Differences in Awareness, Attitude and Knowledge toward Muscle Health according to General Characteristics (근육건강에 대한 일반적 특성에 따른 인식, 태도 및 지식의 차이)

  • Purpose: To understand awareness, attitude and knowledge levels of muscle health of adults over 18 years old. Methods: This study was a cross-sectional study using questionnaires. A total of 401 questionnaires were included for final analysis. Mean and standard deviation of the continuous variables were analyzed and frequency analysis of categorical variables was performed. To identify differences according to general characteristics, t-test was used. Results: Awareness scores about the importance of muscle health and exercises were 8.3 and 13.0, respectively. Attitude score and knowledge score were 12.4 and 15.0, respectively. There were differences in attitude toward muscle health according to gender, age, physical activity, and diet habits. However, there was no difference in attitude toward muscle health according to educational level, smoking, drinking, or sleeping. Conclusion: It is necessary to seek a strategy to improve awareness and attitude toward muscle health based on knowledge, not merely to raise knowledge level about muscle health. Since nurses play a central role in health promotion and disease prevention, they should also play an important role in strategic development and application of intervention.

Study of the Level of Osteoporosis Awareness among Women Dwelling in Urban Area (일부 대도시 지역 여성들의 골다공증 인지정도에 관한 연구)

  • Purpose: This study was implemented to investigate the level of awareness of osteoporosis among urban women. Methods: A survey was conducted with a sample size of 434 adult females who resided in metropolises in Korea such as Seoul, Gyeonggi-do, Pusan, Gyeongsangnam-do, Kangwondo, Jeju-do and Jeollanam-do. Osteoporosis Awareness Scale was consisted of five areas with total number of 31 questions. The questionnaire's scale was 1 to 4 point, 4 point being the highest understanding level. The collected data were analyzed using descriptive statistics method. Results: The average awareness level of subjects was 2.38 and significant different depending on participants' age, education level, previous encounter with any information about osteoporosis, preventive behavior of osteoporosis, bone mineral density test, fracture history, diet control experience, and regular exercise. In osteoporosis awareness level by five areas, preventive behaviors 2.76 resulted in the highest score and characteristics of osteoporosis 2.51, bone physiology 2.46, improving bone health 2.38, and risk factors 1.80 followed respectively. Conclusion: We should implement bone health programs from a various perspective in order to raise women's osteoporosis awareness. In addition, We need follow-up studies on whether or not the increase on awareness level actually would result in changing in their behavior.

A Survey of Awareness and Preference for MSG according to the Pursuit of Well-being in Diet (웰빙식생활 추구 정도에 따른 조미료(MSG)에 대한 인식과 기호도 조사)

  • This research was conducted to examine the awareness and preference levels related to MSG (monosodium glutamate) according to well-being dietary life pursuit attitude factors as well as to improve opportunities to meet value conscious consumption of well-being-oriented customers. According to well-being dietary life pursuit attitude factors, respondents were divided to three clusters, indifference type, well-being-oriented type, and active health action type. Sensory evaluations were carried out on soybean paste soup (Doenjang-guk) and seasoned spinach with different levels of MSG. In the results, 74.4% of all respondents preferred Doenjang soup with 2% MSG, 65.4% preferred seasoned spinach with the same ratio of MSG, and 35.9% preferred seasoned spinach with 0.5% MSG. Regarding the acceptance level of MSG, addition of MSG to improve taste was acceptable to the indifference type (cluster 1). On the contrary, active health action type did not prefer MSG, wanted natural seasonings despite high prices, and preferred to dine at restaurants that serve MSG-free foods. Based on this study, restaurant companies should segment their customers on the basis of MSG usage and establish their positioning strategies according to their concepts.

Consumers' awareness and behavior intention on meat consumption according to climate change

  • Globally, consumers' enormous and increasing appetite for meat is one of the biggest causes of climate change because livestock industry emits more greenhouse gas than transportation. The purpose of this study is to analyze consumer awareness about the impact of meat consumption on sustainability in response to climate change. Based on the theory of planned behavior, the attitudes, subjective norms, perceived behavioral control, prior knowledge, and risk perception variables were analyzed to evaluate the impact of climate change awareness over consumer behavior on meat consumption. Major findings are as follows: consumers were aware of climate change but has made few changes to their meat consumption. In addition, changes in meat consumption were found to be caused by health safety concerns, such as disease outbreaks. Significant variables related to meat consumption patterns associated to climate change impacts were household income, age, attitude, subjective norm, perceived behavioral control, and prior knowledge. These results suggest some implications for policy. There is a need for public relations and education to make the public aware of and better understanding of link between climate change and diet. Also, government should make efforts to raise awareness of mitigation of climate change such as comprehensive food labels which are identifying lesser impacts on climate and better dietary guideline instructions which would include coping with climate change.

Study on Recognition and Menu Development Direction of Medicated Diet Gruel - Focusing on Elders in Daejoen Area - (약선죽(藥膳粥)에 대한 인지도 및 메뉴 개발 방향 - 대전지역 성인 여성을 중심으로 -)

  • The purpose of this study was to provide basic data for the development of medicinal herbs, which are useful for the treatment of chronic diseases and physical characteristics of the elderly. A total of 151 adult women aged 65 years or older currently living in Daejeon were enrolled. The contents of this study were parents' health status, recognition of the necessity for a dietary therapy, awareness of medicinal herbs, requirements for medicinal herbs, physician of medicinal herbs and obstacles to medicinal herbs. Based on these results, the differences in the perception of medicinal herbs according to the dietary needs group as well as differences in the perception of medicinal herbs according to medicinal herbicidal groups were analyzed. Of the 151 subjects, 90.7% were married, and 44.4% of them were aged between 40 and 49. Most of the patients were aged in their 70s (68.9%), and 79.5% of had chronic illnesses such as high blood pressure, hyperlipidemia, arteriosclerosis, and heart disease. It is recognized that dietary therapy is necessary for the treatment of diseases, and awareness of medicinal herbs is low but necessary. As for the requirements for medicinal herbs, the most favored was 'porridge for the prevention and treatment of diseases', and 72.2% of medicinal herbs were physicians. However, problems cited were availabitity of ingredients, cooking technique, price of ingredients, and others. In addition, both groups requiring dietary therapy and having high awareness of medicinal herbs felt that medicinal herbs would be helpful in treating diseases. Therefore, it is necessary to provide a simple medicinal herb recipe for each disease and to develop anti cooked medicinal herbs.

Dietary Behaviors and Vegetable Intakes of Elementary School Students at Daegu and Gyeong-Sang Buk Do (대구 경북지역 초등학생들의 식습관과 채소류 섭취에 대한 연구)

  • With the enlargement of school meals, the lunch program has played an important role in educating young students about good eating habits and food Preferences. The objective of this study was to investigate the awareness and preference of vegetables and to provide preliminary data required for framing a menu of school meals to help students maintain good food preference and eating habits with a balanced food diet. A survey was conducted from 25th October to 27th November, 2004 with 873 elementary school students (M: 474, F:399) in the 4th, 5th, or 6th grade of 6 schools in Daegu and Gyeong sang but do (Yongchon, Gumi, Pohang). Satisfaction for the school meal was rated by $52\%$ of the students and 'rice and soup' was the favorite meal type. Eating habits of students were not influenced by the employment status of their mothers. Only $11.2\%$ of students selected vegetable as their favorite food. Marsh mallow, taro stem, green bean sprouts, crown daisy and broccoli showed very low awareness and were selected as the least favorite vegetables. The most important criteria of preference were the taste and eating experience of the vegetables. The most preferred cooking method of the vegetables was tchigae which is a simple stew. Recognition of frequency for daily eating vegetables significantly affected the real intake of vegetables for everyday meals and the preference of vegetables also significantly affected the vegetable intake from the school meals. Compared to the school dietitian, mothers showed a greater frequency in being selecting as an educator of nutritional information. The above results indicated the need to improve the level of students' understanding of the importance of vegetables in the daily diet with parental education and publicity.

Prevalence, Risk Factors, and Pediatrician Awareness of Infant Dyschezia in Indonesia

  • Purpose: This study aimed to evaluate the prevalence and risk factors of infant dyschezia as well as pediatrician awareness regarding this disease in Indonesia. Methods: This is a two-part cross-sectional study, which was divided into study A and B. Study A: Parents whose infants were under 9 months old and attended well-baby clinics were recruited at two randomly selected primary health centers. Parents also provided information on the infant's previous medical history, and socio-demographic and family details. The Rome IV criteria was translated and validated to be used for diagnosis of infant dyschezia. Study B: Randomly selected pediatricians were surveyed by using a questionnaire to evaluate their knowledge regarding infant dyschezia. Results: The prevalence of infant dyschezia based on the result of this study was 11.8%. Three risk factors had a significant relationship with infant dyschezia i.e., the number of children in the family (odds ratio [OR], 5.619; 95% confidence interval [CI], 2.194-14.390; p<0.001), complementary food diet (OR, 4.238; 95% CI, 1.902-9.443; p<0.001), and social-emotional disturbance (OR, 5.670; 95% CI, 2.550-12.609; p<0.001). The percentage of pediatricians correctly diagnosed infant dyschezia was 71.5%. Most pediatricians agreed that they did not perform any diagnostic testing (79.7%) and only provided education in cases of infant dyschezia (58.5%). Conclusion: The prevalence of infant dyschezia identified in our study was higher than that in other neighboring Asian countries, with the highest prevalence observed in infants 7-9 months old. Being an only child, receiving complementary food diet, and sociao-emotional disturbances were significant risk factors of infant dyschezia.

Influence of School Food Service Employees' Nutrition Education on Nutrition Knowledge (고등학교 급식 조리종사원의 영양지식과 영양교육 경험과의 관계 연구)

  • This study was designed to investigate the relationships between nutrition education, nutrition awareness and nutrition knowledge of school food service employees. We analyzed 288 self-administered questionnaires. Most of the employees (89.8%) were with contract-managed food services, 45.1% were $41{\sim}50$ years old, and 45.4% had chef certification. Two-thirds of the employees received nutrition education on 'nutritionally balanced diet' and 'sources of calcium', whereas less than 50% received education on 'problems with carbohydrates', 'functions of iron', 'deficiency and sources of iron'. The degree of nutrition awareness was generally higher than the level of nutrition education experience. The mean nutrition knowledge score was 11.7 out of 20 possible points, The majority of employees correctly identified 'sources of calcium (91.8%)', 'functions of carbohydrates (91.4%)', 'sources of cholesterol (91.0%)', and 'problems with lipids (90.4%)'; less than 50% correctly answered 'sources of proteins (18.9%)', 'functions of iron (27.9%)', 'recommended dietary allowances (32.0%)', 'functions of lipids (40.2%)', and 'sources of vitamins (44.3%)'. A chi-square analysis revealed that the employees' actual knowledge did not differ significantly by nutrition education - with the exception of three topics; 'recommended dietary allowances', 'changes in vitamins during cooking', 'functions of water' - or by their nutrition awareness. Nutrition knowledge scores did not differ by sex, decreased with age, increased with academic background, and increased in careers of >10 years or that were contract managed. There were significant correlations between nutrition education scores and nutrition awareness scores (p<0.001); nutrition knowledge scores and nutrition education scores (p<0.001); nutrition knowledge scores and nutrition awareness scores (p<0.001).

Awareness, Practice, and Obstruction of Sodium Reduction by Middle School Dietitians in Busan Area (부산지역 중학교 영양(교)사의 나트륨 저감화에 대한 인식, 실천 및 방해요인 조사)

  • The objective of this study was to expand sodium reduction practices by analyzing the awareness, practice, and obstruction of sodium reduction by middle school dietitians. Questionnaires were administered to 146 dietitians in the Busan area. The average score for the dietitians' awareness of low-sodium diets was 4.21/5.00, and dietitians in their 30s and over 40 reported significantly (p<0.05) higher awareness than those in their 20s The average practice scores for low-sodium diets was 3.74/5.00, 3.80/5.00 for cooking, 3.77/5.00 for food choice, and 3.60/5.00 for action. The average scores of obstruction for low-sodium diets was 3.58/5.00, 3.93/5.00 for low-sodium products, 3.88/5.00 for students, 3.71/5.00 for dietitians, 3.12/5.00 for facilities, 2.86/5.00 for cooks. Dietitians over 40 and those with graduate school degrees had significantly (p<0.05) higher scores for low-sodium products. Regarding practice and obstruction for low-sodium diets, dietitians with high awareness scores had significantly (p<0.01) higher scores for practice and lower scores for obstruction of low-sodium diets. These findings suggest that it is critical to develop diverse low-sodium products and recipes, and that dietitians should educate students about the necessity and the practice of reduced sodium diets.

Qualitative Study on Dietary Practices of Hemodialysis Patients (혈액투석환자의 식생활 실천에 관한 질적 연구)

  • This study was a qualitative investigation into hemodialysis patients' dietary practices. The purpose of this study was to explore the obstacles and requirements to maintain a recommended diet therapy in hemodialysis patients. Five patients undergoing hemodialysis in the renal chamber of the general hospital were interviewed individually. The interviews were based on an interview guide and analyzed by Giorgi's method of analysis. As a result of this study, five elemental factors and 12 subelemental factors were derived. Derived elements were "difficulty in dietary guidelines", "recognizing necessity of diet therapy", "awareness of importance of diet", "difficulty practicing diet therapy", and "looking for ways to practice diet therapy". Patients not only felt difficulties in practicing dietary guidelines but also recognized the need and importance of diet therapy. Patients seemed to have difficulty practicing meal therapy and eating with their families or others. They were also stressed by the limited selection of dietary components and rapid dietary changes before and after dialysis. However, patients showed a willingness to implement dietary management to improve their quality of life and to practice dietary therapy. In order to improve the practice of dietary management in hemodialysis patients, nutritional education should be focused on long-term dietary habits through continuous education and monitoring, not just one-off education. Moreover, patients should be educated that adherence to dietary control may be less burdensome on their families.
