고령자의 식품선호도 및 고령친화식품 요구도에 관한 연구 - 서울시 노인복지관 이용자 중심으로 - (Study on Demand Elderly Foods and Food Preferences among Elderly People at Senior Welfare Centers in Seoul)

  • The purpose of this study was to investigate the need to develop foods for the elderly based on their food preferences. A one-to-one survey method was used for data collection, and the survey was conducted on 165 elderly people (male: 47, female: 118) attending senior welfare centers in Seoul. The results of this study show that the preferred cooking method was steaming rather than stir-frying. Vegetables (4.24), fruits (4.22), Kimchi (3.87), fish (3.83), tofu (3.81), rice-cakes (3.65), dairy products/eggs (3.47), meat (3.45), noodles (3.44), seafood (3.44), poultry (3.23), bread/cookies (3.10) showed high preferences in order (p<0.05). The respondent's chewing & swallowing degree were "Not uncomfortable chew" 31.5%, "Hard food, and a big food is a little difficult to intake". 37%, "Hard food, and a big food is difficult to intake" 11.5%, "Small food, and soft foods can intake" 11.5%, and "It is difficult to intake solid food" 1.2%. Foods that were difficult to chew were meat 28.3%, seafood 15.2%, vegetables 15.2%, nuts 14.1%, fruits 12.0%, Kimchi 8.7%, and other 6.5%. For respondents, the most important factors affecting choice of elderly foods were flavor (48.5%), hygiene (43.0%), and nutrition (36.4%). The elderly wanted "Ready to eat (RTE)" 53.9%, "Ready to heat (RTH)" 15.8%, "Ready to cook (RTC)" 21.2%, and 'Fresh cut product" 9.1%.

오피스텔의 지역별 투자수익률 및 안정성에 대한 연구 (A Study on the Regional Rate of Return and Stability on Investment in Officetel)

  • The officetel introduced into Korea in the mid-1980s has thus far been in the limelight as the object of investment for the substitute for small-sized housing and for lease income. But to raise the possibility of succeeding in officetel investment in the future, it has been necessary to make a systematic analysis of the changed direction of the officetel market and the profitability and stability of investment. Accordingly, this study attempted to analyze demand for officetel with a focus on the possibility of increase in the households composed of one or two members, the major consuming bracket of small-sized housing. And it attempted to analyze the possibility of investment in officetel as the investment goods for lease income due to the entry of Korea into aging society. And past analysis of investment in officetel was confined to profitability analysis, but this study sought to develop the stability indicator of the officetel for the analytical purpose. As a result, it is predicted that demand for small-sized housing will increase due to the increase in 1-to 2-person households. Accordingly, it is predicted that demand for officetel as the place of residence will come to increase. And taking into consideration the more serious degree of sustained aging in the population, older people's preference for real estate and need for lease income, it is predicted that preference for officetel as the object of investment will increase. An attempt was made to analyze the profitability and stability of investment in the metropolitan area which the officetel has principally been supplied, in order to analyze the profitability and stability of officetels. For the purpose of this study, Yeoksam-dong in Kangnam-gu, Yeoui-dong in Youngdeungpo-gu, Bongcheon-dong in Kwanak-gu were selected in Seoul as the area for analysis. Jung-dong in Wonmi-gu, Bucheon, Seohyun-dong in Bundang-gu, Seongnam, Janghang-dong in Ilsan-gu, Koyang were selected in Kyonggi province as the area for analysis. As a result, it was found that the small-sized officetel had higher profitability and stability than the large-sized officetel. It was found that the area of Kyonggi Province had the larger deviation by size. That is, it was found that the small-sized officetel in the area of Kyonggi Province was significant as the object of investment for stable lease income.

노인 부모의 식생활 의존도 및 노인 급식 프로그램에 대한 의식 조사 (Study on the degree of dependence on flood environment and the perception of meal service program for elderly parents)

  • This study was designed to examine the degree of dependence on dietary environment, evaluate the perception of metal service program and investigate factors affecting the demand for meal service programs for elderly parents. The purpose of this study provided the basic information for the development and systemization of meal service program for elderly. Eight hundred twenty semen adults who have elderly parents were surveyed using pre-designed written questionnaire. According to the results on the life environments of their elderly parents, psychological factors(41.7%), living condition(14.3%) and dietary environment (13.2%) had trouble. Physical and psychological conditions significantly affected the dietary environment(p<0.05). Only 9.2% of the subjects were already aware of recognized the meal service program for elderly, and the degree of recognition differed significantly by sex and education level. Women had better perception of meal service program for elderly than men. In men, they would expect to use congregate meal service(44.1%), home-delivered meal service (23.7%), nursing home meal service(16.9%) in order. On the other hand, for women, home-delivered meal service (41.2%), congregate meat service(44.1%), and nursing home meal service (16.8%) in order. Therefore there are significant differences between men and women what type they want(p<0.001). For those who haute both of the parents or either one of them, they would use more of congregate meal service (38.8%) and home-delivered meal service (38.8%) than nursing home meal service (15.5%). The group whose parents are lower socio-economic status would have tendency to use the nursing home meal service (p=0.06). The group of whom believe the dietary environment is the problem of their parents'life environment had preference of using congregate meal service and home-delivered meal service.

The study on development of easily chewable and swallowable foods for elderly

  • BACKGROUND/OBJECTS: When the functions involved in the ingestion of food occurs failure, not only loss of enjoyment of eating, it will be faced with protein-energy malnutrition. Dysmasesis and difficulty of swallowing occurs in various diseases, but it may be a major cause of aging, and elderly people with authoring and dysmasesis and difficulty of swallowing in the aging society is expected to increase rapidly. SUBJECTS/METHODS: In this study, we carried out a survey targeting nutritionists who work in elderly care facilities, and examined characteristics of offering of foods for elderly and the degree of demand of development of easily chewable and swallowable foods for the elderly who can crush foods and take that by their own tongues, and sometimes have difficulty in drinking water and tea. RESULTS: In elderly care facilities, it was found to provide a finely chopped food or ground food that was ground with water in a blender for elderly with dysmasesis. Elderly satisfaction of provided foods is appeared overall low. Results of investigating the applicability of foods for elderly and the reflection will of menus, were showed the highest response rate in a gelification method in molecular gastronomic science technics, and results of investigating the frequent food of the elderly; representative menu of beef, pork, white fish, anchovies and spinach, were showed Korean barbecue beef, hot pepper paste stir fried pork, pan fried white fish, stir fried anchovy, seasoned spinach were the highest offer frequency. CONCLUSIONS: This study will provide the fundamentals of the development of easily chewable and swallowable foods, gelification, for the elderly. The study will also illustrate that, in the elderly, food undergone gelification will reduce the risk of swallowing down to the wrong pipe and improve overall food preference.

안전성 선호를 고려한 1인가구의 식품소비행태 분석 (Analysis of Food Consumption Behavior of Single-person Households in Consideration of Safety Preference)

  • With the recent rapid increase in single-person households, food companies are releasing small packaging and small-capacity products regardless of product line such as beverages, fresh foods, and home snacks, and food consumption patterns are also changing. Meanwhile, as a series of accidents related to food safety occurred during cost-effective consumption pursuing price-performance, more consumers wanted to choose products that have been proven safe even with higher money due to food safety anxiety. Considering the concept of 'safety' of food, this study by using the 'ordered probit model' empirically investigated whether there is a difference in the degree of preference for safety in food consumption behavior between single-person and multi-person households. Summarizing the results, it was found that women rather than men, and elderly households among young and single-person households had a higher demand for food safety. The results of marginal effects considering food safety variables show that respondents with low frequency of delivery and take-out use are considering food safety more, and that single-person households are considering safety more than multi-person households. In the future, the population structure of Korea will continue to increase in single-person and elderly households, and women's economic activities will also continue to increase. Therefore, the growing home convenience food market needs marketing strategies to secure and emphasize food safety, such as sterilizing treatment technology for hygiene and safe container development from environmental hormones, and needs a lot of support and attention to meet changes in food culture trends and demographic structure.

대단위 아파트 단지의 조경공간 관리에 대한 주민의식 분석 - 대구시 지산지구 아파트단지를 대상으로 - (Analysis on Residents Consciousness about Management of the Exterior Space in Apt. Complex)

  • The Purpose of this study was to establish the belter residential environment in Apt. complex. In this study, the management consciousness of exterior space and the degree of satisfaction were investigated and analyzed on the GI-SAN Apt. complex in Taegu city. The data were obtained through the questionnaire survey about the exterior space of Apt. complex and analyzed by the SPSS/PC. The results of this analysis are as follow; The result of the image analysis were the cleanness factor and the arrangement factor, which have great influenced in residents image of exterior space. The dissatisfaction source of the management conditions were owing to the lake of management techniques and the discord of residents. The subject of management in the residents consciousness was the management office. In additionally, the management form by the residents were highly showed the cleaning and weeding. The main issues of their dissatisfaction about the exterior space was the lake of size, quantity of plants and rest space. The place of the most demand on management was investigated the children playground which was regarded to be the most damaged.

여성회관에 나타난 커뮤니티 공간의 특성에 관한 연구 - 서울, 경기지역을 중심으로 - (A Study on a Characteristic of Community Space in Women's Hall - Focused on Seoul, Gyeonggi Area -)

  • Women's Hall is a local facility that supports women's activities in the community and has the purpose in establishing self-support for low-income women and women's participation in society. Its functions are largely separated into social welfare, education, culture, and community services. The purpose of this study is to highlight and discuss the characteristics of space for community functions among other functions of Women's Hall. It has investigated and analyzed ten cases in total of all the women's halls that have opened since 1995. The examples selected for study have been analyzed in terms of the functions of each community space, layout of the rooms, finishing materials, and colors. The result of the study indicates that social demand for women's halls is changing. However, the characteristics of the space or the environment are incapable of accommodating the change. In order for the women's halls that will open in the future to perform acceptable community functions, they need to determine the degree of satisfaction and preference of the users and come up with a specific proposal for improvement.

SNS 데이터를 이용한 공공시설 매력도지수에 따른 접근성 분석기법 (Accessibility Analysis Method based on Public Facility Attraction Index Using SNS Data)

  • 본 연구는 공공시설의 질적인 측면의 확대를 위해 SNS (Social Network Service) 데이터를 활용하여 이용자 중심의 공공시설 선호요인을 도출하고, 이를 공급측면과 수요측면에서 정량화시키는 방법을 제안하였다. 선호요인 도출을 위해 토픽모델링 중 하나인 LDA (Latent Dirichlet Allocation)를 활용하였으며, 공급요인인 개별시설별로 매력도지수를 산출하였다. 또한 수요자 입장에서 서비스체감 정도를 측정하기 위해 공간접근성을 분석하였는데, 2SFCA (2-Step Floating Catchment Area) 방법을 활용하여 앞서 제안한 공공시설 매력도지수를 적용할 수 있도록 하였다. 실험은 서울시 공공도서관을 대상으로 진행하였다. 연구결과 공공도서관에 대한 선호요인으로 주변 환경, 시설 및 이용규모, 문화 프로그램, 육아, 장서 및 자료현황의 5가지 주제가 추출되었으며, 주변 환경이나 육아관련 주제는 새롭게 도출된 선호요인으로 선행연구와 차별성이 있다. 각 도서관별로 매력도지수를 산출한 결과 송파도서관, 정독도서관, 남산도서관의 매력도지수가 높게 나타났으며, 송파도서관은 육아요인에서 정독도서관과 남산도서관은 주변 환경요인에서 좋은 평가를 받고 있는 것으로 나타났다. 각 동별 공간접근성은 공공도서관이 많이 몰려있는 서울 중심부의 접근성이 좋은 편이며, 외곽지역으로 갈수록 줄어드는 것으로 보였다. 본 연구에 제안한 기법을 통해 이용자 중심의 공공시설 평가 및 정책의사 결정에 도움을 줄 것으로 기대한다.

부산지역 외국인 유학생의 대학급식 이용실태 및 급식 품질 속성에 대한 중요도-만족도 조사 (An Evaluation on the Attitudes and Importance-Satisfaction on Service Quality of University Foodservice among International Students in Busan)

  • Objectives: This study examined the usage status and the degree of satisfaction of university foodservice (UF) perceived by international students in Busan. Methods: A questionnaire survey was conducted on the utilization of UF, improvement requirements, preference type and recipe, as well as the importance and satisfaction of UF quality attributes as perceived by international students (n=604) at universities in the Busan area between April and June 2017. Results: UF was 'generally satisfied' or 'very satisfied' in about 35.4% of the study population, and 'not very satisfied' or 'not satisfied at all' in approximately 11.5%. Approximately 21.7% said that UF contributed to dietary life 'very much' or 'quite significantly' and 36.4% said 'not very much' or 'not at all'. The largest demand for improvement of UF was 'variety of menu' (52.0%). The most leftover food in UF was kimchi (30.3%) and broth/stew (19.2%), and the major reason for having leftover was 'not to one's taste' (27.8%). After dividing the foodservice quality attributes into 5 factors - food quality and price, sanitation, convenience, physical environment, and service environment - and analyzing the importance and satisfaction of each factor, it was shown that satisfaction was generally lower than the degree of importance. Sanitation factor was high for both importance and satisfaction of UF, while convenience factor was high for the importance but low for satisfaction of UF. Four variables in the food quality and price factor ('food taste', 'freshness of food', 'nutritive value of food', and 'reasonable price') and 3 variables in the convenience factor ('variety of menu', 'prompt food service', and 'display of the meals for the day') had high importance but low satisfaction, showing the need for an improvement on these areas. Conclusions: Based on the study results, it is necessary to improve the food quality, as well as the price and convenience factors, and to provide various menus to increase the satisfaction of UF in international students.

소형 분화류의 포장재 및 포장용기에 대한 소비자의 기호도 조사 (A Survey on the Consumer Packaging Preferences for Mini Pot Flower Plants on Domestic Market in Korea)

  • 최근 화훼 산업의 활성화를 위하여 정부 주도의 캠페인, 꽃 문화 확산 운동 등 화훼 소비 증대를 위한 활동들이 꾸준히 진행되고 있다. 절화류 상품은 MA 포장, 기능성 포장 개발 등 다양한 방법을 통하여 상품의 품질 유지를 위한 연구가 진행되고 있으나, 국내 분화류 제품의 경우 품질 개선 및 포장 디자인 등에 대한 연구가 여전히 미비한 실정이다. 또한 소형 분화류의 온라인 마켓 유통량이 점차 증가되고 있음에 따라, 산지에서 소매점, 소비자에게 이르기까지 제품의 품질 유지를 위한 다양한 구조 형태의 포장 개발이 요구되고 있다. 본 조사 연구는 소형 분화류 제품에 대한 소비자의 요구에 적합한 포장을 고려하기 위하여 기존 포장을 개선하는 목적으로 포장 소재 및 형태, 투명도, 편리성, 및 기타 포장 선호도 등에 대한 조사를 실시하였다. 결과로 플라스틱 포장 소재, 분리형 포장, 투명 포장 그리고 상품의 안정성 및 품질 유지를 위한 포장을 선호하는 것으로 파악되었다. 따라서 국내 소비자의 소형 분화류 상품 선호도 조사 연구를 바탕으로 향후 다양한 분화류 제품 및 제품 크기에 따른 상품화 가능성, 가격 변화 요인 등을 고려한 연구가 추가적으로 진행되어야 될 것으로 판단된다.
