korean adolescents aged 13 - 19 years (male 543, female 567) were analyzed for nutrient adequacy ratio (NAR) , index of nutritional quality (INQ) , the number of foods (Dietary Variety Score, DVS) and food group consumed (Dietary Diversity Score, DDS) . In doing that, it was attempted to apply only the minimum amount of solid foods of Kant's without inclusion of liquid foods because of the very limited variety in Korean foods. Based on weight length index, 13.1% of the subjects were categorized as obese, 14.2%, overweight, 44.4%, normal and 28.3%, underweight. Only vitamin B2 intake was higher in the obese group than in the underweight group. There was no meaningful difference in energy, protein and fat intakes according to the grade of the body size. In terms of residence area, intake of fat, niacin, vitamin $B_6$ and folic acid were lower in the rural areas than in the metropolitan city. Only vitamin E intake was higher in the rural areas. Mean value of NARs (MAR) and INQs (mINQ) was also higher in the metropolitan city than in the rural areas, but there was no significant difference of these two values according to body size of the subjects. Mean DVS was 21.02 for total subjects, and has no difference between male and female and between metropolitan city and other medium-small city. But, the rural areas showed the lowest DVS of 19.05. Mean DDS in which five is a maximum score was 3.3 with no significant difference by sex and by residence area in male subjects. However, in female subjects, DDS in the rural areas was the lowest. According to body size of the subjects, there was no meaningful difference in both scores of DVS and DDS. In conclusion, most indices of nutrient intake and food and food group intake were not significantly different by body size of the subjects, while most indices were significantly different by residence areas: higher in the metropolitan city than in the rural area.

Seasonal Variation of Dietary Intake and Quality from 24 Hour Recall Survey in Adults Living in Yeonchon Area (연천 지역 성인의 계절별 영양소 및 식품섭취 비교 연구)

  • This study was conduced to investigate the seasonal variation of dietary intake and quality obtained by 24 hour recall method in Korean adults living in rural area. The mean daily intakes of 4 seasons were 1,692kcal for energy, 63g(14.8% of energy) for protein, 30g(15.7% of energy) for fat, 257g(60.7% of energy) for carbohydrate. Mean daily intakes were significantly highest in winter for most of the nutrients, and lower in summer for energy, fat, calcium, iron. Mena adequacy ratio(MAR), an index of overall nutritional quality was 0.65 in winter, 0.67 in spring, 0.65 in summer and 0.72 in autumn and nutrient adequacy ratio(NAR) was significantly different fro vitamin C agmong different seasons. Subjects consumed usually 15.3 different foods in winter, 14.5 in summer, 13.9 in spring and 13.7 in autumn. The number of food consumed was positively correlated with intake of most nutrients, especially in autumn. For variety among the five major food groups(grain, meat, dairy, fruit, vegetable) with a dietary diversity scores(DDS) calculated, the average socre of DDS was 3 in all seasons and omitted food groups were usually dariy and fruit. In conclusion, dietary intake and quality of Korean adults were different according to seasons.

Evaluation of Dietary Quality and Nutritional Status according to the Use of Nutrition Labeling and Nutrition Claims among University Students in Chungbuk Area - Based on Nutrition Quotient (충북 지역 일부 대학생에서 영양표시와 영양강조표시 이용에 따른 식사의 질과 영양상태 평가 연구- 영양지수를 이용하여)

  • Objectives: The study examined the status on the use of nutrition labeling and nutrition claims among university students as well as the diet quality and nutritional status using the nutrition quotient (NQ) according to the use of nutrition labeling and claims. Methods: A cross-sectional survey was conducted on university students (86 males and 131 females) from March to April in 2019 in Chungbuk area. Results: The percentage of subjects who reported that they recognized nutrition labeling was 80.2% of the total, and 63.8% of them indicated that they used nutrition labeling for their food choices. In addition, 22.6% of the total subjects said that they used nutrition claims. The group of subjects using nutrition labeling showed significantly higher mean scores in balance (P < 0.01), diversity (P < 0.05), moderation (P < 0.01), and dietary behavior (P < 0.001) along with higher mean NQ score (P < 0.001) compared to the group not using nutrition labeling. The group using nutrition claims had significantly higher mean scores in balance (P < 0.001), diversity (P < 0.01), moderation (P < 0.001), and dietary behavior (P < 0.001) as well as total NQ scores (P < 0.001) compared to the group not using nutrition claims. The group of subjects using both nutrition labeling and nutrition claims showed significantly higher mean NQ scores than the group of subjects using either nutrition labeling or nutrition claims (P < 0.05). Conclusions: In this study, university students' use of nutrition labeling and nutrition claims appeared to be related to their diet quality and nutritional status.

Diet Qualities by Sex and Age of Adults Over Thirty Years Old in Jeon-ju Area (전주지역 30세이상 성인의 성별, 연령에 따른 식사의 길)

  • This study was performed to assess diet qualities by sexes and ages of adults over thirty years old in Jeon-ju area. Diet survey with one day 24-recall method was used done for 382 subjects(129 males & 253 females). Survey sample was divided into six groups by sex and age groups: male 30-49, male 50-64, male 50-64, male 65-79, female 30-49, female 50-64 and female 65-79 years. Diet quality was assessed by NAR(Nutrient Adequacy Ratio), MAR(Mean Adequacy Ratio), INQ(Index of nutrition quality), KDDS(Koreans Dietary Diversity Score), Meal Balance, DVS(Dietary Variety Score), DQI(Diet Quality Index). The 5-point DQI assessed the important dietary guidelines for Koreans. The averages of energy, protein, P, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than 70% of RDA. The averages intakes of Ca and vitamin A were very lower than RDA all groups. The averages of MAR were 0.78, 0.81, 0.83 in male 30-49, 50-64, 64-79 years, 0.73, 0.77, 0.71 and in female 30-49, 50-64, 65-79 years, respectively. The averages of MAR in female 30-49 years and female 65-79 years were significantly lower than the averages MAR of male 65-79 years. The averages of Sugars and Beverages intakes were significantly higher in male 30-49 years than others. Animal food intake ratio(% total food intake) in the male 65-79 years(16%) was significantly higher than male 30-49 years(11%). The averages of Nutrition intakes were higher in male compared to female. The subjects who consumed all of the major five food groups were 5% in male 30-49, 17.8% in male 50-64, 25.0% in male 65-79 years, 18.9% in female 30-49, 23.7% in female 50-64, 11.5% in female 65-79 years. The averages of KDDS were 3.5, 3.9, 3.9, 3.8, 3.8, 3.5, respectively. The averages of Meal Balance were 8.6, 9.1, 9.1, 8.3, 8.4, 7.8, respectively. The averages of DVS 20.1, 19.9, 19.9, 20.5, 19.0, 17.2, respectively. The averages of DQI were 1.7, 2.2, 2.1, 2.0, 2.1, 1.7, respectively. 81.8% of the subjects had KDDS scores of 2 to 4 and 87.3% of the subjects has Meal Balance scores 4 to 10. In contrast, 89.8% of the subjects had DQI scores of 0 to 3. In view of these facts there are few who observed the five dietary guidelines for Koreans. There findings suggest that dietary qualities were associated with nutrient intake the relation factors may vary by sex and age of adults over thirty years old in Jeon-ju area. Common problems were lack of Ca, vitamin A and dairy products intakes. Therefore adults over thirty years old in Jeon-ju area need the important nutrient management such as Ca, vitamin A.   • Although food insecurity might be associated with poor dietary intake, this relationship has not been researched in Korea. This study examined the association of food security with dietary intake from the third Korea National Health and Nutrition Examination Survey. Food security was measured by a self-reported hunger measure on the dietary situation of subjects' households in the previous year and approximately 2/3 of the subjects lived in food-insecure households. Dietary intake was based on a 24-hour dietary recall. Food insecurity was significantly associated with low nutrients intake and nutrients intake compared to dietary reference intakes (DRI) was also lower among subjects in food-insecure households. Overall diet quality based on dietary diversity score (DDS) was worse in food-insecure subjects. Food security should be considered an important issue to public health because dietary change due to food insecurity may affect health status.

  • Stress has been associated with poor eating behavior and diet quality. Yet, the relationship between nutrient and food intake and perceived stress in Korean female adults has not been validated. The purpose of this study is to identify the relationship between nutrient and food intake and perceived stress in Korean female adults. This is a cross-sectional study based on the 2014-2015 Korean National Health and Nutritional Examination Survey data. This study investigated 2,010 female adults age 19~64. In this study, according to subjects' perceived stress, we classified subjects into very low-stress recognition group (VLSRG) (n=211), low-stress recognition group (VSRG) (n=1,223), high-stress recognition group (HSRG) (n=488) and very high-stress recognition group (VHSRG) (n=88). Daily nutrients and food group intake, food groups consumed (Dietary Diversity Score, DDS) were analyzed using data from the 24-recall method. The VHSRG had a larger proportion of subjects that were younger (p<0.0001), single (p<0.0001) and smokers (p<0.0001) compared to the VLSRG. Energy and food intake did not differ between the four groups. Percentage of subjects with protein (p=0.0322), vitamin A (p=0.0364) and vitamin C (p=0.0115) intake lower than the EAR (estimated average requirement) in the VHSRG were significantly lowest in the four groups. Also, food intake percentage from fruits and seaweed groups in the VHSRG were lower than other groups (p=0.0034, p=0.0015). DDS in the VHSRG (3.87) was significantly lowest in the four groups (p=0.0022). Results suggest that perceived stress in Korean female adults may by significant to consider in nutritional education programs.

  • This study was conducted to identify the characteristics of Korean diet in the view of food and food group intakes. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Rice was a major contributor to many nutrients intake because of the amount of consumption. Vegetable oil made great contribution to fat intakes and eggs, squid, and anchovy supplied much cholesterol compared to other foods in all the age groups. Milk was major contributor of fat and cholesterol as well as calcium in younger age group, and seasoning gave much contribution to iron intakes. Mean dietary variety score(DVS) was 32 for EC group and 17 for subjects over 70 years, and tended to decrease along the increasing age. EC group consumed most variable number of foods of all groups but they consumed many junk foods, therefore the MAR value was low despite their high DVS value. Mean dietary diversity score(DDS) of each age group from PC group to subjects over 70 years was 4.34, 4.28, 3.79, 3.89, 3.76, 3.56, and 3.25, respectively. Food group, which was consumed below the minimum amount, was mainly fruits in all the age groups, and many subjects in HS group and over 30 years consumed dairy products below the minimum amount. From these results, age specific nutritional problems were found. PC group and subjects over 50 years seemed to need more diverse food intake than now, EC group did nutrient dense food, and HS group and subjects over 30 years did dairy products.
