호텔 조리종사자의 직무착근도가 직무만족, 경력몰입 및 이직의사에 미치는 영향 (The Effects of Hotel Culinary Employee's Job Embeddedness on Job Satisfaction, Career Commitment and Turnover Intention)

  • 본 연구는 부산 울산 지역 특1급 호텔에 근무하는 조리종사자 225명을 대상으로 직무착근도가 직무만족, 경력몰입, 이직의사에 미치는 영향 관계를 분석하기 위해 SPSS 18.0을 사용하여 빈도 분석, 요인분석, 신뢰도분석, 상관관계분석, 회귀분석을 실시하였다. 연구결과, 첫째, 호텔 조리종사자의 직무착근도가 직무만족에 미치는 영향을 검증한 결과, 적합(fit), 희생(sacrifice), 연계(links)가 직무만족에 정(+)에 영향을 미치는 것으로 나타났으며, 둘째, 호텔 조리종사자의 직무착근도의 적합과 희생이 경력몰입에 정(+)에 영향을 미치는 것으로 나타났다. 셋째, 호텔 조리종사자의 직무착근도는 적합과 희생이 이직의사에 부(-)에 영향을 미치는 것으로 나타났으며, 넷째, 직무만족도가 이직의사에 부(-)의 영향을 미치는 것으로 나타났다. 다섯째, 경력몰입은 이직의사에 부(-)의 영향을 미치는 것으로 나타났다. 이러한 결과를 통해 호텔 조리종사자의 직무착근도가 높을수록 직무를 만족시키고, 경력몰입을 증가시켜 이직하려고 하는 의도를 감소시킬 수 있다는 것을 알 수 있었다.

  • 본 연구의 연구목적은 서비스기업 종사자의 성격특성요인이 조직시민행동과 고객지향성에 미치는 영향관계를 확인하는 것이다. 실증분석을 위해 207명의 외식기업 서비스종사자를 대상으로 진행된 설문조사 자료를 토대로 진행된 연구 결과는 다음과 같다. 첫째, 서비스기업 종사원의 성격요인은 5가지 요인; 정서적 불안정성, 외향성, 친화성, 성실성, 지적 개방성 등으로 확인되었다. 둘째, 서비스기업 종사원의 조직시민행동에 유의한 영향을 미치는 종사원의 성격특성요인은 지적 개방성, 친화성, 성실성, 외향성 등의 4가지 성격요인으로 확인되었다. 셋째, 서비스기업 종사원의 고객지향성에 유의한 영향을 미치는 종사원의 성격특성요인은 5가지 요인으로 확인되었으며, 정서적 불안정성요인은 고객지향성에 부(-)의 영향을 미치는 것으로 나타났다. 넷째, 서비스기업 종사원의 조직시민행동은 고객 지향적 태도에 유의한 영향을 미치는 것으로 나타났다.

  • 본 연구의 연구목적은 외식기업 서비스종사자의 성격요인이 직무적합도와 고객지향성에 미치는 영향관계를 확인하는 것이다. 실증분석을 위해 164명의 외식기업 서비스종사자 설문조사 자료를 토대로 진행된 연구결과는 다음과 같다. 첫째, 외식기업 서비스종사원의 성격요인은 5가지 요인; 신경성, 외향성, 호감성, 성실성, 이지성 등으로 확인되었다. 둘째, 외식기업 서비스종사원의 직무적합도에 영향을 미치는 성격요인은 호감성, 성실성, 이지성 등의 3 가지 성격요인으로 확인되었다. 셋째, 외식기업 서비스종사원의 직무적합도는 고객지향성에 유의한 영향을 미치는 것으로 나타났다. 넷째, 외식기업 서비스종사원 성격요인 중 외향성, 호감성, 성실성, 이지성 등의 4 가지 성격요인이 고객지향성에 유의한 영향을 미치는 것으로 나타났다.

  • To develop and improve as the finest foodservice industry, it has to secure the best team organized by the most satisfied employees. It is very important for foodservice industry to have the organization efficiency and study all kinds of factors to be influenced by several conditions. This study was focused on some matters to achieve the foodservice industry's business goal as well as to satisfy the employees. 1, the writer, set up four hypotheses for the examination. First, there will be not an interrelation between the employee's satisfaction and sex, age, marriage, educational background, and eager level. Second, there will be not an intreation between the employee's satisfaction and work period, position, department and major. This study could get some result from the analysis suggested by the above hypotheses. The following are the further explanation including some outstanding feature from the analysis based on the human resource: first for the category about the level of job satisfaction evaluated by the census, foodservice industry employee's job satisfaction depends upon the atmosphere in which employes could enjoy their work. Even the promotion chance can be made in the environment of creative and active working condition. Finally, the promotion chance can be realize not through the employee's attitude assuming the motivation factor to be difference from hygiene factor, but through keeping their work carried out in various activity.

A Study on the Impact of Employee's Awareness about Corporate Social Responsibility on Innovative Behavior ; Targeting Frontline Employees in the Hotel Industry

  • This study is designed to investigate the impact of employee's awareness about corporate social responsibility on innovative behavior among frontline employees in the hotel industry. In addition, the present study seeks to demonstrate whether employees awareness about corporate social responsibility or innovative behavior varies according to gender, age, education level and employment type. In order to achieve the study goal, the data were obtained from frontline employees(Rooms division, F&B division) working in the 5-star hotels. And the data were analyzed by frequency analysis, factor analysis, reliability analysis, t-test, ANOVA and regression analysis were undertaken using SPSS(18.0). The results showed that gender, age and employment type were not significant factors to generate differences on awareness about corporate social responsibility. But the higher educated employee was likely to perceive the awareness about corporate social responsibility better. Employee's innovative behavior varied on all of gender, age, education level and employment type. In other words, employee who is male, in the older age group, in the higher educated level and the full-time position tends to do more innovative behavior. Implications based on the study results are also discussed.

호텔 직원의 신체적 매력도가 개인직무적합성에 미치는 영향 - 자아존중감과 자기효능감의 매개효과를 중심으로 - (The Effects of Hotel Employees' Physical Attractiveness on Person-job Fit - Focused on the Mediating Roles of Self-esteem and Self-efficacy -)

  • The purpose of this study was to understand the effects of hotel employees' physical attractiveness on person-job fit and to empirically analyze whether self-esteem and self-efficacy play a mediating role in the causality between an employee's physical attractiveness and person-job fit. Self-administered questionnaires were completed by 345 employees and the data were analyzed by frequency analysis, factor analysis, reliability analysis, correlation analysis and multiple regression analysis. The primary results were as follows: Multiple regression analysis showed that hotel employee physical attractiveness had a positive significant influence on self-esteem ($\beta=.504$, p<.001) and self-efficacy ($\beta=.441$, p<.001). Also, employee selfesteem ($\beta=.281$, p<.001) and self-efficacy ($\beta=.478$, p<.001) each had a positive significant influence on person-job fit. As a result of analyzing the mediating role, the effect of hotel employees' physical attractiveness on person-job fit was partially mediated by self-esteem and self-efficacy.

  • Most countries have their own culture that presents different types of behaviour. The employees' specific ways of working, according to each country, influence its organisation, thus cultural differences have become an essential issue in operating management. Therefore, this study explored how the different cultures based on Hofstede's paradigm interact within the specific Korean context. This study examined how cultural related HRM practices were enacted in the Korean hotel industry, how the frameworks of Hofstede's model impact the employee outcomes, including the concept of organisational justice. This study followed a quantitative approach which relied on a positivist paradigm to evaluate the different HRM practices at hotel workplaces with the view of employees. This study gathered a survey on 601 hotel employees in the deluxe sector. The analysis of quantitative data was undertaken using SPSS version 23.0 software and AMOS 23.0 to achieve the research aim for the study. This study contributes new findings to the research literature. The results of this study showed how Confucianism also plays a predominant role in understanding Korean culture, more than the Hofstede's original four dimensions of culture.

Also the possibility of incentive in order to be, must endeavor as continuation of the holiday duration when is not the money compensation which is simple even from compensation dimension, the holiday system which is various. In the side of employee's development training as providing the chance possibility of ability development there is a possibility where a satisfaction the business enterprise of family restaurant industry's worker will lead and occupation it will feel and the continuous training against the field which the oneself inside the store is keeping it leads and the knowledge. In the conclusion, the study of the human resources and the efficient human resources who is the possibility the manager and worker for being satisfactory should be go on.

조리종사자의 대인애착이 직무만족, 직무애착에 미치는 영향 (The Influence of Culinary Employee's Interpersonal Attachment on Their Job Satisfaction and Job Attachment)

  • 본 연구는 2011년 2월 10일부터 2011년 3월 2일까지 서울지역 특급호텔 조리종사자를 대상으로 실시하였으며, 총 161부에 대하여 SPSS 17.0을 이용하여 요인분석과 신뢰성 검증을 실시하고 제시된 연구가설을 검증하기 위해서 다중회귀분석을 실시하였다. 분석결과 첫째, 대인애착, 직무만족과 직무애착 간의 상관관계를 조사한 결과 안정형 애착은 직무만족과 직무애착에 유의한 정(+)의 상관관계가 있는 것으로 나타났다. 둘째, 불안형 애착은 직무만족에 부(-)의 상관관계를 보였다. 그리고 애착 유형에 따라 직무만족과 직무애착과의 상관관계가 없는 것을 확인할 수 있다. 셋째, 대인애착이 직무만족에 미치는 영향을 분석할 결과 안정형은 직무만족에 유의한 정(+)의 영향을 미친 반면에, 회피형과 불안형은 직무만족에 유의적인 영향을 미치지 못하는 것으로 나타났다. 따라서 이와 같은 분석결과를 바탕으로 외식조리종사자의 유용한 시사점을 제시하였다.

레스토랑 고객의 선택 속성에 관한 실증적 연구 (A Study on the Choice Properties of Restaurant Customer's Characteristics)

  • The purpose of this study is to investigate the properties of restaurant customer's choice and to present the desirable service of restaurants. The experimental data were collected from the questionnaire answered by 182 restaurant customers in Seoul. One-way ANOVA and $x^2$(Chi-square) verification analysis were performed with the SPSS WINDOW 10.0 program to investigate statistical significance of the data. As the results, it was revealed that the food factor was most important when the customers choose a restaurant. And then, the importance of the choice properties was in the following order, that is, the food factor, the hygiene and cleanness factor, the employee's service factor, the visiting convenience factor, the indoor mood factor, the menu factor, the amenity factor for children. In addition, it was confirmed that some choice properties of the customers are dependent on the general characteristics such as sex, age, occupation, income etc. Therefore, it is essential that restaurants should provide various services related with the choice properties by understanding the choice properties according to the customer's characteristics.
