Effects of Wheat Flour Ferment Cultured by Lactobacillus acidophilus on the Physical Properties of Cooked Noodles (Lactobacillus acidophilus를 배양한 밀가루 발효물이 면의 물리적 특성에 미치는 영향)

  • This study was carried out to examine the effects of wheat flour ferment cultured by Lactobacillus acidophilus on the physical characteristics of cooked noodle. Different scanning calorimeter(DSC) analysis results for noodle gelatinization showed that the noodles containing flour ferment had higher enthalphy values than the control noodle. And based on the degree of retrogradation for the noodles containing the flour ferment, enthalpy decreased as the amount of the ferment increased, resulting in the delay effect on the retrogradation. According to textural property evaluations over a storage period, the noodles containing the flour ferment had increases in hardness and cohesiveness, and the springiness of the control group was higher than that of the noodles containing the flour ferment; however, this difference between groups gradually disappeared with increasing storage time. Finally, the noodles containing 10% flour ferment had a higher overall preference score than the control group, indicating that the addition of the flour ferment during noodle production can have a beneficial effect on the preference.

Characterization of Physicochemical Properties of Starch in Barley Irradiated with Proton Beam

  • The study was carried out to determine the gel pasting properties of barley (Hordeum vulgare L. cv. Geoncheonheugbori) as affected by different proton beam irradiation. The ${\lambda}max$, blue value, and amylose content were significantly associated with increasing proton beam irradiation. The pasting time in barley flour irradiated with proton beam ranged 0.09 to 0.16 min shorter than nonirradiated barley flour. Gel pasting temperature ranged 57.4 to $60.5^{\circ}C$. Gel pasting temperature in barley flour decreased with increasing proton beam irradiation. Proton beam irradiation caused a significant decrease in the onset temperature (To), peak temperature (Tp), conclusion temperature (Tc) and enthalpy change (${\Delta}H$). Gelatinization range (R) in barley starch was more broaden than that of non-irradiated barley starch. Barley starches gave the strong diffraction peak at around $2{\Theta}$ values$15^{\circ}$, $18^{\circ}$, $20^{\circ}$, and $23^{\circ}$ $2{\Theta}$. Peak intensity tended to increase with increased proton beam irradiation. The granule crystallinity is closely associated with decreased amylose and increased amylopectin component. The crystallinity degree of barley starch irradiated with proton beam was significantly increased and it ranged from 24.9 to 32.9% compared to the non-irradiated barley starches. It might be deduced that proton beam irradiation causes significant changes of properties of starch viscosity in rice, especially at high irradiation of proton beam.

Physical Properties of Paeksulgies Prepared with Different level of Gardenia jasminoides (치자 첨가량에 따른 백설기의 물리 특성)

  • This study attempted to examine the sensory quality, the degree of gelatinization, color, texture and moisture content of Paeksulgis prepared with different level of Gardenia jasminoides. The moisture contents were about 39∼43% in the Paeksulgies prepared with different level of Gardenia jasminoides. L-value on the control group was high, 93.24. and G$_2$was 90.49, high, but another group were about 82∼86, it was not siginificantly. As the amount of Gardenia jasminoides was increased, a-value on the Paeksulgies was decreased, showed green color. In case of Gardenia jasminoides, b-value of the control group was very low, 10.08. As the amount of Gardenia jasminoides was increased, b-value on Paeksulgies was increased. In sensory quality, Paeksulgies by the amount of 2∼3% water extracted Gardenia jasminoides showed the most favorable sensory evaluation.

  • A pilot single-screw food extruder was constructed, and its mechanical properties and product characteristics were investigated by using corn grits. The screw rotational speed was varied and the changes in temperature profile of the barrel for the start-up period of operation were measured. The rate of heat generation for the start-up period was affected by the screw speed and feed rate. The screw speed resulted in a great influence on the estimated dough viscosity. The changes in the dough viscosity could indicate the on-set of termoplastic reaction in the barrel. The expansion ratio during the start-up period mainly depended on the barrel temperature and the degree of thermoplastic reaction in the barrel. The barrel temperatures for the gelatinization and burning of corn grits depended on the screw speed as well as the feed rate.

Studies on Processing Conditions for Nooroong-gi Powder by Liquefaction and Gellatinization of Rice Powder (쌀가루의 액화와 호화에 의한 누룽지 분말 가공조건 연구)

  • An investigation was carried out to develope a processing method for Nooroong-gi powder for use of Soongneung extraction by hydrolysis with ${\alpha}$-amylase and gelatinization of rice powder followed by toasting on hot plate. Three kinds of Nooroong-gi powder were prepared according to the degree of toasting. As the hydrolysis time increased, the DE value fastly increased during initial 2 minutes and viscosity decreased markedly. When the Soongneung was extracted from Nooroong-gi at 80-100$^{\circ}C$, more than 80% of total solids was extracted during initial 10 minutes and higher temperature yielded more extraction solids. Sedimented volume of insoluble solids and turbidity were increased as the extraction temperature and time increased. Among the three Nooroong-gi powders, the more toasted one showed the higher yields, turbidity and lower L color values of Soongneung. Even though all sensory properties of the most toasted Soongneung were scored highest, the medium toasted one obtained the highest score in preference.

  • Qualify changes of microwave-reheated cooked rice aseptic-packaged with different lid materials and oxygen absorbers were determined during storage at $20^{\circ}C,\;30^{\circ}C$ and $40^{\circ}C$. Springiness cohesiveness and adhesiveness increased as storage temperature increased, while gumminess and hardness decreased. Lid materials oxygen absorbers, and storage temperatures showed no significant effect on the textural properties of cooked rice after microwave reheating. Degree of gelatinization was increased as storage temperature increased and was restored after microwave reheating. Scanning electron micrograph showed that the surface of cooked rice became rough and hollowed after microwave reheating for 1.5 min, indicating starch was regelatinized, while there was no difference with respect to lid materials. Photomicrographs of the cross-section of aseptic-Packaged cooked rice showed that a compact and solid structure increased and retrogradation occured in starch as storage temperature decreased, while a compact and solid structure was decreased and starch was regelatinized after microwave reheating.

  • This study was carried out to investigate the sensory and physicochemical properties of rice cake(Backsulki) according to milling type and particle size. Moisture contents of rice cake(Backsulki) were $31.9{\sim}34.8\%$ W80(more than $180\;{\mu}m$ rice flour using wet milling) had the highest L value 92.5 and D80(more than $180\;{\mu}m$ rice flour using dry milling) had the lowest L value 79. Degree of gelatinization of rice cake(Backsulki) were $3.8{\sim}6.2\%$ and hardness were decreased as particle size of rice flour decreased Sensory properties of rice cake(Backsulki) with W80 showed the highest score.

  • Effects of the steaming conditions on textural and sensory quality of rice cakes were investigated with respect to storage period. All steaming methods except microwave oven cooking were not remarkably decreased in moisture content during storage. Degree of gelatinization was shown much higher in the both of rice cakes prepared by the rice-cake steamer and steaming pot than those of microwave oven cooking sample. Effect of the different steaming conditions on the rice cake quality resulted that the sensory profiles (consistency, moistness and cohesiveness) were apparently improved in the cakes prepared with rice-cake steamer and steaming pot cooking than microwave oven cooking. The highest overall quality was shown in the samples cooked by rice-cake steamer. The rice cakes prepared by microwave oven showed the highest hardness and chewiness in the textural profiles, whereas the rice cakes prepared by the rice-cake steamer and the steaming pot showed the high gumminess.

Physicochemical Properties of Starches from Flavored Glutinous Rice Varieties (향미찹쌀전분의 이화학적 특성비교)

  • Starches of flavored glutinous rice were analyzed by using scanning electron microscope (SEM) and differential scanning calorimetry (DSC) and tested on the starch granule susceptibility to 15% H$_2$SO$_4$, glucoamylase and $\alpha$-amylase. The shape of starch granules form flavored glutinous rice varieties was polygonal and the size was 4~6 $\mu$m in diameter. According to DSC, glutinous rice starch showed onset temperature (T$_{o}$) range 59.8~62.5$^{\circ}C$ and KR92021-B-B-42-3-B and KR92021-B-B-165-1-B showed higher enthalpy ($\Delta$H) on gelatinization than others. The starches from KR92021-B-B-5-2-B and KR92021-B-B-42-3-B showed lower hydrolysis rate using 15% H$_2$SO$_4$ than KR92021-B-B-165-1-B. KR92021-B-B-5-2-B showed higher degree of hydrolysis of glucoamylase and $\alpha$-amylase than the others.

Properties of Barley for Extrusion Processing (보리의 Extrusion 가공적성)

  • Using piston type extruder, barley flour was extruded at various processing conditions, The used variables were three shear rates (apparent shear rate 118, 534, $1169sec^{-1}$), four extrusion temperatures(90, 120, 150, $180^{\circ}C$) and three moisture contents (15, 25, 35%). The rheological properties and the extrudate quality were monitored in extrusion. Barley flour showed pseudoplastic behavior having average power law index 0.28 in used shear rate range. When viewed from general appearance, die swell, density, water uptake, rehydration swell and gelatinization degree of extrudate, $25{\sim}35%$ moisture and $120^{\circ}C$ temperature was suitable processing condition for noodle-like product, and 25% moisture and $150^{\circ}C$ temperature was good for snack or flake product. Moisture content of the extrudate can be pretty well estimated from energy balance at higher temperature and higher moisture content.
