방사선조사 식품에 대한 소비자의 인지도 및 수용도에 관한연구 (A study on the consumers' perception and acceptance toward food irradiation)

  • Food irradiation is an emerging technology which offers many advantages such as reduction of microorganisms, extension of shelf-life of foods, reduction in the use of post-harvest chemicals, and destruction of insects and parasites. The commercial utilization of food irradiation, however, has been restricted because of the uncertainty of consumers' responses to it. Because success of food irradiation in the marketplace will depend upon their acceptability by consumers, this study focused on the consumers' perception and acceptance toward food irradiation in order to get basic data for commercial utilization of food irradiation and give information to consumers to help rational consumption behavior. The survey with 411 respondents living in Youngnam area was conducted during the spring of 1997 by the questionnaires. The results and implications from this study are as follows. First, consumers' knowledge about food irradiation is scanty. Two-thirds of respondents in the survey had not heard of irradiated foods and many people confused irradiation with radioactivity. In the willingness to accept food irradiation, one-third of respondents showed a wait-and-see attitude. This result indicated consumers had insufficient information about the irradiation process and nationwide education of food irradiation technology should be undertaken. Second, although the purchase and use of food are very important consumption behaviors, consumer education by mass communication has been rarely done. For the successful commercialization of food irradiation, the information provision by mass communication for the consumers should be made. Third, consumers generally worried about residual pesticide and intended to purchase irradiated foods if radioactivity was not retained in the foods. Therefore, food irradiation could be an alternative method to the use of pesticide Fourth, consumers pointed out that they wanted to extend shelf-life of milk and dairy foods, fish and seafood and to irradiate these foods. Therefore, research for the safety of irradiated foods should be continually conducted. finally, labeling for irradiated foods is needed to provide the information and to further increase public understanding. Especially, the labeling should show the definite reason why irradiation is being used. In conclusion, recently, under the circumstances that the commercial utilization of food irradiation and irradiation for the import and export products have been increased in many countries, many efforts are needed to improve the quality of irradiated foods, and prove the safety of them in Korea. In addition, consumer education for food irradiation should be given to help consumers to make decision for food purchase and use.

Rapidly Increasing Prevalence of Obesity and Their Confident Determinants in Korea

  • Objectives: The 2003 WHO/FAO technical report described that Korea has largely maintained its traditional high-vegetable diet despite major social and economic changes, and had lower than expected levels of obesity prevalence than other industrialized countries. However, the prevalence of obesity in Korea has recently been rapidly increasing. The aim of this study was to elucidate the determinants of this rapid growth of obesity prevalence in Korea and to compare the results of national nutrition surveys between Korea and Japan. Methods: The trends of the National Health and Nutrition Survey in Korea instituted every 3 years and that in Japan conducted every year were compared. The results of obesity prevalence defined as more than 25 of the Body Mass Index, the percentage of habitual exercisers and the results of the nutritional surveys were examined from 1992 to 2005 in Korea and from 1992 to 2004 in Japan. Results: The prevalence of obesity in males has been gradually increasing in both Korea and Japan since 1992. Though until 1995 the prevalence of obesity in the Korean male population was less than that in Japan, after 1998 Korea surpassed Japan and a markedly increasing trend was observed. In females, the increasing trend of obesity was slower than males in both Korea and Japan. However, the prevalence of obesity was much higher in Korea compared with that in Japan. The percentage of exercisers was much lower in Korea than in Japan. Although, the definition of an exerciser varies with the survey year in Korea and is different from that in Japan, almost 70% of the population was not regularly engaging in moderate or hard intensity exercise in Korea. From 1995, the total energy intake was increased by 9.8% in Korea but it was decreased by 6.9% in Japan. Presently, the energy intake per capita per day in Korea exceeded that in Japan. Remarkable increases in the intake of meat and poultry, vegetable oils and fats, and milk and dairy products were observed in Korea from 1995 to 2005. On the other hand, these values decreased during the same period in Japan. Conclusion: The prevalence of obesity in Korea is increasing and has surpassed that of Japan. The current trends could be attributed to the low prevalence of habitual exercisers, and an increase in energy intake and the proportion of energy intake from fat.

소득수준에 따른 우리나라 성인의 식품 및 영양소 섭취수준 비교 - 2001 국민건강$\cdot$영양조사 결과를 중심으로 (Food and Nutrient Consumption Patterns of the Korean Adult Population by Income Level - 2001 National Health and Nutrition Survey)

  • To explore the relationship between economic status and food and nutrient intake patterns, the 2001 National Health and Nutrition Survey result was analyzed. Dietary intake data of 6,978 Korean adults of 20 years and older who participated in the 2001 National Health and Nutrition Survey were used along with their demographic data. Economic status of the subjects was classified into the following 4 groups based on the self-reported average monthly income of household with reference to the minimum monthly living expenses (MLE) in 2001 : low < $100\%$ MLE $\leq$ middle < $200\%$ MLE $\leq$ high < $300\%$ MLE $\leq$ higher, Individuals in the higher income class had significantly higher mean intake for most of the nutrients including energy, protein, carbohydrate, fat, calcium, thiamin, riboflavin, niacin and vitamin C, and a higher percentage of energy intake from fat. In addition, they consumed more animal foods including meats, eggs, fish/shellfish, milk/dairy products and fats. On the other hand, the mean intakes of individuals in the lower economic class for calcium, vitamin A, and riboflavin were lower than $75\%$ of RDAs. And, there was a predominant difference in contribution of fat to total energy intake among the groups of different economic status. These results showed that household income is an important factor influencing the food and nutrient intake patterns of the Korean adult population. Although individuals at different age classes may respond differently to a change in economic status, developing and implementing nutrition policy and intervention programs for those nutritionally vulnerable groups should consider the economic status as an important factor to customize and differentiate the content of the Program. 한국인의 성, 연령 및 지역에 따른 음식군별 칼슘과 인의 섭취량 및 섭취 기여율 분석 (Analysis of Dietary Calcium and Phosphorus Intakes and Contribution Rates of Major Dish Groups according to Gender, Age, and Region in Korea)

  • Objectives: Calcium (Ca) is an insufficiently consumed nutrient, whereas phosphorus (P) intake has exceeded the recommended intake level in Korea over the past decade. The purpose of this study was to analyze dietary Ca and P intakes and their contribution rate according to dish groups. Methods: A 24-hour dietary recall survey of 640 healthy adults (aged 19-69 years) was undertaken twice in four Korean provinces. Dietary Ca and P intakes and their rates of contribution from 31 major dish groups were analyzed and compared by gender, age group, and region. Results: The average Ca and P intakes of the subjects were 542.1 ± 222.2 mg/d and 1,068.3 ± 329.0 mg/d, respectively. The intakes of Ca and P as percentages of recommended nutrients intake (RNI%) were 71.7 ± 29.8% and 152.6 ± 47%, respectively, and the percentages under the estimated average requirement were 60.3% for Ca and 3.8% for P. The RNI% of Ca was not significantly different between males and females, but was significantly higher in subjects in the sixties age group than in other age groups and was significantly lower in the Korean capital than in other regions. The RNI% of P did not significantly differ by gender or age groups, but it was significantly higher in the capital than in Gyeong-sang. The five major dish groups contributing to Ca intake (contribution rate) were milks/dairy products 69.2 ± 109.2 mg/d (12.6%), soups 55.6 ± 69.6 mg/d (10.1%), stir-fried foods 53.1 ± 70.7 mg/d (9.7%), stews 43.4 ± 85.4 mg/d (7.9%), and kimchi 38.4 ± 31.8 mg/d (7.0%). The five major dish group contributing to P intake (contribution rate) were cooked rice 160.7 ± 107.1 mg/d (14.9%), stir-fried foods 88.5 ± 89.4 mg/d (8.2%), soups 76.7 ± 85.8 mg/d (7.1%), one-dish meals 63.3 ± 94.4 mg/d (5.9%), and stews 62.6 ± 89.3 mg/d (5.8%). The dish groups contributing to Ca and P intakes differed somewhat by gender, age group, and region. Conclusions: Programs to improve the nutritional status of Ca and P intakes should consider the differences in Ca and P contribution rates by dish groups as well as by gender, age group, and region.

A Study of the Food and Nutrient Intakes of College Students According to their Frequencies of Eating Out

  • This study was carried out to investigate the relationship between the food and nutrient intake status and eating-out practices of college students. A dietary survey of 361 subjects living in urban areas was conducted by using a 3-day diet record method. The average ages of the male and female subjects were 22.0 and 20.6 years old, respectively. Monthly personal expenses of the male and female students were 316,517 won and 296,888 won, respectively. 43.1% of the male and 50.8% of the female students used between one-quarter and one-half of their monthly personal expenses for eating out. Sixty-five percent of the total subjects ate out more than five times a week The average daily total food intake was 1630.7g in the males and 1453.9g in the females. The average percentage of total food intake from eating out (by weight) was 60.6% in the males and 56.2% in the females; foods eaten out were mainly potatoes, meats, processed foods, and beverages. It was found that 40-65% of daily total nutrient intake came from food eaten out. When they ate out, the male students ate slightly higher amounts of protein, fat and vitamin B1, while the female students ate relatively higher amounts of animal protein, fat, vitamin A and cholesterol. The more the subjects ate out, the more the quantity of total food intake increased. This increase resulted from high intakes of beverages and processed foods in the males, while the increase was from total plant foods, mushrooms, beverages, and milk and dairy products, in the females. The dietary variety score (DVS) was significantly increased in the female subjects when they ate out more than once a day; otherwise, the DVS was not significantly different between any of the male and female groups. The intakes of energy, and of many nutrients such as protein, fat, carbohydrates, calcium, phosphorus, iron, potassium and cholesterol, were increased when the female subjects ate out more than twice a day. The mean adequacy ratio (MAR) was at its highest level of 0.65 in the males when they ate out less than once a day, and at its highest level of 0.67 in the females when they ate out more than twice a day.

Dietary evaluation of a low-iodine diet in Korean thyroid cancer patients preparing for radioactive iodine therapy in an iodine-rich region

  • BACKGROUND/OBJECTIVES: Despite the importance of a low-iodine diet (LID) for thyroid cancer patients preparing for radioactive iodine (RAI) therapy, few studies have evaluated dietary intake during LID. This study evaluated the amount of dietary iodine intake and its major food sources during a typical diet and during LID periods for thyroid cancer patients preparing for RAI therapy, and examined how the type of nutrition education of LID affects iodine intake. SUBJECTS/METHODS: A total of 92 differentiated thyroid cancer patients with total thyroidectomy were enrolled from Seoul National University Hospital. All subjects completed three days of dietary records during usual and low-iodine diets before $^{131}I$ administration. RESULTS: The median iodine intake was $290{\mu}g/day$ on the usual diet and $63.2{\mu}g/day$ on the LID. The major food groups during the usual diet were seaweed, salted vegetables, fish, milk, and dairy products and the consumption of these foods decreased significantly during LID. The mean energy intake on the LID was 1,325 kcal, which was 446 kcal lower than on the usual diet (1,771 kcal). By avoiding iodine, the intake of most other nutrients, including sodium, was significantly reduced during LID (P < 0.005). Regarding nutritional education, intensive education was more effective than a simple education at reducing iodine intake. CONCLUSION: Iodine intake for thyroid cancer patients was significantly reduced during LID and was within the recommended amount. However, the intake of most other nutrients and calories was also reduced. Future studies are needed to develop a practical dietary protocol for a LID in Korean patients.

  • 본 실험은 닭의 근위점막 분말의 투여가 동물의 혈액학적 변화에 미치는 영향을 구명하기 위하여 근위점막(계내금)을 1일 사료섭취량의 $1\%$구(T.), $2\%$$(T_2)$, $3\%$$(T_3)$ 및 대조구(무처리구)에서 Babcock B-380의 성계 60수를 공시하여 8주간 Cage에서 사육한 후 혈액상을 조사한 결과는 다음과 같다. 1. 각 처리구별 적혈구치는 $T_3$$(2.57{\pm}0.26\times10^6/mm^3)$, $T_2$$(2.23{\pm}0.10\times10^6/mm^3)$, $T_1$$(2.38{\pm}0.40\times10^6/mm^3)$ 및 C구$(2.17{\pm}0.10\times10^6/mm^3)$의 순이었고 그 평균치는 $2.34{\pm}0.21\times10^6/mm^3$로서, 대체로 처리구(첨가구)가 대조구(무처리구)보다 유의적으로 높은 경향이었다. 2. 각 처리구별 Hemoglobin함량은 $T_3$$(9.13{\pm}0.14gm/100ml)$, $T_2$$(7.78{\pm}0.40gm/100ml)$$T_1$$(7.44{\pm}0.48gm/100ml)$의 순이었고 그 평균치는 $8.06{\pm}0.28gm/100ml$ 로서, 처리구와 대조구간에 유의성은 확인되지 않았다. (p<0.01). 3. 각 처리구별 백혈구치는 C구$(1.81{\pm}0.63\times10^4/mm^3)$, $T_1$$(1.69{\pm}0.12\times10^4/mm^3) $, $T_2$$(1.61{\pm}0.16\times10^4/mm^3)$$T_3$$(1.56{\pm}0.20_10^4/mm^3)$의 순이었고 그 평균치는 $1.67{\pm}0.23\times10^4/mm^3$으로서, 첨가량이 많아질수록 낮아지는 경향이었다. 4. 밸혈구백분비는 Lymphocytes $60.98{\pm}1.76\%$, Heterophils $22.75{\pm}2.27\%$, Eosinophils $3.17{\pm}0.95\%$, Basophils $2.17{\pm}0.85\%$ 및 Monocytes $10.84{\pm}2.02\%$였다. 5. 적혈구의 크기는 $12.01{\pm}0.74\mu\times6.82{\pm}0.10\mu\times3.57{\pm}0.08\mu$(장경$\times$단경$\times$두께)였다.

Alkylphenyl fluorobenzoate 유도체들의 합성과 몇 가지 식물병원균에 대한 항균활성 (A Synthesis of Alkylphenyl fluorobenzoate Derivatives and Their Antifungal Activities on Several Phytopathogens)

  • Thymol(I), 5-isopropyl-3-methylphenol(II), 4-isopropyl-3-methylphenol(III), 2-sec-butylphenol(IV)과 4-sec-butylphenol(V)을 출발물질로 하여 alkylphenyl fluorobenzoate계 ester 유도체 60종을 합성하였다. 이 유도체들의 합성은 IR, $^1H$-NMR과 GC/MS를 이용하여 확인하였다. 이들 화합물들에 대하여 토마토 역병균, 오이 잿빛곰팡이병균, 오이 탄저병균과 벼 잎집무늬마름병균에 대한 항균활성을 조사하였다. 오이 잿빛곰팡이병균에 2-sec-butylphenyl 2,5-difluorobenzoate (IV-6)와 4-sec-butylphenyl 2,5-difluorobenzoate(V-6)등이 90% 이상의 우수한 항균활성을 나타내었다. 오이 탄저병균에 대하여 2-isopropyl-5-methylphenyl 2,3,6-trifluorobenzoate(I-11), 2-isopropyl-5-methylphenyl 2,4,5-trifluorobenzoate(I-12), 5-isopropyl-3-methylphenyl 2,3,6-trifluorobenzoate(II-11), 4-isopropyl-3-methylphenyl 2,3,6-trifluorobenzoate(III-11)와 4-isopropyl-3-methylphenyl 2,4,5-trifluorobenzoate(III-12)가 90% 이상의 매우 우수한 항균활성을 나타내었다.

판형 열교환기 크기에 따른 전열성능 비교에 관한 연구 (A Study on Thermal Performance Comparison between Large and Small Sized Plate Heat Exchanger)

  • 판형 열교환기의 초기 개발 및 사용은 19세기 후반 유제품 내 존재하던 각종 바이러스의 살균에 대한 엄격한 법규 대응을 위해 시작되었고, 1920년대가 되어서야 본격적으로 상업화되었다. 이후 판형 열교환기의 기본 컨셉은 지금까지도 거의 변화가 없었지만, 고온, 고압 그리고 대용량 열교환에 적용되기 위해 설계 및 제작 방법들이 혁신적으로 발전하여 지금에 이르게 되었다. 현재의 형태와 같은 쉐브론 타입 주름 전열판의 개발은 1970년대 후반 오일 쇼크 이후 에너지 합리화 및 에너지 효율 향상을 위한 요구들이 강하게 제기되면서 시작되어 지금에 이르고 있다. 판형 열교환기의 개발 트렌드는 전열 효율이 좋으면서 압력강하가 낮고 또한 유체 분배가 잘되는 대형 전열판의 개발과 일치한다. 본 논문에서는 전열판 개발방향을 제시하고자 동일 골깊이와 주름피치를 가진 소형 전열판과 대형 전열판의 열성능을 각 채널(H, M, L type)별로 실험적으로 비교, 분석하였다. 실험결과, 대류열전달계수의 경우, 소형 전열판이 대형 전열판에 비해 H type의 경우 평균 16.5%, M type의 경우 25%, 그리고 L type의 경우 약 40% 정도 더 높았다. 압력강하의 경우는 소형 전열판이 H type의 경우 평균 19%, M type의 경우 46%, 그리고 L type의 경우 약 61% 정도 더 높은 것을 알 수 있었다. 이는 여러 예상되는 요인들 중 두 전열판의 유체분배부 차이에 의한 것으로 판단되었다.

GROWTH PERFORMANCE AND AMINO ACID DIGESTIBILITIES AFFECTED BY VARIOUS PLANT PROTEIN SOURCES IN GROWING-FINISHING PIGS

  • This experiment was carried out to compare the effects of six different plant protein sources such as soybean meal, extruded full-fat soybean, canola meal, rapeseed meal, cottonseed meal and perilla meal as a sole protein source of diets on growth performance and amino acid bioavailabilities in growing-finishing pigs. A total of 54 pigs with average 25 kg of body weight were used as experimental subjects for a 65-d feeding trial. Digestion trial was carried out with seven ileal-cannulated pigs. The most rapid rate of weight gain was observed in pigs fed soybean meal and full-fat soybean, the moderate one in pigs fed canola meal and cottonseed meal and the least one in pigs fed rapeseed meal and perilla meal (p<0.005). Feed efficiency was better for groups fed soybean meal and full-fat soybean than other protein meals (p<0.05). The apparent ileal digestibilities of essential amino acids of soybean meal and full-fat soybean (82.5% and 81.6%) were significantly (p<0.05) higher than those of other protein sources (61.2 to 69.4%). Regardless of protein sources, the apparent ileal digestibility of arginine was highest, whereas that of histidine was lowest among essential amino acids. Proline had the lowest digestibility among non-essential amino acids. True amino acid digestibilities tended to be higher than apparent amino acid digestibilities. The differences between true and apparent ileal digestibilities were greater in canola meal, rapeseed meal or cottonseed meal than other protein sources. The differences was greatest in praline except for cottonseed meal. The fecal digestibility appeared to be higher than the ileal digestibility. The differences between fecal and ileal digestibilities were greater in canola meal, rapeseed meal, cottonseed meal and perilla meal than in soybean meal and full-fat soybean. In general, praline was the most disappeared amino acid in the hind gut, while the net synthesis of lysine in the large intestine was observed in all protein sources except perilla meal. It is appropriate that swine feeds should be formulated based on true ileal amino acid digestibility of protein sources for pig's normal growth.
