동유럽 국가산 수입 유가공품의 방사능 잔류조사 (Monitoring of the Radioactive Contaminants in Dairy Products Imported from the East European Countries)

  • The present studies were conducted to monitor radioactive contamination in dairy products imported from 16 countries located in the East Europe which were affected by the Chernobyl nuclear accident. The 556 samples such as butter, cheese, ice cream, whey protein and hydrolysed milk protein products were collected randomly and determined from 1999 to 2002. All sample were below the Koeran and CODEX maximum tolerance level of radioactivity for $^{131}I$, $^{134}Cs$ and $^{137}Cs$.

일본과 한국의 기능성 유제품의 규격기준 및 시장현황에 관한 연구 (Investigation of Legal Regulation and Market Circumstances for Functional Dairy Products in Korea and Japan)

  • Changing health awareness has had an important effect on the functional food industry and is creating greater market opportunities. Unfortunately, there is no statement on functional dairy products in the Processing of Livestock Products Act. As a result, there is confusion in the market and legal difficulties with regard to the advertising of functional dairy products. This study was carried out to improve the current standardization of functional dairy products by comparing the domestic Health/Functional Food Act with the Japanese Health Promotion Law, and by investigating scientific data and articles from various literature and the Internet. In Japan, the Ministry of Health, Labor, and Welfare (MHLW) officially presented the Food with Health Claims (FHC) system that consists of Food with Nutrient Function Claims (FNFC), and innovated Food for Specified Health Uses (FOSHU). In 2005, the FOSHU system was changed to include several new subsystems: Current, Standardized, Reduction of disease risk, and Qualified FOSHU. Finally, to manufacture FOSHU, scientific evidence pertaining to such products must be examined by MHLW. Since FNFC was allowed, only 12 vitamins, ${\beta}-carotene$, and five minerals were approved, though without scientific evidence of efficacy. The Korean Health/Functional Food Act requires that health/functional foods (HFFs) be marketed in measured doses. There are two types of HFFs: generic and product-specific. There are 67 ingredients listed in the act for generic HFFs, and if an HFF has a new active ingredient, it is considered a product-specific HFF. Product-specific HFFs must be approved by the Korean Food and Drug Administration (KFDA). With the present standards, it is impossible to label and advertise functional dairy products with health/functional claims. Government agencies must cooperate to solve this problem, and standardization should be carried out by considering existing health/functional products and claims/indications from other countries.

우유 및 유제품에서 Aflatoxin M1 발생현황과 대책 (Occurrence and Countermeasures for Aflatoxin M1 in Milk and Milk Products: A Review)

  • 일반적으로 우유는 필요한 영양분이 풍부한 식품으로 사람의 건강 증진, 유지 등에 큰 도움을 주고 있다. 하지만 전 세계적으로 우유와 유제품에 Aflatoxin M1의 존재는 20~30년 전부터 알려져 왔다. Aflatoxin M1으로 오염된 우유와 유제품은 특히 지난 10년에서 20년 동안 전 세계적으로 중요한 문제이다. 특히, 이 제품들에서의 미코톡신의 존재는 특히 성인보다 더 민감한 어린이와 유아에게 중요한 문제이다. 이 총설에서는 최근의 자료를 검토하여 전 세계적으로 다양한 지역에서 생산되는 우유 및 유제품에서 발생한 Aflatoxin M1의 현황, 관련 규정, 감소 전략, 검출 방법, 향후 연구과제 등을 정리하였다. 우유 및 유제품의 Aflatoxin M1 오염을 최소화하기 위해서는 지속적으로 발전하고 있는 분석 기법을 이용한 엄격한 규제와 우수한 우유 처리기술이 반드시 필요하다. 더 나아가서, 우유 및 유제품에 존재할 수 있는 Aflatoxin M1이 인체 건강의 미치는 영향을 올바른 인식할 수 있도록 교육도 함께 진행되어야 할 것이다.

가계의 식료품비 지출패턴 (Household's Food and Beverage Expenditure Patterns)

  • We examined household's food expenditures in this study. The empirical work outlined here used quarterly data from 2003 Q1 to 2010 Q3. All variables are in log form and were obtained from the Korea National Statistical Office. The food items included cereals, dairy products, fruits, meat, vegetables, and alcoholic beverages. We applied the ordinary least squares method to a model consisting of household income and seasonal dummies. This is because household expenditures are ordinarily a function of income and have seasonal characteristics. The household's food consumption patterns also reflect the prevailing social and environmental circumstances. This study showed that the income coefficients of cereals, meat, dairy products, and alcoholic beverages tend to increase in the long-run, whereas those of vegetables and fruits decreased. The results also revealed that consumption of alcoholic beverages and meat was greatly affected by household income fluctuations, whereas those of vegetables and dairy products were not sensitive to income. The impulse response functions indicated that expenditures not only increased slowly before peaking one to eight quarters after the income shock but declined very slowly to pre-shock levels. The response of dairy products at the twelfth step was three times as large as that of the first step.

Factors Influencing Purchase Intention of Vietnamese Adults: A Case Study of Dairy Products

  • Vietnam has become one of the largest markets in Southeast Asia, with huge demand for many kinds of consumer goods, including dairy products. Although the domestic industry of producing and distributing milk has flourished dramatically in recent years, Vietnam still heavily hinges on dairy imports. The total value of milk products in 2020 exceeded 1 billion USD, leading to Vietnam being one of the 20 biggest importers of dairy milk globally. To explore this potential industry, we applied a multivariate linear regression model to investigate the milk consumption behaviors of Vietnamese adults. 2000 participants took part in our survey in which the products evaluated were Dielac Alpha - the most famous national powdered milk introduced in 2007 by Vinamilk. This product was designed for all ages, from children aged 0-6 to pregnant women or adults. The results indicate that the decision to purchase milk could be attributed to a host of factors. While price represents the most strongly influential factor, there might be variations according to consumer characteristics, namely age, marriage status, gender, and particular shopping behavior. From these findings, we propose some managerial implications for regulatory bodies and relevant enterprises to prepare appropriate policies and strategies for their business development.

광바이오센서를 이용한 우유 및 유제품의 식중독균 신속검출법 (Rapid Detection Methods for Food-Borne Pathogens in Milk and Dairy Products using an Optical Biosensor)

  • Milk and dairy products are not only excellent foods for humans, providing plentiful varied nutrients, but are also a good medium for detrimental food-borne pathogens. Although the food safety field has stabilized due to standardization of food processing, such as the hazard analysis critical control point (HACCP), outbreaks and cases caused by food-borne pathogens still occur at high rates. In approximately 30% of cases, the disease-causing pathogenic organism is undetermined. Recently, a biosensor was developed that has a simple and fast response and overcomes the problems of conventional methods such as cultivation, immuno-assay, polymerase chain reaction, and microarray. Due to the high selectivity and sensitivity of optical biosensors, it is a suitable method for the immediate detection of food-borne pathogens in milk and dairy products.

Current status, challenges and the way forward for dairy goat production in Europe

  • The aim of this review is to show the evolution of the dairy goat sector in Europe from all perspectives. Starting from the current situation, the challenges and future potential of this livestock system are presented, as well as strategies to overcome the difficulties faced. Europe holds 1.9% of the world goat population and produces 15.1% of goat milk recorded worldwide. The goat species plays a fundamental economic, social and environmental role in many regions of Europe. The wide diversity of production systems and autochthonous breeds makes the sector very heterogeneous. In order to improve viability, a number of strategies need to be adopted to solve the current problems such as a low profitability, absence of generational change and a little or no recognition of the social and environmental role of the sector. Some strategies to improve the situation of the European goat sector include: i) generating market value that will recognise the diversity of the dairy goat sector (breeds, feeding models, derived products${\ldots}$); ii) promoting and raising awareness of the functional attributes of goat milk and derived products so as to increase consumption; iii) assigning an economic value to environmental and social functions; iv) improving working conditions through technological innovation to make goat farming more attractive to young people; and v) processing more milk into cheese or other dairy products in production areas.

Association between dairy product intake and hypertriglyceridemia in Korean adults

  • BACKGROUND/OBJECTIVES: Hypertriglyceridemia may be a more important predictor of cardiovascular disease in Asian population consuming carbohydrate-rich foods than in Western populations. Dairy products are known to play a beneficial role in obesity, dyslipidemia, and metabolic syndrome, but the results vary depending on gender and obesity. In this study, we investigated the associations between dairy product intake and hypertriglyceridemia in Korean adults. SUBJECTS/METHODS: The participants were selected from the Korea National Health and Nutrition Examination Survey 2007-2012 (KNHANES IV and V). A total of 22,836 participants aged 19-64 years were included in the analysis. A food frequency questionnaire used to determine the frequency of consumption of products (milk and yogurt). Multivariable logistic regression was used to assess the associations between dairy product intake and hypertriglyceridemia. RESULTS: A significantly decreased risk of hypertriglyceridemia was detected in the highest dairy product intake frequency group (≥ 1 time/day) (odd ratio [OR] = 0.79; 95% confidence interval [CI] 0.64-0.97, P for trend = 0.022) compared to that for the lowest dairy product intake frequency group. Among obese participants, the group with the highest intakes of milk (in men, OR = 0.64; 95% CI: 0.46-0.91, P for trend = 0.036) and yogurt (in women; OR = 0.53; 95% CI: 0.29-0.94, P for trend = 0.019) showed inverse associations with hypertriglyceridemia. No associations were detected in normal weight participants. CONCLUSION: The association between dairy product intake and hypertriglyceridemia differed by gender and obesity status. Further prospective studies are needed to confirm these associations.
