중학생의 우유 및 유제품 섭취 실태와 소비 성향에 관한 조사 (A Study on Consumption Behavior for Milk and Daily Products among Middle School Students)

  • 본 연구에서는 중학생들의 우유 및 유제품의 섭취 실태를 조사하고 소비 성향에 미치는 요인들을 분석하기 위하여 경기도 지역의 남녀 중학생 447명을 대상으로 조사를 실시하였다. 조사대상자의 37.4%만 매일 우유를 마셨으며, 우유 1일 섭취량은 1컵이 56.7%이었다. 현재 주로 일반우유를 마셨으며, 대부분의 학생들은 일반우유보다 가공우유를 더 좋아하는 것으로 나타났다. 우유를 마시는 주된 이유로는 '키가 크고 싶어서', '음료용, 간식용으로 마시기 좋아서'였으며, 우유를 마시지 않는 주된 이유로는 '우유의 맛이 없어서'와 '다른 음료가 더 좋아서'였다. 유제품 섭취 실태에 대한 조사 결과, '일주일에 3~4번' 정도로 섭취하였으며, 남학생은 아이스크림, 여학생은 마시는 요구르트를 가장 선호하였다. 대부분의 학생이 유제품을 섭취하는 이유는 '맛이 좋아서', '음료용, 간식용으로 먹기 좋아서', '키가 크고 싶어서' 순이었으며, 유제품을 섭취하지 않는 주요 이유로는 '집에서 유제품을 먹지 않아서'였다. 유제품 섭취에 의해 건강상의 효과를 묻는 질문에 79.9%가 '없었다'고 응답하였다. 우유 및 유제품 구매 시 선택 기준을 조사한 결과, 우유의 경우는 '유통기한을 보고', 유제품의 경우는 '자신이 좋아하는 유제품'이었다. 대부분의 학생들은 우유와 유제품의 소비를 촉진시키기 위해서는 '품질과 맛의 개선'과 '엄격한 위생 관리'가 우선적으로 개선되어야 한다고 응답하였다.

서울지역 일부 초등학생의 학교우유급식 실태 조사 (A Study on a School Milk Program for Elementary School Students in Seoul)

  • 본 연구는 초등학생들의 학교우유급식 실태를 조사하기 위하여 서울특별시에 거주하는 518명의 남여 어린이들을 대상으로 설문지 조사법으로 실시하였다. 조사 대상자의 88.2%가 학교우유급식에 참여하였으며, 남학생이 여학생에 비하여 학교우유급식 참여율이 유의적으로(p<0.05) 높았다. 학교우유급식에 참여하는 어린이들 중 81.8%가 급식으로 제공되는 우유를 매일 마셨으며, 제공된 우유에 대하여 47.9%의 어 린이들이 만족하였다. 학교우유급식에 참여하지 않는 이유로는 '우유의 맛이 없어서'와 '우유를 마시면 배가 아파서'가 주요 장애 요인으로 나타났다. 초등학생들의 30.7%만이 학교우유급식을 반드시 해야 한다고 생각하고 있었으며, 남학생이 여학생보다 유의적으로(p<0.05) 높았다. 학교우유급식에 대한 요구 사항은 흰우유 대신 가공우유와 요구르트가 제공되기를 원하였다. 따라서 우유 소비를 촉진시키고 학교우유급식의 참여도를 높이기 위해서는 어린이들의 요구에 맞는 다양한 종류의 우유와 유제품을 급식에 제공하고, 어린이들이 원하는 세심한 사항을 고려하여 개선해 나가야 할 것이다. 또한 어린이들을 위한 적절한 식품 가이드와 우유 교육 프로그램을 개발하여야 지속적으로 확대 실시해야 할 것으로 사료되었다.

떡에 대한 인지도와 기호도 및 소비행동에 관한 연구 -부산·영남지역의 대학생을 중심으로- (A Study On Consumer Awareness, Preference, and Consumption Behavior Regarding Rice Cakes - With a Focus on College Students in Busan and the Yeongnam Region -)

  • The purpose of this study is to understand consumer awareness and preference regarding rice cakes by surveying the awareness, preference, and consumption behavior of college students regarding rice cakes, and to survey their perception and usage of rice cakes, thereby using the results as basic data to establish measures to develop Korea's rice cakes. To sum up the study's results, the survey included both male (54.5%) and female (45.5%) subjects. Those aged "20 to 23" accounted for the largest share (67.9%) of total respondents, and those majoring in "humanities and social studies" comprised the largest portion (47.8%). A majority of the respondents resided in "small and medium-sized cities", and most either lived at home or lived away from their families. A majority of the subjects received monthly allowances ranging from 200,000 to 300,000 won. In order of awareness, the most well-known type of rice cake was "injeolmi (rice cake made from glutinous rice and coated with bean flour)", followed by "songpyeon (half-moon-shaped rice cake)", "garaeddeok (bar rice cake)", and "baekseolgi (steamed white rice cake)". The women were better aware of "injeolmi", "baekseolgi", and "garaeddeok" than the men, and "soemeoriddeok" was not commonly known among either gender. In terms of preferences for rice cakes, overall, the subjects liked "injeolmi" and "songpyeon" the most. However, certain differences were found in preferences for rice cakes between the men and women. The women exhibited higher levels of preference for "injeolmi" and "songpyeon" than the men. On the other hand, the men revealed higher levels of preference for "baekseolgi", "jeolpyeon", and "garaeddeok" than the women. The most common answer to important factors for popularizing rice cakes was "a diverse assortment of rice cakes", followed by "the development of creative technologies" and "the taste of rice cakes reflecting consumer needs", in order of importance. Among the important factors to popularize rice cakes, "the development of unique packaging containers for rice cakes" (p<0.05) and "the development of proper packaging materials" (p<0.05) showed statistically significant differences. In the survey of consumption of rice cakes, the most frequent answer to the question "why do you like rice cakes? was "their tastes are good" with 146 respondents, followed by "I have been eating them for long" with 115 respondents. To the question "when do you use rice cakes", the most frequent answer was "I use them in daily life" with 133 respondents, followed by "I use them at special events" with 115 respondents. The women were found to use rice cakes frequently in daily life, whereas the men used them frequently at special events. When asked whether they had the intention to use rice cakes as a meal substitute, 100 men answered that they had no intention, whereas 96 women answered that they had the intention. When asked about the type of rice cake considered suitable for a meal substitute, the most popular answer was "injeolmi" with 108 respondents, followed by "baekseolgi" with 106 respondents.

한국 음식에 대한 중국 심양지역 대학생의 인식 및 기호도에 대한 연구 - 비빔밥을 중심으로 - (A Research on College Students' Recognition and Preference of Korean Food in Shenyang Region of China - Focused on Bibimbap -)

  • 최근 현대인의 건강지향욕구는 끊임없는 건강식의 추구를 유도하고 있다. 그러한 측면에서 한국음식은 사용되는 많은 식재료가 기름을 사용하지 않음에도 불구하고 여전히 다른 나라에서 건강식으로 인정받고 있지 않고 있는 실정이다. 본 연구는 중국심양지역에 거주하는 299명의 중국학생을 대상으로 한국음식과 비빔밥에 대한 인식을 검토해보고자 한다. 연구결과에서 보면, 한국음식을 싫어한다고 응답한 경우는 조사 대상자의 25.4%이고 비빔밥을 싫어한다고 응답한 경우는 27%였으며 한국음식을 싫어하는 이유는 '맛이없어서', '외관이 나빠 보여서'인 것으로 나타났다. 그러므로 충국 식문화에 어울릴 수 있는 한국음식을 만들고 비빔밥의 인기도를 증가시키기 위해서는 중국인이 좋아하는 음식의 종류와 맛에 대해 알아야 하며 중국인이 좋아하고 싫어하는 것에 대한 이유에 대해 검토해서 중국인이 선호할 수 있는 비빔밥을 개발하여야 할 것으로 생각된다.

포커스 그룹 인터뷰를 통한 COVID-19 유행 동안 학교 급식의 변화 (Changes in School Foodservice during COVID-19 Pandemic Lockdown based on Focus Group Interviews)

  • This qualitative study analyzed various environmental factors and difficulties faced by school foodservices during the COVID-19 pandemic. Focus group interviews were conducted by enrolling 12 nutrition teachers and nutritionists. Data collected were subsequently analyzed for changes implemented during the pandemic, in hygiene management, diet management, and distribution management of the school meal. The content and method of delivery of information related to diet guidance and school foodservice by related organizations were also examined. Results of the survey show that personal hygiene (such as maintaining student-to-student distance, checking students for a fever, and hand disinfection) was duly applied, installation of table coverings and distancing between school cafeteria seats were conducted, and mandatory mask-wearing to prevent droplet transmission was enforced. Depending on the COVID-19 situation, the number of students having school meals was limited per grade, and time-spaced meals were provided. To prevent infection, menus that required frequent hand contact were excluded from the meal plan. Overall, it was difficult to manage the meal plan due to frequent changes in tasks, such as the number of orders and meal expenses. These changes were communicated by nutrition teachers and nutritionists wherein the numbers of school meals were adjusted, depending on situations arising from each COVID-19 crisis stage. Furthermore, in some schools, either face-to-face nutrition counseling was stopped entirely, or nutrition education was conducted online. Parent participation was disallowed in the monitoring of school meals, and the prohibition on conversations inside the school cafeteria resulted in the absence of communication among students, nutrition teachers, and nutritionists. Additionally, confusion in meal management was caused by frequent changes in the school meal management guidelines provided by the Office of Education and the School Health Promotion Center in response to COVID-19. In anticipation of the emergence of a new virus or infectious diseases caused by mutations in the years to come, it is suggested that a holistic, well-thought-out response manual for safe meal operation needs to be established, in close collaboration with schools and school foodservice-related institutions.

간호학과 대학생들의 생활 스트레스 정도에 따른 식습관, 건강관련습관, 우울, 섭식장애 및 영양소섭취량의 차이 조사 (The differences of dietary and health-related habits, depression, eating disorder and nutrient intake according to the life stress in nursing college students)

  • 본 연구의 목적은 간호학과 대학생들의 생활 스트레스 정도에 따른 식습관, 건강관련습관, 우울, 섭식장애, 및 영양소섭취량의 차이를 비교, 조사하는 것이다. 전체 대상자 282명의 생활 스트레스 총점 평균은 61점이었고, 평균을 기준으로 스트레스가 높은 군과 낮은 군으로 나누어 식습관, 생활습관, 우울, 섭식장애 및 영양소섭취량의 차이를 SPSS 통계 package를 이용하여 분석하였다. 스트레스가 높은 군이 낮은 군에 비해 결식 또는 과식 빈도, 섭식장애, 우울 점수가 유의하게 높았으며 운동을 하지 않는 경우가 많았다. 영양소 섭취량은 두 군 사이에 통계적으로 유의한 차이가 없었으나 두 군 모두 비타민 $B_2$, C와 엽산, 칼슘과 철, 칼륨 및 식이섬유소 섭취량이 권장섭취량 또는 충분섭취량보다 매우 부족했다. 이러한 결과를 통해 생활 스트레스는 바람직하지 못한 식습관과 섭식장애, 우울을 일으켜 영양소 섭취량과 건강에 영향을 미칠 수 있으므로 간호학과 대학생들을 위한 스트레스 상담 및 건강프로그램 개발 및 중재가 필요하다는 것을 알 수 있었다.

대학생의 혼자식사와 가공식품에 대한 인식 및 섭취 실태 조사 (Recognition and Consumption of Meal Alone and Processed Food according to Major of College Students)

  • This study was conducted to assess the recognition and consumption of meal alone and processed food according to major of college students in Seoul Metropolitan area and Chungcheong province, Republic of Korea. To accomplish this, a survey was conducted to investigate 353 college students (171 food & nutrition majors and 182 non-majors) regarding their general characteristics, dietary behaviors, meal alone issues, and the purchase and consumption of processed food. Most major and non-major students skipped breakfast. The main reason for skipping was not having time. Majors and non-majors put great importance on their lunch and evening meal, respectively. Nutrition information routes for majors were 'college class' (62.5%) and 'TV radio' (17.5%). However, the routes for non-majors to obtain nutrition information were 'internet smart phones' (41.1%) and 'TV radio' (28.3%). These results suggest the need to provide correct information concerning nutrition to college students. Most major and non-major students tend to have 0 to 2 times of meal alone per week. The main reason for meal alone was schedule unsuitable for eating with family or friends. The most critical factors for majors and non-majors when they chose menu to have meal alone were personal taste and money, respectively. The primary consideration for choosing processed food was price and the main purchase route was convenience store. The main reason for consuming processed food was easy-to-cook. Of processed foods, the most favored ones were noodles and fish products. Meal alone frequency was positively correlated with age (p<0.05), grade (p<0.05) and monthly allowance (p<0.05). Preference and consumption frequency of processed food were negatively correlated with concern about nutrition (p<0.05) and meal frequency (p<0.05), respectively. Based on these results, greater efforts should be made to provide meaningful information regarding programs for nutrition education to improve their dietary habits. Research and development of processed food specifically for college students eating alone should be increased.

쑥 분말이 첨가된 식빵의 물성 및 관능성 (Rheological Properties and Sensory Characteristics of White Bread with Added Mugwort Powder)

  • This study was designed to investigate the possible utilization of mugwort as a source of functional ingredients. The approximate composition for mugwort powder was 5.06% moisture, 1.98% crude protein, 4.65% crude fat, 5.85% ash and 82.46% carbohydrate. The highest mineral content was potassium. The contents of total phenolic compounds and condensed tannin were 114 mg% and 11,000 mg%, respectively. The highest electron donating ability(EDA) was observed from the ethyl acetate and butanol fractions of mugwort powder but the lowest was shown by the hexane fraction. In color values, with increasing mugwort powder content, the 'lightness', 'redness' and 'yellowness' decreased in the crust, while in the crumb bread the 'lightness' decreased and the 'redness', and 'yellowness' increased. With the addition of mugwort powder as a substitute for strong flour over the range from 2.5% to 10.0%, the ratio of the volume and specific volume of white bread decreased while its weight increased. In the texture measurements for white breads, the hardness decreased slightly with the addition of 2.5% mugwort powder, but then increased with further additions of mugwort up to 10.0%. The addition of 2.5% mugwort powder increased the springiness and gumminess of white bread. The highest sensory scores for color, flavor, taste, texture and overall acceptance as evaluated by a student sensory panel were obtained from white bread with 2.5% mugwort powder and from the control. The highest sensory scores as evaluated by a baker sensory panel were obtained from white bread with 2.5% mugwort powder. In ranking test, overall acceptability of white bread was the highest in the control. Overall acceptance scores by sensory evaluation of white bread with 2.5% mugwort powder were not significantly different from those of control.

충남 일부 지역 초등학생의 학교급식 만족도와 음식 기호도 (Satisfaction on School Meal Service and Food Preference of Elementary School Students in Chungnam)

  • The purpose of this study was to evaluate the satisfaction with school meal service and the food preference in elementary school students who are in their growth period. A total of 484 students (242 boys) participated and completed a questionnaire survey. The results indicated that the merit of school meals was the highest in 'balanced diet'. 'Food hygiene' and 'delicious food' were the most important factors in school meals. Most of the students wanted 'balance between eastern and western foods' and 'new dishes' for the menu of school meals. For the distribution of meals, 'various kinds of side dishes' and 'warmth of dishes' were mainly required. The main problems of the current environment of school meals were 'long waiting time' and 'noise of the cafeteria'. In satisfaction with the school meal service, the highest satisfactory factor was 'staffs' cleanliness', following 'arrangement of furniture in cafeteria' and 'nutrition information-providing'; whereas, the lowest factor was 'staffs' kindness'. In the preference of foods, students preferred 'white rice'; whereas they did not like 'bean rice'; and 'fried rice' was preferred. In side dishes with meat and fish, most of the meats including 'Tangsuyuk' and 'Bulgogi' were preferred. For fish, 'fried hairtail' was preferred; whereas, 'fried Spanish mackerel' was not. In case of kimchi, 'Chinese cabbage kimchi' and 'cubed radish kimchi' were especially preferred. Considering these results, intensive improvement is required to increase school meal satisfaction by understanding the students' needs. An effort to allow the students' preferences to be reflected in the menu is also needed.

대전시 초등학교 5학년 학생의 아침식사 섭취가 학습태도 및 학업적 효능감, 정신건강에 관한 자각증상에 미치는 영향 (Effect of Breakfast Eating on Lening Attitude, Academic Efficacy and Self-Rated Mental Health of the 5th Grade Students of Primary School in Daejeon City in Korea)

  • The purpose of this study is to examine the effect of breakfast eating on learning attitude, academic efficacy and self-rated mental health. Survey was carried out with 460 subjects of the 5th grade elementary school student in Daejon area. The study subjects were divided into 3 groups with frequency of eating breakfast defined as an intake of 7 d/wk, 3-6 d/wk and 0-2 d/wk. The results are summarized as follows. The frequency of eating breakfast was 7 d/wk in 52.4%, 3-6 d/wk in 35.4% and 0-2 d/wk in 12.2% of the subjects. The most common pattern of breakfast was the traditional Korean style. The students who have breakfast every day(7 d/wk group) show better learning attitude and academic efficacy(p<.001) and positive on self-rated mental health while 3-6 d/wk and 0-2 d/wk groups were negative(p<.001). In conclusion, regular breakfast eating group shows better learning attitude, academic efficacy and self-rated mental health so that they have positive health status and academic achievement.
